Learn how Horse Thief Hollow became the most award-winning brewery on the south side of Chicago, having won 10 major awards (and counting). Horse Thief Hollow Brewing Co's Jake Nelson (Head Brewer) and Adrian Morrison (Brewer and Sales Manager) discuss the fascinating legacy of Horse Thief Hollow Brewing in Chicago's historic Beverly neighborhood, exploring the origins of the brewery's name, its cultural significance, and why the Illinois militia had to run off horse thieves in the very early days of Chicago. They also share their humble beer origin stories, including Andrian's rising through the ranks in order to get to where he is at Horse Thief Hollow. They also talk about what “cellar work” actually means when working in beer before they discuss how Horse Thief Hollow Brewing Co. has become the most award-winning brewery on Chicago's south side, including a deep dive into how they overcame the challenge of brewing high-quality Pilsners consistently in order to come up with their award-winning Little Wing Pilsner. After the beer break, they discuss Annexation, a West Coast IPA, including an explanation of what makes an IPA a West Coast IPA specifically and why West Coast IPAs are making a comeback. Jake also talks about when a beer is “done” and he doesn't feel like he needs to keep changing a recipe. Then, they discuss Horse Thief's Soul Train Sour Ale, which they insist Brian try, even though Brian is outspoken about the fact that he doesn't normally like sours. Did he love it or not? With no end in sight this entire contract negotiation may be a 2022 NFL season storyline. Yet, what if it doesn't work out and Lamar Jackson ends up playing elsewhere? If Lamar Jackson leaves the Baltimore Ravens, the Tampa Bay Buccaneers need to make a push to pursue Lamar Jackson to replace Tom Brady. I'll go over that here in this edition of Brewstilled with a Milkshake IPA from Mountain Walking Brewing as the beer pairing.

Our first Arkansas brewery on the show! The crew from Fossil Cove Brewing Co. joined us this week to shed some light on what's happening in Arkansas craft beer. If they're a good example, AR is doing OK. Tyler, Ben, and Andrew tell us about the growing beer scene in their state where a lot of folks still enjoy their light lagers. No matter, there are still plenty of IPAs and Stouts for those that want to branch out a bit. But they tell us they don't think there's anyone doing a Milkshake IPA. Can you even imagine? We talk beer laws (AR has very friendly brewery laws), dinosaurs, brown ales, beer fest, and toe suckers. (What?) They've got a Solid Session IPA, a pretty-darn-good Brown Ale, and solid DIPA. These guys were a blast to talk with and got me wanting to go back to old Arkansas and see what's up. See omnystudio.com/listener for privacy information.

In the Future everything will be about blockchain milkshakes. Since we live in the Now, Collin has downloaded this lactose luxury from his Future and 3D printed these flavors into this beer! Collin was once merely a person but has now become a triune being, manifesting as human, beverage and currency! We cover a wide array of topics on this podcast; from what really makes a Milkshake IPA a Milkshake IPA anyway? To the secret clandestine origins of this beautiful beverage and how even an insane recipe such as BitCollin somehow comes out balanced when it's passed through the HenHouse production department machine! Listen as we discuss how craft beer's past influences can help us see forward into craft beer's future, which is undoubtedly crypticly milk-laden! Don't hodl, drink fresh!

We're down to our final matchup in fantasy football and it looks like whoever wins will get their beer without battling Dru in a rock, paper, scissors face-off. (Much to his dismay.) This week we hop back over to Harrisburg for a brewery that leaves us powerless in our attempts to open their growlers and using pinky fingers as a measuring stick for how hazy a beer can be. Join us as we explore a historic Halloween night, the questionable origins of Bloody Mary, and the genuine origins of the Scots-Irish. We also explore the irony of escaping Indian raids by taking a trip down the Indian Trail, the relational politics that come with naming your child after previous wife, and the probability of being killed by a meteor. Oh, and did you know the science behind twinning?
