Originally from Catalonia, but a UK resident, Jordi is a vegan Zoologist specialising in animal behaviour who has been involved in animal protection for many years. In addition, he has worked as an undercover investigator, animal welfare consultant, and animal protection campaigner. His notable achievements include his involvement with the first successful prosecutions under the Hunting Act 2004, the exposé of trail hunting as a false alibi for illegal hunters, and his participation in the campaign to ban bullfighting in Catalonia. Under the pen name J.C. Costa, he published a novel titled “The Demon's Trial”, in which he explores dilemmas animal protectionists face. He has been an ethical vegan since 2001, and in 2020 became well-known for securing the legal protection of ethical vegans in Great Britain from discrimination in a landmark employment tribunal case discussed all over the world. Sanctuary Bistro is located in Charlotte, NC in the Ballantyne area and Woman-Owned by Jennifer Horton and delicious food by Executive Chef Barry Horton.Jennifer Jones Horton is owner, speaker, writer, front of the house, you name it. If it doesn't involve cooking she has her hands in it. She grew up in Gloucester, Massachusetts and has lived in Atlanta, California and now North Carolina. The passion behind Sanctuary Bistro began for Jennifer at age 13. She became concerned about the cruelty and pollution of factory farming when a friend shared a PETA flyer. From there she started buying her own veggie burgers. For a traditional “meat and potatoes” family this was considered"different" and "rebellious." As she continued learning, she slowly stopped eating chicken, eggs, and eventually seafood, out of compassion. It was hard NOT to change once she knew about the cruel treatment that is inflicted on animals. She still feels that if people would open their minds to understanding it they would not choose to hurt something. Her concerns are the effect the meat and dairy industry have on the planet and so Sanctuary Bistro is their solution for making change.Executive Chef Barry Horton is amazing in his culinary skills. Jennifer and Barry are a team at work and in life. He has been the Executive Chef at the Famous Ravens' restaurant in Mendocino Ca. He always lent a helpful hand in the kitchen growing up. I have the privilege and joy to speak to amazing human beings on this podcast and all of the people who generously share their time to be guests touch me in a profound way with their life's missions and journey. One particular guest made me reframe everything I thought I knew about achievement and endurance and the WHY behind doing what we do matters. Her passion and purpose and deep humility simply blew me away.  Fiona Oakes is an elite marathon runner and a carer of over 500 animals at the Sanctuary she founded in 1996 - Towerhill Stables Animal Sanctuary. She has competed in over 100 marathons and finished in the top 20 in two of the world's Major Marathon series (Berlin and London), along with winning the Main Start and placing top 20 in the Great North Run. Fiona has been vegan for almost her entire life and in 2012 she became the first vegan woman to complete the grueling Marathon de Sables - a race she has completed twice more since - and in 2013 won the North Pole Marathon and it's 'sister' race the Antarctic Ice Marathon. She now holds four Guinness recognised World Records in endurance events including being the fastest woman to run a Marathon on every Continent. Her successes are even more impressive when one learns she lost a kneecap as a teenager, causing her to experience constant pain when running. She does all this to promote an ethical vegan lifestyle and to raise awareness of her Sanctuary. Fiona is also the subject of a documentary made by prominent film maker - Keegan Kuhn (other notable documentaries in his portfolio include Cowspiracy and What the Health). We hear about "going plant-based" for health all the time — it's probably up there with the Keto Diet as the biggest dietary trend right now, and The Economist called 2019 the year of the vegan. The environmental impact of eating meat and dairy has started to gain more traction in the media as well, with numerous recent studies agreeing that ditching animal products from your plate is the single biggest way to decrease your impact on the earth. But if you're like I was until a couple years ago and don't happen to run in the same circles with many animal activists, there's not as much discussion in mainstream media about the animal rights side of veganism. In this episode with my guest April Lang, we each share about why we decided to go vegan — not just with our diet, but also our overall lifestyle choices. As I mention in the intro, it's very important to me that anyone listening knows that I am not judging them for their food choices. There is plenty I do on a regular basis that is "judgeworthy," but I certainly hope that others give me grace for the things I am still learning and working on. There are many different causes and issues to spend your limited time and energy on (animal activism being just one), and we need all stripes of people committed to all different kinds of social and environmental justice work to keep moving the planet in the right direction. About April Lang, LCSW, SEP April is a psychotherapist in New York City, Certified Humane Education Specialist, and author of the book, Animal Persuasion: A Guide for Ethical Vegans & Animal Advocates in Managing Lief's Emotional Challenges. She also writes the column, "The Relational Vegan" for the online magazine La Fashionista Compassionista, and is a Certified Humane Education Specialist. In addition to working with ethical vegans in her private practice, she does couples counseling and helps individuals through life transitions, animal bereavement, and trauma. She also runs support groups for vegans and those who have lost an animal family member.
