Josh Trujillo didn't set out to become a brewer, but after 16 years at Marble (https://marblebrewery.com)—the last eight of which he's served in the top brewing role—he's found it to be a perfect vocation given his mix of technical and tasting aptitude. Over the years, Marble has pursued ways other integrating hops into both traditional and modern lagers, and their judiciously dry-hopped Pilsner even won 2014 World Beer Cup gold employing a quarter-pound-per-barrel dry hop at the time. Now, Marble is stretching out in the hoppy lager space with West Coast pils, and mirroring that smaller beer with their approach to cold IPA, while their MavLab R&D brewery continues to rack up medals for both traditional ales and lagers as well as more progressive styles. In this episode, Trujillo shares their approach to brewing lager, including: Brewing rice and corn lagers with two row pale malt and a single infusion mash Managing runoff to avoid astringency Extending boils to manage DMS production Designing subtle yet characterful hop blends for dry-hopped Pilsner Moving hot side hops to the whirpool for more hop expression Marrying the classic with the contemporary in West Coast pils Brewing hoppy beers with new twists on classic hops And more. This week's episode is a panel discussion on lager brewing, recorded in front of a live audience late one night on the patio of Cerveza Fauna (https://cervezafauna.com) after a full day of judging for the Copa Baja beer festival in Mexicali, Mexico, in late 2023. Joining the discussion are three prominent lager brewers—Ashleigh Carter of Denver's Bierstadt Lagerhaus (https://www.bierstadtlager.com), Ryan Brooks of San Diego's SouthNorte (https://southnorte.com), and Jeff Bagby (who, earlier this week announced that he was joining Green Cheek Beer (https://www.greencheekbeer.com) as they acquire Bagby's brewery in Oceanside, California). The location in Mexico provides the perfect backdrop for diving into Mexican, Mexican-style, and adjunct lagers, and the discussion also focuses on dark lagers. Along the way, they cover creative and technical points such as: the challenge of brewing great lager in smaller batch sizes understanding other brewers' commercial approaches through lab analysis priorities for gear and process techniques for brewing better lager on systems designed for single-infusion ale understanding the impact of water on lager brewing selecting yeast for Mexican-style lager approaches to natural carbonation brewing with corn via cereal mash versus pre-gelatinized products making specialty beer with popcorn clever approaches to building color without intense dark malt flavor And more. Steve and Bryan Co-founder of Old Caz Beer Bryan Rengel joins Steve Jaxon and Herlinda Heras in the studio on Brew Ha Ha today. Bryan was on Brew Ha Ha last August on this episode, and his partner Tom Edwards was a guest on this other episode from March 31, 2022. The first beer tasted today is called Chismosa Clara, their take on a Mexican Lager. There is an amber ale version. This is a lighter one, made to be like Modelo Especial. They are located in Rohnert Park which is growing and gaining popularity. A hazy IPA is the next tasting, called Early Sunset. It's an example of a creative process of starting with a special recipe that they make in kegs only, to see if it becomes popular. If it does, they will make a label and produce it. This is how they select which beers to produce more of. Old Caz is opening a new location in SOCO Village, right in the middle of the square. It is under construction now and their goal is to use the old taproom only for special events and to move the public tasting to the new place. They have a specially designed concrete pad for heavy food trucks to park. Russian River Brewing Co. is open in Santa Rosa on 4th St. and in Windsor location. Visit their website for up-to-date hours, menus, beers and more. Herlinda Heras is calling in from Maui. She is sitting at Maui Brewing Company, looking at the ocean. She is there for her birthday and to see breweries that are participating in the Kokua relief beer project. The Kokua Project Kokua is an independently owned restaurant and brewery. The Kokua project is a fund raiser for victims of the Lahaina fire last August. On the other side of the island from where the fires happened, it is still quite beautiful. Uno, dos, tres! It's hot, it's summer, it's time for a cold beer. When the thermostat is reading off the charts, a Mexican lager can sometimes be the cure to bring the temp right back down. On today's episode- for SCIENCE- we are comparing just how good a craft beer holds up to some classic Mexican Lager imports: Modelo and Pacifico tee up against El Chuggo with Lime from our local Brieux Carre Brewing Co right down at the base of Frenchman Street. Brian x2 and Jason decide it's high time they all start contributing beer to the show, for better or worse. Before this week's show started, the boys decided on creating a Mexican Lager recipe to be brewed by each of them for a future show. Of course, no recipe formulation session would be complete without a thorough tasting of said styles before deciding what the recipe will look like. Four commercial examples of Mexican Lagers are broken down and consumed in the first half, and all that data was used in the second half to create what is sure to be the greatest Mexican Lager ever produced by Dr. Homebrew. Anchor Brewing San Pancho Mexican lager Dane Volek from Anchor Brewing calls in to Brew Ha Ha with Harry Duke and Herlinda Heras to talk about their new San Pancho Mexican lager. Dane is the new Brewmaster at Anchor Brewing, so he has the job that used to belong to Brew Ha Ha founding father Mark Carpenter. Joe and Matt Tachis from Indian Valley Brewing in Novato are also in the studio today during Dane's call. Their full interview with Harry Duke and Herlinda Heras is available on their own podcast page, here. San Pancho is a Mexican style lager with natural lime flavors. They did some test releases in the brew house which went well, and the folks around the brew house liked it too. The label on the can is inspired by Mexican mural art. The recipe begins with pale malt and some flaked corn and makes a refreshing dry beer. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their Windsor location. Click the logo to visit their website for up-to-date hours, menus, beers and more info. Anchor Brewing is also where Herlinda's guests from Poland did a collaboration brew last January, mentioned in this Brew Ha Ha episode. Dane describes the Baltic Porter they made that day, using Anchor's yeast. Marcin Malecki and Artur Napuripski of Maryensztadt Brewery in Poland have invited Dane to Poland to do another collaboration there. Visit our sponsor Victory House at Poppy Bank Epicenter online, for their latest viewing and menu options. For this baseball season, Anchor Brewing is working with the San Francisco Giants. Their beer is at the ballpark and they might do an Anchor Day promotion this year. We also hear about the artist who did the San Pancho Mexican Lager beer label who is from Mexico City. The label is also inspired by the kind of mural art in the Mission district of San Francisco. They may also do this kind of artwork on their IPA. Anchor is getting ready for the busy summer season. The public taproom is open Wednesdays through Sundays. They have 24 taps which are about half their usual commercial beers and the others serve many other smaller batches and experiments that they also produce.

Reunited and it feels so good! I get to hang out with one of my favorite local beer people for the firs time since COVID lockdowns. Jeff from Ballast Point is starting us off with something light for a Monday, something the bridges the gap between a Vienna Lager and a Mexican Lager.
The 2 Old Farts - were out again - this time for our Annual trip to the Blue Bonnet Cafe to get our Thanksgiving pies! Afterwards, we stopped by the awesome Bear King Brewery. We tried their delicious Birria Tacos and washed it down with a Mexican Lager and a Hefe Weizen. Mmm good! We even managed to find out we had 1.9K downloads in 1 week. WTH?? Where did all that come from? Was it a mistake? Are we catching on? Tell us - we want to hear from you the2oldfarts@outlook.com
Hoffentlich. Bleibt uns treu!

Summer is coming and it's time for some Mexican Lagers Mexican Lagers are so hot right now. The CEO of Constellation brands even goes as far as saying he believes Modelo is about to become America's favorite beer. The data kind of supports that claim, with Consellation's brands (including Modelo, Pacifico, and Corona) seeing 14% growth in the most recent quarter. Craft breweries are cranking out more Mexican Lagers as well. Most are simple drinkin' beers akin to a Pale Lager / Clara. But some are going deeper into the genre with Vienna Lagers and others. To make matters even more confusing, if you look at Modelo Especial on Untappd it calls itself an American Lager, then description says it's a Pilsner. This thing has quite the identity crisis going on. Either way, Brian enjoyed this one but I thought it was a bit too sweet, especially if they are claiming it's a Pilsner. Corona brought by memories of drinking in my younger days and I'd still crush several of these by the pool or on the beach if that's what's available. For some craft representation we sampled Tactical Brewing's collaboration with Cholo Dogs - El Campéon. This elote-inspired lager is brewed with smoked malt, flaked corn, tajin, and limes and was much more enjoyable than I expected. As the temps heat up many of these beers are perfect for cooling down. No matter if they are America's favorite or not they're nice to pack in the cooler. Correction:We mention in this episode that Modelo is poised to take the top spot in American beer sales Although this claim was made by Constellation's CEO, the data reflects sales for all Constellation brands and not just Modelo. We apologize for lying to you like that and we'll do better in the future.
