How do you take a hot restaurant concept national without destroying it?This week's episode of the Restaurant Business podcast A Deeper Dive features Chris Schultz, the CEO of Voodoo Doughnut. The doughnut chain was founded in Portland, Oregon, in 2000 by Kenneth Pogson and Tres Shannon. It quickly gained a reputation for off-the-wall doughnuts—we'll let you check out the website for the names of said doughnuts—and a brilliantly pink color scheme. The company has been expanding rapidly with private-equity owners. We talk with Chris about some of the changes the company has made and how the chain can make itself ready for growth without losing the irreverence that helped it gain popularity in the first place. And we also talk with Schultz about the chain's expansion strategy, and whether that strategy can work for a concept that focuses largely on treats.

Hogan was formerly a long time sports talk radio host on Toronto station CJCL (AM), branded "The Fan 590", Hogan was born in Kingston, Ontario.Hogan previously hosted a weekday morning sports radio show on the Fan 590 called The Mike Hogan Show (originally named The Bullpen) from 9 AM to 12 PM. Typically, the first hour was hosted solely by Hogan as he takes calls from listeners, while the last two hours was previously co-hosted by another guest sportscaster from TSN in the early 2000s, but later changed to a guest sportscaster from Rogers Sportsnet (due to the station being acquired by Rogers Communications) as they both discussed daily sports topics while also interviewing guests. During the later part of the 2000s, Mike Toth became the mainstay co-host of The Bullpen for the last two hours of the show. In late 2009, Toth was let go from the station, leaving Hogan as the sole host for the full 3 hours.During both the CFL and NFL seasons, the first hour on Fridays was co-hosted with former Argonaut and former NFL player Chris Schultz as a one-hour show dedicated to a weekly discussion on the CFL and/or NFL called "Football Friday". Inside the Argos was initially a regular segment of The Mike Hogan Show during the first hour on Wednesdays in the late 2000s until Hogan's show was cancelled. The show was co-hosted by former Argonaut defensive back Adrion Smith during 2007, and offensive lineman Sandy Annunziata during 2008 and 2009.During the CFL season, Hogan also served as the play-by-play voice for the Toronto Argonauts on The Fan 590's radio broadcasts (or webcasts from their website if the games conflicted with a Toronto Blue Jays radio broadcast) with former Argonauts linebacker Pete Martin as his colour analyst. Also during the season, Hogan hosted a one-hour show dedicated to a weekly discussion on the Argonauts featuring interviews of the team members called Inside the Argos. A product of Alberta Derek Taylor, he was born in Red Deer, moved to Edmonton and grew up on Okotoks – Taylor studied at Ryerson University in Toronto and began his career as a writer for TSN in 1998. His first on-air job was in Canmore doing traffic for – Taylor breaks into his full radio voice to spit out “106.5 Mountain FM… the voice of the Bow Valley” – before a stop at CFJC in Kamloops and then his arrival in Winnipeg in 2001. He began calling Bisons games in 2006 and handled that for eight seasons before his return to TSN as an anchor in 2014. “Early on I knew I wanted to do play-by play. I was probably 14 when I first thought, ‘That would be very cool,'” he said. “I've been lucky. The age at which I got the TSN job I had almost written it off because I was 40 and they didn't need any more 40-year-olds doing Sports Centre when they're trying to appeal to the younger crew. “I was thinking of my audition there the other week. We just passed the one-year anniversary of Chris Schultz dying and Schultzie was a part of my audition at TSN. They bring you in and ask you to rewrite a block of Sports Centre and we'll run it and see how you do. I did that one time and then they asked me to talk to Chris Schultz and ask him five questions about the CFL and see how that goes talking to an analyst. So, I wrote down five quick questions and there are Schultzie and I talking about football and it went well and eventually they said, ‘Would you like to come and work for us?' “I said, ‘Absolutely. It would have been my dream 15 years ago, but I'll take it now.' And then I got the Rider play-by-play job and now this with CJOB and the Bombers… like I said, I've been lucky.” #derektaylor #cjob680 #winnipegbluebombers #greycup #chrispomay #livewithcdp #talkshow #barrycullenchevrolet #wellingtonbrewery Want to create live streams like this? Chris Schultz, CEO of Portland, OR-based Voodoo Doughnut, has four decades of restaurant industry operations and growth experience. Before joining Voodoo Doughnut in 2017, he was Senior Vice President of Operations for MOD Pizza, where he led the concept's expansion from a single unit to 350-plus locations.   In this episode, Chris shares the story of two friends' desire to fuse hospitality with a bold and edgy product to open the first Voodoo Doughnut in 2003. At their first location, squeezed between two nightclubs in downtown Portland, they joked about “world doughnut domination”. In 2008, they opened a second unit. Today, Voodoo Doughnut boasts 17 locations in six states.   Chris shares with the Corner Booth his plans for product innovation, business culture, and growth. “Although there will be 24 units in operation by the end of the year,” says Chris, "I see us creating a series of stores rather than a chain." He explains, “It's important [for the units] to be similar rather than identical," adding, “We win when we adapt to the neighborhoods we serve." As far as product, says Chris, "we must remain crave-able."    Chris takes a hire-for-attitude approach to staffing. "We hire interesting people with the will because we can teach the skill." He reminds all he works with, however, not to take themselves too seriously. "We make doughnuts after all."

Chris Schultz, CEO of Portland's iconic brand Voodoo Doughnut, joined the company in 2017 to bring his 30+ years experience in the restaurant industry to the company. Prior to taking over the leadership of Voodoo, he helped Mod Pizza expand nationwide and before that, worked at Starbucks during its rapid expansion.  Since coming aboard, he's helped Voodoo expand into new markets and weather a pandemic.  We talk about bringing Voodoo and its Portland ethos to new markets, what the criteria is, and how it's been accepted.  Chris drops hints at new locations and also announces a new paintjob for their flagship store, taking place as we spoke.   We get to know a bit about Chris, too.  Where he eats in Portland, what he thinks of Blue Star, as well as his love of the Pacific Northwest after transplanting here from Southern California 20 years ago.   We interviewed co-founder Tres Shannon just before he brought Chris on to run the company in 2016.  One of our favorite episodes:  https://rightatthefork.libsyn.com/85-tres-shannon-voodoo-doughnut   https://www.voodoodoughnut.com/   Right at the Fork is supported by: Zupan's Markets: www.Zupans.com Oregon Dungeness Crab: www.OregonDungeness.org  RingSide Steakhouse: www.RingSideSteakhouse.com Portland Food Adventures: www.PortlandFoodAdventures.com

Today Schultz holds the title of Senior Vice President of Operations. In this episode we will discuss: Team importance. Everyone on your team is equally important to getting the job done: no star players. Not worrying about who gets the credit and just focusing on getting the job done. You have to believe in your team. Culture-driven organizations. Failure is not an option. Growing big while remaining small. Move slowly. Make sure you have the confidence to go being before you try to grow. The customers need to want to go back to your restaurant. Customers need to feel comfortable. Being a part of a company that stands for more than just profits. Everyone deserves a second chance.
