But today, David Bloom joins me as the Chief Development and Operating Officer of two different franchises: Capriotti's and Wing Zone. The past few months have seen grocery foodservice endeavors ramping up. Hy-Vee, for example, first had a partnership with Wahlburgers in 2017 to open dozens of locations of that burger brand, including freestanding units. Now this week, the company said that any Wahlburgers restaurant locations it opens moving forward would be inside its stores exclusively, saying, quote: “With the changing nature of the restaurant business combined with staffing challenges, we are evolving our strategy when it comes to standalone Wahlburgers restaurant locations.”And it's not it's not just Hy-Vee. Other grocery chains are expanding their in-store branded restaurant locations.Kroger has been rapidly rolling out Mix Food Halls, operated by Kitchen United, in its stores, featuring several well-known restaurant brands. These include Fuku Fried Chicken, Wow Bao, Genghis Grill, Hardee's, Pei Wei Asian Kitchen, Nékter Juice Bar, Nathan's Famous, Saladworks, Wing Zone, Capriotti's Sandwich Shop and Dickey's Barbecue Pit. And a whole bunch more. H-E-B has also been expanding its own-brand in-store restaurants, including South Flo Pizza and True Texas BBQ, which was actually recently named the best chain barbecue restaurant by Texas Monthly. This week I feature my former Wing Zone partner, Matt Friedman.  For years when we would bring prospects and guests into town for Discovery Day, they would inevitably make the leap that by virtue of our last names being the same and me being Matt's senior by a good 20 years, that we were father and son.  They would look at all that Matt and Adam had accomplished in building the Wing Zone business and suggest how proud I must be of my son.  Well, while I would always agree with them about the growth of the business, I would tell them too, how proud I am of my son, but his name is Michael, not Matt and doesn't participate in the business.  It was always lots of fun that I could count on monthly.  Anyway, I tell you all that to say this week I am particularly proud of my son Michael, as he gets ready to join his bride Megan, to share their vows of marriage.  So, who better to present today than that other Friedman, Matt, as I celebrate this sacred event with my "real son."  Next week, I am back and joined by Jeremy Morgan, CEO of WellBiz Brands, franchisors of Amazing Lash, Dry Bar, Elements Massage, Fitness Together and Radiant Waxing.

This month on Hospitality Hangout, Michael Schatzberg “The Restaurant Guy” and Jimmy Frischling “The Finance Guy” are taking a break from their usual interview episodes and bringing you a Best Of season of all your favorite segments. They bring back “Best Of” old favorites such as “Top of the Tech Stack” and “The Branded Quickfire.”In this episode they feature a Best Of Talking Back with special guest and Co Founder & CEO at Chowly, Inc., Sterling Douglass. When Schatzberg and Frischling started Hospitality Hangout podcast to talk to people in the industry, they quickly learned that their guests had questions for them as well. They created Talking Back to give their guests the opportunity to ask them questions. This episode shares several great questions from many industry leaders. David Bloom, Chief Development and Operating officer at Capriotti's and Wing Zone had a three part question. He asked, “What are you the most excited about for the future of tech?” Frischling answered he was most excited and loves the optionality and the large “menu” of tech available to operators. Bloom also asked, “What is the biggest lever a brand can pull to position themselves ahead of the curve?” Frischling said that the biggest lever would be to leverage AI and automation to address the issue of labor shortage and that he's interested in a combination of data and analytics dominated decision making. Marty Hahnfeld, Chief Customer Officer at Olo was a guest on season 4 and he asked, “What is one thing that is a normal part of the restaurant experience today that will be gone in 5 years?” Schatzberg answered, Handwriting menus and written reservation books will be a thing of the past. Everything will be done on mobile. Also the idea of walking into a McDonalds and an employee asking what you would like, that will become fully automated. When Anand Gala, Managing Partner at Gala Capital Partners asked, “What does Branded think about restaurant companies buying tech companies?” Frischling believes no one size fits all and that there are opportunities for restauranteurs to be good investors in tech companies, as well as good clients in tech companies. It depends on the company goals. Schatzberg said being a good customer is key, but maybe as a defensive measure, a restaurant could invest in a company to stop it from going exclusively to a competitor. David Bloom, Chief Development and Operating officer at Capriotti's and Wing Zone had a three part question. He asked, “What are you the most excited about for the future of tech?” Frischling answered he was most excited and loves the optionality and the large “menu” of tech available to operators. Bloom also asked, “What is the biggest lever a brand can pull to position themselves ahead of the curve?” Frischling said that the biggest lever would be to leverage AI and automation to address the issue of labor shortage and that he's interested in a combination of data and analytics dominated decision making. Marty Hahnfeld, Chief Customer Officer at Olo was a guest on season 4 and he asked, “What is one thing that is a normal part of the restaurant experience today that will be gone in 5 years?” Schatzberg answered, Handwriting menus and written reservation books will be a thing of the past. Everything will be done on mobile. Also the idea of walking into a McDonalds and an employee asking what you would like, that will become fully automated. When Anand Gala, Managing Partner at Gala Capital Partners asked, “What does Branded think about restaurant companies buying tech companies?” Frischling believes no one size fits all and that there are opportunities for restauranteurs to be good investors in tech companies, as well as good clients in tech companies. It depends on the company goals. Schatzberg said being a good customer is key, but maybe as a defensive measure, a restaurant could invest in a company to stop it from going exclusively to a competitor. Myles is the Vice President of Operations at Wing Zone, a restaurant with nearly 80 locations in 25 states that offers “bigger, better, flavor-fuzed wings, plus burgers, tenders & more.” The COVID pandemic has increased the pressure on restaurant owners and managers to implement programs that reward employees and boost employee morale. It's important for restaurant leadership to sometimes roll up their sleeves and work alongside employees and engage with employees at the ground level. Wing Zone is constantly evolving its offerings and the experience it provides to customers and hopes to implement the “2.0” experience currently in use in test markets across all Wing Zone locations. There are a lot of negative perceptions about the use of robotics and technology in the restaurant industry. When Las Vegas-based Capriotti’s was looking at 40% same-store sales declines as the pandemic shutdown hit in 2020, CEO Ashley Morris remembered some profound advice from a mentor. “He said you have to run headfirst into your problems,” said Morris. So Morris decided, if the company was going to run out of money anyway, why not spend the most they could on a marketing program. The fast-casual brand was already well positioned to expand on delivery and omni-channel ordering, he said. “We thought, let’s just see if we can remind the world that we’re available and we’re open.” Capriotti’s spent $250,000 on a local marketing campaign in Las Vegas, where the chain had about 40 units. Because so many other advertisers had pulled ads as a result of the pandemic shutdown, Capriotti’s was able to get more for the money, flooding TV channels with commercials. Within three weeks, the chain went from negative 40% same-store sales to positive results. Morris decided to take the marketing push systemwide. Capriotti’s ended 2020 with same-store sales up by double digits. The mostly franchised chain had systemwide sales of $84 million, up 9.5%, and Capriotti’s added 18 units for a total of 114 at the end of the year, according to Datassential’s Firefly 500 report. Stan Friedman is passionate about franchising. Past leadership positions include C-Level roles at: Blimpie International, Wing Zone, Maggie Moos and Tutor Doctor. Years of franchise development and relationship experience are what uniquely prepared Stan for his present role at FRM Solutions, providing CRM tools to help franchisors manage relationships with their prospective and existing franchisees.   Always an “outside the box” thinker, Stan has been a long-time proponent of diversity in franchising. That work began at Blimpie, when he created an Urban Expansion initiative heralded by the media and leaders of the public and private sectors and culminated in a White House visit, where he and BLIMPIE Founder Tony Conza, personally participated in the President's “Conference for Community Empowerment.” Later that year, this initiative was celebrated as Blimpie International's Innovation of the Year. In further recognition of his work in diversity, Stan proudly accepted the IFA's Ronald E. Harrison Diversity Award in 2011, an honor only bestowed six times previously, in IFA history.  More recently, Stan's work in diversity has been focused on pro-athletes and their transitions from playbooks to Ops Manuals, as co-founder of PAFI, the Pro Athlete Franchise Initiative, a program created by he and 7 year NFL veteran, Michael Stone.  Stan currently serves on the (IFA) Educational Foundation Board of Trustees and Leadership Council, is a past member of the Supplier Forum and is a founding member of IFA's Diversity Institute Board.

Mark Arum hosts the wildly popular, Afternoon Drive on Atlanta's News & Talk.  Last week, I became his BFF.  All it took, was for me to to catch him talking about one of my favorite topics on hi show… Chicken Wings.  Yes, as you may know, since 2006, I have been the “Chairman of the National Buffalo Wing Hall of Flame.  (that's flame as in HEAT!)  No hate mail, please.  Each year at the National Buffalo Wing Festival, I bestow honors upon those who have made contributions to the wing's ascent to the center of the plate.  Past inductees have included the founders of Wing Stop, Wing Zone and Buffalo Wild Wings.  In 2011, I even inducted Bill Murray, for actually inspiring the creation of the Festival, which resulted from the role he played in the 2001 movie, OSMOSIS JONES. So, I've said all this, to say that when I heard Mark Arum ranting about Wing Stop opening next door to his favorite wingery, the American Deli in Atlanta, I was glued to his program and he got my call.  I hope you'll enjoy this non-traditional episode of Franchise Today, as much as I've enjoyed producing it. On this episode of Emerging Brands, Ashley Morris, Chief Executive Officer of Capriotti’s Sandwich Shop and the newly acquired Wing Zone, talks about growing up in Las Vegas, Nevada, and going to school for finance. Morris shares how his best friend introduced him to Capriotti’s Sandwich Shop when he came home from school. Ashley Morris was born in Los Angeles and grew up in Las Vegas. He went to school for finance and he started early in his career in financial services and portfolio management with Wells Fargo. While in college, his best friend Jason introduced Morris to Capriotti’s Sandwich Shop. Morris gets around to going to Capriotti’s and because he had a love for cheese steaks, he orders the sandwich. Morris says, “This was the greatest cheese steak I had ever eaten of all the cheese steaks that I had eaten.” Morris became passionate about the food at Capriotti’s and sometimes would eat it twice a day!While at Wells Fargo, Morris wanted to diversify and find a side business with his best friend. They both looked into Capriotti’s Sandwich Shop because they had a high passion for the food and business. They became franchisees in 2003, and two years later they were building their third. When it becomes clear to Morris that Capriotti’s was his true passion, he goes back to the founder’s wanting a larger territory. Through their negotiations Morris ends up acquiring Capriotti’s and becomes the franchisor in 2008, owning the entire company. Morris talks about the overall philosophy and the rebranding of Capriotti’s as well as the total economic meltdown ninety days after the purchase of Capriotti’s. Their business plans at that point had gone out the window, forcing them to survive instead of grow and thrive. Learn why company values became the driving force for their vision.
