There is a lot of uncertainty in the industry these days and folks are trying to figure out the path forward in real time. Talking with and listening to smart people offers up a lot of perspective. Guests Peter Kiley is Brewmaster and Co-Owner of Monday Night Brewing, and is an award winning brewmaster, winemaker and distiller from Atlanta, Georgia. From Monday Night's inception, Kiley's creative vision, recipe development and multifaceted approach to alcohol production have set the groundwork for the brewery's worldwide notoriety. Kiley is a founding member of the MBAA Georgia chapter, a member of The Hop Quality Group, a published scientific author and has presented at both The World Brewing Congress and The Craft Brewers Conference. Tom Beckmann is the Owner and Head Brewer of Goldfinger Brewing Company in Downers Grove, Il. Upon graduating from the World Brewing Academy Master Brewer's Diploma program through Siebel Institute of Technology and Doemens Akademie in Munich, Germany, Tom became a production brewer at Lagunitas Brewing and later worked several years as a pub brewer at Emmett's Brewing Company. He established Goldfinger Brewing, an exclusively lager beer producer, in the summer of 2020 and has acute experience with lager brewing as well as what it is like to scale up a small, lager-centric, craft brewery. Jeremy Grinkey, co-founder at Everywhere Beer Co has spent 20 years in the alcohol industry. Having spent half of that time making wine on the Central Coast of California and the remainder of that time managing beer production. Before co-founding Everywhere with a few industry colleagues, he was the Director of Production at The Bruery. Jack Alger is the owner and mind behind Mutiny Burger in Paso Robles. The roots of the little burger cafe begin with Jack's work in the beer industry. As he sold beer across the U.S. for Lagunitas Brewing and others, he built up a knowledge bank of his favorite spots for burgers, burritos—whatever local specialties he resonated with. He even built an Instagram account called @burritohunters that shows his favorite burrito joints all around the country. When the pandemic hit and everything shut down, he couldn't travel as he'd done for the 20 years prior, so he started a local place that brought his favorite burger recipes to him and the community. Not very often do Tony & Eddie agree to a T - but they both have lots of things to call out in this film. From bad character development (or none at all), a lack of relationships or connections, almost no real reason for the film to happen in the 80s ... we'll stop the list there. In episode 128, "Y'Us Queen", Tony & Eddie get out their gold scissors and red jumpsuits and they sit back to discuss Jordan Peele's sophomore outing, Us (2019). The boys were huge fans of Get Out. They loved the world, the off-kilter reality that was described. And, they loved the showcase of Peele's talent as a writer director of last year's breakout flick. The question is - did Us live up to that? There's amazing stuff in this movie. From visuals, to dialogue and acting. No doubt there. Craft Brew News – 6/14/19Heineken Purchases Minority Stake in OedipusHeineken N.V. has acquired a minority stake in 7-year-old Amsterdam craft outfit Oedipus Brewing, according to a letter posted on the company’s website this week.Financial terms of the transaction were not disclosed.Heineken’s deal with Oedipus follows minority investments in Belize Brewing Company and London’s Brixton Brewery and Beavertown Brewery. The company also owns California’s Lagunitas Brewing, which produced more than 1 million barrels in 2018, according to U.S. trade group the Brewers Association.In a letter to Oedipus’ fans, the company’s founders said the investment from Heineken would help make their “creative dreams a reality.” Those aspirations include opening a food and beer bar, launching a music and cultural venue, and building a sustainable farmhouse brewery near Amsterdam.“It has been confidence-inspiring to see, despite our obvious differences, the extent to which we speak the same language,” Oedipus’ founders wrote. “And it has been great to see mutual trust and understanding grow with each conversation.”Pascal Gilet, Heineken CEO of the Netherlands, said in a release that the world’s second largest beer manufacturer “can learn a lot from how Oedipus has developed and will develop in the future.”Bumble to Open Brick-And-Mortar Bar in NYCDating app Bumble plans to open Bumble Brew — a coffee and wine bar — in New York’s SoHo neighborhood this fall, according to Bloomberg. The brick-and-mortar location will operate as a 70-seat coffee shop during the day and a wine bar with small plates during the evening, the outlet reported.According to Bloomberg, the space will host “female chef demos, BFF parties, networking events, and date nights” in an effort to grow its networking site, Bumble Bizz.In news that should please Brewers Association CEO Bob Pease and National Beer Wholesalers Association CEO Craig Purser, Bumble Brew will also serve beer. However, starting August 1, those universities can begin offering alcoholic beverages in general seating areas.Nevertheless, there are limits. Alcoholic beverages can only be sold at concession stands. Rebecca Newman is our first guest today on Brew Ha Ha with Steve Jaxon and Mark Carpenter. Rebecca is the Director of Global Quality for Lagunitas Brewing. We also have Dr. Hoby Wedler back on the show. He holds a PhD in Chemistry from UC Davis, is blind, and is a renowned expert on perception science. He will talk about some of his work later in the show. Rebecca Newman has been doing this job for three decades for different companies. She was recruited by Anheuser-Busch after she graduated from UC Davis. She worked there with some Japanese colleagues and learned how to make Sake, how to taste and understand it. Then she met the folks at Sierra Nevada and ended up working there. At UC Davis she majored in Food Science & Technology with a minor in Nutrition and Fermentation Science. In quality control, they want to measure “the magic” to make sure the product is consistent. They help the brewers to achieve their goals. It is all focussed on flavor and human experience. Mark Carpenter, who was a brewer, says that smart brewers love to have people like Rebecca around, because even the educated brewers don’t’ know enough and they have to concentrate on the acdtual brewing. It’s valuable to have someone to explain what’s happening in the brewing process who can help fix problems or help brewers focus on the results they really want. She uses both scientific measurements and articulation of the sensory side. They to lots of tasting testing at Lagunitas for quality control. When they taste beer, unlike wine tasting, they swallow the beer because they need the whole mouth feel and need “the whole trigeminal” nerve, where the jaw and the cheek meet. Dr. Hoby Wedler Dr. Hoby Wedler is a renowned PhD Chemist at UC Davis who does original research into taste perception. He is blind and his focus has been on full sensory design and the science of human perception through the senses. He tells about his work with beer, wine and spirits. He is co-founder of Sense Point Design, where they use full sensory design to test products, to study human perception and to record perceptions of beer, wine and spirits. They are in the midst of launching a spirits line so they are doing a lot of sensory research into that product. They do a beer tasting in the dark, where they actually blindfold people to taste beer. “The blind tastings give us the chance to think differently about beer.” When we are not distracted by the vision of beer, we lose the 85 or 90 percent of the perception that we normally get from sight. He is based in Petaluma and works with the Petaluma Educational Foundation. This week’s show is short because there is a live Golden State Warriors playoff game coming up on home station KSRO in Santa Rosa, so Hoby Wexler and Rebecca Newman will be back on the show. Phase Change Before the end, Rebecca Newman talks about a beer from Lagunitas called Phase Change which is a wet hopped beer in the spring They loved the fresh hops and to use them out of season, they “slurried up” whole cone hops from 2018 put them under nitrogen co2 to freeze them, topped with nitrogen and flash frozen. The Lagunitas website describes it thusly: Hops are good, fresh hops are better, wet hops are best. We say 'wet hops' because they have not been dried after harvest. We say 'better' because they possess the fullest expression of hop flavor; vine-fresh.
