When Cindy Syracuse joined BurgerFi International last January as CMO, she hit the ground running. Her first order of business: Earn more recognition for BurgerFi in the “better burger” category. So she tasked the culinary team with creating a new burger to enter into the South Beach Wine & Food (SOBE) festival's Burger Bash taking place in February. In less than a month, they developed the BBQ Rodeo Burger, entered it into the competition and won first place. Alex Diaz is constantly pushing to make his restaurant, Alex's Fresh Kitchen, a success. “It's my baby. It's my dream, you know, and I do anything for it. I've sacrificed for this place,” Diaz said. Diaz opened his restaurant in 2019 at 1015 State Road 436 in Suite 109 of a strip mall in Casselberry. The pandemic hit not long after, creating new challenges for the budding business. In 2021, Diaz described the ups and downs of coming out of the pandemic — like supply chain issues and inflation — as being like a roller coaster. Now, he said those issues have only gotten worse. “I would say it's torture,” Diaz said. “One minute, you have a good week — and you have good labor costs, good food costs going across the board — and then you do your next order and everything's up, like $20-$30 or more. It's like, ‘When did this happen?‘” Despite the challenges, the chef and his team manage to put out an impressive menu of, largely, scratch-made food from a tight kitchen. Diaz chalks it up to the work culture he maintains at the restaurant. “We respect each other. We call each other chefs throughout the whole kitchen,” Diaz said. “think it starts with that and I appreciate my guys, I always tell them all the time, ‘I appreciate everything you do.' I think throughout my career, I think that's something that's missing in a lot of places. People are not appreciated enough.” Diaz and his team have seen some significant successes, including an invitation to South Beach Wine & Food Festival. “We had no clue what we were doing when we came down there, ut it was, it was a really good experience,” Diaz said. He and his team got the chance to hand out 3,000 of the restaurant's award-winning Mamba burgers. Diaz is also set to be featured in an upcoming TV cooking competition, though he couldn't say much about it. “We got something coming out in October. I'm sworn to secrecy. So I can't say what show it is, but it's definitely going to be an interesting show,” he said. On the latest episode of Florida Foodie, Diaz talks about working with his mother and now his wife. She is recognized as 2022 Leader in the Wine Industry by Wine Business Monthly, a nominee of 2020 Wine Enthusiast Wine Star Awards, Wine Educator of the Year, a WSET Level 3 with Merit, an International Sommelier Guild Level II, and Executive Bourbon Steward, Stave and Thief. She received the 2021 Alumni Achievement Award from Knox College. Regine has traveled around the globe sharing her wine and spirits expertise. She has authored or been featured in articles in the The Drop, New Yorker, Wine Enthusiast, Pix Wine, Black Enterprise, Black Food and Beverage, Wine Spectator, the Zoe Report, Forbes, VinePair , Afar and Chicago Tribune. Regine fell in love with wine while studying abroad during college in Besançon, France and began her career as a salesperson for a wine distributor. While in this role, she noticed a disconnect between wine professionals and consumers. Making wine approachable became a central premise of Regine's work. In 2013, Regine established Shall We Wine, a wine and spirits experiential marketing, event planning, and education company. Working with national and boutique winemakers, distilleries, importers, and distributors, she increases brand awareness, reach, and revenue for clients through innovative and traditional approaches. These include in-person and on-line activations, events, sponsorships, videos, media and social media services, and speaker and influencer marketing. She and her team are masters at translating complex terminology into language that individuals of every level of wine expertise and interest appreciates. Regine's speaking, keynote, moderator and panelist engagements include South Beach Wine and Food Festival (2022 and 2023), Blacks in Wine Symposium, Wonder Women in Wine, I.E.E.M Conference - Pinot Grigio delle Venezie, SoloCEO Summit, www.tastings.com, and Association of Writers and Writers' Programs. She is columnist for Pix Wines and a blogger on shallwewine.com, has served as subject matter expert for VinePair, has been interviewed on You & Me Chicago, WGN Chicago, Windy City Live, and Great Day Washington. Regine was the virtual event moderator for Gallo International Women's Month (2021 and 2023). Regine is a regular contributor for WGN's Daytime Chicago television show. Language is integral to Rousseau's work as a poet and published author where wine and written word are often interwoven. In her book Searching for Cloves and Lilies: The Wine Edition, Regine illustrates the dynamics of personal relationships while pairing each poem with wine that echoes the mood of her writing. Regine is recipient of the Wine Bloggers Conference Ethnifacts Diversity Scholarship, grants from McBride Sisters Collections and Allies for Community Business, and Knox College's 2020 Alumni Achievement Award. She is fluent in French, Haitian Creole, and English. She has a BA from Knox College, studied at L'Université de Franche Comte and Centre de Linguistique Appliquée.

He's also the founder of the New York City Wine & Food Festival and the South Beach Wine and Food Festival. Mike Beltrán's criticisms of SOBEWFF are no secret. Odds are you been to a Shake Shack somewhere in the world and odds are you're a fan. The burger phenomenon that started with a stand in NYC has become a world wide sensation with locations from Miami, to Tokyo to Dubai and everywhere in between. We sat down with the chain's culinary director Mark Rosati who was in town for last month's South Beach Wine and Food Festival, to find out all about the burgers and what's next for the popular chain. Rosati got his start not as a chef, but just a fan of food. A chance encounter with Tom Colicchio got him a gig at the famed Gramercy Tavern where he honed his skills for three years. Wanting to learn another side of the restaurant industry, more specifically management, he took a job with Danny Meyer's Union Hospitality Group's then new concept Shake Shack, which had just opened Madison Square Park and quickly fell in love and helped grown it into the phenomenon it is today. When the concept decided to expand outside of the NYC for the first time, the first stop was Miami with the opening of the Lincoln Road location in 2010. Rosati lived in South Florida for close to a month and learned to love the city and local hot spots like Michael's Genuine Food & Drink and Puerto Sagua and even has a clever idea for a Miami-inspired Shake burger that he shares with us. This is the high season in South Beach Florida, and we revel in the festivals that take advantage of our sunshine and mild winter weather. Last week's event was the South Beach Wine and Food Festival. We attended the festival and met up there Dean Mike Hampton. He's the Dean of Florida International University's Chaplin School of Hospitality and Tourism Management.
