This is the Brussels Beer City Podcast.This edition of the podcast is a brief interruption to our regular broadcast schedule, as we're not talking diaspora bars this time around. Don't worry though, normal servicel will resume soon.Instead, this episode is a one-off, about a very particular kind of beer that's just about to be launched in Brussels. To mark the launch of Brussels Beer Project's Dansaert Gueuze, I sat down with five of the people involved in making this landmark beer.Why is it a landmark beer? Well, to get the full story, you'll have to listen to our conversation, which took place a few weeks ago in the cellars under BBP's Dansaert brewery in central Brussels. But suffice it to say this much by way of introduction. Lambic is Brussels' indigenous beer tradition, and having dominated Brussels' brewing scene 120 years ago, by the beginning of the 21st century Brasserie Cantillon stood alone as the city's only Lambic brewer. Until BBP announced their Dansaert Lambic programme and released their first blends in December 2021. For the intervening two years, Cantillon could continue to claim their place as the city's only remaining Gueuze producer - Gueuze being a blend of variously-aged Lambics. And now, with the launch of BBP's Dansaert Gueuze, there are two.But as I said, I'll let the brewers explain it all.It's an episode for the beer nerds among you, and it' a little longer than the usual format. But even if your knowledge of Lambic beer and brewing is barely skin-deep, I think you'll find something interesting in the story behind Brussels Beer Project's Dansaert Gueuze.So here's me talking to Tiago Falcone, David Santos, Jordan Keeper, Sam Fleet, and Dimirti Van Roy of Brussels Beer Project. Hendrick Verspecht joins Herlinda Heras and Harry Duke today on Brew Ha Ha. Hendrick is a co-founder of the first authentic Belgian-style brewery in Sonoma County, cuVer Brewery. The last time he was on Brew Ha Ha was this episode on September 16, 2021, when cuVer was just about to open their Windsor location to the public. Since then the brewery has won an important award and has seen an increase in orders for its award-winning brew. He learned brewing in his garage at home in Belgium and studied plant biology at university in Belgium. Now the family has this brewery in Windsor with a lot of others nearby. Tara Nurin will call in from Minneapolis, Minnesota to report on the Craft Brewers Conference. They had the most entries they have ever had at this year's edition. Tara's call is posted separately on this podcast episode.  Hendrick and his extended family opened the brewery just over a year ago to make the Belgian styles that they missed. They had an opportunity to purchase a brewery and they have had a great first year. They are located off Bell Road in Windsor in the beverage district near Artisan Alley. Check the website for up-to-date hours. The Award-Winning Pepperwood Ale cuVer Brewery won the award for Best Session Beer for their signature recipe called Pepperwood Ale. It also won an award as a home brew at the California State Fair in 2018. He is especially proud of the fact that they won an award with a Belgian beer, in a category that is not strictly for Belgian beer. It was for any that are ABV 5% or less.  It is made to be refreshing and relaxing and not too strong. Hendrick says "it's a farmworker's beer.  I just went for local spices that I find in my backyard." The native California Bay Laurel is also called the Pepperwood tree. He also uses Meyer lemon peel, and finding enough of those can be a problem. But it also uses Saison yeast, which is a key ingredient. Belgian beers are fermentation-driven and a lot of the flavor comes form the yeast itself. They are snacking on Herlinda's home-made frittes with the beer, which are a daily chow in Belgium. "It happens to be thee perfect beer pairing food," says Hendrick. Their orders have increased since they won. Lambic and Gueuze Styles He has also brought some other special Belgian beers for tasting. Lambics are a style of spontaneously fermented beer, made in the Bruxelles area. You don't add yeast to it. It is exposed in a shallow, flat vat called a cool ship. Russian River Brewing Co. has one and Shady Oak has a mobile one. It picks up yeast in the environment, then gets pumped into barrels, where it slowly starts to ferment. This bottle is a 2020 bottling, so it has been in the bottle for 2 years. A Lambic is a single brew and the Gueuze is a blend between 1, 2 and 3 year old brews. "It lives somewhere between beer, wine and kombucha." There is even a pellicule that is film floating on top where the microbes are growing. (Pellicule is Latin for "film" literally "little skin.")

This episode you’re about to hear was recorded during San Francisco's Beer Week in February 2020, so the context is removed a bit from what’s happening in the world right now, but the information is still valuable, and we want to share it with you. Listen for an update at the end of the episode. How many times have you sat down at a nice restaurant and perused the drinks menu, only to find yourself thoroughly disappointed by the beer list? Ben Henning, a beer buyer for two Michelin-starred sister restaurants in San Francisco, makes it his life’s work to ensure that that never happens to his patrons. Henning works with State Bird Provisions and The Progress, two widely lauded neighboring restaurants in the city’s Fillmore District. You’ll often catch him on the floor working alongside waiters, discussing the restaurants’ robust beer offerings with guests, and espousing the merits of pairing beer with their many exceptional dishes. But Henning isn’t always successful at converting the wine drinkers. In the high-end restaurant game, convincing guests to consider beer over wine or spirits is always an uphill battle, even though Henning, a certified Cicerone with years of buying experience, is bringing in the best of the best. On any given day, State Bird and The Progress carry carefully selected, rare Lambics and farmhouse ales. On the day I arrive to speak with Henning, in the middle of San Francisco Beer Week, the restaurant is bustling ahead of its 4 p.m. opening. A line is forming outside of locals hoping to snag one of the few tables kept open for walk-ins. Management is readying for the opening of two new restaurants elsewhere in the city. Upstairs, staff is setting up for a private event, and just after Henning and I begin our conversation, we’re asked to relocate to another room—you’ll hear that break in the interview. In food and drink we often talk about the supply chain—the line we draw between the farm and the glass. The truth is, it’s far more complicated, and far more protracted than that.  The beer world is a web containing thousands of people who work to get beer in your hands, and only a few of them brew it, still they influence which beers are brewed, how they are packaged, how they get to the bar and how they are served. Even a small scale beer scene like Britain’s is full of people you have never heard of, but who influence what you drink on a daily basis. Few of them have had as much influence as Colin Gilhespy, managing director of speciality beer importer Cave Direct. [Disclosure: I worked at Cave Direct from 2013 to 2018.] He has been in the distribution business since the early 80s, when he and his dad were among the first to bring Belgian beers across the Channel. Not just any beers either, but niche, expensive beers Trappists, Lambics and Flemish reds. At the same time that some Californian homebrewers were just waking America up to adventurous beer, Gilhespy and his family were doing the same in the U.K. I’ll leave the stories to him, but over the last 40 years he has had a huge hand in the growth of the British craft beer industry as it grew from the ashes of 1970s consolidation to one of the world’s most diverse and exciting scenes. From growing the Belgian beer category to helping new British brewers on the way up, he has laid a path for huge change and over the last decade has seen phenomenal growth.  Cave Direct is now the U.K.’s only national direct-delivery beer wholesaler, and Colin’s services to the Belgian beer industry has even won him awards from the country’s brewing guilds. Even so, it’s difficult times to be an importer with Brexit on the horizon, huge competition from macro-breweries buying taps and pushing prices down, and several buyouts of breweries that Cave had built their business on. There’s still a long way to go. I joined him and sales director Neil Kitching at the Beer Merchants Tap, Cave Direct’s bar in East London where they have just taken delivery of their first batch of spontaneous wort for a blendery project, and where in June they will host their 40th birthday party with the breweries and friends that helped them come this far. Fundada em 1822 por Joos Frans Lindemans, a cervejaria permanece uma empresa familiar, hoje nas mãos da sexta geração, representada por Geert e Dirk Lindemans. No local onde hoje é fica a segunda maior produtora de Lambics do mundo, originalmente encontrava-se uma fazenda. Como não havia trabalho a ser feito nos campos durante os meses de inverno, o primeiro Lindemans resolveu começar a produzir cerveja seguindo a antiga produção das cervejas de fermentação espontânea. Durante a abertura da loja Mestre-Cervejeiro.com Sorocaba encontrei nas prateleiras dois rótulos que estão fazendo muito sucesso na rede Mestre-Cervejeiro.com por seu visual atrativo e estilos pouco comuns: a Bacchus Oud Bruin e Bacchus Kriekenbier. O estilo Oud Bruin, também chamado de Flanders Brown Ale, é uma Ale tradicional da escola belga que tem perfil ácido, envelhecido, lembrando vinho, da mesma tradição que as mais conhecidas Flanders Red Ale. É um estilo ainda pouco conhecido pela maioria dos cervejeiros e cervejeiras no Brasil, que muitas vezes orbitam pela escola americana, mas vale muito a pena experimentar. Neste episódio provo a Bacchus Oud Bruin e também a Kriekenbier, que apesar do nome não é uma Kriek Lambic mas sim a base da própria Oud Bruin mas com adição de cerejas na proporção de 15% da receita. O Kuaska é um dos maiores especialistas em cerveja da Itália, autoridade em cervejas belgas, e um dos criadores da famosa taça Teku -- desenvolvida junto com Teo Musso, cervejeiro da Le Baladin. Além da honra de participar com ele e tantos outros grandes especialistas do time de jurados do Brussels Beer Challenge, tive o prazer de gravar a conversa que tivemos no bar Kulminator, na Antuérpia, conhecido por ofertar exclusivamente cervejas belgas envelhecidas. Os caras tem cervejas trapistas, Lambics, todos os estilos belgas que se puder imaginar, com as mais variadas idades. Neste vídeo provamos uma Eylenbosch Framboise de 1987, e uma Rodenbach Vintage 2011. Realmente uma experiência fantástica, recomendo a visita ao Kulminator para qualquer amante da cerveja que estiver na Bélgica. E aí, já provou uma cerveja envelhecida?
