Advent 2021 Day 11 brings another Nerdbrewing beer. Hashmap is a smoked imperial stout with lapsang souchong tea. Lapsang souchong is a black tea consisting of Camellia sinensis leaves that are smoke-dried over a pinewood fire. It gives a pleasant smoky flavor to the beer when combined with Nerdbrewing's rich chocolatey, coffee-ish base stout. This is the first release (and maybe the only) Hashmap release. Hopefully we'll see more in Hashmap beers released.

The host and one of the tea importers from Trident Cafe and Teas, Jake Dirnberger, and filmmaker, Josh Hyde, steep a Smoked Lapsang Souchang. This Lapsang Souchong is smoked over a pine fire in a special split-level room for about 15-20 hours. The leaves are then rolled and withered until they are almost completely oxidized. The large dark leaves plucked from a Wuyi cultivar outside Fujian's famous Tong Mu Guan Village are much higher in quality than most Lapsangs on the Western-facing tea market. The wild harvested tea leaves are from trees around 80 years old. The smoke is very balanced with the tea's natural sweetness. The taste is suggestive of hickory-smoked bacon or ham, with a strong piney and honey sweetness which round it out. Es ist schon wieder ein bisschen her, dass ich hier über Tee geschrieben habe aber das soll natürlich kein Dauerzustand sein. Vor Kurzem habe ich auf Twitter eine spontane Idee gehabt, die -- für mich überraschend -- auf nahezu ausnahmslos positive Resonanz gestoßen ist. Daher kann man ab sofort unter der Angabe "Das Teepaket von Dominik Hammes" oder "Die Drei Tees, die Dominik Hammes empfiehlt" oder das "Hammes Teepaket" etc. pp. drei von mir favorisierte Tees bei meinem Stammteehändler bestellen. Das ist mir insofern unangenehm, weil ich die Tees ja nicht selbst herstelle und meinen Namen ungern so weit nach vorne schiebe. Da es aber für viele von Euch den Bestellprozess erleichtert, haben Herr Stricker und ich uns darauf geeinigt, das anzubieten. Der Mehraufwand für ihn ist ja nicht groß, ich verdiene dabei übrigens nichts, weil ich das auch gar nicht will (wenn Ihr jetzt den Laden leer kauft, reden wir da vielleicht noch mal drüber aber das hier ist einfach eine kleine Gratiswerbung, wie Ihr wisst, 8hat die Pandemie für viele im Einzelhandel Umsatzeinbußen zufolge gehabt). Im Folgenden gibt es alle Infos zum Bestellvorgang und ein paar Worte von mir zu den Tees. Falls Ihr mir komplett vertraut und einfach losbestellen wollt, schreibt Ihr einfach eine Email an bestellungen.teestricker@gmail.com gebt an, wie viel Gramm der drei Tees Ihr haben wollt. Dabei habt Ihr natürlich alle Freiheit dieser Welt und könnt einfach "von allem 50g, 100g, 250g" oder sogar mehr bestellen oder für jeden Tee unterschiedliche Mengen anfordern. Dann braucht Herr Stricker natürlich noch Eure physische Adresse und das wars auch schon. Bezahlt wird auf Rechnung (liegt der Bestellung bei) und ab 30€ kostet der Versand auch nichts mehr. Onto the teas. Wichtig: Ich habe mich nach langem hin und her entschieden, einfach meine drei am häufigsten bestellten Tees in das Paket zu tun. Das bedeutet: Es sind ausnahmslos schwarze Tees, falls Ihr die also nicht so sehr mögt, müsst Ihr warten, bis die liebe Oddnina ihr Paket ankündigt (ja, wird es geben!). Tee #1: Halmari (GTGFOP 1) - ein Assam der für meinen Gaumen den präzisen Sweetspot zwischen aromatisch und "Tritt in den Hintern" schafft. Sprich: Ähnlich wie bei starken Kaffees kann man hier nicht rumdiskutieren worum es sich handelt. Der Halmari ist ein malziger Assam, der sich hervorragend zum Wachwerden eignet. Ich trinke ihn pur aber wie alle nicht aromatisierten, kräftigen Schwarztees, bieten sich Milch und Zuckerarten an um den Geschmack zu ergänzen. (Kleiner Hinweis für die, die nicht genau wissen, in welche Richtung ein Assam geschmacklich geht: English Breakfast Teas und auch Osftriesentees haben oft einen hohen Assam-Anteil, bestehen aber meist aus Mischungen verschiedener Tees mit kleineren Blättern als der Halmari). Für einen derartig hochwertigen Tee, finde ich den Halmari erschwinglich, muss aber auch sagen, dass ich im höheren Preissegment einfach noch nichts geschmeckt habe, was den Aufpreis wert ist. Hoffen wir, dass mein Gaumen weiterhin so unempfindlich ist. Tee #2: Duke of Grey (bio) - Eine Earl-Grey-Variante von Ronnefeldt - auf Assam Basis. Damit kombiniert dieser Tee zwei meiner liebsten Teevariante: Die Frische der Bergamotte (in diesem Fall ohne Aromastoffe sondern mit echtem Bergamotteöl) trifft auf den kräftigen Abgang eines Assam und damit haben wir auch direkt die Antwort auf die Frage, was denn mein liebster Earl Grey sei. Hierbei handelt es sich natürlich um eine Mischung, derartige Tees müssen ja den Marktgesetzen folgen und immer gleich schmecken, was man bei Naturprodukten nur erreichen kann, wenn ein Profi den Ziel-Geschmack durch das Mischen und Abschmecken unterschiedlicher Tees nach jeder Ernte neu erzeugt. Tee #3: Lapsang (bio) -  Lapsang-Tees sind eine gänzlich andere Schwarzteeerfahrung. Die Teeblätter werden nach der Ernte intensiv geräuchert, was sich in der Tasse auch als dominantes Aroma niederschlägt. Die Wirkung des Geruchs und des Geschmackts ist individuelle sehr unterschiedlich: Die einen denken beim Geruch an Fisch, die anderen an Speck oder Wurst - typischerweise geräucherte Lebensmittel. (Was einem mal wieder verrät, dass viele Lebensmittel gar nicht so schmecken, wie wir denken, sondern einfach Aromen und Salz gut annehmen und mit ihrem Fett sehr gut an unsere Geschmacksnerven verkaufen können.) Bei mir weckt es Erinnerungen an Lagerfeuer und Gemütlichkeit. Lapsang ist pures Wohlbefinden, selten bitter und - so ein altes Interview mit Patrick Stewart - wäre beinahe der Lieblingstee von Captain Jean-Luc Picard geworden. Wunderbar. Das ist es also, das (Schwarztee-)Paket, das ihr ab sofort bei Tee Stricker bestellen könnt. Natürlich ist es gerade ein wenig warm für Heißgetränke (ja...ja... in vielen Kulturen trinkt man sie gerade dann, ich weiß) als weitere Option daher ein kurzer Tipp und ein Heinweis: Ein Grüntee, den ich sehr gerne kalt aufgieße: Shincha Wakana (Kyushu, bio): Hab ich teilweise über Nacht im Kühlschrank ziehen lassen und dann mit Wasser verdünnt, erfrischend, kein "penetranter", bitterer Grünteegeschmack, wie man ihn manchmal kennt. Erfrischt sehr und weitet den Geschmackshorizont ein wenig aus(Umami-Noten). Außerdem hat Herr Stricker für den Sommer die Kategorie "Cold-Brew" eröffnet, damit man sich selbst Eistees zubereiten kann, vielleicht wohlt Ihr Euch da ja auch mal umschauen. When I spoke to Will, it was 7 o’clock in the morning in London. He was eating a peanut butter sandwich and drinking Lapsang tea and I could hear his children running around in the background. Will Meyrick has a lot going on. He has seven restaurants under his belt in Indonesia, produces a riveting travel vlog on YouTube where he delves into the history and culture of the country he’s in and tells the story in a completely gripping way, he’s a photographer, a restaurant consultant and he looks a bit like Ewan McGregor. But that might be just me and the fact I know he’s Scottish…He is also part of RAA Travel’s Tasting Australian Airlines, a two-day event bringing people from Melbourne to McLaren Vale in April. Will joins Darren Robertson from Three Blue Ducks to cook lunch at Star of Greece, a Mediterranean restaurant overlooking the ocean in Port Willunga. As I mentioned, this was a phone chat, so the sound quality isn't always fabulous, I'm afraid.

As temperatures begin to drop outdoors and autumn settles into early winter, the scent of smoke rising from chimneys fills the evening air in just about every place we visit in the cooler climates. But the unmistakable aroma and taste of smoke is not something many of us actively seek out in our teas, and the famously smokey Lapsang Souchong is often overlooked by serious tea drinkers. So it's been quite a pleasant surprise discovering that high quality Lapsang Souchongs can have great levels of complexity and depth of flavor. Joining us today to chat about Lapsang Souchong are Zhen Lu and Phil Rushworth of Zhen Tea, an online tea company specializing in Chinese tea. We chat over two interesting varieties of Lapsang Souchong carried by Zhen Tea: we first sample a non-smokey version of Lapsang Souchong, which allows us to explore the base of the tea without the influence of the smoke, and then a top-grade Lapsang Souchong (pictured here), made by the same family that invented the Lapsang Souchong process several centuries ago. Zhen and Phil talk with us about the origins of Lapsang Souchong and what distinguishes it from other teas, and especially from other smokey-tasting teas, in terms of its cultivar and processing. We discuss components of aroma and taste in both the non-smokey and top-grade versions. And Zhen and Phil also share some of their own tea journey with us and tell us a bit of how Zhen Tea came into being. This week the show returns after a short hiatus. I'll give you a few funny tales from the past couple of months to get you in the mood for some Shiny On Form thought the episode. Pulling an octagenarian and gatecrashing a funeral are amongst the highlights. In Enabler's Corner, I enable you to the Tiny Tea Hat collection, which is the mini version of the most popular hats from Clare Devine of Knit Share Love's Tea Collection. It contains Chai, Everyday Brew, Lapsang and Liquorice. This is where it went off on one for the first time and I enlighten the world to the fact that the latest Hot Right Now craze for Ponytail Hats on Ravelry is in fact nothing to do with Facebook and everything to do with the Manbun. After this, I review Woolly Wormhead's Painted Woolly Toppers for Kids.
