Imagine seeing a colour so vivid, so unlike anything in nature, that your brain has no reference for it. That's exactly what happened to five people who took part in an experiment published in the journal Science Advances this week. The newly perceived colour, which is described as a hyper-saturated blue-green shade, has been named olo, and it unlocked a visual experience that was previously impossible with natural light alone. To understand the experiment, we first need to understand how we see colour. At the back of your eye lies the retina, which contains three types of photoreceptor cone cells - S, M, and L cones -each tuned to different wavelengths of light: S cones respond to short, bluish wavelengths, M cones to medium, greenish wavelengths, L cones to long, reddish wavelengths. Together, they allow your brain to mix and interpret the colours of the world around you. But here's the catch: in nature, the M and L cones are almost always activated together due to how their sensitivities overlap. This means it's essentially impossible to isolate just the M cones with regular light. As a result, a truly pure green, seen by stimulating only M cones, is something no one had ever seen - until now. The researchers used pinpoint lasers and advanced optics to stimulate individual photoreceptors in the human eye. Using a laser no more powerful than a standard green laser pointer, the team was able to target cone cells with surgical precision. First, they needed to create a cone map, a detailed image showing the exact arrangement of cone types on each participant's retina. This map allowed the system to fire microscopic pulses of light solely at the M cones, leaving the others in darkness. When volunteers looked into the laser system, they described a colour that doesn't exist in nature. Some said it was like a supercharged peacock green, others just stared in amazement. As soon as the laser was adjusted to stimulate even a few non-M cones, the olo colour vanished and was replaced instantly by the familiar green of the laser. The implications of this go far beyond a cool visual trick and open up new possibilities in both science and medicine. By allowing researchers to control cone cells at this level of precision, it may help us: Understand how colour vision truly works on a cellular level, Simulate what it's like to lose certain types of vision, helping us study degenerative eye conditions like macular degeneration, Explore how to expand human perception, possibly giving people with colour blindness access to colours they've never seen before or even enable humans to experience tetrachromacy. Sadly, most of us will never get to see olo ourselves, but its discovery is a powerful reminder of how much there is still to learn about the human body, even something as seemingly simple as colour. It's no secret that the alternative protein startups are struggling these days. A combination of lower revenue, intense competition, and less available venture capital is leading to a contraction in the sector, with countless alt-meat and dairy companies conducting layoffs, declaring bankruptcy, and even folding altogether.  Enter Ahimsa Companies, a newly formed investment group acquiring promising but distressed plant-based brands. This isn't charity, though. Ahimsa's belief is that, with their consolidation strategy and pooled resources, these brands that are built on a strong underlying product can become profitable under the Ahimsa umbrella. As Ahimsa CEO Matt Tullman says in this conversation, pendulums swing, and many of these companies can be brought to profitability, meaning they could ultimately be sold at a much higher price than their valuation during this period in which plant-based products are in the valley. So far the company has acquired Wicked Foods, Simulate's Nuggs, Blackbird Pizza, an Ohio plant-based foods manufacturing plant, and more.  Matt is a man of many talents, as you'll hear in this episode. In addition to being CEO of Ahimsa Companies, he founded and sold his own education tech company, and is also the co-founder and CEO of Outlier Health, the parent company of supplement company Complement and of No Meat Athlete. Despite the setbacks, I'm hopeful about the technology's future It wasn't meant to go like this. Alternative protein startups that were once soaring are now struggling. Impact investors who were once everywhere are now absent. Banks that confidently predicted 31% annual growth ( UBS) and a 2030 global market worth $88-263B ( Credit Suisse) have quietly taken down their predictions. This sucks. For many founders and staff this wasn't just a job, but a calling - an opportunity to work toward a world free of factory farming. For many investors, it wasn't just an investment, but a bet on a better future. It's easy to feel frustrated, disillusioned, and even hopeless. It's also wrong. There's still plenty of hope for alternative proteins - just on a longer timeline than the unrealistic ones that were once touted. Here are three trends I'm particularly excited about. Better products People are eating less plant-based meat for many reasons, but the simplest one may just be that they don't like how they taste. "Taste/texture" was the top reason chosen by Brits for reducing their plant-based meat consumption in a recent survey by Bryant Research. US consumers most disliked the "consistency and texture" of plant-based foods in a survey of shoppers at retailer Kroger. They've got a point. In 2018-21, every food giant, meat company, and two-person startup rushed new products to market with minimal product testing. Indeed, the meat companies' plant-based offerings were bad enough to inspire conspiracy theories that this was a case of the car companies buying up the streetcars. Consumers noticed. The Bryant Research survey found that two thirds of Brits agreed with the statement "some plant based meat products or brands taste much worse than others." In a 2021 taste test, 100 consumers rated all five brands of plant-based nuggets as much worse than chicken-based nuggets on taste, texture, and "overall liking." One silver lining of the plant-based bloodbath is that stores are culling poor products - US supermarkets now average about 10 plant-based meat offerings, down from 15 a few years ago. Only the most popular products have survived. And they're getting better: 73% of US plant-based meat consumers believe its taste has improved dramatically in recent years. New taste tests from NECTAR confirm this. Omnivores fed a range of meats from animals and plants still generally preferred the animal variety. But five brands of plant-based nuggets - Impossible, Morningstar, Quorn, Rebellyous, and Simulate - were liked roughly as much as the chicken nuggets, and at least one was liked better (see table below). This is exciting. Over 80% of Americans consume chicken nuggets every month, spending $2.3B on the frozen variety annually. All nuggets are processed, so the ultra-processed attacks on plant-based nuggets are weaker. The main remaining problem is that plant-based nuggets are much pricier than the animal kind. Which brings us to the role of retailers. Better merchandising It's not surprising that consumers have been slow to change their lifelong habit of buying factory-farmed meat. It's especially unsurprising when the alternative costs about twice as much. (US plant-based meat eaters say they're only willing to pay 37% more, while retailers suspect they'll pay just 10% extra.) So it's exciting to see European retailers cutting prices. Four giant German retailers - Lidl, Kaufland, Aldi, and Penny - recently cut the price of their own-brand plant-based meats to match the price of meat. Lidl said vegan sales spiked 30% after the move, which coincided with moving plant-based products next to their animal analogs. Dutch retailers are going further. Almost all have now pl...

When most people think about accessibility, the first thing that comes to mind are mobility challenges. According to the Center for Disease Control (CDC), approximately 61 million adults across the United States identify as having a disability of some kind. Some disabilities are not visible or obvious, like sensory or dietary needs. About 10% or 6.1 million people have hidden or invisible disabilities. People with hidden disabilities are protected by the Americans with Disabilities Act (ADA) which includes being entitled to accommodations in lodging. What does this mean for our international travelers, though? How can travel advisors continue to provide stellar service through accommodations, amenities and cultural experiences as the country's aging population grows at a rapid rate? These and other questions will be explored in “Shifting Identities: Making Travel More Accessible”. This presentation will focus on five aspects of diversity – language, dietary restrictions, transportation, religion and technology – to share the impact of accessibility in travel. Take away: 1. Learn the accessibility features (and new logo) to highlight with travel amenities as a new approach to meeting the needs of your client. 2. Hear relevant examples of “travel gone wrong” to avoid. 3. Simulate how to ask the uncomfortable, but needed questions so your client enjoys the best travel experience from beginning to end. 4. When scientists claim they have simulated early earth chemistry to create life from non-life, are they being honest? This episode of ID The Future is the fourth and final installment in a series of conversations between philosopher of science Dr. Stephen Meyer, author of Signature in the Cell: DNA and the Evidence for Intelligent Design, and Dr. James Tour, a world-leading synthetic organic chemist at Rice University. Dr. Tour has recently been engaged in a series of back-and-forth responses to attacks on his work from YouTube science communicator Dave Farina. This has given Tour a new opportunity to critique experts in the field of abiogenesis and allows an interested public to better evaluate both sides of the argument. In Part 4, Meyer and Tour evaluate the work of chemist Bruce Lipshutz; specifically his work designing surfactant molecules that enable amide/peptide bonds. By itself, Lipshutz's work developing synthetic techniques for doing chemistry in water is interesting and has value. But for those tempted to think that his work validates chemical evolutionary theories of the origin of life, Tour has bad news. Peptides don't form in aqueous environments like water. A realistic prebiotic environment would not be capable of producing the reactions necessary to form proteins. And Lipshutz acknowledges this. In their conversation, Tour and Meyer discuss how Lipshutz applies hands-on chemistry that bears no resemblance to the likely conditions of a prebiotic earth. If anything, the work of Lipshutz and others in origin of life research is actually simulating the need for intelligent agency to move simple chemicals in a life-friendly direction. Says Meyer, "Even the modest movement they get towards life seems to be intelligently designed at each step of the way, and even the vocabulary will sometimes reveal that: ribozyme engineer, designer surfactants.
