Max Jones is a traditional food preservationist and the founder of Up There the Last, a project based in West Cork. Max's work revolves around practices that turn the landscape into food. He believes that within each of us is an inherent superhero ability to know what's going on in our immediate surroundings and seeks to encourage people to allow that intuition to guide our choices—particularly concerning the food we eat. It seems like there's not much Max can't do: he's a teacher, a writer, a photographer, a builder, and a craftsman—in addition to being the father of two. When we recently learned he also plays a mean guitar, we almost lost it! On this episode, we speak with Max about the true provenance of food; how a customer complaint about food cost put him on an unexpected trajectory; building the Keep with Sally Barnes; and the impact of excessive food regulations on artisanal practices. In the summer of 1798, in the town of Enniscorthy, a spark was lit that echoed across the centuries. Inspired by the ideals of liberty and self - determination that fueled the American and French Revolutions, ordinary Irish men and women rose up against British rule—hoping to shape a freer, more equal Ireland. The United Irishmen, a movement of Protestants and Catholics alike, dreamed of unity. But their rebellion was met with brutal force. The most haunting chapter came to a head on Vinegar Hill, where rebels made their last stand. Though the 1798 Rebellion was crushed, the spirit behind it lived on. It became a quiet current beneath Irish history, resurfacing again in 1916 during the Easter Rising—and carrying through to modern Ireland. Today's episode features songs and tunes inspired by the 1798 rebellion. These are songs of hope, defiance, heartbreak, and memory. This episode is not about blame. Our show features all of the great new things that have been growing in Joliet for a long time. There has been a revolution of art and music in this city. We formed a community around it, and now we're seeing new businesses pop up all the time in the downtown area to give something more to this community. Restaurants have gotten more cerative with their menus. Farm to table is becoming less of a fad and more of a standard. Breweries can't seem to open fast enough for folks that want a place to go to enjoy anything and everything that's hand crafted. It's time once again for togetherness and longevity to become the norm. Everyone against eveyone will only end in tragedy. Let's discover more ways to take the stress out of each other's lives. All people deserve to have the necessities within reach, and damn it, some good quality entertainment is one of those things. The Triznas gave musicians that played thier own music a place to go. They stayed in business during one of the worst times to be a business in Downtown Joliet.
