On episode 360 of Baseball and BBQ, Barbecue Hall of Famer Melissa Cookston joins us to talk about her new cookbook, Fanning the Flames, and reveals the kind and funny woman behind the tough TV-judge persona. Then, Seth S. Tannenbaum, PhD, takes us inside his fascinating new book, Bleacher Seats and Luxury Suites, exploring how America's ballparks have reflected the class, social, and economic divisions of our society. Melissa Cookston is a pitmaster, restaurateur, and television personality.  She is a seven-time World Barbecue Champion and a member of the Barbecue Hall of Fame.  She is the author of three cookbooks, Smokin' in the Boys' Room, Smokin' Hot in the South, and her latest, Fanning the Flames: Recipes and Tall Tales from BBQ Hall of Famer Melissa Cookston. In 2021 Melissa founded the World Junior BBQ League, a nonprofit that uses barbecue competitions to teach kids leadership, teamwork, and strategy.  She also launched The BBQ Allstars retail superstore.  Melissa has appeared on both BBQ Pitmasters and Diners, Drive-Ins and Dives and as a judge on Netflix's Barbecue Showdown. Seth S. Tannenbaum is an assistant professor of sport studies at Manhattanville University where he teaches classes including Baseball and American Society, Spectators and Fans, Urban Sport, and American Sport History.  His work has been published in The Journal of African American History, The Journal of Sport History, Nine: A Journal of Baseball History & Culture, the Washington Post, and the Philadelphia Inquirer.  He joins us to discuss his latest book, Bleacher Seats and Luxury Suites:  Democracy and Division at the Twentieth-Century Ballpark. We tend to think of the baseball stadium as one of America's great democratic spaces—a place where people from different backgrounds come together to cheer for the same team. But Tannenbaum challenges that familiar idea, asking a provocative question: Has the ballpark ever really been as democratic as we like to believe?  In his book, Seth explores how major league ballparks have reflected and reinforced divisions of class, race, wealth, geography, and access. “Can you just give me a ballpark?”Florists hear this question constantly.It might sound like a simple request, but throwing out a number before understanding the full event can create confusion, unrealistic expectations, and serious pricing problems later.In this episode, Jeni explains why she does not give ballpark prices for entire weddings or events.It is not because she is trying to hide her pricing.It is because no two weddings are identical.A client might ask what flowers for 150 guests usually cost, but guest count alone tells you almost nothing about the work required.One 150-person wedding might have 15 tables with small centerpieces, a simple ceremony, an easy load-in, and no teardown.Another 150-person wedding might have long estate tables, lush floral runners, a ceremony installation, a ceiling installation, cocktail-hour flowers, multiple spaces, a room flip, and a midnight teardown.Same guest count.Completely different investment.Jeni explains how a casual ballpark can quickly become an anchor in the client's mind. If you say a wedding will probably cost somewhere between $7,000 and $9,000, the client may only remember $7,000.Then they add guests, installations, upgraded candles, a larger wedding party, another ceremony location, cocktail flowers, repurposing, a room flip, and teardown.When the actual proposal comes back at $13,500, they feel blindsided because the original number has become a serious expectation—even though the wedding itself has completely changed.The client remembers the number.They rarely remember all the assumptions that were attached to it.Jeni also breaks down the many circumstances that affect floral pricing, including the design, flower selection, season, availability, venue, setup window, staffing, transportation, repurposing, installations, room flips, rentals, and teardown.The same flowers can cost dramatically more to execute at a difficult venue or within a compressed timeline.An installation that can be completed in four hours may require several additional team members if the florist is only given 45 minutes.Same design.Different execution cost.Jeni also shares why repurposing does not automatically save money, how innocent scope creep can turn a simple wedding into a much larger event, and why inspiration photos cannot provide enough information to create an accurate quote.Instead of offering a random ballpark, Jeni recommends sharing a starting investment, wedding minimum, or typical client investment range.
