Drew Nieporent, one of America's most respected and celebrated restaurateurs, is the founder and inspiration behind the Myriad Restaurant Group, which operates Tribeca Grill, Nobu New York City, Nobu Fifty Seven, Nobu London, Nobu Next Door, Bâtard, Porsche Grille at Citi Field, and Crush Wine & Spirits. Fifth Generation Sonoman, Russel Bevan left town to study Philosophy at Gonzaga University, logically leading him to a job in the dental field in the Midwest. A fortuitous transfer sent him back west where wine things started happening for him. Russell became a prolific wine forum nerd and columnist for Wine Spectator Magazine before settling into his own wine gig in N. California. Russell is the proprietor of Bevan Cellars and a sought-after wine consultant stacking up numerous 100-point wines. He recently started Adversity Cellars with his wife Heidi. So, the questions begs to be asked, how the hell did a native Californian with a Masters in Philosophy from a Jesuit University wind up in the Midwest in the dental field, only to return back west and make some of the highest scoring and most prestigious wines? Marko helps his father Silvan in the management of the cellar, and he is especially involved in the creation of the quality selections that give birth to the white field blend “Klin”. Marko is also very committed to valorization of the local grape variety Ribolla Gialla. The work in the cellar is complemented by the commitment in promotion and sales of the Primosic wines in Italy and abroad: Marko becomes the sales director of the winery, and at first he travels through Europe, then he flies to America and Asia also. In the United States, he starts to be known as “Mr. Ribolla Gialla”, the winemaker who brought to the fore a grape variety that before was unknown overseas. In the 2000s he is more and more involved in the Collio Consortium: for several years, he is the vice-president of the Collio Consortium and becomes an ambassador of the Collio territory all over the world. In 2007, Marko Primosic and Stanko Radikon are the founders of the Association of Producers of the Ribolla di Oslavia (APRO). Thanks to this association, the winemakers in Oslavia share their experiences about Ribolla Gialla fermented on the skins and they work together to promote the ”Orange wines” from Oslavia. In an historic moment when more and more attention is given to sustainability and natural wines, the Ribolla di Oslavia made by Primosic winery is awarded by the most important wine guides and magazines. Born and raised in Manhattan, Drew started down his road to restauranteur as a young man in the 1960s. He went on to earn a degree from the School of Hotel Management at Ivy league, Cornell University while working on cruise ships. By 1985 he had opened his first restaurant, Montrachet, which earned three stars from the NYTimes and a coveted Michelin star, keeping its rating for decades. Drew formed his first of many celebrity partnerships in 1990 when he opened Tribeca Grill in 1990 with Robert DeNiro. The now NY landmark restaurant attracted an all star roster of investors including Bill Murray, Sean Penn, and Mikhail Baryshnikov. Making 1994 a defining year in Nieporent's decades long success story, he once again partnered with Robert DeNiro and renowned sushi chef, Nobu Matsuhisa, to open Nobu NYC, Next Door Nobu, and Nobu Fifty-Seven - all of which earned a three star rating from the NYTimes. And of course, Myriad's excellence in wine service is widely acknowledged and its only restaurant group to earn three coveted Grand Awards from Wine Spectator Magazine. In the early '90s, Victor was enjoying a successful career as a sound engineer in Los Angeles. But he was so intrigued by an article from Wine Spectator Magazine that it changedhis life forever. He was bitten by the bug and began devouring everything he could read about the winemaking process. While dirt biking in the hills above Culver City, Victor cameacross the perfect spot to experiment with this newfound knowledge - that small patch of land in a remote corner of Marycrest Manor. Victor eventually lost the battle with the nunswho ran the home, but not before the passion for winemaking had taken a firm hold.Victor met his wife, Jenni, in 2002 and by 2004, with a toddler and another on the way, purchased the land that would become Vines on the Marycrest. Out went the originalalmond trees and in came the vines, loving planted and tended by Victor himself. Jamie Ritchie is the Chairman of Sotheby’s Wine, Worldwide. He joined Sotheby’s in London in 1990 and, during his 29 year career, he has been responsible for expanding Sotheby’s wine business from being an auction house with sales based only in London to a multi-channel international wine merchant with 2018 sales exceeding $100 million. Since 1994, he has been based in New York, having started Sotheby’s US wine auctions. He launched wine auctions in Hong Kong in 2009 and that location has since registered sales of more than $370 million. Mr. Ritchie launched Sotheby’s Wine retail business in New York in 2010 and Hong Kong in 2014. Mr. Ritchie was appointed Worldwide Head of Sotheby’s Wine in 2016 with responsibility for developing a full service global wine business. Since then, Sotheby’s has expanded into the spirits business achieving the record highest value auction with the $10 million Ultimate Whisky Collection in 2019. Also in 2019, Sotheby’s Wine launched the ”Sotheby’s Own Label Wine Collection” a range of Sotheby’s branded wines, which are sold exclusively through their retail businesses. Mr. Ritchie is one of the world’s leading wine auctioneers, holding the records for selling the most expensive bottles of wine and spirits: 1 bottle of Romanee-Conti 1945 for $558,000 in 2018; and 1 bottle of The Macallan Fine & Rare 60 Year Old 1926 for $1.9 million in 2019. He was one of the auctioneers at each of the 16 consecutive Hong Kong “white glove” auctions, selling 10,202 consecutive lots without an unsold lot. Charley and Ron Woodsby.....the father and son team, who started "Talk of the Town Restaurants, Inc." in 1974.....currently own ten restaurants in the Central Florida area. The restaurants are privately owned, and are comprised of such familiar names as ....... "Charley's Steak House" named after Charley Woodsby himself, "Texas Cattle Company", "Johnnies Hideaway," "Vito's Chop House", "Moon Fish" and of course the restaurant I'm reviewing today....... FishBones. The corporate office took on the name "Talk of the Town Restaurants, Inc." and today has over 1000 employees with 64 million dollars in sales among ten restaurants. When you walk into FishBones Restaurant, you realize Seafood is a specialty here. From the big, Aquarium greeting you as you enter, to the maritime feel of the furniture and decor. My party of Podcasters were greeted by FishBones Hostess - Alexa. Alexa was cordial, kind and we were seated in a more "private section" for our large party to talk and hear ourselves talk. We were greeted by our waiter Xavier, who introduced himself to our party of Podcasters and gave each of us a drink menu and dinner menu. Xavier promptly asked if any of us wanted a glass of water while we looked over the menus.......and being I drink lots of water all day, I replied a big "Yes" as well as a few of my other colleagues. The Menu at FishBones has a variety of items to suit your taste. The prices are expensive.....so don't come to FishBones if you are going to have a "chicken" entree. The Fish is boasted to be "Fresh" and flown in to the restaurant "daily." Steaks are aged steaks and cooked over an 1100° citrus and oak wood fire, the Prime Rib is cooked for 23-hours...... slow roasted. BoneFish has an award winning Wine Menu..... WINE SPECTATOR MAGAZINE'S Award of Excellence I'm a Chardonnay girl and Xavier suggested a Chardonnay Wine for me....and it was very good. Chardonnay is $8.00 - $17.00 a glass. One of the "specials" of the day was "Trigger fish" I never heard of Trigger fish and Xavier said it was flown in that day from Hawaii. When I asked him to describe Trigger Fish....Xavier stated it was like Sea Bass and would flake when I put my fork in it. I ordered the Trigger Fish and each entree comes with salad, "garlic cheese .....butter bread...as well as a "Signature Side." I did not touch the Garlic Cheese Butter Bread....and it was tough.....it looked delicious and my compadres were .....ummming and yumming over it. I did have salad, and I opted for a "premium side" since the signature sides were pretty much all about potatoes. I ordered the "creamed kale." since they didn't have "creamed spinach" on the menu. I was worried how "creamed kale" would turn out... The "trigger fish" came plated with a sauteed onion glaze and the "creamed kale" was in a separate bowl on the plate. The trigger fish was delicious! Flaky just as Xavier said it would be...and the portion size was very good. The "creamed kale" was excellent too! The Kale was soft and had the same "creamy" flavor that creamed spinach would have. Pleasantly delighted with creamed Kale. Xavier was very attentive to all our needs.....and Executive Chef.....Marcus King......came over to our table to see how everything was. My entree was awesome......unfortunately my buddy Joseph didn't have the same experience as I did. Joseph ordered the "whole gulf snapper" I was going to split the snapper with him, since I LOVE snapper, but I thought the snapper was cut and filleted. No........they cook the whole damn fish on the citrus oak wood fire....head, eyes and tail! Then they cut open the fish and there the whole damn fish is on your plate. YUCKY for me!!!! Hell no........ I don't want no fish with it's head and eyes looking at me while I'm eating. Plus it had ALL the bones in it. It's like eating the fish like a cave man for the love of God! I had to decline and I ordered the Trigger Fish. When Joseph's entree was placed before him.....I could smell a very "fishy" odor coming from his plate. Very odd for a place that "Boasts" how fresh the fish is. Within seconds.....Joseph was asking me if I smelled a "fishy" smell. I told him and we both took a bite. It tasted ok...but I wouldn't want to eat any fish that "smells" fishy. Either the fish wasn't stored properly or the fish just wasn't fresh. Joseph told Xavier and he ordered the "Florida Gator" appetizer instead. Within a few minutes......Yassine El Harra.....the Manager came over to Joseph and apologized whole-heartedly about the "Snapper." Nice gesture! After Joseph started eating his "Gator" All was good! The rest of the dinner service, conversation and meal was fabulous! How do I rate FishBones with our Weight Loss Nation thumbs up scale? My Trigger Fish dinner and service gets a BIG 2 thumbs up! Joseph's "Whole Snapper" gets a a BIG 2 thumbs down! Overall.....the service, food and atmosphere gets 1 1/2 Thumbs Up! The Castaway Cafe is both a local and a tourist favorite, nestled beachfront at the Aston Maui Kaanapali Villas resort. I found it strictly via word-of-mouth--something I hear mentioned over and over is certainly worth checking out. And I'm glad I did. I sat down with owner Gary Bush to talk about how he wound up in Maui, his philosophy behind the menu (solid, standard breakfast, lunch and dinner items that are prepared fresh and served in generous portions) and his love of wine. The Castaway Cafe's wine cellar started with 17 bottles of wine and now sports over 500. It's won several Wine Spectator Magazine awards and has become well-known among both wine connoisseurs and people just starting to taste the waters.
