We've all heard the stories of homebrewers following their passion into professional brewing. There's an engineer or a lawyer who homebrewed for years and after lots of encouragement, decided it was time to give it a go. But how many Wall Street investment bankers turn down lucrative salaries to open a brewery? There's at least one in San Diego, and it's Doug Constantiner from Societe Brewing Company. Doug is one of those people that is accomplished and humble, always ready with a smile, a pint, and a listening ear. Being a part of the San Diego craft beer community is to be a part of a world-class industry, and sometimes egos or ambition can sour the experience. That's not what you'll hear today. Instead, Doug describes the steps he and the other leaders at Societe take to keep their mission simple: treat others how you'd like to be treated, and focus on the beer. Of course, it's never just beer. We also talk about how he tries to lead by quiet example by building bridges and open lines of communication that he believes may be a key to improving the world. Later on, we'll discuss the split Societe faced when co-founder Travis Smith left the company in 2019, and how that difficult separation changed the future of the brewery just before the pandemic changed the world's entire way of life. Indiana Jones and the Dial of Destiny is a wonderful and heartfelt sendoff to one of cinema's greatest heroes. It makes bold narrative decisions and gives us an Indy who's a man out of time. That may sound depressing—and there certainly are tough moments—but it's not. The heaviness of Dial of Destiny's story is what makes it work. It can be extremely compelling to see our heroes vulnerable, watching them rise to the occasion and rediscovering themselves. Throw in wonderful performances from Phoebe Waller-Bridge as Indy's goddaughter, Helena Shaw, and Ethann Isidore as Teddy, her loveable sidekick, and Dial of Destiny is a welcome return to form for the franchise. The hallmark magic of the series is alive and well. Despite Spielberg's absence, James Mangold skillfully handles the directing duties. Sadly, Dial of Destiny has failed to hit it big at the box office, grossing just over $337 million thus far. On a budget estimated to be north of $290 million, that just doesn't cut it. That said, unlike Kingdom of the Crystal Skull—which divided series fans—audiences who have seen it seem to love it. So it's only logical to assume people will discover it when it lands on-demand. We've been here for two weeks and I'd like to stay another thirty. I've brought my overnight bag and a note from my wife. Gonna make my case. We're at Park Hyatt Aviara, a 200-acre resort, one of the classic San Diego properties built far above a wetland preserve in Carlsbad. The ocean is right over there. We're sitting at a long dining table in Ponto Lago, their Baja-inspired restaurant and a star of the recent $50 million makeover of the property. You can smell the crackling red oak and the char on various excellent proteins. I see a mezcal collection. I'm talking with chef Christopher Carriker about the magic of woodsmoke. David's talking to him about the magic of heavy metal music. There is a hamachi and blackberry aguachile, a Sinoloan specialty, with sliced fresno chiles, green onion, and mint. There's a charred octopus zarandeado with chorizo aioli, chicharrons and kumquats. It's Baja ideas mixed with French sauce skills and the unbeatable San Diego seafood and produce. Carriker is from Portland, which isn't short on a food scene. But, for a chef, he says, it's nothing like San Diego. “The farms we have right up the road? It's incredible,” he says. “I had to get used to the long growing seasons when I came here. I'd think, ‘well, it's winter guess I have to switch to root vegetables,' and then realize summer fruits were still in season. Crazy.” This episode we dive into why every chef and restaurant is turning their gas powered ovens in for piles of expensive wood. Chef Chris walks us through the various woods and their very specific charms (citrus burns hot, is best for searing), and why Baja cuisine is so compelling. In “Hot Plates,” we discuss the new concepts being opened by chef Phil Esteban's Open Gym group—White Rice Bodega in Normal Heights, and Wavy Burgers (Filipino-style burgers) in National City. One of North County's hottest restaurant groups, Leucadia Co. (Moto Deli, Valentina, etc.) is opening two new locations of Hamburger Hut (Wagyu burgers) in Encinitas and Oceanside. The mighty Carruth Cellars' run in Little Italy is coming to an end in the middle of June, but the good news is that just about the same day they open their massive spot in Liberty Station, a 10,000 square foot wine wonderland with a gourmet cheese shop and expanded menu. And finally, Societe Brewing is expanding into a new location in Old Town, continuing the signal that the historic part of San Diego is getting a blood transfusion. For “Two People, Fifty Bucks,” Troy raves about Amalfi Cucina Italiana's pan-fried artichokes and pizza, and marvels at the surreal man-made wonder that is Lake San Marcos. David raves about the bratwurst at Bagby Beer, and chef Chris gives a nod to a fellow wood-smoked restaurant and one of San Diego's best, Fort Oak. Thanks for listening, y'all. Societe Brewing was the seventh fastest-growing brewery in the country in 2020. In a year pockmarked by the pandemic, that's pretty impressive. For founder Doug Constantiner, that's always been the goal. From launch, he has always treated Societe as a business first and a brewery second. “We really just want to be a great company,” Doug says in this week's episode. Doug launched Societe in San Diego back in 2012, after a career as an investment banker. “The goal was to make a bunch of money so I can retire early and have a second career,” Doug says. In the end, he didn't want to wait even for an early retirement to start brewing. So instead of business school and a hedge fund job, he pursued craft beer, and he approached it the only way he knew how: like a business. He decided to launch a production brewery with serious growth potential. In this episode, Doug recounts his journey from New York City investment banker to successful brewer. He also explains his recent decision to appoint a chairman of the board and offers his advice to others in the industry on how to treat your brewery like a business. Cheers! Societe’s (https://societebrewing.com) Doug Constantiner wants to make beer you can drink a lot of. Not excessively, of course, but consistently. “The holy grail of beer is not the beer that there’s a hundred bottles of, and every 25 bottles were aged in a different barrel,” he says. “The holy grail of beer is the beer that you can drink every single day. That you can buy on the shelf at the store. And you can have a couple of them every day and not get sick of it.” The terms “drinkable” and “balanced” get thrown around often in brewing parlance, but for Constantiner and the team, they’re core principles informing every style of beer they make—from IPA to wild ale to imperial stout. Societe has generally resisted the current trend of fruit and adjunct additions in everything, in favor of building a classic brewery brand respected for thorough execution and timelessness. Fellow brewers have noticed, and two GABF gold medals for their session IPA are validation for the quality in their approach. In this episode, Constantiner gets into the details of these aroma-forward West coast IPAs—pushing malt out of the way while timing additions for better balance of aroma and bitterness, strategically layering hops for complexity despite their “overspiced” nature, building body without malt flavors that get in the way of the hops, and considering unique flavor aspects to hops varieties that can set their beers apart. “For the hoppy stuff, what do we love about hoppy beers?” says Constantiner. “Well it’s the aroma. It’s not the bitterness, which is why we’ve never published our IBUs. The IBU race of the mid-oughts had nothing to do with hoppiness, it was just bitterness. So we just thought ‘let’s make these hoppy beers as hoppy as we can, and make them a delivery vehicle for that aroma, and get it into your face as quickly as possible, but it has to be balanced too.’” With their wild beers, Societe takes a similar approach to complexity and nuance, eschewing acidity for Brett-driven funk while carefully adjusting variables in their blending stock. “Creating acidity is easy. It’s ‘how do we create this incredibly complex layered beer?’ And I think that’s time, blending, and a lot of experimentation.” Constantiner discusses how they pitch cultures, growing each of their lactic acid bacteria and Brett strains separately then timing additions and amounts to achieve specific results. Cell counts, timing, and temperatures all have big effects on the finished beers, and Societe aims to control and understand the variables. At the end of the episode, Constantiner recounts the critical move they made earlier this year, moving from a model of taproom sales and distributed draught beer only to canning. “On Feb 2nd, 100% of our revenue came from on-premise sales,” says Constantiner. “That’s 8% from our tasting room, and 92% from wholesale. Feb 3rd, we started canning. By the time the shelter in place orders and restaurants were shut down in California, we were at about 84% on-premise.” A couple months later, the brewery’s production is at full speed, brewing at a higher volume than 2019, with new tanks on the way to support more production. There are several craft focused entities in San Diego that garner significant credit for being part of the early spark that lead to the Capital of Craft moniker being placed on our city, Obrien's Pub is one of those places and we were honored to sit down with Tyson and Kristina Blake. Supporting the local beer industry since '94, Obrien's is currently celebrating their 25th anniversary and we were lucky to get to try a few of the collaboration beers they did to honor the occasion. Tyson way overdid and planned a secret 3 course pairing meal for us to enjoy on The Show! We were excited to be invited out to Deft Brewing for industry night! It's always fun when we get to hang out with members of the #SDBeer world that make all the delicious beer we obsess over!Also, here's some giant news from TIBS! central; Brandon Hernandez, Editor at Large from the West Coaster and Chief Marketing Officer of Societe Brewing, has joined us as our new, fourth host! We couldn't be stokeder (yes, that's a word now!) on his decision to slum it up with us on a weekly basis. If you see him around, give him a welcome high five!Back to Deft; we begin the show with the owner, Morris Nuspl, we discuss his brewery, his system, some of the beers we're enjoying, and how it's been for the first year of their existence. If you were not aware, Deft celebrate their first anniversary in October. I really enjoyed the feel and comfort of the tasting room. They have a great patio as well. Most importantly, the beer they are making is stellar, especially if you appreciate classic styles, brewed with super clean flavor profiles.
