Så vad gjorde han med béchamelen?– Det var stuvad vitkål. Den används ju ofta för sin konsistens.Smör, mjöl, mjölk, salt och peppar. Enkel. Och kanske därför också lite svår. Att göra det milda riktigt gott kräver uppmärksamhet.Béchamel är en av de fem franska grundsåserna, modersåserna som lärs ut på kockutbildningar. En byggsten i matlagningen. De fem såserna är: béchamel, velouté, espagnole, tomatsås och hollandaise. Och så finns den kalla majonnäsen.– Béchamel är lite bonnig, säger Stefan Karlsson. Används ofta i stuvningar. Den kanske inte ligger i tiden, men det är klart att den går att utveckla och anpassa till dagens matlagning också.Han föreslår att mixa den fluffig med mixerstav och smaksätta med örter eller citronskal.På franskinspirerade Collage, en av Stefan Karlssons restauranger, finns béchamelsåsen med på menyn.– Vi gör en klassisk toast, en Croque Monsieur.Men kommer såsen spela huvudroll på stjärnkrogen SK mat & människor också?– Jag är inte riktigt där än, säger Stefan Karlsson.Vi provsmakar vår egen tjocka béchamelsås och tre köpta såser — en helkonserv (Dolmio) och två kylda (Knorr, Kelda). In episode 91 UNP founder and curator Grant Scott is in his shed considering the importance of accepting and admitting failure, accepting research as part of your photography and the fact that analogue photography is not defined by the darkroom.  Plus this week photographer Roger Stowell takes on the challenge of supplying Grant with an audio file no longer than 5 minutes in length in which he answer's the question ‘What Does Photography Mean to You?' Roger Stowell has worked as a professional advertising and editorial photographer since 1968. After leaving Portsmoth Art School in the UK with a diploma in Fine Art he began assisting the photographer Clive Arrowsmith, before being sacked for being a hopeless assistant. He went on to photograph fashion and portraits for magazines including the legendary Nova, and interiors for Sir Terence Conran's retail store Habitat, before beginning to work as a food, wine and lifestyle based photographer in 1985. During his long career he has worked editorially for most of the main magazines in London including Elle, Marie-Claire, The Sunday Times, The Times, The Observer, Telegraph Supplement, Red, Olive, BBC Good Food, Tatler, Homes & Gardens, Food & Travel, Sainsbury's and Taste. During the 1990's he directed commercials and created advertising campaigns for clients including Heinz, Maggi, Nestle, Kellogs, Little Chef, Dolmio, HP Sauce, Weight Watchers, Sainsbury's, Schweppes and many others. In 2001 he moved to rural France where he continues to create food based images and hold photography workshops. This weeks podcast starts off strangely.....there's no Paul!!  Yes Phil is left to his own devices to begin with as he goes through this weeks news items which include casting news for series 7b, the Live+7 viewing figures for series 7a a BFI screening of a lost Doctor Who episode and a brief sojourn to Omegas Tat Corner. But when Paul finally shows up, they get stuck into another audio story, The Ghosts of N-Space, a story so convoluted and filled with ethnic stereotypes, Paul can't help but have a Dolmio day whilst Phil lets rip with his best Sandra Dickinson impression.  Still, they have a good time even if no-one else does.  Now, you can put the dinner on, I'll be home in 20 minutes.
