Alex Diaz is constantly pushing to make his restaurant, Alex's Fresh Kitchen, a success. “It's my baby. It's my dream, you know, and I do anything for it. I've sacrificed for this place,” Diaz said. Diaz opened his restaurant in 2019 at 1015 State Road 436 in Suite 109 of a strip mall in Casselberry. The pandemic hit not long after, creating new challenges for the budding business. In 2021, Diaz described the ups and downs of coming out of the pandemic — like supply chain issues and inflation — as being like a roller coaster. Now, he said those issues have only gotten worse. “I would say it's torture,” Diaz said. “One minute, you have a good week — and you have good labor costs, good food costs going across the board — and then you do your next order and everything's up, like $20-$30 or more. It's like, ‘When did this happen?‘” Despite the challenges, the chef and his team manage to put out an impressive menu of, largely, scratch-made food from a tight kitchen. Diaz chalks it up to the work culture he maintains at the restaurant. “We respect each other. We call each other chefs throughout the whole kitchen,” Diaz said. “think it starts with that and I appreciate my guys, I always tell them all the time, ‘I appreciate everything you do.' I think throughout my career, I think that's something that's missing in a lot of places. People are not appreciated enough.” Diaz and his team have seen some significant successes, including an invitation to South Beach Wine & Food Festival. “We had no clue what we were doing when we came down there, ut it was, it was a really good experience,” Diaz said. He and his team got the chance to hand out 3,000 of the restaurant's award-winning Mamba burgers. Diaz is also set to be featured in an upcoming TV cooking competition, though he couldn't say much about it. “We got something coming out in October. I'm sworn to secrecy. So I can't say what show it is, but it's definitely going to be an interesting show,” he said. On the latest episode of Florida Foodie, Diaz talks about working with his mother and now his wife. He shares his plans to move Alex's Fresh Kitchen into a bigger space. Please follow our Florida Foodie hosts on social media. You can find Candace Campos on Twitter and Facebook. Now, you know this show is driven by industry technology topics, today is a little step out of the ordinary as we begin to finish out this year. When I started planning a few months ago about who I wanted on the show for my Christmas Episode, I couldn’t think of any person I would rather join me more that John Rivers, the Founder and CEO of 4R Restaurant group, more well known under the 4Rivers BBQ name. Just by coincidence he also happens to be my boss and fearless leader. You have all heard me talk, multiple times, about this amazing company and this electric brand. I am hoping that after today, you will begin to understand the passion and success behind what it is today. And make sure you stick to the end of the interview as John has a very special holiday recipe to share with you. John Rivers, CEO and Founder of 4R Restaurant GroupRetiring as president of a $1.5 billion dollar company, John Rivers left a career of twenty years in Healthcare to pursue a lifelong dream of opening a restaurant. In 2009 John created his first concept, 4 Rivers Smokehouse, which quickly became one of the fastest growing restaurants in the southeast. With seventeen locations in Florida and Georgia, the success and popularity of his 4 Rivers Smokehouse and his second and third concepts, the Southern-inspired COOP, and Latin influenced Cantina Barbacoa at Disney Springs have garnered national recognition. MSN named 4 Rivers as the #1 BBQ restaurant chain in the country, Southern Living dubbed 4 Rivers as the top BBQ in the South, and Nation’s Restaurant News recognized 4 Rivers as a top five breakout brands. Restaurant Business named John as one of the Power 20 Leaders in the restaurant industry, Orlando Magazine included him among Orlando’s “50 Most Powerful, 15 to Watch”, the OBJ named John the Philanthropist of the Year, and John has twice been named a finalist for the Ernst & Young Entrepreneur of the Year Award.  John has twice been invited to cook at the prestigious James Beard House in New York City and has enjoyed participating in Food Network’s South Beach Wine & Food Festival for the last 8 consecutive years. He has appeared on numerous television shows and has been featured in national publications including Food & Wine, Bon Appetit, USA Today, Business Insider and Cooking Light Magazine. John authored his first book, “The Southern Cowboy Cookbook” and launched a line of retail and manufactured products currently enjoying shelf space at Publix & Costco and being distributed nationally by partners such as Sysco & US Foods. A graduate of Florida State University College of Business, where he serves on the Board of Governors, John chairs both the 4R Foundation and the 4Roots Farm and is co-founder of Winter Park’s largest culinary festival; “Cows ‘n Cabs”.  John lives in Winter Park with his wife Monica and two children, Jared and Cameron where he serves on the boards of numerous school, church, and charity organizations.  How To Contact MeComment hotline: 954-302-0851 Website: https://skipkimpel.com/ (https://SkipKimpel.com) (show notes will be posted here) Instagram: https://instagram.com/skipkimpel (https://instagram.com/skipkimpel) Twitter: https://twitter.com/skipkimpel (https://twitter.com/skipkimpel) Facebook:  https://www.facebook.com/skipkimpel1/ (https://www.facebook.com/skipkimpel1/) LinkedIn: https://www.linkedin.com/in/skipkimpel/ (https://www.linkedin.com/in/skipkimpel/) Next Week’s Show…I want to wish you all a very Merry Christmas, Happy Hanukkah or whatever holiday you are currently celebrating. I will talk to you one last time this year, next Tuesday to say farewell to 2020 and open the door with great glee to 2021… a year that will turn all things around in our industry. I am positive of it.

Odds are you been to a Shake Shack somewhere in the world and odds are you're a fan. The burger phenomenon that started with a stand in NYC has become a world wide sensation with locations from Miami, to Tokyo to Dubai and everywhere in between. We sat down with the chain's culinary director Mark Rosati who was in town for last month's South Beach Wine and Food Festival, to find out all about the burgers and what's next for the popular chain. Rosati got his start not as a chef, but just a fan of food. A chance encounter with Tom Colicchio got him a gig at the famed Gramercy Tavern where he honed his skills for three years. Wanting to learn another side of the restaurant industry, more specifically management, he took a job with Danny Meyer's Union Hospitality Group's then new concept Shake Shack, which had just opened Madison Square Park and quickly fell in love and helped grown it into the phenomenon it is today. When the concept decided to expand outside of the NYC for the first time, the first stop was Miami with the opening of the Lincoln Road location in 2010. Rosati lived in South Florida for close to a month and learned to love the city and local hot spots like Michael's Genuine Food & Drink and Puerto Sagua and even has a clever idea for a Miami-inspired Shake burger that he shares with us. Find out how he gets inspired, what locations are coming next and exactly what goes into making the now famous Chick'n Shack.
