Paul Schneider of Cinderlands (https://www.cinderlands.com) is an optimist and a realist—but first and foremost he's an analyst, studying the evolution of consumer trends and working tirelessly in the brewhouse to find creative and process solutions. He's not afraid to use all the tools at his disposal—pulling solutions from food science, where necessary—while testing, honestly evaluating, and ensuring that everything they produce at Cinderlands meets the expectations of their drinkers. The Pittsburgh brewery drastically overhauled its fruit beer program for 2024, moving away from sweeter, thicker fruit beers in favor of flavored light lagers and “beyond beer” beverages, but—as Schneider explains in this episode—that shift required significant research in the food-science space. He's also been an avid adopter of modern hop products, and here he shares their approach to layering hops in a variety of formats to achieve a variety of goals—from value-engineering IPAs for wider distribution to maximizing intensity in brewery-only releases. Today's guest, if we're speaking in beer years, is a lifelong friend. But what feels like a lifetime really only started around 2011 in Chicago when Good Beer Hunting, at the time just a personal hobby of mine, was basically unknown outside of a small community in Chicago. At the time, Paul Schneider was still a history teacher in the burbs homebrewing and volunteering at small start-up breweries around the area.  We met at a Goose Island First Thursday event, which was a loosely defined monthly occasion where fans got together in the Seibel Institute room in front of the Clybourn Brewpub. We would share dark Goose Island beers, home-brews, and other sought after bottles. It was truly the glory days of the 2nd wave of craft beer kind of thing.  The timeline is too full of milestones between then and now, but here's a quick look at Paul's career in craft beer: after volunteering around town, he got his first real gig at Solemn Oath in Naperville—as one of their first employees.  he went on to fill a broad role there between operations, special creative projects, some brewing and marketing he left to sign on as a founding brewer as a partner in a brewery in Pittsburgh that he initially consulted on and then was offered the role once they realize the multi-faceted talent and experience he brought that led me and Paul to work together in an official capacity for the first time, as GBH signed on to the project to help define the brand and trajectory of the brewery with Paul and the Warden family, for what would become known as Cinderlands  Since then Paul has become a brewer's brewer, making precise Lagers, exquisite Saisons, as well as crowd-pleasers like their sought-after Tartshake series.  Paul's unique perspective as a brewer, and also a student and former teacher of history, gives him a view on humanity and how beer fits into it that is uncommonly balanced. There's an auteur in him of the finer elements of brewing. But there's also the practical business person who knows better than to push back against the demands of the market. In fact, rather than be mutually exclusive as so many small operators often see these seemingly opposing forces—he seems to elegantly align the two to create opportunities for himself and others that are truly satisfying as a creator.  And that's not to say that holding that line is easy. It's a position that's maintained through a constantly shifting, reflective, informed effort to navigate a very human marketplace that can be both high-minded, hype-driven, and incredibly fickle at times.  The history of beer is like the history of all things fashionable. And the present is no exception.  Paul was in town for a collaboration release with his friends at Solemn Oath, and a bit of a homecoming. So we took the moment to catch up on some of these threads and open some bottles for friends and peers at the studio. We were also finalizing plans for our latest collaborative project—Cindi's Hard Mountain Tea—which is launching at PNC park in Pittsburgh as I speak.

Anyone who’s played Magic in Ohio should recognize Nam’s name, but there are plenty who don’t simply because he keeps such a low profile. He’s quietly put up Top 8s and other quality finishes at local events and larger for well over a decade now. Aside from the Vintage Championship finals we go in to great detail on here, he also T8’d Vintage Champs in 2014, a SCG Legacy Open in 2013, and a SCG Power 9 in 2005. Locally, if you want to win a tournament, you probably go through Nam on your way to the top. As we mention in the episode, Nam’s record at Team Serious Invitationals is exemplary. We’ve had 11 such events; Nam has played in nine of them and has T8’d all nine, winning one. When we first met Nam he was a Mana Drain pilot, frequently on Control Slaver. Now he would insist that he doesn’t know how to tap Islands anymore and has focused on various archetypes fueled by Mishra’s Workshops, starting with 5C Stax, dipping into Uba Stax when that was en vogue, and now switching between Two-Card Monte and Workshop Aggro. His decks are ideal representations of a long-time collector of extravagant cards: all foil wherever possible. And since he’s played Workshops against pretty much everything over the years, he has a box of shiny sideboard options that he’ll bring with him to update his list for a particular tournament’s metagame. Throughout all the successes, though, it’s patently obvious that crushing people with Workshops just happens to be a natural side effect of Nam showing up to hang out with people. His true motivator is the camaraderie of Vintage. He’s happy to loan cards to friends, even to the detriment of his own decks, and always arrives generously laden to BYOB events so he can share. He came up with the Team Serious maxim—“We are friends; we have fun”—and provided its mission statement—“We just need to be the best that we can to get better, dominate Vintage tournaments, and represent the Cleveland area. And, spoiler alert, it did. We continue with Nam’s thoughts on the rest of the Top 8 matchups. Dining in Pittsburgh: The Recap Condado and Emporio, which we recommended in our previous episode seemed to be popular destinations for plenty of Eternal Weekend attendees, since they were so close to the venue. But they also proffered delicious tacos and meatballs, respectively, so: score! Josh Chapple made it to another recommendation, Starlite Lounge, and said he was disappointed in the food but excited by the bar. The pierogis there just didn’t live up to the Team Serious hype. Josh also made it to Cinderlands and raved about it, recommending it to everyone. They make beer, have flavorful pierogis, and their menu includes rillettes and a scotch egg that look worth the trip on their own. A group of us also went to Max’s Allegheny Tavern on Saturday, which seems like a strong option in the future. Recommended by Team Serious teammate Oliver Sovol, who has gone there with his family since he was a kid, Max’s serves authentic Bavarian food, including hasenpfeffer, several kinds of wurst and schnitzel, and great sides like red cabbage, German potato salad, and spaetzle. They also serve “Bavarian nachos” (maybe skip those) and have a good beer list of local offerings and German standards. We also have some commentary on the McDonald’s Triple Stack breakfast sandwich, but questions might be better directed at either Andy Probasco or Jerry Yang, who had wildly different experiences. We also diverge into Columbus food with Los Guachos and Buckeye Pho, and we learn an important lesson about eating chocolate you find on the ground. Namely: maybe don’t. Throughout this chat Dan was drinking "ILINOHPA" the collaborative brew made by Cinderlands & Hop Butcher For The World. This DIPA clocked in with a 8.2% ABV. He was also sipping on Anchorage Brewing Company's "10 Year". This very special brew was a blend of several vintages of different bourbon barrel-aged Stouts and Barleywines finished on coconut, vanilla beans, cacao nibs and cinnamon. It clocked in with a 15.5% ABV!!! & Matt was drinking Third Moon Brewing's "Tranquility". This Hazy IPA was absolutely spectacular. It was juicy, dank & had a mild boozy finish. It clocked in with a 8.3% ABV. This is a Heavy Montreal presents Vox&Hops episode! Heavy Montreal is Montreal's premier metal promoter. They host one of North America's best Metal Festivals & present countless amazing events during the rest of the year. I am truly honored & extremely excited to have them involved in the podcast. Episode 62 : Documentaries, Dream Cannons, and Double IPAs! Nick and Alex are back for the post Independence Day pod. We discuss a few of Alex's favorite documentaries and Nick tries to be relevant with old stuff he's seen. Nick gets opinionated on holiday hours. After that, we move into the star of the summer: The Beer Fest Season! Nick is heading to Meadville for Good Vibes on Saturday! Alex recaps his meet up with Sean P of Untappd Fame and we crack a Dream Cannon: Summer Sorbet, because its the season for summer beers. Strange Roots comes up because Taco Mania is back and their regular IPAs are quickly becoming notable. Alex is struggling to form sentences but he apologized for it so it's all good, right? Nick kills spiders while we wrap up the podcast this week. Alex talks about his Cinderlands food experience and their expanding beer list. The Drinking Partners welcome Jamie Warcen and Paul Schneider, owner and head brewer for Cinderlands Beer Company in their latest release. Ed promises to become a cinders expert as the men discuss how Cinderlands emerged as both a craft brewery and independent restaurant. As the men taste a strong-smelling guava coconut tart IPA, Paul explains the process behind its tropical conception; the beer leaves Ed and Day thrilled and talkative, as they are overcome by the original taste. (Very talkative as they veer into a Drinking Partners-esque rant about candy.) Midway through, Ed drops an unforgettable pause moment before the conversation returns to beer, specifically the ancient traditions of brewing and a great explanation of the differences in saisons. The interview closes with Jamie and Paul both sharing how they develop their own choices, with some hints at their recipes. Podcast 34: The Maine Event! We're all back together and we're gonna hit it hard with some segments and anniversary parties! Abjuration and Cinderlands both celebrated 1 year this week! Shout out to @canspgh - follow them on instagram! They're posting all the can releases from local breweries so follow along and get some cans! This week's brewery of the week is Maine Beer Company! Fairly new to Pittsburgh, but you can find them at all the great spots around Pittsburgh and in Boston. Alex did his research and found out some very cool things they're a part of and how they've developed their brand. Beers: Lunch - IPA 7.0% (Jake) Another One - IPA 7.0% (Nick/Alex) Obviously we discuss the can [bottle] design and the simplicity is incredibly appealing and extremely recognizable. “Do What's Right” is Maine's motto and we discuss what that means and how they're part of the 1% to the Planet non-profit organization. Nick and Sara went to Cinderlands for their can release on Sunday after their 1 year anniversary Pajama Party on Saturday. They were first in line, btw. We discuss the can design and the anniversary glasses, which we're in love with. Saturday night Nick and Sara hit up Abjuration in McKees Rocks. If you haven't been, you need to get there. Really cool spot with super unique beers and a cool mix of independent brewing and the theatre in the building. Beers: RBWv1.1 - Rice Barleywine - 11% MIPAv1.0 - Milkshake IPA - 7.3% BA-RW v1.2 - Barrel Aged Rye Barleywine - 11.7% Abjuration still has cans of both the RBW and MIPA available. Alex wanted to make this an ASMR episode by eating a cucumber very close to the mic. So we're sorry. Sara and Nick give their reviews of the anniversary beers from Abjuration. Alex adds in his experience with Milkshake IPAs. In the mix with the milkshake IPAs we hit on Grist House's Kaboom Kandy series and how we're excited to try Kapow Kandy. Jake tells us the story of his most recent Treehouse visit. He got a new beer called Snow (a wheat double IPA) and he's really excited about it. He drank Trail Magic (German Pils) on the podcast. Jake reminisces over a year of Cinderlands and his absolute love of their beer. The next beer we sampled is called Just Baked by Hitchhiker. A beer brewed with Samoa cookies, this beer is super dark and flavorful. We launched into a conversation about our favorite Girl Scout Cookies. We set aside Just Baked and picked up Did We Just Become Best Friends? from Hoof Hearted. Thanks to Sean P! Extremely smooth and really hop forward. 8.0% DIPA Nick and Alex got a Nintendo Switch! They hit Dancing Gnome for Bee Balm, followed by Cinderlands (Lawrenceville, PA) and then Grist House for food and beer. Strange Roots and their sours are discussed. Alex likes their beer, but it's strange that they don't branch out more with their second location. Beer #2: Zombie Dust - 3 Floyds Brewing (6.2% Pale Ale) A very well balanced Pale Ale. Clear and malty but drinks like a west coast style ale. Jake tracked down Galactic Double Daisy Cutter in Boston which launched a conversation about Pale Ales. Shout out to Sean P. of Untappd fame for the pick up of Whole Punch: Tangerine from Hitchhiker this weekend! We hit up Cinderlands for Cosmic Cenote and it was a pickle tasting Milkshake IPA. We discuss the evolution of beer and the trends that occur including but not limited to the West Coast IPA and Milkshake IPA. Alex discusses the Hazy craze and the balance in the beer industry. We ask the important question about what is the next big trend? Hitchhiker is a great brewery and we would love for you to check them out! Great beer and great staff.
