Stefan was able to travel to Germany a couple of weeks ago, so you know what that means...German Beers! Lubeck and Hamburg are amazing cities to visit with loads of art and culture. He didn't bother with any of that and just went for the beers. Sudden Death Brewing is based out of Lubeck. They opened an amazing taproom that is a destination spot for any beer traveller. Shitter was Full is inspired by the National Lampoon classic Christmas Vacation. It's a 7.9% AVB DIPA. It was as much fun to drink as it was to talk about the movie. Ratsherrn Brauerei has a really nice taproom and bottleshop with an eye towards traditional German styles. Almost as ubiquitous as a beer and pretzel, there is the classic pairing of beer with cheese. This pairing is also an excellent gateway into the beer world for those just starting on their beer journey, so we decided to do an episode dedicated to beer and cheese. We welcome Anne Becerra (Cicerone, Speaker, Consultant: annelikesbeer.com) back to the show to talk through her process of pairing beer with cheese. While there are always the classic three C's for pairing beer with food (Compliment, Contrast, Cut), her approach is more organic. She guides us through her method of dissecting the flavors of a beer and how those flavors could act as additional ingredients to the cheese experience. The process is very approachable and easy to follow. In June Anne lead a seminar with cheese expert, Laura Werlin at the Aspen Food & Wine Classic, where they paired seven classic European beer styles with some stunning cheese. This was the first time beer was featured as one of the seminar options. Anne explains her thought process for selecting these styles for attendees who are more wine drinkers and the feedback she got from them. Martin goes cellar diving again and turned up a couple of beers for us. We get to revisit a Remmarlov collab doppelbock simply called Doppelbock. We originally reviewed this back in 2019. How does an 11.5% doppelbock hold up after 4 years? It hasn't slipped by much. Then Martin brings out a barrel aged stout brom Den Bryggande Holländaren. Jonas, Barrel Aged Dessert Stout is brewed with coconut sugar and aged for 6 months in Torres wine barrels with cinnamon and vanilla. It's also been hanging out for 4 years. Ciao! We've got some fun new Italian beers to try. Stefan was on a work trip and you know what that means! He's bringing back beers. Bologna has a fun beer bars and bottle shops worth checking out if you're in the area. He picked up Busa Dei Briganti Multiverse Vol 3. This is a DIPA with all the hallmarks of a classic DIPA. Italian DIPA are getting better but still a bit to go. After that we try Birrificio Altotevere A-T Doppel. Now this was a solid beer with lots of caramel notes. FOODTALKER - Podcast über die Leidenschaft fürs Kochen und gutes Essen
Unscheinbar in einem Industriegebiet in Hamburg-Wilhelmsburg gelegen, besuche ich Fiete Matthies in Hamburgs erster Bio-Brauerei: Wildwuchs Brauwerk. Seit 2018 entstehen hier unkonventionelle Biere in ursprünglicher Geschmacksvielfalt – und das komplett in Bio-Qualität. Friedrich Carl Richard Matthies, von allen Fiete genannt, ist der Kopf hinter dem Wildwuchs Brauwerk Hamburg und erfüllte sich damit 2014 den Traum von einer eigenen Brauerei, die er mit zweien seiner Brüder gründete. Los ging es zunächst in einer gepachteten, kleinen Brauerei in Bleckede an der Elbe, schnell begann die Brauerei zu wachsen und mehr Platz musste her. Nach langem Suchen wurde man schließlich in Hamburg-Wilhelmsburg südlich der Elbe fündig. Der Diplom-Braumeister und Biersommelier Fiete, ein echter Hamburger Jung aus Finkenwerder, hatte vor der Gründung des Wildwuchs Brauwerk schon viele Stationen in ganz Europa hinter sich gebracht. Er arbeitete unter anderem auf Menorca und in Frankreich und in verschiedenen Brauereien in Deutschland. Klein angefangen hat sich die Brauerei immer weiter vergrößert und beschäftigt mittlerweile acht festangestellte Mitarbeiter, drei Azubis und ist trotzdem immer noch ein Familienunternehmen geblieben. Wer hier arbeitet, hat große Leidenschaft zum Bier und steht hinter der Idee des nachhaltigen Konsums und Produzierens. Direkt angeschlossen an die Brauerei ist ein Schankraum, in dem man am Wochenende und bei den vielen Veranstaltungen, die das Wildwuchs Brauwerk ausrichtet, immer frisches Wildwuchs-Bier vom Fass bekommt. Die Biere sind natürlich, frisch, in 100%iger Bio-Qualität und natürlich extrem lecker. Die Produktpalette umfasst 16 Biere und ist breit gefächert – vom herben Pils bis zum fruchtigen Doppelbock. Wildwuchs macht Bier aus Hamburg für Hamburger. „Das Bier ist in Hamburg zu Hause und deshalb sind wir vollkommen zufrieden damit, dass wir hier in der Stadt so viele glückliche AbnehmerInnen finden.“, sagt Braumeister Fiete. Aber auch Craftbeer-Fans, die nicht in Hamburg anssäsig sind, können in den Genuss von Wildwuchs Bier kommen, denn mittlerweile werden die Biere auch bundesweit über den Onlineshop vermarktet. Als Partner der Regionalwert AG freut sich das Wildwuchs Brauwerk über die vielen regionalen Kooperationen, wie zum Beispiel mit der Bio-Bäckerei Bahde, die aus dem Treber, ein Abfallstoff des Brauprozesses, ein schmackhaftes Brot backen. Im Gegenzug liefern sie ihr „altes“ Brot an Wildwuchs aus dem dann das Broid, ein New England IPA, entsteht. ** Fiete Matthies** macht heute genau das, was er bei seinem Praktikum als 15-jähriger Schüler in einer großen Hamburger Brauerei kennengelernt hat: Das Bier brauen. We took on Schneider Weisse G. Schneider & Sohn Aventinus Weizendoppelbock. This beer dates back to 1907 and has really stood the test of time. Doppelbock is a beer traditionally brewed in spring and is known as a high-strength darker lager, however, to brew a wheat bock you substitute some of the barley with wheat and use ale yeast. The results are undeniably delicious with malt, and fruit flavors in a dark strong beer. There's a lot more to lager than just Pilsner We all have a friend that has made a statement like, "I don't like lagers," or, "I don't like dark beer." It's likely the lager-hater is thinking of something like a Pilsner when they think lager, and the dark beer-averse has a thick and boozy stout on their mind. Dark Lagers are here to change those opinions. There's a huge variety of flavor in the dark lager world. On the lighter end, something like a Czech Dark Lager will deliver a touch of toffee, dates, and chocolate. On the bolder end an Eisbock can be sweet and boozy, with big malt presence of toasty caramel. If you like Imperial Stouts and Quads, give an Eisbock a try. German Beer Terms The Germans make it pretty easy to know what you're getting in your beer. Learn these terms and you'll be ready to do some shopping. Doppel = Double Dunkel = Dark Hefe = Yeast Schwarz = black Weiss = White Weizen = Wheat Bock = Male goat / Buck (Listen to the show to see how this became associated with beer.)
