In 2018, Gold Dot Beer's Kevin Davey was working as the brewmaster of Portland Oregon's Wayfinder Beer when he hit upon the idea of brewing an India Pale Ale with lager yeast. Hazy IPAs had yet to consolidate their grasp as the dominant substyle of the traditional West Coast variety, and this was the age of tinkering; in fact, Davey says his experimental brew was an answer of sorts to Kim Sturdevant's Brut IPA invention in San Francisco during that same era. (Check out the episode directly prior to this one for that story.) Davey called his crisp, clear, dry-hopped creation “Cold IPA” — a nod to its lager-like production process, and the temperature at which it's meant to be enjoyed. Celebrating the love of low ABV beersLast year's Little Beer Fest provided unusually cold temps in Duluth, GA with a bit of "wintery mix," aka rain, snow, and sleet. Fortunately we didn't see a repeat and this year's event provided plenty of sunshine and temps in the 70s. Perfect weather for enjoying some low ABV beers. Cold IPA is a newer term for a style of beer that aims for a crisper IPA coined by Kevin Davey, Brewmaster at Wayfinder. Today Kevin joins us on The BrewDeck to help us learn more about what sets this IPA style apart. We kick off the discussion, hearing a little more about Kevin's background, and then dive right into how he came up with the idea to mix his favorite parts of an IPA and put them all into one thing. Kevin gets into the distinct flavor profile of the Cold IPA and how this feeds into his decision to name it as such, and then we take a deep dive into the types of hops, barley, and adjuncts that go into it. Here we explore Kevin's decision to move from rice to corn, the barley growing industry in the US and its effect on cost, and the choice to use adjuncts instead of a malt-only recipe. Toward the end of the discussion, Kevin weighs in on a few top tips for anybody interested in brewing a Cold IPA of their own, making sure to cover water profile, base malts, mash temperature, and his unique technique of developing in the middle of the hop creep. Kevin wraps up with a final description of the Cold IPA as an antithesis to a Hazy: it's more carbonated, drier, more clear, more bitter, more everything! As someone who thinks way too much about beer way too often, I’ll always consider myself lucky for the sheer fact I get to spend some of my time talking about this beverage we love so much. There have been lots of great conversations about beer shared with friends and people in the industry, with some of my favorites simply nerding out with fellow writers I meet during my travels. This fall, I made my first trip to Portland, Oregon, where I had the chance to have one of those kinds of talks with two of my favorite writers covering beer, Jeff Alworth and Jason Notte. The pair represent two brilliant sides of reporting on the same topic. Jeff has long been one of my go-to sources for cultural and historical insight and commentary, while Jason’s acumen on the business side of things makes him stand out. We met at Portland’s Wayfinder Beer and grabbed a table outside where our conversation meandered in many of the same ways it would have without microphones in front of us. We talked about our process, the latest news about the likes of Sam Adams and trends we’ve been following. This was at the beginning of October, right before the Great American Beer Festival, when the Brewers Association was set to celebrate their new seal of independence—an ideal time for Jason, Jeff, and I to share our own takes on what such a thing means and why it’s important…or not important. Whenever I sit down to record a GBH Podcast, I like to preface it as a conversation, not necessarily an interview. This talk with Jeff and Jason felt very much like that.
