The Pittsburgh Dish
060 Pizza Masters - Patrick Elston and Pete Tolman

The Pittsburgh Dish

Play Episode Listen Later Jun 1, 2025 54:48 Transcription Available

What makes a truly extraordinary pizza? It's a question that Pittsburgh pizza masters Patrick Elston of Gus Franco's and Pete Tolman of Ironborn Pizza have spent years perfecting—crafting distinct styles that have earned them regional championships and devoted followings.(00:52) Patrick's journey began with a mobile wood-fired pizza trailer in 2018, eventually establishing Gus Franco's brick-and-mortar location in Lower Burrell. His "American baker style" pizza represents a careful evolution from Neapolitan traditions, with meticulous attention to dough fermentation and bread-making techniques. The result? A perfectly crispy yet light crust that recently earned him recognition as the Northeast Region champion for traditional pizza at the International Pizza Expo.(22:59) Meanwhile, Pete Tolman transformed a chance encounter with Detroit-style pizza during a Colorado ski trip into Ironborn Pizza, now thriving with locations in Millvale and the Strip District since 2017. His distinctive inch-plus-high crust with a lacy cheddar cheese edge has gathered its own accolades, including multiple Northeast regional championships. Beyond pizza, Ironborn's Strip District location showcases handmade pasta, fresh meatballs, and a full bar experience. What truly sets these pizza makers apart is their dedication to craft. Patrick describes the intense relationship with his wood-fired oven—moving pizzas through five different "spots" during busy service, constantly managing heat, and treating each pie as an artistic creation. Pete reveals the science behind his dough, which rises higher than traditional Detroit-style, creating Ironborn's signature airy texture. Both prioritize quality ingredients, including non-bromated flours and proper fermentation, challenging the notion that pizza is merely "junk food."(32:27) Their friendship exemplifies Pittsburgh's collaborative food scene—they attend pizza competitions together, celebrate each other's successes, and even share monthly dinners with their families. Their approach to business growth remains deliberately measured, with Patrick slowly introducing Sicilian pizzas and Pete focusing on strengthening operations at his existing locations.Whether you're craving Patrick's "Hot Dad" pizza with sopressata and hot honey or Pete's white pie with garlic cream and roasted tomatoes, these pizza masters prove that Pittsburgh's pizza scene has evolved into something truly special. Visit them soon to taste what championship-level dedication to pizza craft really means.Support the showLiked the episode? We'd love a coffee!

Bucco Minute – Will Ben Cherington be around by the draft and/or trade deadline? Poni thinks Cherington is gone before we get to those checkpoints on the season because enough people will get in the ear of Bob Nutting to make sure he's not around. Poni said if they don't kill it in the draft or the trade deadline, they will set themselves back even more. Poni's guess is by Independence Day, Cherington is gone.

Steelers correspondent Mark Kaboly from The Pat McAfee Show joined the show. Mark told us about his days on the Pirates beat. Instead of telling us if a guy was a bad guy, he just called them ‘interesting.' Mark said there is “no way” Aaron Rodgers was coming out of a Strip District hotel this morning. Mark took a guess at when Rodgers is here. Mark chatted with Mason Rudolph earlier this week, but Mason couldn't say for sure when Rodgers is showing up – they are all just assuming. We also spent some time talking about the Harry Callas political run that fell just shy of a chair seat in Green Tree. More w/ Mark – Mark reacted to Booger McFarland claiming the Steelers are ‘taking years' off the life of their defense. Mark does not think the veterans are upset with Mason Rudolph or will be upset with him if he ends up being the QB. He said the team should be upset at the succession plan since Ben Roethlisberger retired. Mark said we haven't seen Mason work with Arthur Smith or his offense – and added that Aaron Rodgers would want a lot of control. Would Smith have preferred Justin Fields at QB? Mark isn't worried about Cam Heyward or TJ Watt sitting out any practices. More w/ Mark – Poni asked Mark why he was looking up Donny's highlights earlier this week. Does Mark buy into any of the conspiracy theories that Joe Rogan may have talked to Aaron Rodgers about? Did Mark have any other tea on George Pickens following his departure?

This week, I sit down with Michael Studebaker of Studebaker Metals. ⚒️ - Eleven years ago, Michael started crafting jewelry in his parents' basement with little more than a few rusty tools, a dream, and a lot of ambition. - His journey began after earning a BFA in Metalsmithing and spending several years working in museums in Philadelphia. Through a series of events, Michael found himself back in Pittsburgh, taking on odd jobs while trying to figure out his next move. As a traditionally trained metalsmith, he saw an opportunity to create affordable, hand-forged jewelry. After meeting his partner, Alyssa Catalano, a fashion marketing expert, they combined their talents to build the successful brand that Studebaker Metals is today. - Now, at their new workshop and showroom on Smallman St in the Strip District, Michael, Alyssa, and their team continue to grow the Studebaker name, creating high-quality, hand-forged pieces made from the best materials available. We're even counting Cam Heyward on “Hot Ones” and Michael Keaton on “Late Night with Seth Meyers.” We always cite our sources: Steelers DT Cam Heyward took on “Hot Ones” and shared his favorite Pittsburghese.  During her stay in Pittsburgh, pro-Palestine protesters demonstrated outside of VP and presidential candidate Kamala Harris' hotel.  Harris visited Penzeys Spices in the Strip District. Penzeys owner, Bill Penzey, is staunchly anti-Trump, and there's even a section on the spice store's website dedicated to criticizing the Republican Party.  Watch the presidential debate on ABC News Live at 9 p.m. Eastern. Plus, they share their astonishment over how much trash is in our rivers and learn about a famous Pittsburgh architect whose mid-century modern dream homes are on the market (for enormous price tags). We always cite our sources: A recent Allegheny River dredge dug up 50,000 pounds of car parts — possibly from a long-gone Downtown parking lot.  The Strip District will possibly double the number of visits over the next couple years. A new bill tied to the state budget requires one security officer per district to be trained and licensed to carry a gun, but the district can decide whether or not to have the officer bring it into the school. Wondering what else is part of this year's PA state budget? Check out our interview with City Cast Philly host Trenae Nuri and Spotlight PA reporter Stephen Caruso.  The Catholic schools in the Diocese of Pittsburgh hired six armed guards and a few security officers this year. So, it is with this in mind that I thought I'd take to the streets of Pittsburgh once again and talk to people about their holiday memories. That's what this special holiday edition of the Shaping Opinion podcast is about. This episode was originally released on December 19, 2022. https://traffic.libsyn.com/forcedn/shapingopinion/324_-_Encore_7_Favorite_Holiday_Memories.mp3 In this episode, we talk about some favorite holiday memories. You'll hear from seven different people, each with their own holiday memories, and there's one thing I can tell you, not one of them will talk about a toy they found under that Christmas tree. Each person has his or her unique and special holiday memories. But as we've found in previous episodes like this, you may hear something of your own holidays in the stories our guests tell. In the end, there is a common thread across every story we hear. To prepare for this episode, I spent the afternoon before Thanksgiving on a bench in the Strip District of Pittsburgh. It was a nice November day in the city. Warm and sunny. People were in a good mood, getting ready for the holiday season once again. Before the 75 breweries and a crowd of thousands arrive, Ed and Day sit down with two New England brewers who are redefining how beer is made and who it is for. The first guest is Alisa Bowens-Mercado [7:00], CEO and brewmaster of Connecticut's Rhythm Brewing Co. She discusses how contract brewing is “a beautiful thing,” and how hard it can be to find Black folks and “beer-flavored beer” in New England. Then, the group is joined by Sam Adams Boston head brewer, Megan Parisi [34:57]. She and Bowens-Mercado discuss representation in the craft beer industry, how the unlikely relationship between their discrepant breweries emerged, and their recent, Pink Boots-benefitting sparkling lager collab. It's a perspective on the industry that's not always told, and there's no better place for this vital discussion. Recording: Barrel & Flow Fest 8-30-22. Production: Epicast.  Guests: Alisa Bowens-Mercado of Rhythm Brewing Co.; Megan Parisi of Sam Adams Boston Brewery.

This week is Hanukkah and Christmas. We're in the peak of the American holiday season, which started at Thanksgiving. So, it is with this in mind that I thought I'd take to the streets of Pittsburgh once again and talk to people about their holiday memories. That's what this special holiday edition of the Shaping Opinion podcast is about. https://traffic.libsyn.com/secure/shapingopinion/Favorite_Holiday_Memory_Auphonic.mp3 In this episode, we talk about some favorite holiday memories. The voices you hear are of Elijah, Sara, Katie, Jeremy, Deborah, Gina, and Heather. Samantha Story-Camp's purchase of a homemade soap recipe book was supposed to be a creative way for her to provide gifts to fellow theatre actors after the final night of performances. One evening, she found herself at a local small business association workshop on how to start a business. Her and a friend were interested in creating a singing telegram company with a unique spin. Their idea never got off the ground, but what she learned planted the seed for another entrepreneurial venture. After receiving initial feedback from her friends and online community, Samantha decided to launch Pip & Lola's.Samantha eventually moved back to Pittsburgh, the city where she received her theatre degree from Point Park University. After a successful 30-year career at prominent local company, Jan Receski was ready for a new challenge, not an early retirement. As she was contemplating her next move, inspiration struck following a poor golf club fitting experience. Selecting and trying out new equipment should be a fun and exciting time for any golfer, yet Jan left feeling underserved, misunderstood, and slightly offended. She quickly realized that the local market was lacking in golf establishments that catered to the needs of an increasing base of female players and enthusiasts. At the height of the pandemic in early 2021, Jan opened OnPar Now, an inclusive and welcoming indoor golf facility that is especially sensitive to the growing numbers of women players. In this episode, Jan talks about how she cashed out her 401(k) and literally put it all on the line to make her dream a reality. She discusses how she navigated a new world of entrepreneurship by fully immersing herself in every aspect of the development of her business. With each meeting and decision made, she grew more confident throughout the process.
