Paul Schneider of Cinderlands (https://www.cinderlands.com) is an optimist and a realist—but first and foremost he's an analyst, studying the evolution of consumer trends and working tirelessly in the brewhouse to find creative and process solutions. He's not afraid to use all the tools at his disposal—pulling solutions from food science, where necessary—while testing, honestly evaluating, and ensuring that everything they produce at Cinderlands meets the expectations of their drinkers. The Pittsburgh brewery drastically overhauled its fruit beer program for 2024, moving away from sweeter, thicker fruit beers in favor of flavored light lagers and “beyond beer” beverages, but—as Schneider explains in this episode—that shift required significant research in the food-science space. He's also been an avid adopter of modern hop products, and here he shares their approach to layering hops in a variety of formats to achieve a variety of goals—from value-engineering IPAs for wider distribution to maximizing intensity in brewery-only releases. On the way he meets Claire, a peppy (but not cheerleader peppy) flight attendant who may or may not turn into his stalker. Over the next couple of days Drew learns what it means to truly live and how to appreciate the crazy - a lesson we all probably need! Buckle up for random celeb characters (HI PAULA DEAN), a playlist that will be added to my Spotify ASAP, and Rusty - the guy who trains your kids to be good via VHS tape by blowing up a building. That is not a joke that really happens! Und er wird sie voneinander scheiden, wie ein Hirt die Schafe von den Böcken scheidet, und wird die Schafe zu seiner Rechten stellen und die Böcke zur Linken. Da wird dann der König sagen zu denen zu seiner Rechten: Kommt her, ihr Gesegneten meines Vaters, ererbt das Reich, das euch bereitet ist von Anbeginn der Welt!“ Dieser Text hat natürlich einen Bezug zu der Strafgefangenenarbeit im Seehaus, bei der Jugendliche sich entscheiden müssen, ob Sie den guten Weg versuchen wollen oder wieder zurück in den Strafvollzug. Today's guest, if we're speaking in beer years, is a lifelong friend. But what feels like a lifetime really only started around 2011 in Chicago when Good Beer Hunting, at the time just a personal hobby of mine, was basically unknown outside of a small community in Chicago. At the time, Paul Schneider was still a history teacher in the burbs homebrewing and volunteering at small start-up breweries around the area.  We met at a Goose Island First Thursday event, which was a loosely defined monthly occasion where fans got together in the Seibel Institute room in front of the Clybourn Brewpub. We would share dark Goose Island beers, home-brews, and other sought after bottles. It was truly the glory days of the 2nd wave of craft beer kind of thing.  The timeline is too full of milestones between then and now, but here's a quick look at Paul's career in craft beer: after volunteering around town, he got his first real gig at Solemn Oath in Naperville—as one of their first employees.  he went on to fill a broad role there between operations, special creative projects, some brewing and marketing he left to sign on as a founding brewer as a partner in a brewery in Pittsburgh that he initially consulted on and then was offered the role once they realize the multi-faceted talent and experience he brought that led me and Paul to work together in an official capacity for the first time, as GBH signed on to the project to help define the brand and trajectory of the brewery with Paul and the Warden family, for what would become known as Cinderlands  Since then Paul has become a brewer's brewer, making precise Lagers, exquisite Saisons, as well as crowd-pleasers like their sought-after Tartshake series.  Paul's unique perspective as a brewer, and also a student and former teacher of history, gives him a view on humanity and how beer fits into it that is uncommonly balanced. There's an auteur in him of the finer elements of brewing. But there's also the practical business person who knows better than to push back against the demands of the market. In fact, rather than be mutually exclusive as so many small operators often see these seemingly opposing forces—he seems to elegantly align the two to create opportunities for himself and others that are truly satisfying as a creator.  And that's not to say that holding that line is easy. It's a position that's maintained through a constantly shifting, reflective, informed effort to navigate a very human marketplace that can be both high-minded, hype-driven, and incredibly fickle at times.  The history of beer is like the history of all things fashionable. And the present is no exception.  Paul was in town for a collaboration release with his friends at Solemn Oath, and a bit of a homecoming. So we took the moment to catch up on some of these threads and open some bottles for friends and peers at the studio. We were also finalizing plans for our latest collaborative project—Cindi's Hard Mountain Tea—which is launching at PNC park in Pittsburgh as I speak.

He tells an anecdote about an accountant who asks what their goals are. They decided they needed a different accountant! He doesn't necessarily recommend this approach, but they've been industrious. New doors open up because they never had a commitment to any one path. It ended up working for them.“Our commitment was to beautiful objects” made by themselves or friends. They met someone who made porcelain earrings. They put them in their store because they were ceramic. It sold amazingly well. This underlined that people bought jewelry because it had deeper meaning—it was more personal. They started out only selling ceramic jewelry. Then they researched and branched out to other materials. They redefined their limits into something more broad. They were still craftspeople. They just included jewelers who used other materials. Their evolution was very slow, but it allowed them to learn as they went.Branching Out and Narrowing DownThey branched out from Eugene to Portland. There couldn't be two businesses like theirs in Eugene. They needed to go to a bigger city. They decided something had to give after they had a baby. They decided to stop making things and just sell. Twist is known for being an incubator for cutting edge, coveted designers. How'd they get there? His wife's and Paul's tastes are very different, but they respect each other's tastes. It is easy for them to find pieces. They have such good communication skills that it doesn't take a lot of discussion for them to make those choices.Pacific Northwest IdentityIs Paul's business uniquely suited for Portland or could it work elsewhere? The type of business could work somewhere else, but the kind of products they sell are a result of the Pacific Northwest lifestyle. It's not showy. You'd be ridiculed for wearing a large diamond. There's an appreciation for craftsmanship and quality. Their particular pieces might not work in other places, but their approach does.They are always looking for new designers and pieces. Though they don't often sell items that come in unsolicited, but he does address every inquiry. He feels responsible to do that. Their origins are with people who make things for a living. They support people who are doing things that are beautiful and do not have access to the marketplace. They are looking for originators, not second generation.Lab-Grown DiamondsThey offered lab-grown diamonds a few years ago when it was a new development. They have plans to do a collection based on that with specific lab-grown diamond producer. Paul thinks it's a clear direction the industry is moving in. The line will be ready soon.Bringing Designers to the ConsumerVictoria asks about the videos they do. The videos are all about the designers and the stories they are telling. Their daughter makes the videos. The videos are always in the designers' words. Consumers can look at the video and through them, have a two-minute visit with the designer. It adds to the impact and experience. You can understand what's going on in the pieces. Twist also has QR codes in the cases that bring up the video.Through the videos, their daughter has gotten more involved in the jewelry world. Now she works at a jewelry consultant in NY. Is it hard to “turn it off” as a family business? There's no separation. It's just life. Paul finds that it clarifies and simplifies family relationships. They are all on the same team, whether it's family or work.Overcoming ObstaclesTwist is hiring and has been getting a higher quality of applicant recently. Paul thinks the hiring market is starting to calm down. They employ 25 people, including 5 people on the website, and retail staff. They consider online its own store. All three stores (including online) were very close in sales this year, which says a lot about their online business.Any advice for other independent jewelers? Things are changing quickly in life and jewelry is no different. The values in the industry were based on rich family history and deep relationships with communities. That's changing—competing with a global market. Embrace technology and communication, he advises. Keep an open mind about what's going on. Twist was always quick to adapt, without being weighed down by tradition.Paul loves hearing about small businesses. And he likes that we are giving a voice to independent creators on the podcast. Everyone is kind of alone when they have a small business. Platforms that give them a voice can help.

Today's episode is a preview of a festival coming up in Pittsburgh on July 30th called Mixed Culture. GBH is intimately involved as partners on the branding and content side of the festival—and that's in large part because the people behind it are both clients and long-time friends of ours at Cinderlands Beer Co. This festival is a sort of “coming of age” moment for their whole crew. On the back of so many big wins—launching their second and third locations, reinventing the Foederhouse to make exquisite wood aged and mixed culture beers, and taking a medal this year for Gregg, their saison, I couldn't be more proud of what these folks have accomplished. And their brewer Paul Schneider is a personal friend of mine and we both fell into beer around the same time in Chicago going to bottle shares and tagging along at breweries until we could get our foot in the door. Of all the brewers who we worked with for our Uppers & Downers festival, no one took the assignment more seriously than Paul did when he was brewing at Solemn Oath in Naperville, Illinois. He's probably made more coffee beers than any other brewer on the planet.

Spontaneous comments from Ed and Day pair well with Paul's detailed explanation of the spontaneous process of mixed culture brewing in Day's favorite type of conversation: edutainment. This rare to Pittsburgh style gets to shine with its own festival, although Ed's suggestion that an essay praising saison be a requirement was not accepted. The conversation around mixed culture craft brewing is ripe with knowledge and will turn the average beer fan into an aficionado, but don't worry if you get confused, as Ed admits. As baseball season takes hold, award-winning journalist, writer and editor Joe Donnelly reads his short story “Bonus Baby,” which was selected for the O. Henry Prize Stories collection of 2016.  Donnelly's features, fiction and essays have appeared in such publications as the Los Angeles Times, Los Angeles Review of Books, LA Weekly, Mother Jones, The Surfer's Journal, The Washington Post, and The Times of London, as well as in numerous nonfiction and fiction print anthologies. His story “50 Minutes,” written with Harry Shannon, was selected for The Best American Mystery Stories 2012 and is the basis of a short film being directed by Paul Schneider. A 2014 finalist for the Pen Center USA Literary Award in Journalism, Donnelly serves as Visiting Assistant Professor of English and Journalism at Whittier College and edits Red Canary Magazine.
