Lipi Roy, MD, MPH, FASAM, shares what piqued her interest in the field of addiction medicine and how she expanded her work into media outreach and appearances. Dr. Roy talks about creating her YouTube channel, Health, Humor, and Harmony, how she started her company, SITA MED, and what it takes to prepare for a media appearance. She describes her experience as chief of addiction medicine at Rikers Island Correctional Facility in New York and discusses why she feels so compelled to speak about the issues of stigma and loneliness and how they intersect. Finally, Dr. Roy offers advice for the next generation of addiction medicine providers. Dr. Roy is a physician, international speaker, media personality, entrepreneur, and host of the YouTube series, Health, Humor and Harmony. In July 2023, she founded SITA MED, a health speaking company addressing stress-related conditions such as addiction and anxiety, and has trained doctors, judges, journalists, executives, and beyond. Dr. Roy served on the frontlines of the pandemic as the medical director of COVID Isolation and Quarantine Sites for Housing Works in New York City. She also treated patients with opioid use disorder at a harm reduction clinic in the Bronx while working at multiple COVID vaccination sites. As an MSNBC and NBC medical contributor, Dr. Roy made over 350 live television appearances discussing COVID-19. Dr. Roy's work spans academia, clinical medicine, homeless health, social and criminal justice, public speaking, media and entertainment. As the former chief of addiction medicine for Rikers Island, Dr. Roy oversaw substance use treatment and recovery services at the nation's 2nd-largest jail complex. The jars, lids, sealing rings (if using), funnels, and ladles must be sterilized in a pot of boiling water for 10 minutes.8 pounds or 3.65 kilograms of small red plums, preferably Santa Rosa plums, although any juicy, sweet, red plum will do2 1/2 cups or 600 milliliters apple cider vinegar2 1/2 cups or 540 grams demerara sugar2 cups or 400 grams granulated white or caster sugar9 medium garlic cloves, peeled and mincedOne small-hand-sized piece of fresh ginger, peeled andminced (about 1/2 cup)1/2 cup or 60 grams finely chopped crystallized or candied ginger2 tablespoons red pepper flakes1 tablespoon brown mustard seeds1 tablespoon yellow mustard seeds2 teaspoons garam masala1 teaspoon kosher salt1 cup or 150 grams raisinsFirst, a trick. Pour 16 cups (8 pints or 4 quarts) or 4 1/2 liters of water into a large stock pot. This is how much chutney you'll make. You need a pot about a third larger than this for boiling. And notice where the water is—you'll need this mark for later.Pour out the water. Mix the plums, vinegar, and both sugars in the pot.Set the pot over medium-high heat and add the remaining ingredients. Stir constantly until the sugars dissolve. Bring to a boil, stirring often.Reduce the heat to low and simmer slowly, stirring often, until thickened a bit, until the chutney in the pot comes to about that mark where the water was in the first step.Ladle the chutney into eight clean 1-pint or 570-milliliter jars. Bio Caroline Wright is a cook, writer and terminal brain cancer patient. During her undergraduate education in Paris, Caroline was inspired to turn a life-long interest and passion for food into a career. Caroline attended the La Varenne culinary program with Anne Willan in Burgundy, then started her career writing and styling recipes as a food editor for Martha Stewart's Everyday Food magazine, which folded in 2012. Her original recipes have appeared in a variety of national magazines since, including Cooking Light, Southern Living, Every Day with Rachael Ray, Real Simple and Health. While writing articles, she authored three cookbooks: Twenty Dollar, Twenty-Minute Meals (Workman 2013) and Cake Magic! (Workman 2016), two personal books that capture her fresh and friendly recipe style, plus another that transformed the recipes of a Catalan chef and restauranteur into home cooking, Catalan Food (Clarkson Potter 2018). Then, in 2017, Caroline was diagnosed with terminal brain cancer. After her diagnosis, Caroline shifted her diet, started a vegan soup club for her friends in Seattle who cooked for her when she was sick. She began writing personal essays regularly about her cancer as it relates to food on her blog called “The Wright Recipes,” as well as on other major online publications including Food52, The Kitchn and Bon Appétit. She wrote a children's book for her sons about her enduring love, entitled “Lasting Love,” published by Rodale Kids (a Random House imprint) in August 2019, and has another children's series about baking by HarperCollins called Little Bakers that was released in Fall 2021. Heat half the olive oil in a large skillet over medium heat, brown chicken on both sides. Remove from skillet and reserve Add remaining olive oil to skillet along with onion, garlic, ginger, and Tajine spices and cook over medium heat until onions are soft, about 5 minutes Pour in chicken stock and tomatoes, bring to a boil. Arrange chicken thighs on top and cook over medium heat until chicken is cooked through, and sauce has thickened, about 20 minutes. Add preserved lemons and olives, cook 2-3 minutes more. Serve chicken with sauce over top. Garnish with cilantro. Accompany with steamed couscous, rice, or mashed or roasted potatoes. Moroccan Tajine Spices: Makes ¾ cup ¼ cup Moroccan sweet paprika 2 Tbsp ground ginger 2 Tbsp ground turmeric 2 Tbsp ground cumin 2 Tbsp ground true cinnamon Combine all and store tightly covered in a dark place for up to 6 months. Preserved Lemons Makes 12 lemons 12 large lemons 3 cups kosher salt Rinse lemons in hot water. Quarter lemons from the top to within ½-inch of the bottom; pull quarters apart but don't separate. Generously pack inside of lemons with salt, push quarters back in place. Place a layer of kosher salt on bottom of a sterilized glass jar. Add a lemon, pressing down so lemon releases its juice. Add remaining lemons with salt in between layers. Allow lemons to cure at room temperature for 30 days, turning jar upside down every few days to redistribute salt and juice. As lemons soften, syrupy juices will form, which should cover the lemons. Keep packing lemons down, adding salt as they ripen so they are always covered with salt and/or juices. Refrigerate after 30 days. Lemons will continue to ripen, soften, and darken as the sit in the fridge but will still be perfectly good to use for up to 6 months. To use, rinse lemons as needed under cold water. Remove and discard inner pulp, which will be quite salty. Scrape off inner white pith and discard. Joe chats with award winning author, chef and travel guide Pamela Sheldon Johns about her journey through kitchens and vineyards from Southern California to Tuscany. She shares what she learned from adventures working alongside Wolfgang Puck, cooking Italian Food for Julia Childs and being cooked for in the Italian countryside soaking in it's rich history. We go on to explore what Italian Grandmothers, and artisanal food producers can teach us about our own relationships to food and very real conversations about the impact that both Climate Change and a Global Pandemic are having on the foods we have come to love. Ultimately, they talk about how food can become a celebration of life itself, the things we can all do to become more mindful travelers and why things just taste better when you are on Italian Soil. So, who is Pamela? Pamela's background includes a Master's Degree in Education/Administration from the University of San Francisco and a 30-year career that has included teaching, food styling, catering, cooking school administration, and food writing. After ten years working with disabled high school students (teaching them to cook and work in food service jobs), she moved into the world of fine cuisine, first with Chef Joachim Splichal and later managing Ma Cuisine, the Cooking School of Ma Maison in Los Angeles. In 1992, she started her own cooking school at Jordano's Marketplace in Santa Barbara, bringing in local and international food authorities or classes and events. At the same time, also began working as the representative of an Italian culinary program (at Tenuta di Capezzana, and later Cantina Avignonesi), traveling to Italy two or three times a year, for two to three months at a time. While in California, she was nominated to be a lifetime member of Slow Food and started the first convivium in Santa Barbara. She was the leader of the American Institute of Wine & Food at the local level and on the international board for several years. She was the Food Editor of Santa Barbara Magazine and a columnist for the Santa Barbara News-Press, and had a program on KEYT (ABC affiliate) and a radio show on KCBX (NPR affiliate). In 1996 Pamela created Italian Food Artisans, her culinary travel business. Pamela holds wine and food workshops in several regions of Italy: Tuscany, Emilia-Romagna, Campania, Liguria, Sicily, Puglia and Basilicata, Abruzzo, Veneto, Sardegna, Marche, and Piemonte. A dual citizen in the US and Italy, Pamela lives full-time with her familly at her organic farm, Poggio Etrusco, in southern Tuscany.
