I'm a big fan of Maria's Portuguese Table and an eternally optimistic home cook. She travels to Azorean communities in the US and she visits the islands. I take a slight detour into my bookcase and talk about Vitorino Nemésio who wrote "Mau Tempo No Canal" (Bad Weather in the Channel, 1944, a romance set on the islands of Faial and Pico-and the channel between. Deep in the Azorean forest, we trekked to the Salto do Prego waterfall to take some recordings of this hidden gem on the island of Sao Miguel. Recording just above the fall rather than beneath it meant that the resultant recording was richer and more tonally satisfying. Recorded in Sao Miguel, Azores by Cities and Memory.

"When I first heard this field recording, it immediately made me feel like I was being awaken by cockerels in a farmstead not far from a convent where nuns could be heard singing Matins. Therefore I created a choir and added some melodic sounds to suit the idyllic landscape the overall sounds lead me to imagine being in. To the original sound I simply added some forest echo and then mixed it with the musical composition having it running throughout the music and then fade out." Azorean farm sounds reimagined by Helder Rock AKA The Night Passenger and the Panda.

Birds in an Azorean garden reimagined by Cities and Memory. The interlacing lines of different species of bird all competing with one another for sonic territory was the immediately attention-grabbing aspect of this recording.  For the reimagined piece, we've taken different routes to effecting parts of the birdsong, so the various rhythm generators, effects and modulations represent the different species of bird who are all jostling for the attention of the listener. Makes you want to start baking to create all kinds of new recipes, doesn’t it? Maria is working on her second cookbook, which will be a continuation of the first.
