The path to riches is not often associated with journalism, but in the case of George Ade, writing for Chicago newspapers was his road to wealth and fame. Ade, (1866-1944) who was born and raised in Kentland, Indiana, attended Purdue University and then came to Chicago to work as a reporter in the heydays of newspapers. Today George Ade is rarely remembered, with his books out of print, and decades since his musical comedies were performed. But from the 1890s to the early 20th century, he was compared to Mark Twain, a friend of his, and had not just one, but two hit plays on Broadway at the same time. Ade earned so much money from his successful books, plays and syndicated newspaper columns, he built an English Tutor on a 400-acre estate in Indiana, named Hazelden. There Ade threw big parties and was visited there by U.S. Presidents such as Theodore Roosevelt, William Howard Taft, and Calvin Coolidge. In fact, Taft began his Presidential campaign of 1908 from Hazelden. Ade's name lives on through his philanthropy, like the donation of 65 acres, with fellow alum David E. Ross, to Purdue University, for a football stadium in 1924, which is now known as Ross-Ade Stadium. What was true then about Ade's writing is also true now, and that is Ade's stories are hilarious. His final book “The Old Time Saloon” (1931) is laugh-out-loud funny and a recent edition from the University of Chicago Press is annotated by Bill Savage. Bill Savage, Ph.D. is a professor of English at Northwestern University and our guide through not only the work “The Old-Time Saloon: Not Wet - Not Dry, Just History” and this podcast. Dr. Savage paints a picture of the Chicago Ade knew from the high-class Saloons downtown to the more seedy establishments frequented by his friend, Finely Peter Dunne, whose literary bartender, Martin T. Dooley, delighted a nation with his quips. Writers like Ade and Dunne started out as journalists, and along the way captured the rhythms of speech and the vernacular of the working man, and in doing so gave birth to a new type of literature. A style practiced later by authors such as James Farrell, Nelson Algren, Mike Royko and Stuart Dybek. We hope you will enjoy this dive into Chicago's literary and drinking past. When the 18th Amendment was enacted in 1919, the fifth-largest industry in the United States became illegal. While many parts of the country (including, famously, many north-of-Chicago suburbs) were already legally “Dry,” Prohibition changed the political and moral landscape of the nation, introducing intrusive federal law enforcement, a new kind of organized crime, and the “scofflaw.” In this talk, Bill Savage will discuss how the politics of Temperance, and the battle between Wets and Drys, exposes rifts in American identity (and American food-and-drink culture) that still resonate today. Using George Ade’s The Old-Time Saloon as a guide, he will explore Prohibition historian Daniel Okrent’s not-so-rhetorical question: “How the Hell Did that Happen?” Bill Savage teaches American literature at Northwestern University and the Newberry Library of Chicago, with special emphasis on Chicago writers and the dynamics of urban spaces, including saloons then and now. He edited and annotated Ade’s The Old-Time Saloon (University of Chicago Press, 2016) and Chicago By Day and Night: a Pleasure Seeker’s Guide to the Paris of America (with Paul Durica, Northwestern University Press, 2013), a guide to night life during the 1893 World’s Fair. He went on to make wine and mead professionally, before joining Goose Island in 2013. He is now Lead Brewer in the Goose Island Barrel Aging Program. This conversation coincides with the launch of Goose Island's Sour Sisters range in Australia and we speak with Bill about Goose Island's barrel program, the growing popularity of barrel-aged beers and the challenges of scaling up esoteric beer production to meet global demand. Chicago’s beer story is an historical one, full of the bawdiness that to this day continues the association of beer with the rougher parts of our civility. It’s political - in the burbs is where the temperance movement spawned, we’ve had workers riots and rallies, and our alderman would use their saloons to sway the vote. As American craft brewing brings beer back to the local, and hyperlocal level, some of these histories don’t seem so remote. Tied houses, saloon culture, and good old-fashioned bartending are newly refreshed in their relevance to our daily experience, but the ways in which history repeats itself are sometimes not what we expect. Are breweries with taprooms the same concern as tied houses a hundred years ago? Does "local" mean the same thing in contemporary craft brewing? What’s the role of a bar when it’s not just the corner spot but some sort of craft beer concept, or a sportsbar. And for today’s guest, a lot of that is tied to the role of the bartender themselves. Bill Savage is a Chicago historian, writer, teacher, and long-time bartender going back some 30 years. All of that has led to him being one of the most important voices in Chicago’s drinking culture, and that of our entire country. His new project, The Old Time Saloon originally written by George Ade and resurrected by Bill, kicks off today’s conversation. And it serves as great window into many topics relevant to today’s craft beer drinker.

Following the Chicago Cubs’ historic World Series win on Wednesday, November 2, we sat down with English professor and lifelong Cubs fan Bill Savage.
