Suite de notre série qui vous emmène à la découverte des délices du continent, ces plats qui font saliver rien qu'à l'évocation de leur nom. Pour le cinquième épisode, nous allons ce matin en Éthiopie. Au menu : le ti'hilo. Originaire de la région du Tigré, ce plat familial n'est pas le plus connu du pays, mais il est de plus en plus populaire. On peut désormais le trouver dans l'intégralité de l'Éthiopie, y compris dans la capitale, Addis-Abeba. De notre correspondante à Addis-Abeba, Au cœur du quartier de Haya Huwlet, le restaurant Kiros détonne. Sur les tables, pas de traditionnel shiro, cette purée de pois cassés dégustée au quotidien par les Éthiopiens. Ici, le ti'hilo est à l'honneur. « On a décidé de faire du ti'hilo car il y a encore peu d'établissements qui proposent ce plat ici », explique Melka, charlotte blanche sur la tête, qui officie en cuisine. Le restaurant fait le bonheur de Bisrat, un client occasionnel est né à Mekelle, mais habite à Addis-Abeba depuis quelques années. « Le ti'hilo est un plat traditionnel, particulièrement dans la région d'Adigrat, dans le Tigré. Mais aujourd'hui, on peut trouver le ti'hilo ici, dans quelques bons restaurants d'Addis. Ce sont devenus des endroits très reconnus », estime-t-il. Les mains plongées dans la farine d'orge qui sert de base aux petites boulettes beiges, l'un des éléments principaux du plat, Melka détaille la recette : « Une fois qu'on a pétri la pâte, on fait le selsi, un mélange d'oignons, de tomates, d'huile et de poivrons. À côté, on prépare le sejo, une purée de pois cassés. Ça, c'est le ti'hilo qu'on fait pendant le jeûne, sans viande. » En salle, le ti'hilo est servi avec une petite touche cérémoniale : une serveuse se charge de confectionner les boulettes et les dépose ensuite sur un grand plateau en métal recouvert d'injira, galette éthiopienne présente à chaque repas. Les clients piquent ensuite les boulettes avec un bâtonnet en bois, avant de les tremper dans le selsi. Une tradition qui réveille à chaque fois, chez Bisrat, un peu de nostalgie. « Manger du ti'hilo, surtout quand je suis à Addis, me rappelle ma région, le Tigré, sa culture et plein d'autres choses. Quand je commence à goûter le ti'hilo, cela me ramène là-bas, chez moi », confie-t-il. En dehors des périodes de jeûne végétarien, très suivi par les chrétiens orthodoxes en Éthiopie, le ti'hilo se déguste aussi avec de la viande de bœuf. Pour ce quatrième épisode, nous allons ce matin en Tunisie, pour savourer le mleoui. Cette crêpe de semoule, aux origines berbères, est devenue une institution dans la street food (cuisine de rue). Peu coûteux et rassasiant, le sandwich s'achète dans des gargotes de quartier et se décline en différentes versions, selon les garnitures que l'on met à l'intérieur. Pour certains amateurs, trouver le meilleur mleoui à Tunis est une activité très sérieuse.  De notre correspondante à Tunis, Yasser Hana, restaurateur palestinien vivant en Tunisie, est un fan de street food. Sur les réseaux sociaux, il en a fait sa marque de fabrique en tant que créateur de contenus, et le mleoui est son sandwich préféré. « Un mleoui, avec deux fromages, un peu de harissa et de thon », commande-t-il avec précision chez Mleoui Mahbouba, une gargotte tenue par deux sœurs depuis trente ans. « Un truc simple sans chichis, deux fromages triangle, un peu de harissa, des oignons et du thon. Pas d'omelette, pas d'olives, pas de mayonnaise pour ne pas gâcher le goût de la pâte, pour savourer le goût de chaque ingrédient seul, pour avoir dans la bouche une expérience homogène », explique-t-il. Car ce qui fait la force du mleoui, c'est sa simplicité : une crêpe épaisse à base de semoule, comme l'explique Mahbouba, qui travaille la pâte juste avant de la cuire. « La pâte, on la fait le jour même. Un peu de sel, de la semoule fine et un peu d'huile et le tour est joué. Je la remue comme ça, on la laisse reposer quelques minutes, et ensuite, on cuit le mleoui et on ajoute la garniture. C'est très frais et instantané. » Le prix, qui ne dépasse pas un euro, et toutes ses différentes garnitures en font l'un des sandwichs préférés des Tunisiens. Un sandwich qui évoque une certaine nostalgie, selon Yasser : « Le consommateur basique, il est très fidèle à son mleoui de quartier ou au mleoui dans la ruelle où il a grandi. » À quelques encablures, un jeune de 30 ans, Fahd, a ouvert sa propre boutique où il vend des mleouis déclinés dans une recette qui s'inspire de la version marocaine, le msemen, où l'on ajoute un peu de beurre et de farine. « À chaque fois, on ajoute un ingrédient et finalement, on a trouvé la bonne recette et la bonne combinaison de ces ingrédients-là », estime-t-il. « Les Tunisiens disent souvent qu'ils n'aiment que la nourriture de leur mère, mais c'est vrai que pour ces produits de street food, on préfère aller dans la rue. Surtout le mleoui. Je pense qu'il n'y a pas un Tunisien qui ne mange pas le mleoui une seule où deux fois par semaine », explique-t-il. Il propose aussi une version de la pâte au pesto ou épicée. Des variantes qui fonctionnent puisqu'il a gagné le Torchi Food Award 2024, une compétition qui récompense le meilleur de la street food tunisienne. In the Twentieth Century, Chicago's Midway Airport had a sign that read “Crossroads of the World,” and during its heyday Midway literally was the aviation center of the world.  From a historical perspective the same has been true for Chicago reaching back a century earlier as a critical hub of the railroads, during the Industrial Age as a center for trade and manufacturing, and for centuries before a meeting place for uncounted generations of Native Americans.   The geographic reality was that where the Chicago river and estuaries of the Chicago region meet the southwest corner of Lake Michigan attracted indigenous peoples, Potawatomi, Miami, Anishinaabeg, Ho-Chunk, or Sauk and assuredly others portaging the divide, arriving by canoe or on foot.  Sometimes they stayed for a while or moved with the migration of the game and seasonal changes. Hence this place called Chicago despite the low lying, swampy, muddy, and unattractive ground due to it's elemental location and convenient waterways has continued for centuries to be a key to the continent. This juxtaposition has spawned innumerable books on Chicago. In this episode we talk with author and Associate Professor of History John William Nelson Ph.D. about his recently published book Muddy Ground; Native Peoples, Chicago's Portage, and the Transformation of a Continent. This exhaustive history underpinned by impressive research re-enforces the basic fact that geography frequently dictates the destiny of an area and out of this meeting place and important key transportation link to the continent this muddy ground eventually gave rise to a mighty city.  Dr. Nelson's book brings important new insights and a fresh perspective on the Canon of portage history for Chicago to offer the reader a fresh perspective of the region and its importance for Native Americans and foundational story of Chicago's origin and settlement. La 39e édition du Festival international Nuits d'Afrique se termine ce dimanche 20 juillet à Montréal. Treize jours de concerts ont rassemblé près de 700 artistes africains, d'Amérique latine et des Antilles. Des sonorités traditionnelles aux fêtes technos en passant par des cours de danse ouverts à tous, la richesse culturelle de cet événement a transporté le public en voyage tout autour du monde. De notre envoyée spéciale à Montréal, Rumba congolaise, maloya réunionnais, trap syrienne, rythmes berbères, amazighs, yorubas ou vaudous : en un mot, les Nuits d'Afrique rassemblent. Dans le quartier des spectacles, l'Esplanade Tranquille porte très mal son nom cette semaine. Les concerts s'enchaînent dans une immersion sonore totale et ininterrompue. Chaque artiste profite de son temps sur scène pour mettre en lumière son pays et sa culture. « Le kamele ngoni, c'est un instrument purement africain. C'est un instrument qui a créé à Wassoulou, une ville peule au Mali. À travers cet instrument, je peux parler de la paix, de la cohésion sociale, du vivre ensemble. C'est très important pour moi parce qu'il faut promouvoir ta culture, ta langue. Moi, je chante en langue peule d'abord, et puis je chante en langue bambara. Je suis très content de pouvoir le faire », raconte le maître du kamele ngoni, Dicko Fils. Si la traditionnalité est partout, elle est loin de rester bloquée dans le passé. La Malienne Djely Tapa est devenue griotte pour la diaspora africaine à Montréal. Mais une griotte bien ancrée dans son époque, ayant ajouté de l'électro à sa musique mandingue. « L'afrofuturisme, pour moi, c'est d'amener nos instruments, qui sont des instruments d'héritage, de les amener dans des sonorités futuristes. Parce que quand on parle de nos instruments, on va les qualifier d'instruments traditionnels. Mais le violon aussi est un instrument traditionnel, mais il est utilisé dans la musique contemporaine. Et on ne l'appellerait pas un ''instrument traditionnel''. Donc, pourquoi ma kora serait un instrument traditionnel ? Elle peut être aussi contemporaine, non ? », interroge l'artiste. Ici, les revendications fusent de toutes parts, portées par des artistes engagés pour la justice et la paix. Le Nigérian Fémi Kuti porte un afro-beat politique par essence : « Je suis profondément convaincu que l'Afrique devrait être le meilleur des continents, un modèle qui ferait l'admiration du monde entier. Si ses dirigeants étaient vraiment engagés, s'ils aimaient leur peuple, l'Afrique serait aujourd'hui un continent épanoui, rempli de joie, vous voyez ? Et pourtant, à chaque fois que j'y retourne ou que je lis les nouvelles, j'en ai vraiment le cœur brisé. Je n'ai pas de baguette magique pour changer les choses, et je ne peux pas forcer les autres à croire en mes idées, sinon je passerais pour un dictateur. Alors, peut-être que finalement, la vie consiste surtout à se développer soi-même. Car nous allons tous mourir un jour. It's Independence Day, the 4th of July is at hand.  Let's talk about illegal fireworks - and other patriotic things. On this edition of  Generation Gap, we pay tribute to the old days of the  4th of July when celebration wasn't complete til somebody blew off one or more appendages. On this show our regulars (Dorothy - Silent Generation ) (Ray - Millennial) (Jason - Gen X) will recall how Independence Day was different in their generations. Since we've been doing this show more than 10 years, we're convinced that there really is a big difference between generations. The fact is, when children and Grandkids come into the picture, it's a wonder anybody is still speaking. That's when we come in. On Generation Gap, we try to add some light to those different groups.  But then that sounds a little dull, so let's add some excitement with Fireworks!! After all, it is July.  Now, fireworks have always been controversial - But we've always loved them.    On today's show, Dorothy will talk about how she discovered an unopened trunk, left behind after her husband's death and full of illegal fireworks. Did you ever try to get rid of a trunkful of illegal fireworks? and Ray tells about the year he inadvertently set his street on fire.  In short, It will be a lot of fun. For the kiddies, there's the story of how big sister Elaine talked her brother into being the rear end of the horse costume she made.  Poor Stephen had a terrible time.  Fun Fact: It turns out that nobody gives treats to the rear end of a horse.   According  to PBS news.The display of pyrotechnics has always  been a big part of Independence Day. Founding Father John Adams saw it coming. Commemoration of America's independence “ought to be solemnized with Pomp and Parade, with Shews, Games, Sports, Guns, Bells, Bonfires and Illuminations from one End of this Continent to the other from this Time forward forever more,” Adams wrote in a letter to his wife, Abigail, dated July 3, 1776. Fireworks were around centuries before America became a nation. The American Pyrotechnics Association says many historians believe fireworks were first developed in the second century B.C. in ancient China by throwing bamboo stalks into fires, causing explosions as the hollow air pockets overheated. By the 15th century, fireworks were widely used for religious festivals and public entertainment in Europe and early U.S. settlers carried on those traditions, the Association said. Laurent remembers vividly his trip to Sofia Bulgaria in winter 2009 when the Russian had cut the gas for Bulgaria during a -15C winter. Russia was already playing hard ball because of (guess what) a financial disagreement with Ukraine. Though the twice-widowed Catherine's heart was definitely with Thomas Seymour, Henry VIII had other plans for his future and final wife. He took to spending time at his daughter Princess Mary's court, where Catherine was part of the household, and eventually dispatched Seymour on an important - and open duration - diplomatic mission on the Continent. It took some wooing, but Catherine finally accepted the King's marriage proposal, and the couple were wed in July 1543 at Hampton Court Palace. Catherine was an exceptional Queen for him. She was deeply engaged in loving relationships with Henry's children, and her influence went a long way to stitching together some sort of family dynamic after the traumas of his exile of Mary's mother and his murder of Elizabeth's. And she thrived in the role. Catherine is the first woman in England to publish a book in her own name, and stood for the first full-length portrait of an English queen, with a rare and fabulously expensive Turkish rug under her feet, as a king would be presented. She was a reformer at heart who only landed seriously on Henry's bad side once, it seems, but was also enough of a diplomat to smooth things over and, let's be honest, possibly save herself from a bad morning on the Tower Green.
