Lou Holtz is famous for his incredible college coaching career, which included leading six different programs to bowl games, helping the Fighting Irish secure 100 wins, and then embarking on an enviable career as a sports analyst. When you get into a room with him, he is as humble, funny and sincere as they come. News 6 Insiders and other viewers were invited into the room as Florida's Fourth Estate hosted a live recording with Holtz at Miller's Ale House in Winter Park Village. He talked to podcast hosts Matt Austin and Ginger Gadsden about what keeps him humble, his time coaching Notre Dame, and the current state of college football. Austin asked, “I'm fascinated, coach, to ask you where you think college football is headed, because as a fan it's been frustrating to see these teams — it seems like the players I root for one year are gone the next year, money is playing a big role, what are your thoughts on how college football is going?” “I think an athlete should be paid if he works at McDonald's, but not to go to college. Not to go to college. You go to college to get an education. It's a 40-year decision, not four. You pick out the school you want to be part of the rest of your life, and you go do that, and to get paid for that is setting the wrong perspective,” Holtz said. He said he made $95,000 a year at Notre Dame, but feels the approach to coaching and playing has changed since he was on the field. “I think that coaches followed the money, then the players are following the money, now the schools are following the money,” Holtz said. “Florida State is talking about leaving the ACC, because the SEC just got $51 million per team.” When it comes to the transfer portal, Holtz called it the “worst thing that's ever happened.” “There is nothing wrong with being patient and proven, waiting your turn, and being ready when you get that opportunity,” he said. According to Holtz, hopping from college to college is not what football is all about, and that it is causing fans — including himself — to turn away from the sport. “I'm starting to lose interest in it because I can't tell who plays for who,” Holtz said. However, he said he remains optimistic something will be done to slow athletes from jumping from team to team so often. When he talks about his time as a coach, you can tell Holtz is still passionate about making an impact. He said that if given the opportunity today, “I would like to coach anywhere that I could do it physically.” And if he was at the helm again, he wouldn't be taking it easy. Holtz told News 6 Insiders, “The biggest mistake that leaders make and parents make... they lower the standards for their children to try to keep them happy. What you do is raise the standard then teach them how to reach that standard.” He said part of that is focusing on the details. “You win because you do the little things the right way. Everybody does big things, winners do the little things. The shoe was lost, the horse was lost, because the horse was lost, the rider was lost, because the rider was lost, the message was lost, because the message was lost the battle was lost, because the battle was lost the war was lost, because of the little thing,” Holtz said. As for the coaches coming after him, he freely shared what helped him to be a success. Holtz said when he accepted the head coaching job at Notre Dame he was told leadership involved having a vision for where you want the organization to go, leading by example, and holding people accountable for the choices they make. He said throughout his life he chose to prioritize his faith, his family, and then football. “I don't care what you achieve in this world, I don't care how much money you make, if you aren't successful as a husband and a father, you failed,” he said. 4 predictions from senior food & beverage editor Bret Thorn:Indian cuisine, finallyTrend watchers have been waiting for Indian cuisine to really take off in American dining for decades, and it seems to finally be happening. Medium- to high-end independent Indian restaurants are opening across the country, some led by big-name restaurateurs including Maneet Chauhan in Nashville, Rohini Dey in Chicago, and Srijith Gopinathan in San Francisco, and others by operators still developing names for themselves. Then there's the growing roster of fast-casual Indian restaurants including Rasa, Curry Up Now, The Kati Roll Company, Tarka Indian Kitchen, Inday, Choolaah Indian BBQ, Tulsi Indian Eatery, and many more. Also of note is the addition this past August of a Zingers Tikka Wrap on the permanent menu of Miller's Ale House, a casual-dining chain not known for its adventuresome cuisine.The Zingers is what Miller's calls its signature chicken tender, but in this case, it's wrapped up to resemble a kathi roll.Coffee as the base for spirit-free cocktailsConsumption of coffee is on the rise, as are energy drinks and non-alcoholic cocktails. Young consumers, dating back to when Generation X was young, have long enjoyed energy drinks — often Red Bull — spiked with alcohol. And what has arguably been the trendiest cocktail over the past few years? The Espresso Martini.Put all of that together, and the stage is set for a proliferation of coffee standing in as the base for spirit-free Old Fashioneds and espressos and tonic. Versions of those drinks are already available at some coffeehouses, notably Everyman Espresso in New York City and Paper Plane Coffee Co. in Montclair, N.J.That's already a lot of factors pointing to a beverage trend in the making, but there's another one, too: Cold brew coffee, the increasingly popular version of America's favorite pick-me-up, is getting better. Some coffee aficionados have long said cold brew doesn't extract the unique flavors of high-end beans, but new technology from companies such as BKON, based in Morriston, N.J., have developed technology to extract those flavors. That allows coffeehouses to develop cold brew concentrates unique to their brand, and also makes premium coffee available to bars that might not want to make their own.White lambThere's a fairly new breed of sheep arriving in the U.S. from Australia. The Australian White Sheep has hair instead of wool, giving it a somewhat milder flavor because it doesn't taste of lanolin from the wool, a plus for people who find lamb to be gamy. But it still tastes very much like lamb. It also has a lot of intramuscular fat, but unlike wagyu beef, which also has a lot of marbling, the meat is nonetheless firm. However, the fat has a lower melting point than traditional lamb, resulting in less of a greasy feel, and arguably a better nutrition profile since it contains less saturated fat. Step into the world of the UK's oldest pubs, where time seems to stand still, and the echoes of bygone eras reverberate through the air. Join guest Lorien Jones from Alehouse Haunts, as she takes us through some of their doors. Get ready to embark on a journey through time to explore their unique history and the spirits of the departed that still make themselves known. My Special Guest is Lorien Jones Lorien's interest in the world of ghosts started when she was a child. She began investigating the paranormal in 2006, attending a public event at Alton Towers and hasn't looked back. She launched her business The Ghost Book on Halloween 2013. This was a website which covered many ghostly elements, including the Ghost Hunt Diary on which she advertised events for many of the respectable companies operating in the UK. From here she made many life long friends and acquaintances in the paranormal field. In 2020 she felt herself growing away from the events advertising and began her new venture, Alehouse Haunts. At this time she also began writing for the Haunted Magazine in the autumn of 2020 and was asked to be a brand ambassador in 2022. The Haunting History of Execution Dock At one time the world's largest port, it is hardly surprising that London has a prolific connection with piracy. Lorien explains the haunting history of this area and how if you were charged with piracy, and found guilty, convicts were paraded from the prison over London Bridge, past the Tower of London and towards Wapping where Execution Dock was located. Streets would often be lined with spectators. After a final quart of ale the prisoner would be led to the dock where a shortened rope was placed around their neck whereupon they were executed by hanging. During the suffocation, a prisoner's limbs would spasm and they would be seen to dance which was nicknamed by spectators as the Marshal's Dance. Once dead, the bodies were held in place for three tides. Ghostly goings-on at The Prospect of Whitby Despite being almost entirely destroyed by fire in the 1800s, the internal fittings of The Prospect of Whitby likely originated from shipping timbers. This popular establishment would have been one of the final drinking places for pirates as they broke their journey on their way to Execution Dock. It is said to be haunted by the spirits of many of those condemned men as well as 'moll cutpurse.' In this episode, you will be able to: Delve into the captivating historical past of The Prospect of Whitby and to the reported paranormal activity there. Investigate the types of mysterious occurrences and ghostly sightings at other haunted pubs. Explore some of the dark history of Execution Dock and some of the notorious figures to have been sentenced to death there.
