The craft beer scene in Australia is growing at a rapid pace each year, with a new brewery opening up on average every 6 days. A few mates from Sydney have decided to have a crack at it, but found it hard to find information out there about opening a new brewery in Australia. They're recording all their conversations with brewery owners and professionals, sharing their learnings via a podcast to other aspiring brewery owners.
Continuing with our Wild Ales & Fermentations segment, we wrap up with the final episode of the segment with part 3, where I chat with two US based guests, both with big accolades in the realm of beer science and that is none other than Lallemand East Coast Technical Manager Molly Browning and Dr Matthew. J Farber of University of Sciences in Philadelphia to discuss all things Spontaneous Fermentations in relation to Sour Beers. We cover some interesting ground including the sour beer boom both in the US, Australia and other countries, the different types of sour beers in the market, the unique back story of the Lallemand Philly sour yeast that was isolated in Dr Matthew J Farbers lab in Philadelphia, the different bacteria's that contribute to sour beers, as well as the various approaches professional brewers are taking towards brewing sour beers in modern times. It's a great chat with Molly and Matt, who both enjoy a beer during our discussion to share with the audience their wealth of knowledge and insights in relation to sour beers and spontaneous fermentations. We continue with our Wild Ales & Fermentations segment, where I chat with brewery owners that are pushing the envelope in regarding to the unique types of beers they are producing and offering to the craft beer market. In part 2, I chat with Husband-and-Wife duo Alex & Yvonne Jarman from Botany based brewery, Slow Lane Brewing. Despite the name, Slow Lane, are quickly building a reputation within the brewing community especially here in Sydney on brewing and putting together some quality complex beers in the form of traditional European style beers. Having a barrel aged program, open fermentation practices and trying to brew true to the style by focusing on the fermentation side of their beers, the typical turnaround for beer in the tank to a customer's glass is much longer than other modern-day lager & pale ale breweries, which is where Slow Lane derives its name from.Being open not much longer than 12mths, and battling with ongoing lockdowns and COVID restrictions, Alex and Yvonne have expertly navigated their new brewery business to some early day's success, which much more to come I imagine. It's a great chat with both of them, who explain their journey of opening up, their passions when it comes to brewing particular styles, and breath inspiration to other aspiring brewery owners who may be looking at offering a unique point of difference as well.EPISODE LINKS:https://slowlanebrewing.com.au/Visit us at www.buildmeabrewery.com.au for more exclusive Brewery Building Content. Also like and follow us on FacebookBuild Me A Brewery Facebook PageBuild Me A Brewery Discussion GroupAnd Subscribe to our YouTube ChannelBMAB YouTube ChannelSeries 2 Partner Sponsor:https://www.lallemandbrewing.comEpisode Supporting Sponsor:https://dmebrewing.com/
Today's episode we begin our Wild Ales & Fermentations segment where we chat with brewery owners that are pushing the envelope in regarding to the unique types of beers they are producing and offering to the craft beer market. In part 1, I had the pleasure of speaking with Marrickville based Brewery Owner of Wildflower Topher Boehm to discuss their unique brewing & beer offerings in relation to wild yeast and barrel aged blending.I was very much excited to have Topher on the podcast to discuss how he uses wild yeast that he has collected and cultivated over the years from the regional bushlands of NSW to express one-of-a-kind beers that not even the hardcore beer punters have experienced before. His childhood always evolved around making good food from scratch and learning to have a craft that can be perfected over time that should never be clouded or hurried by money or popularity and this reflects in his business philosophies with Wildflower. He is a big believer in starting small and scaling up organically within your means as he shares with the audience some very interesting business advice for those looking at starting a brewery, especially in regard to the unique business model they have established. Not a topic or segment that I considered when starting this podcast. They can be applied to any business across practically any industry, but our episodes and conversations today are tailored and applied to life within a brewery's business. More than just one topic, but I feel they all have an important role to play and they seem to interrelate and blend into one another, and that is People & Culture, Training & Safety within A Brewery and across the greater industry itself. In part 1 of the segment, I talk with Chief Brewer at 4 Pines Brewing Co, Chris Willcock. Chris has been working within the brewing industry for over 10 years now, and is well placed to share his experiences and insights of seeing a small family run brewery gain growth and momentum into a medium and large sized one to then eventually being bought out by the big boys, and not just once but twice in his brewing career. In this time, his gotten to see the work and team cultures change and adapt, the challenges a business experiences when it comes to dealing with growth, and how it's systems and processes have had to evolve to become more formalised. Chris also is a qualified Master Brewer, being a pass student of the Institute of Brewing & Distilling, and shares further details on the important role the IBD has played in the formal training and development for brewers globally. We also talk about the self-distribution and traditional distribution models and how the Kaddy platform combines the two creating an interesting hybrid way of doing business in the wholesale distribution space. A breweries brand is so important in a continuously growing and competitive market place. Brewing beer is only a small part of a brewery's overall operations, and whilst a good quality and consistent product can speak for itself at times, having a well thought out marketing plan on how you are going to ensure your beer is getting into more thirsty beer drinkers hands is another key aspect, and in my opinion an often under prioritized focus for a new brewery. In part 1 of the segment, I talk with former Head of Marketing at Ballistic and Founder of 4Hearts Brewing Wade Curtis to discuss the importance of a brewery having a plan of attack when it comes to their marketing and brand development. Having a career background in Marketing, Wade wet his appetite for good beer during at trip overseas in 2001 sampling beers from the UK, Belgium, Germany and the like. His first step into commercial brewing came with doing a test batch as Bacchus Brewing in 2010, and got going this way through the gyspy and contract brewing route. He then went onto open up 4Hearts Brewing and then joined the Ballistic guys taking the role as Head of Marketing. So you've built your brewery, customers are enjoying having your beers in your tap room, demand is starting to gather momentum, now what? Have you considered what you will do for takeaways other than growlers, are their opportunities to get your beer into local bottleshops or pubs, or are there talks currently going on with beverage distributors to send your beer far & wide? This is when you need to start thinking about a strategy with managing your beer packaging.Part 1 of the segment I talk with Managing Director Chris Kelly from East Coast Canning. Chris has a background in science and after travelling around the US with his wife many years back he quickly noticed their majority of beer was being served in cans. Knowing that this was something that wasn't quite happening over in Australia, that light bulb moment came on for Chris where he could build a business to fill a gap in the market over here and that's when the birth of the mobile canning service East Coast Canning got started. In my chat with Chris he talks about the services they offer to breweries for canning their beers, when and why breweries consider using them and some interesting insights about beer packaging within the Australian and other international markets. Having started out as a fellow homebrewer he then landed a job as a Packaging Assistant at Little Creatures and then as a production Brewer at Gage Roads during their big growth phase and then finally getting the opportunity to craft his own beer recipes as head brewer at Lovedale and Sydney Brewery. Having won awards and medals for their beers, Michael then felt the need for a new challenge making the jump over the hops supply side of the table at HPA. Michael shares some great advice to aspiring and established brewery owners when it comes to setting up hop contracts, recipe design and much more. In today's episode I chat with Julian Sanders from Spark Breweries & Distilleries based in Melbourne, VIC. Spark started providing services to the brewery industry back in 2014 who primarily provide systems from 5HL right up to the production scale 80HL brewhouses. Having a background in Engineering and Commerce Julian honed in on his craft and vision for what has become the modern day Spark business by spending time over in the UK absorbing their real ale culture while doing some practical engineering by day. He then found his way back to Oz, studying everything craft beer. He soon became a beer judge and helped at various beer events so it was only natural that he combine his two passions to become a brewery and distillery design engineer. Spark started making a bit of noise in both the Australian market and international ones after developing a snug, low foot print, 2 vessel stackable brewhouse system called the SPARK K500 which earnt Julian and his team an international patent for which has become a hit to the brewpubs of this world supplying 5 & 10HL systems in this compact model to nano breweries for pubs, clubs, cafes and even seriously keen homebrewers with big garages. Julian provides some great insights on what brewery model concepts that neatly tie into the decisions you can then make on the types of systems and equipment you should be looking for. Having been involved in over 40 brewery installs in his career in the industry, Julian is very well placed to provide aspiring brewery owners advice and perspectives on what to consider when purchasing equipment for their brewery.EPISODE LINKS:Spark Breweries & Distilleries WebsiteVisit us at www.buildmeabrewery.com.au and sign up to our mailing list to be the first to know when episodes launch plus exclusive Brewery Building Content. Also like and follow us on FacebookBuild Me A Brewery Facebook PageBuild Me A Brewery Discussion Group

Hendo did the gyspy brewing model for many years and built a massive cult following with his beers eventually developing a big core range exciting beer geeks all over the country with his innovate beer styles. Eventually things didn't quite go to plan for Hendo with the BrewCult brand which he explains in more intimate detail in our chat, in which he then decided to take a step back from running a brewing business to just working in the industry, by having a stint at Stone & Wood as a shift production brewer. After finding his feet, and deciding on what next is in store for him in the Beer Industry he then began consulting breweries on best brewing practices and quality processes for their beer production which gave birth to his current business Rockstar Brewer. Hendo does not hold any punches and is brutally honest about what it takes to open and run a successful brewery. This is Part 2 of the Finance & Capital Raising segment of the series. This episode I chat with Jason Baylis from Red Windows Capital who specialises in equipment finance for the Brewery & Winery industries. This is another interesting option to explore when it comes to accessing much needed capital when starting out with the building of your brewery. The purchasing of your brewery equipment such as a brewhouse, fermentation tanks, heat exchangers, glycol units, pumps, clean in place systems, keg washers and canning lines just to name a few, are going to be a huge bite out of your budget when first starting out. This option of being able to finance your equipment through a rental agreement with a service such as Red Windows Capital, enables you to free up funds when you are first starting out to dedicate towards other areas of the business that might otherwise be neglected in the beginning such as marketing, accounting systems etc., due to the limited funds left over in the budget if you were to outlay those costs for equipment outright in the beginning. Jason explains this financing option in much more detail and how it all works for aspiring brewery owners. We now move into our topic specific segments of the podcast series, and a very early consideration in your brewery building journey should be considering how you are going to raise the necessary finance & capital for it.In this episode I briefly cover some financial options available to aspiring brewer owners and entrepreneurs including Home Equity Loans and Angel Investing. The interview that follows is my sit down chat with Jonny Wilkinson from Equitise. Equitise was one of the first equity based crowdfunding platforms in Australia after government legislation being passed making it legal back in 2018, following other countries such as the US and the UK. If you have ever heard of reward based crowdfunding platforms such as Kickstarter and Pozible where start ups can launch campaigns with a fundraising target, in the hope of interested fans or onlookers who will donate money to it in exchange for some non-monetary return such as merchandise, novelties or the option to purchase their product or service that you helped fund. With equity based crowd funding, this allows interested investors to purchase equity and shares in a business on the platform. Building a solid brand and loyal following they took the opportunity to purchase Young Henry's brewhouse equipment a couple years later, holding it in storage for sometime until they finally left the Young Henrys nest and finding their own physical premises and setting down roots in the Marrickville area. Glenn has a lot of advice to give on equipment sourcing, gypsy brewing, as well as thoughts on a topic that hasn't been spoken a lot about so far, and that is the importance of safety within a brewery and considerations for aspiring brewery owners around meeting Australian standards with their equipment and ensuring a safe workplace for your employees and customers.EPISODE LINKS:https://thegrifter.com.au/Visit us at www.buildmeabrewery.com.au and sign up to our mailing list to be the first to know when episodes launch plus exclusive Brewery Building Content. Also like and follow us on Facebookwww.facebook.com/buildmeabrewery
