“When you're doing a triple decoction and you don't have [a direct-fire kettle], you're just burning gas.” —Adam Huml It's easy to lump Czech brewers into the “historical” category, and while a number of prominent brewers in the country do focus intently on the lagers we all love, a growing contingent is also tackling evolving styles like hazy IPA, fruited sour, pastry stout, and more. Zichovec, in Louny, is one of those breweries—lager is still their largest category, but they're not locked solely into traditional styles, and they've been seeing just how far they can go in making trendier styles, like hazy IPA, but with Czech ingredients and processes. In this episode, they discuss: brewing with experimental Czech hops testing decoction impacts through triangle testing adding barley flakes to reduce modification in lager grain bills favorite newer Saaz varieties for lager brewing brewing fresh hop Czech pale lager the necessity of a direct-fire kettle for true decoction hazy IPA with modern Czech hop varieties like Ceres and Saturna using enzymes to unlock thiols brewing with help And more. In this GABF Gold! edition of the podcast, the last of our 2023 focus on GABF gold medal winners, Jamie is joined by Rob Malad, director of brewing operations for Metazoa (https://www.metazoabrewing.com) in Indianapolis, Indiana. Metazoa recently won gold for William Walrus, a Scottish-style ale and product of necessity, that employed brewing techniques to overcome ingredient challenges while staying true to the spirit of the style. In this episode, he touches on: brewing beers meant to be consumed more than once using double decoction to build malt character in lieu of a broad range of speciality malt building a recipe with pale malt, Munich malt, and small amounts of low-Lovibond speciality malts but no English malts using English ale yeast typically employed in their hazy IPA brewing with minimal hops but balancing with carbonation their medal-winning approach to saison the mouthfeel impression of high Saaz loads elements that set beers apart in competition And more. The town of České Budějovice in South Bohemia may be better known to North Americans as Budweis, the German name that's been appropriated by a couple of famous beers. The real Czech pale lager from here is known as Budvar—sold as Czechvar (https://czechvar.com/) in the United States, for legal reasons. It's an easygoing showcase of light, pure malt flavors and soft, balancing bitterness, nearer in profile to a Bavarian helles than a typical Czech světlý ležák. Joining us to tell this iconic beer's story and talk about how it's made is brewmaster Adam Brož, who is contagiously passionate about all the little details that make a pale lager into something that both tastes great and is addictively drinkable. Along the way, he discusses: Budvar Original's unique place in the pale lager spectrum the importance of soft water to the beer's profile why he insists on sticking with whole-cone Saaz hops how the barley variety and crop matter to the brewing process why decoction matters, from deeper color and flavor to greater consistency the benefits of long maturation of at least 90 days in horizontal tanks a new variety of Budvar with higher bitterness how the dark lager came to be and what sets it apart And more. "Our product is not the beer, but the joy from the beer," says Broz. "And without drinkability, it's half of the joy." When brewers think of Czech hops, they naturally think of Saaz, whose delicate and ethereal character is nearly synonmyous with lager itself. Yet while craft brewers around the world have developed an obsession with punchy New World hops and the character of specific varieties, they often know relatively litle about the hops from this region that's been growing them for more than a millennium. In this episode, we sit down in Žatec—the home of Saaz—with Zdeněk Rosa, chairman of Bohemia Hop, the collective of all Bohemian hop growers. Here, Rosa digs into: the promising overall trajectory of Saaz growth in recent years, despite the disastrous harvest of 2022 how agronomy and growing operations differ in Bohemia compared to the Pacific Northwest the unlikely specifics of how weather impacted the 2022 harvest the development of other varieties that offer similar character to Saaz but with better yield and sustainability newer, more expressive Czech aroma varieties such as Saaz Shine and Saaz Comfort, which offer enticing possibilities for lager and other kinds of beer leaning into a Czech take on cold IPA using more characterful Czech aroma hops And more. The sandstone cellars of Plzeňský Prazdroj—better known to us as Pilsner Urquell (https://www.pilsnerurquell.com)—may be the ideal place to wallow in the history of the world's most popular beer style with brewmaster emeritus Václav Berka. As the brewery's 13th brewmaster in a line that stretches back to Josef Groll, there are few people better qualified to recount the story of pilsner, discuss the details of how it's brewed at its birthplace in Plzeň, and offer suggestions on how to brew an excellent and addictive one in your own brewery. Among other topics, Berka discusses: Pilsner Urquell's pivotal role in the history of modern beer the elements of Pilsner Urquell, from malting their own barley and the city's famously soft water to generous hopping with Saaz and the house lager yeast how control over the malting is directly related to the brewery's traditional triple-decoction mash about the Pilsner Urquell that is still fermented and matured on oak, to compare to the large-scale commercial batches (and to share on the popular tours) the overarching importance of drinkability to pilsner and to Czech beer, and thoughts on purusing excellence in lager brewing And more. Brian Purcell may have founded Atlanta's Three Taverns nine years ago to focus on Belgian-style beers, but today it's the spirit of that brewing tradition that informs their approach more than a purely stylistic expression. Creativity balanced with drinkability still drives their brewing decisions, whether that's brewing an American-hopped modern pils expression in conjunction with the team from Pivovar Proud (the experimental brewery of Pilsner Urquell), or tackling the expressive fermentation of hazy IPA. In this episode, Purcell and head brewer Neal Engleman break down these beers, from the knockout-hopped Pils Liberation collaboration (with Citra and Cascade), to their popular hazy IPA. Along the way, they discuss: brewing the collaborative pils with Citra, Cascade, and Saaz hops knockout hopping the 34/70 fermentation impacts on lager fermentation from the aggressive hopping applying lessons learned to other lagers they brew brewing their 9th anniversary English-style barleywine ingredient selection for better mashing with hazy IPA active versus post-fermentation dry hopping And more. It's possible to make great lagers with a single-infusion mash and cylindroconical fermenters—just ask former sportswriter turned brewer Randy Booth. At the taproom-focused Twin Barns (https://www.twinbarnsbrewing.com) brewery, on the shores of vacation destination Lake Winnipesaukee, he's used the quieter winter season for the time and tank space to hone their lager program. The result earlier this year was a blind-review panel score of 99 for the German-style Belknap Pils (https://beerandbrewing.com/review/twin-barn-brewing-company-belknap-pils-1644852559), which earned it a spot on our Best 20 Beers in 2022 (https://beerandbrewing.com/best-20-beers-in-2022/). In this episode, Booth shares his lager brewing process. It's nothing fancy or especially complex, but it focuses instead on coaxing the best from high-quality ingredients. Along the way, he discusses: rebalancing Saaz and Hallertauer in the boil and whirlpool to achieve the right aroma and flavor mashing low for dryness producing clear, high-quality wort through a longer vorlauf step splitting the hop additions between a mid-boil and whirlpool addition tasting, evaluating, and taking notes through the entire lifespan of the beer on draft, from the first kegs to the last differentiating pilsner styles taking beers from good to great working with craft malt telling a compelling story through beer And more. A sequel to one of our favorite shows of 2021 might seem rushed, but Keeping Together's time in Chicago is limited. For this one, we drink five more of Averie Swanson's artful creations in an exercise that honestly feels shamelessly self-indulgent due to how good the beers are. Also, we speculate on a provolone problem, conjure up some Joey Pants, do a sitcom t-shirt reveal, and feel inspired to don windbreakers. Expect a very early contender for beer of the year that we never saw coming. Who says the sequel can't be better than the original?? Beers Reviewed Dreaming of a Common Language (Dry-hopped saison w/ Hallertau Tradition, Tettnanger, and Saaz hops) Everything Glistened and Sparkled (Saison w/ roasted rhubarb, angelica root, and honey) The Earth Is What We All Have In Common (Bière de Garde w/ roasted chestnuts, dried oranges, and rosemary) Make Art Not Content (Saison w/ coffee, sage, peach leaves, and honey) Undulant & Impermanent (Barrel-aged saison w/ maple-roasted carrots and spent Fernet botanicals)

A bright, straw-yellow lager with a big white head, the delicately floral and spicy aroma of Hallertau Mittelfrueh hops combines with a light, crackery malt flavor to make an incredibly crisp, quaffable brew. Prost!”Joe:American Lager50 West Brewing Company — Cincinnati, OhioABV: 4.5%IBU: 16“Finally, a light-bodied lager that doesn't skimp on the flavor. This clean, refreshing take on the lager style masterfully blends Saaz hops with malt sweetness to create a crisp, thirst-quenching brew that's perfect for drinking in the hot summer sun.”---Thank you so much for listening! “What Are We Drinking About”, w/ Erik & Jodi Dingus Day Episode 04/08/2021 For today's show, we're celebrating that Polish Holiday- Dyngus Day! We're doing a Dingus Day episode! Celebrating that holiday and all that is polish in beer! Cheers With that being said we're I've selected a selection of local and international Polish-styled beers!   Tonight's selection:   Zywiec- Polish Pils: ABV 5.6 | IBUS 30 Taste is very much the same - sweet but naturally so, nice malty taste, no artificial flavors. Little hops but that's actually a benefit as it lets the malty sweetness shine.   Flying Bison Bison- Polonia Pils: ABV 4.8 | IBUs 30 Crisp Pilsner brewed with German Pilsner malt as well as Saaz, Hallertau and Lublin hops. Na zdrowie!     Grolsch – Pislner: ABV 5.0% | IBUS 28 A traditional Polish styled Pilsner style beer with a big hoppy flavor and bite owing to dry hopping late in the brewing process. The zesty and fragrant hops make for a refreshingly dry finish and a slight sweet and sharp zing to the palate, which are best enjoyed with rich, creamy foods like pork sausage and mustard mash, quality fish and chips or cheese like Old Amsterdam, Edam or Brie. Grolsch is known to use a distinctively shaped bottle for its beer, known as de beugel or 'swingtop'   Zywiec- 1881 Porter: ABV 9.5% | IBU N/A Zywiec Porter pours mahogany to black, letting no light in, with a thin tan head. The aroma is malty with a little molasses and a faint undertone of coffee that's nearly indistinguishable. It's a different tasting porter than most, especially when it's cold. At first it seems crisp, with a faint lagery yeast that's mostly masked by roasty malt. If you let it warm, it really opens up into a malty smooth porter with balanced molasses and dark roasty tones that play nicely on your tongue. It sits pretty heavy in your mouth and when warmer, you can get a boozy bite on the finish that's pretty pleasant. At 9.5%, it's nothing to scoff at, but the alcohol is hidden well especially when it's cold. If you're into porters, try this one out for the uniqueness of it, as they've been brewing this one from the same recipe since 1881.
