But after some school and getting some experience he found technology to be a great vehicle for social mobility. We discuss his run, the featured charity, and the bling he earned as well as an update to Aimee’s progress. EAT We continue to share healthy meals and snacks with you this week. We are getting 2021 off to a great start with some of our favorites. This week’s dish is one that can be a lunch or dinner vegetarian or vegan option. It is also a good option to warm your soul at this chilly time of year, no pun intended. Meatless Chili (With Amazon Affiliate Links to Ingredients): 1 Pound (16oz) of Dried Red Kidney Beans 2 Cans (10oz) No Salt Added RoTel 2 Cans (10oz) Fire Roasted Diced Tomatoes and Green Chilies 1 Medium Onion Diced 4 Tablespoons Cumin 2 Tablespoons Onion Powder 4 Tablespoons Chili Powder 1 Cup Bulgar Wheat 2 Tablespoons Liquid Aminos Directions: Add kidney beans, RoTel, Onion, Cumin, Onion Powder, and Chili Powder to Instant Pot. Set to pressure cook for 1 hour on high. After pressure valve releases, add Bulgar Wheat. Then, pressure cook another 20 minutes. After cooking is completed and. Instant Pot is depressurized, stir in Liquid Aminos. Serving Suggestion: Serve in a bowl with raw, chopped onion, chopped jalapeño and a dash of hot sauce or lime DRINK We got suggestions for our show in the coming year and one was the desire to see food and beer pairings. So what goes with our vegetarian chili? A website where we have found some delicious and healthy recipes for many years, Cooking Light, recommends a Pilsner. This week we try a beer from Destihl called Normal Pils. It is a bready beer with a 5% ABV. Thanks for sticking with us guys, let’s laugh over the pain!Recipe of the week: Shrimp & GritsRecipe: https://moscatomom.com/shrimp-grits/ Ingredients3 slices thick cut bacon2 cups of thawed frozen super sweet niblet corn3 cups chicken broth1 cup heavy cream2 cups stone ground grits2 cups shredded Colby Jack cheese3 tablespoons butter1 green onion finely chopped1 pound fresh shrimp1 teaspoon seasoned salt (To make your own – Equal parts Salt, Pepper, Paprika, Chili Powder, dried parsley)1/2 teaspoon garlic powder1 Lemon, juicedRecipe:Fry bacon until crispy and set aside - leaving hot grease in pan.Add in thawed corn and let cook until brown.Mix in chicken broth and heavy cream and bring to a boil.Add in grits and let cook on low until all liquid is absorbed, stirring often.Mix in shredded cheese until well combined. Set aside and wipe pan clean.Return pan to stove with butter and green onion.Once butter has melted add in shrimp, seasonings, and lemon juice. Let cook until shrimp are cooked through and butter starts to caramelize.Add bacon to shrimp and let cook 2-3 minutes.Pour shrimp over grits. Can Mixed Beans (Red Kidney, Black, Mixed, Lentils etc) 1 Small Onion 1 tsp Chipotle or Chili Powder ½ tsp Paprika ½ tsp Oregano Pinch of Allspice 1 tsp Salt 1 tbsp Olive Oil Green Onions Sour Cream, Regular or Non-Dairy Lime Wedge Peel and chop onion to a coarse dice. Heat olive oil on medium. Sautee onions 2-3 minutes until translucent. Add half of Chipotle, Chili Powder, and Paprika. Stir and continue cooking. Open, drain, and rinse beans. Rinse again. Add to onions and stir up until steamy. Add One Hop Kitchen’s Cricket Bolognese and thoroughly stir. Bring to a light simmer, reduce to low, add remaining seasonings except the salt, and let simmer for about 10 minutes. Stir in salt to taste and you are ready to serve. Texas: the land of BBQ, breakfast tacos…and of course Tex-Mex. But what if we told you Tex-Mex wasn’t created by a Texan or Mexican, but a German immigrant? On this episode of Gravy, we tell you the story of William Gebhardt, the inventor of chili powder. Gebhardt loved the chili con carne of the streetfood sold in the plazas of San Antonio. He adapted it back at his café, but quickly ran into a problem: chili peppers proved expensive and difficult to import. So he devised a solution. Gebhardt dried the peppers in an oven and used a hand-cranked coffee mill to grind them into a dust. He then mixed together the ground peppers with cumin seeds, oregano and some black pepper until he reached the right flavor. The end result? Gebhardt’s Eagle Chili Powder. As it spread, chili powder came to define the taste of Tex-Mex. Chili, enchiladas, fajitas, nachos are all dishes built on the spice. And today, Tex-Mex dominates; traditional cuisines of the region are less popular. Gebhardt’s history is a typical inventor tale. But he essentially took what poor Mexican-American streetfood vendors made, changed it and sold it for wider consumption. And boy, did Gebhardt market the heck out of it. Ingredients --- • 1 tsp salt • 2/3 cup of water • 2 1/2 cups wheat flour Equipment --- • 2ft x 2ft cutting board • Rolling pin or dowel • Small bowl of wheat flour • Long Knife or Cleaver • Container for noodles Directions --- Mix ingredients together with hands until doughy. Knead dough in a plastic bag (traditionally this is done with the feet). When the dough becomes rubbery, flatten with a wooden dowel or rolling pin until approximately 1/16 of an inch thick. Dust the flattened dough with flour and pleate to length of knife. Cut to desired thickness (1/6 of an inch recommended). Shake free excess flour, twist into bundles, and place in container. Handmade noodles are best eaten promptly. Boil noodles for approximately five minutes. Add desired seasonings. Suggested Seasonings --- • Fresh Ginger • Green Onions • Shitake Mushrooms • Katsuobushi (Dried Fish Flakes) • Basil and/or parsley • Nori • Chili Powder • Sake ^_^ いただきます (Let's Eat!)
