When you're talking with someone and they want to know what final conclusion you want them to draw from your conversation, they might ask you, “What's the bottom line?” The origin of the term, “the bottom line,” is business accounting. It refers to the literal bottom line of a financial statement - a company's profit or loss. This literal bottom line is what we typically regard as the sole point of a business: the bigger the profit, the better the business. But today there are also businesses we refer to as Triple Bottom Line. These companies have three equal categories of success: profit, people, and purpose. Both of Peter's guests on Out to Lunch today have founded triple bottom line companies here in New Orleans. Along with his partner, Charon Flowers Maple, Spencer Davis co-founded Bypass Lines in 2020. Bypass Lines works with local restaurants, caterers and retailers. It promotes them to customers who support non-profit causes. Each time Bypass Lines delivers food or products to these customers, they give a portion of the proceeds to the customer's chosen charity. As of right now, Bypass Lines report they've supported over 100 catering businesses, delivered over 1,000 online food orders, and over $1m has been processed through their platform. Lauren Darnell founded her company, Porch & Okra Consulting, in 2023. Porch & Okra's clients are mainly restaurant owners and other hospitality industry leaders looking to expand diversity, and improve conditions for employees in the hospitality and restaurant business - one of the most vital sectors of the New Orleans economy.  How many of us care enough about other people to devote our professional lives to helping them? Not many. Spencer, Lauren and their companies, Bypass Lines and Porch & Okra Consulting, are exceptions to the rule. Making other people's welfare the focus of a business - and putting people and purpose on an equal plane as profit - is ambitious. If you're lucky, around mid-July, warm weather loving veggies are thriving. I recently returned from a trip to find our okra had grown a few feet while I was away. Okra is a traditional Southern vegetable that should be grown in Northern gardens, too. Plant dwarf, quick maturing varieties now and harvest in 2 months. Dwarf varieties, such as 'Jambalaya' and 'Baby Bubba', only grow 3- to 4-feet tall and produce okra pods quickly in the summer heat. Try planting okra where lettuce or peas have gone by in your garden. The dwarf varieties are also great to grow in containers, too. Okra is a vegetable that some people love and others hate. The pods have the best taste and texture harvested when they're less than 4 inches long. Young okra pods are more tender and have less of a “slimy” nature. Eat them in soups, stews, fried or sautéed. Okra is in the hibiscus family, so the flowers are edible and delicious stuffed, fried or used as a garnish. Plant okra in full sun in the hottest spot of your yard on compost amended soil. Like the song by the duo Hot Tamale sings, “the okra don't grow if the water don't flow,” so keep the soil moist. When harvesting, wear gloves and a long sleeve shirt as some gardeners can get a skin rash from the okra leaves. The pods are attached strongly to the woody stems so use a hand pruner to harvest them. Harvest every few days as the pods grow fast and furious in the heat. This episode features an interview with Zee Lilani at Kula Nursery in West Oakland, California in January 2024. Zee grows Doodhi (Lauki/Bottle Gourd) and Kalonji (Black Seed/Nigella) seeds for our Truelove Seeds catalog as well as many varieties for Second Generation Seeds at her farm in Petaluma, California. In this episode, we hear how Zee left her work as a hydrologist, became a farmer, worked in food sovereignty and food security supporting other farmers, and then started her own nursery business focused on South Asian plants during the pandemic. During the partition of India, her family was displaced from the city of Surat, in the state of Gujarat, in India to Pakistan. Her work with plants familiar to her mother and grandmother bring Surat back to life many decades later, far from home.    In her words:  'Kula Nursery is a grassroots urban nursery working within and for BIPOC communities to increase food sovereignty through gardening education and culturally relevant plant starts. This will add immense flavor to your broth/roux.12 ounces of Andouille Sausage-- or closest like sausage2 lbs of shrimp-- peeled and deveined-- set aside in a container-- keep them cooled or iced.96 ounces of your favorite stock-- you can make your own, but really no need. A good stock from the grocery store can work, and save you time from this already lengthy preparation Get a large and deep pot, place a little oil in it and bring it to medium-hot heat.Once the pot is temp ready-- place onion, celery, and bell peppers in the large and deep pot. Do not add garlic just yet. Monitor the pot and make sure you are not burning the vegetablesLet this cook down for about 12-15 minutes. Keep occasionally stirring until onions began to carmelize. Add garlic now. Keep an eye and occasionally stir for about  7-10 minutes.Take a cup of your stock and add it to your baked flower in a bowl. Whisk until smooth and without lumps.Add this mixture into your large pot with veggies.Stir and mix with the veggies and let this cook for about 5 minutes or so.Add your smoked turkey leg or turkey necks into the pot.Add stock until the pot is around 60 percent full-- we don't want to overfill the pot-- because we have a lot more to add into the gumbo.Stir the pot, get the mixture of the roux to gel smoothly with the water. Get this to a medium boil.Add Okra to the potNow is a great time to season your gumbo with tony's, garlic powder, pepper, hot sauce, garlic powder, to your preference. Do not add salt yet.Let this cook-- pot covered preferred, for about 45 minutes to an hour, occasionally stirring and checking in on the pot. Adding in more stock if needed. Keeping your pot a little more than half full.Bring Pot to a medium to low heatAdd sliced, round andouille sausage to the potChop baked chicken into medium to medium large sized chunks, once done-- add to the potAdd more stock if needed.Let this cook for about 30 minutes.Add your shrimp last. They will not take a very long time to cook in the gumbo. Ten to 15 minutes should be greatOptional, but once shrimp are done, turn off heat, and let the gumbo rest for 10 minutes. Add 16 ounces of ice cold water to the pot. Stir it in and let it sit for another 5 to 10 minutes. Salt to taste.Serve with steamed riceAt least 5 to 7 cloves of garlic-- chopped1 cup of stock of your choice
