We sat down this week with one of the kindest people in the beer business, Steve Vongrimm. Prior to working in craft beer, he worked in a group home and then for CPS. Steve shares how his past experiences inform his current position and how important empathy, authenticity, and relationships are to be successful and happy. Steve now works for Destihl Brewery, located in Normal, Illinois, and he covers their Texas accounts. At this year's GABF, Destihl was awarded a bronze medal for their Haze of the Dead and a gold medal for Tour Bus. Destihl is also known for making some of the best sours in the game. Meatless Chili (With Amazon Affiliate Links to Ingredients): 1 Pound (16oz) of Dried Red Kidney Beans 2 Cans (10oz) No Salt Added RoTel 2 Cans (10oz) Fire Roasted Diced Tomatoes and Green Chilies 1 Medium Onion Diced 4 Tablespoons Cumin 2 Tablespoons Onion Powder 4 Tablespoons Chili Powder 1 Cup Bulgar Wheat 2 Tablespoons Liquid Aminos Directions: Add kidney beans, RoTel, Onion, Cumin, Onion Powder, and Chili Powder to Instant Pot. Set to pressure cook for 1 hour on high. After pressure valve releases, add Bulgar Wheat. Then, pressure cook another 20 minutes. After cooking is completed and. Instant Pot is depressurized, stir in Liquid Aminos. In the midst of the last Great Recession, Potts felt the itch to turn his brewing hobby into a profession. While preparing and studying at the Siebel Institute, he fell in love with sour beer. He set out to brew it at his own brewery in an unlikely place for sour beer—smack dab in the middle of the agricultural heartland of Illinois. After seeing the demand at the Great American Beer Festival in 2011, Destihl (https://www.destihl.com) committed to expanding its sour beer production. That has led them on a trajectory they’ve followed to the current day, where 50 percent of the beer they brew is of the sour variety. Quick-sour beers are a large part of that volume, but unlike typical kettle sours, Destihl doesn’t just push a fast Lactobacillus fermentation. Instead, they use their own mixed culture built from a spontaneous capture in the brewery—an approach that gives them flavors they can call their own. Developing a process to scale their quick-sour program was not easy, and Potts walks us through the successes and setbacks along the way. Podcast: Interviews and Mustaches collide at this year's Screw City Beer Fest 2018 It was perhaps the best Screw City Beer Fest yet with a new location on the rock River in rockford, IL with an excellent performance by founders Aaron Sleger and Chris Wachowiak. The festival featured 15 new breweries (more than 50 total), delish local food, 2 hop companies (sharing hoppiness), one home brew club (that served more than 100 gallons of beer brewed by locals), a beer podcast (complete with free mustaches), a crew of awesome volunteers, drones, lawn games, line dancing, lounging, live music for the more than 2,500 thirsty, festive drinkers. This podcast episode features the Home Brew Rock Stars interviewing festival host Aaron Sleger and the majority of the Forest City Brewers club members (15 total) that brewed and served their special beers. We also interview some craft breweries that include Destihl and Polyanna, as well as the guys from Forest City Hops and Live Wire Hops.
