A MidWest University has joined forces with a Local Development Agency to renew Bunratty Castle and Folk Park. The Technological University of the Shannon and the Bunratty LDA have been granted €50,000 under Creative Ireland's Creative Climate Action Fund to enrich the local ecosystem. The project called 'Renew' Bunratty will aim to develop a sustainable approach to tourism by repurposing materials and exploring ways of subtly shifting behaviours to enrich the local environemt. Mike Fitzpatrick is a Type 1 diabetic (T1D) who is interested in nutrition, nutrition and health policy, and diabetes management. Mike has lost over 150 lbs. following a low carb, ketogenic diet, and more recently with a carnivore diet with intermittent fasting. He has been incorporating fasting since November 2020 and has dramatically improved his health. In addition to shedding over 150 lbs., Mike has maintained an A1c in the low 5.0%, which is considered to be very low. He is constantly tweaking his fasting, diet, and exercise regimes. Mike has a powerful message about the dangers of playing the up-and-down roller coaster game with high carbohydrate foods and big doses of rapid-acting insulin, while achieving what he was told was an acceptable A1c of around 6.0%, which many experts agree is too high. Low carbohydrate diets have been scientifically proven to reduce the need for insulin for type 1 diabetics. Less insulin injected has been shown to result in more predictable blood sugar, less hypoglycemia, and maintenance of a healthy weight, among many other health benefits.
