Jake Cohen's first cookbook, ‘Jew-Ish' (Harvest, 2021), was a perfect intro to the Instagram-famous cook. How to top it? It “was this mashup of everything I've done up to that point. The second book was starting from scratch,” Cohen told Newsweek's H. Alan Scott. And that's exactly what Cohen did with his new cookbook, ‘I Could Nosh' (Harvest, September), turning to family recipes for ideas. It's “this jumping-off point for inspiration of the way that the matriarchs of our family fed everyone they love.” But to Cohen, just owning the book isn't enough. “To me, the book is not successful if everyone buys it, the book is successful if everyone buys it and cooks from it.” This month, Cohen will team up with other influencers and Food Network stars for Foodie Con, part of the New York City Wine & Food Festival presented by Instagram, a first-of-its kind event. Welcome back to the more we know! Because the more we know, the more we grow. Today your mentor is the famous american restauranteur out of Chicago, Kevin Boehm. After opening 40 restaurants over the last 30 years, James Beard Foundation Award-winning restaurateur Kevin Boehm has established himself as one of the world's foremost hospitality visionaries. Kevin, along with his partner Rob Katz, has built a restaurant group based on great chefs, inspired design, and enlightened hospitality.Born in 1970, Kevin grew up in Springfield, Illinois, and told his mother at age 10 that he wanted to open his own restaurant one day.After attending the University of Illinois for two nonconsecutive years, he dropped out and moved to the Florida Panhandle to start working in restaurants and embark on a self-directed on-the-job hospitality education. After enduring homelessness, fist fights, and six months working at an amusement park, he wrote an embellished resumé that landed him a coveted captain position at Beach House Restaurant. Within a few years, he'd squirreled away enough money to open a six-table restaurant in 1993 in Seaside, Florida, the picture-perfect location where Peter Weir's The Truman Show, starring Jim Carrey, was filmed. In 1995, he opened Indigo Wine Bar in the same town, and helped cater for the movie's dailies screenings.Restaurants in Springfield, Illinois, and Nashville, Tennessee followed. By age 30, Boehm had opened and sold four restaurants.In 2002, Boehm partnered with Rob Katz to form what in time became Boka Restaurant Group. Eventually, they would open 36 places in less than 20 years. The group's many accolades and accomplishments include 18 James Beard Award nominations, two Food & Wine Best New Chefs, 13 consecutive Michelin Guide stars for Boka, and 6 Boka Restaurant Group restaurants on Chicago Tribune's Top 50 list. Boehm, along with Katz, won Restaurateurs of the year from TimeOut Chicago in 2010, the Chicago Tribune in 2011, and The Illinois Restaurant Association in 2017, and were Eater National's Empire Builders of the year in 2012. They have been James Beard Finalists for Best Restaurateur in America 2016-2019, winning the award in 2019, and New City Chicago ranked them #1 in 2017 in its annual list of the 50 most powerful influencers on the Chicago dining scene.In addition to Boka Restaurant Group, in 2020 Boehm co-founded Bian, a private club with a foundation in wellness. Forbes called it “the ultimate wellness destination.” As a writer he has had pieces published in Esquire, Plate, The Chicago Sun Times, and McSweeneys, and he is a contributing writer for Fast Company. Pulitzer Prize Winning Author, Ira Berkow and Snap-O-Razzo Hot Dogs Creator, Ralph Perrazzo Ira Berkow is a sports reporter, columnist, and writer. He shared the 2001 Pulitzer Prize for National Reporting awarded to the staff of The New York Times for his article, "The Minority Quarterback", which was part of the series, How Race Is Lived in America. He has written for Esquire, The New York Times Magazine, Art News, Seventeen, Chicago Magazine, The Chicago Tribune Magazine, National Strategic Forum Review, Reader's Digest, and Sports Illustrated, among others. He is the author of 26 books and his latest is Baseball's Best Ever: A Half Century of Covering Hall of Famers. It is a collection of many of Ira's columns which are insightful and meaningful views of the lives and careers of some of the greatest who have played the game. These player are so much more than what they are on the field and that is provided by Ira's wonderful writing. Ralph Perrazzo is a chef. His restaurant, BBD's (Beers, Burgers, Desserts) was the New York City Wine & Food Festival's 2015 Burger Bash Winner and was included in Newsday's Top Long Island Restaurants in 2014, 2015 and 2016. In 2020, Perrazzo started focusing on his new artisan line of hot dogs and his hot dog company, Snap-O-Razzo Hot Dogs. We met Ralph at Pig Beach during the Jeff Michner Foundation BBQ Benefit and the pleasure of sampling his outstanding products. In order to write the book, he visited 185 places in Chicagoland over the course of six solid months of eating. His “Pizza City U.S.A. Tours” began in May of 2018. Steve curates four tours throughout the city, each one giving guests a chance to sample four styles of pizza in three hours. On the consulting side, Steve started Culinary Communications, a food industry- focused media training company that works with chefs and other food and beverage professionals outside of Chicago, teaching them how to prepare for and handle all kinds of media exposure. He also works with real estate companies to curate spaces involving food and drink clients, organizes and leads virtual pizza and/or cocktail experiences for companies and works with individual clients to curate unique culinary experiences. Since 2009, Steve has been one of 26 Academy Chairs for the World's 50 Best Restaurants, recruiting and overseeing 40 voters in the Mid-USA/Canada region. He has spoken and/or moderated at several industry events, including the James Beard Awards, the Food & Wine Magazine Classic in Aspen and the New York City Wine and Food Festival. Steve volunteers his time for charitable organizations in the Chicago area that focus on hunger relief, including Share Our Strength and Meals on Wheels. Before joining ABC 7, Steve was Executive Producer and Host of “Good Eating.” The weekly, half-hour show aired on CLTV, the 24-hour cable news channel owned by The Tribune Company. The esteemed James Beard Foundation (JBF) navigated shifting tides over the past few years as restaurant culture, including toxic work environments and reprehensible behavior, came into sharper focus. To their credit, ongoing calls for diversity and inclusion led to the cancellation of the annual James Beard Awards in 2020 and 2021 to allow for a period of self-examination, an internal audit, and changes to the policies and procedures of the Awards, the equivalent of the Oscars in the culinary world. With a passion for cultural inclusiveness, Liberian-born and New York-based Dawn Padmore joined JBF as Vice President of Awards in 2021, having had extensive experience in culinary events and a decades-long history of working with the James Beard Awards. In her role, Dawn works with the volunteer committees, JBF staff, and trustees to shape the future of the Awards, including the 2022 Awards to be held in June 2022. Prior to joining JBF, Dawn gained extensive experience as part of teams conceptualizing and producing culinary events and festivals such as the New York City Wine and Food Festival and Harlem EatUp!, an annual festival of food and culture that showcases the talents of Harlem-based and nationally acclaimed chefs and personalities. During COVID, with the festival canceled, Dawn served as producer on a one-hour televised Harlem EatUp! fundraising special on ABC7 New York. Today, I'm speaking with Tracy, the founder of A North fork Affair. Tracy embraces the entrepreneurial spirit by creating experiential events that support the North fork community. A North fork Affair creates the type of events that Tracy herself wanted to attend from farm to table dining experiences, chunky blanket making, and a new social media series. To get things started Tracy explained that she is also the founder of a company called TK New York, a large scale event company. They produce events like the New York City Wine and Food Festival, the Women in the World Summit and the Harlem Meetup Festival with Marcus Samuelsson to name a few. A North Fork Affair started last April prior to the pandemic and she's thankful it because it actually gave her something to turn her efforts towards. Tracy believes events going forward are going to be smaller and local. I was impressed with what Tracy had to say about the North Fork of Long Island and how well she knows the area which means she knows her customers. Her family has lived on the North Fork since the 1940s. Creating Experiences "I wasn't finding an easy way to infiltrate the groups of friends that were already here. So I thought, what do I want to do? I want to do crafts. I want to sit at a long farm table out in the middle of a field and have an amazing, you know, local made meal." says Tracy This is what A North Fork Affair is really about. Bringing people together for experiential events that let them interact and socialize. With so many of us stuck to our devices and indoors due to COVID, many people are craving ways to get out and stimulate their brain. Their first event was part of craft series that was a floral arranging class. While running large scale events has its challenges, you usually have teams of people coming together to make the magic. When you're a startup on the North Fork, everything falls on your shoulders. It's the little things like needing a tent to build a kitchen outside in the middle of the forest. One of the more interesting bits is how Tracy incorporates her family's China into the dining experiences. Tune in around 14 minutes to hear all about it! Embracing the Entrepreneurial Spirit Tracy, like many entrepreneurs had lots to consider when the pandemic hit. Her first thought was to actually take a break which I can completely appreciate in the early days of uncertainty amidst the COVID-19 outbreak. As it became clear this outbreak wasn't going anywhere, Tracy and her team were trying to find ways to make their signature events carry on. Tracy was recruited to be on a committee with the New York city mayor's office to develop the plan of what event re-entry is going to look like. Then came the virtual events like her popular chunky blanket class but in true entrepreneurial fashion, Tracy recognized the change in seasons and appetite for what customers wanted. From there she started her date night series Restaurants on the North Fork I can't give any spoilers here but if you want to hear Tracy's choices for her top restaurants on the North Fork tune in to the 25 minute mark where she describes her favorite new hot spot out in Orient Point. Lee Schrager, creatorof the wildly successful South Beach and New York City Wine & Food Festivals, sits down with ChefKevin Tien (Himitsu in Washington, DC) and hosts Debbie and Billy Shore to discuss the ever-greaterinfluence chefs are having on culture and social change. “Thirty-five years ago, chefs were notsuperstars, they weren’t rock stars. Now people are listening to them,” says Schrager. Recently namedone of the 10 Best New Chefs for 2018 by Food & Wine Magazine, Tien is very aware of his own risinginfluence. “Right now I’m at a point in my career where I’m starting to have a voice. With that comes theresponsibility of doing what’s right, giving back and giving support where it’s needed,” he explains. Theguests discuss the importance of celebrities having influence on a variety of societal issues from hungerto mental health. The group discusses the recent suicide of Anthony Bourdain, who many of them knew.They express disbelief that someone who seemed happy and was such a meaningful contributor to somany people’s lives through his adventurous food and culture show struggled with depression. “Mentalillness masks itself in many different ways,” muses Schrager.Both guests feel fortunate to have made careers of their passions. Tien worked in kitchens growing up butentered the corporate world after college. “I wasn’t happy, so I decided to quit my job and go back intocooking. It feels good to feed others, it feels good to give back, and I want to find a way to do it on alarger scale,” he reveals. Schrager attended the Culinary Institute of America but realized he did not wantto be a professional chef. “I learned years ago you gotta do what you love and love what you do. And Ilove what I do,” he says. Born and raised in St. Paul, Minnesota, Jim Buron received an art degree from Lake Superior College in Duluth, Minnesota. In 2003, He gained professional experience when he joined FILO Productions, an event management company. With FILO, he toured the country for five years producing events that ranged from store openings and mobile marketing tours to NBA All-Star games. In 2008, Jim joined Renny & Reed, an industry leading, New York-based event design firm. As production manager with Renny & Reed, Jim has overseen numerous high-end and large scale events nation-wide including private parties, corporate gatherings, as well as galas for both the Tony Bennett and Christopher Reeves foundations. More recently, Jim Buron Productions has produced and managed events for Leaddog Marketing Group, George P. Johnson, Imprint Projects, Jenna Lam Events, MOJO and the New York City Wine and Food Festival. Jim and his team are currently producing events for multiple agencies as well as creating unique events of their own, including the Twin Cities Burger Battle which is currently in production on its fourth annual event in Minnesota.
