It's New Orleans: Louisiana Eats

The life of a chef is often regarded as glamorous and exciting, but in reality, it's a hard life – exemplified by long hours and frequent financial challenges. For many, it's the only life imaginable. Nathanial Zimet, the ambitious chef behind Boucherie and Bourrée in New Orleans, falls directly into that category. Drawn to the restaurant business at the age of 15, the North Carolina native soon learned it was the only career for him. On this week's show, we sit down with Nathanial to explore what led him from London's Le Cordon Bleu to his purple food truck in New Orleans, where his culinary life here began. From Hurricane Katrina to a near-fatal shooting in 2011 – the indomitable Nathaniel has risen to the top, again and again. So has Drew Ramsey, whose family has run Hubig's, makers of New Orleans' favorite hand pies, for three generations. After a fire destroyed their factory in 2012, a return seemed improbable. But like a fried Phoenix rising from the ashes, Hubig's is back in business after a 10-year hiatus. Drew tells us his tale of tragedy to triumph. After he boards the wrong boat, he is trapped amongst the crew (Ritch Brinkley, James Gammon, Brian Doyle-Murray and Brion James) who despise him. Nathanial desperately wants to get to Hawaii to meet up with his richy-rich father. Along the way, the crew pick up Trina (Melora Walters), and Nathanial is insta-smitten. With a little luck, this cabin boy will become a cabin man. RTS searches the seas for love and wigs. Hazel, Jeremy and Collin fight an ice monster and a giant. When you have a moment of downtime, sample some fish stick kitties.

In this episode, I sit down with Nathaniel to explore his fascinating work and groundbreaking theories on paranormal phenomena. Nathaniel introduces the concept of Necronetics, a framework that connects possession, pregnancy, and otherworldly encounters as processes that replicate life forms. We dive into the evolution of certain beings and phenomena, discussing how they often manifest in archetypal forms that mirror humanity's collective consciousness. The first 15 minutes or so of this show were lost to the Streaming Gods so we join mid the conversation. Our conversation takes us into deep and, at times, unsettling territory, touching on the nature of gods, religion, and the ways these ideas shape our understanding of spiritual and supernatural encounters. Nathaniel shares the challenges he's faced during his research, from the potential dangers of diving too deep into these mysteries to deciding how and where to share his findings with the world. We also draw intriguing connections between his work and Whitley Strieber's studies on interactions with the dead, exploring what these encounters might reveal about consciousness and the unseen. Nathaniel gives us a glimpse into his upcoming book, Skin That Crawls, which will serve as an introduction to necronetics and lay the groundwork for further exploration of his theories. As his research evolves, this conversation offers a compelling look at the mysterious links between life, death, and the forces that exist beyond our understanding. In the Plus show we get deeper still into these topics really delving into the shadowlands of this subject matter. I strongly advise you to do so as this maybe the last time we have Nathaniel on the show as he maybe ending his research into this area because it has become so intense and the phenomena has been pushing back on him. As we all feel the impacts of climate change more and more each year, the need to invest in climate resilience becomes more and more clear. The World Bank estimates that by 2050, there'll be more than 1 billion climate refugees. It's not about choosing between solutions to dramatically cut emissions and investments that help communities prepare for and bounce back from climate events – we need them both to limit human suffering as well as geopolitical risks of destabilization caused by climate change. Today, we're joined by two leaders working to advance climate resilience. Nate Matthews is the CEO of the Global Resilience Partnership, an organization that supports research, policy and innovation to advance the world's resilience ecosystem. And Joshua Amponsem is the founder of the Green Africa Youth Organization and a Director of the Youth Climate Justice Fund. In this conversation, we talk about the state of the climate resilience field, inspiring examples of innovation, the case for investing in resilience, how young people, startups and big companies are all contributing, how resilience will be present at the upcoming COP28 conference and much more. Lots to learn and think about in this one. Here we go.  In honor of this year's summer learning theme, Dig In, we're digging into some authors we already know with the Books and Bites Bingo prompt, read another book by an author you love. Carrie's PickNorthanger Abbey by Jane Austen, a coming of age story that satirizes Gothic novels. Seventeen year-old Catherine Morland visits Bath with family friends, where she indulges in her love of reading Gothic novels. When her new friends, Henry and Eleanor Tilney, invite her to their home in a former abbey, Catherine's overactive imagination almost gets the better of her.Pairing: Bath Buns, a sweet enriched yeast dough bun that was reportedly a favorite of Austen's. Michael's PickGone to See the River Man by Kristopher Triana. This splatterpunk novel follows Lori, a superfan of the notorious serial killer, Edmund Cox. She corresponds with him regularly and even goes as far as to visit him in prison. During one visit, he gives her a task to prove her devotion that she of course eagerly accepts.Pairing: Mississippi Delta Infusion, a refreshing cocktail inspired by the birthplace of the Delta Blues.Jacqueline's PickClockwork Angel by Cassandra Clare. When orphan Tessa Gray's aunt dies, Tessa travels across the ocean to reunite with her brother, Nathanial, her only living relative. Upon her arrival, the Mysterious Dark sisters kidnap Tessa, who work for the Magister. During her captivity, Tessa learns that she has the power to transform into other people. The Magister wants to marry Tessa and use her ability. The Dark Sisters threaten to hurt her and her brother if she fails to comply with their demands to change into other people.Pairing: Angel Food Cake, a light, airy dessert that goes great with fresh berries.

MY ARCHITECT, is a deep dive into the life and times of world-famous architect Louis Kahn. Louis Kahn's son Nathaniel always hoped that someday his father would come and live with him and his mother, but Kahn never left his wife. In 1974 Kahn was found dead in a men's room in Penn Station when Nathaniel was only 11years old. Kahn left behind a brilliant legacy of intensely powerful and spiritual buildings – geometric compositions of brick, concrete, and light, that in the words of the Los Angeles Times “change your life.” He is considered by many architectural historians the most important architect of the second half of the 20th century. Kahn's dramatic death laid bare a complex personal life of secrets and broken promises: he led not a double, but a triple life. In MY ARCHITECT, Nathaniel travels the world visiting his father's buildings and haunts in this film, meeting his father's contemporaries, colleagues, students, wives, and children. He sets out to reconcile his father's life and work. I.M. Pei, Frank Gehry, and Philip Johnson speak movingly of Kahn's accomplishments (the Salk Institute, the Exeter Library, the Kimbell Art Museum, the Capital Complex of Bangladesh) and the women and children in his life shed light on this secretive, peripatetic man—a dynamo who gave selflessly to his art – but whose relationships were left on the drawing board, only to find completion in MY ARCHITECT. Director, Producer, narrator and son, Nathaniel Kahn joins us for a conversation on his current view of his father's life, his collaboration with MY ARCHITECT cinematographer, Bob Richman, and the opportunity to share his compelling journey with a new audience through this newly restored and remastered version of his groundbreaking documentary.
