Amen. ***** RECIPES FROM RITA: HOMEMADE SPAGHETTI SAUCE Ingredients 1½-2 pounds fresh ripe tomatoes 1 nice clove garlic ¼ cup olive oil Salt and pepper to taste Handful fresh basil leaves, torn into small pieces or sliced into ribbons Optional but real good: Parmesan, fresh mozzarella, feta or burrata cheese Instructions Slice the tomatoes into small chunks. If you’re using cherry/grape tomatoes, slice in halfor quarters Put the tomatoes in a large bowl. Grate the garlic clove over the tomatoes or chop fine. Pour the olive oil over the tomatoes and sprinkle with the salt. Stir to combine – I like to smoosh the tomatoes down a bit to release some juice, and then add the basil. Add pepper if you like. In the hour of my own homecoming, when I appear before Your Father to give an account of my life on earth, have mercy on me. ***** RECIPES FROM RITA: Tomato Basil Bruschetta 3 cups cherry tomatoes diced or quartered ⅓ cup basil leaves finely chopped – a handful ¼ cup olive oil divided ¼ teaspoon salt 1 French baguette ¼ cup balsamic vinegar Instructions In a mixing bowl, add 3 cups diced cherry tomatoes, ⅓ cup finely chopped basil leaves, 2 tablespoons olive oil, ¼ teaspoon salt. Mix everything and set aside. Slice the baguette. Brush both sides with the remaining olive oil. Broil for about 1-2 minutes on each side or until your get a golden/brown crust. Full list of guests ***** RECIPES FROM RITA: MARY GARDEN IDEAS Mint – since this herb used for tithing in Bible days is an invasive herb, it’s great for containers. So many kinds, from peppermint to spearmint to ginger, mojito and chocolate mint. We make cream mints for Mother’s Day and finely chopped fresh mint is so good in them. (That’s the recipe I’m sharing today). Basil – the legend is that basil was found growing outside of Christ’s tomb after He resurrected. For containers, there’s a small leafed basil called globe or minuet. Leaves are so small no chopping needed. Dill – Another tithing herb mentioned by Jesus, and yummy with seafood and potatoes. Dukat and Fernleaf are good specimens. Cilantro – Analagous with the manna of the Bible, the seed is called coriander. This bolts to seed in hot weather, so take that into consideration. Thyme – French and English are the gold standards, and there are creeping thymes that hang nicely over the containers edge. Marigold – For Mary! Calendua is a lovely marigold with edible flowers. ***** RECIPE: CREAM MINTS Let the little ones hand form them or use molds. When using molds, roll the mints in granulated, sanding or sparkling sugar before putting into molds. Ingredients4 oz cream cheese, softened (use block, not spreadable cream cheese)1 tablespoon butter, softened4 cups powdered sugar, plus a bit extra for forming mints if necessary1/2 teaspoon peppermint extract1/8 teaspoon vanillaFood coloring (optional) InstructionsBeat cream cheese and butter together, then add 2 cups sugar, blending well.Add extracts, and then rest of powdered sugar.Dough should be very stiff and not sticky – like a play dough consistency so you may need to add a bit more sugar.Add a tiny bit of food coloring and blend.Roll dough into teaspoon sized balls.Place on parchment lined baking sheet and dip the tines of a fork in powdered sugar and gently but firmly press down on each mint.OR roll into balls, then in granulated, sanding or sparkling sugar, then press into molds, smoothing tops.Store at room temperature for a week in single layers or in refrigerator for longer storage.Can also be frozen.See omnystudio.com/listener for privacy information.

As far as what to grow, choices are endless. You can plant a single variety of greens or a mix. Let the little ones help you choose. Depending on the depth, you can also plant radishes and carrots. Or how about strawberries? Line a colander with coffee filters to keep soil in and allow good drainage. Or use a plastic baggy and poke holes in it for drainage Tape coffee filters/baggies if necessary to adhere to colander.. Pour soil in 3/4 of the way up. Tamp down to smooth. Water gently but thoroughly. Sprinkle seeds evenly over surface. You can sprinkle on a good amount of seeds if using lettuces. If using carrots or radishes, do less since they need room to grow under the top soil. Pour a tiny bit of soil on top of seeds, just enough to cover. Tamp down gently. Add label and date. You can simply tape the seed packet on a popsicle stick. Place in sunny spot. Outside or in – depending upon weather. If outside and it’s raining a lot bring it in. Water as needed. The first few days you won’t have to water. Keep evenly moist but not soggy. Watch closely — in a week or so you’ll see all those tiny seeds sprouting. Some varieties of lettuces and radishes are ready to eat in 3 weeks For the lettuce garden, as the greens grow, cut at soil level. New growth appears in a few days. Waste not want not! Even if you don’t grow a colander garden, you can grow lettuce from cores! Best kinds to use are romaine and leaf lettuces. Place a 1-2 inch lettuce stem in a shallow bowl with half an inch of water, ensuring the leaves remain above water. Set it on a sunny windowsill, changing the water every 2 days to prevent rot. Amen. ***** RECIPES FROM RITA: CHICKEN SPAGHETTI Ingredients 2 cups cooked chicken – either cook your own or use deli roasted3 cups spaghetti, uncooked and broken into two-in. pieces2 cans cream of mushroom soup3-4 cups grated sharp cheddar cheese1/4 cup finely diced red or other colored bell pepper1/4 cup finely diced onion1 (4-oz.) jar diced pimentos, drained – optional2 cups chicken broth (can use broth you cooked chicken in or canned broth)1 teaspoon or so Seasoned Salt1/8 tsp. to 1/4 tsp. cayenne pepperSalt and pepper, to taste Instructions Cook spaghetti in chicken broth until al dente. Do not overcook. (If you didn’t cook the chicken from scratch, use canned chicken broth to cook the spaghetti. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup extra sharp cheddar. Place mixture in casserole pan and top with remaining 1 cup sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 for 45 minutes until bubbly. Amen ***** RECIPES FROM RITA: MAPLE GRANOLA Ingredients 3 cups old fashioned rolled oats – don’t use quick or instant since they will bake up too powdery 1-1/2 cups nuts of your choice – I used pecan, walnut and almond pieces 1/2 cup sesame seeds 1/2 cup sunflower seeds 1/4 cup salted butter – if using unsalted, add 1/2 teaspoon salt 1/2 cup pure maple syrup 1-2 teaspoons vanilla extract 1/3 cup firmly packed brown sugar – I used light brown 1 cup or so dried fruit Instructions Preheat oven to 325. Combine oats, nuts, seeds and, if using, salt. In a saucepan, stir together butter, maple syrup, vanilla and sugar. Bring to a gentle boil over medium heat, then lower to a simmer and cook about 5 minutes. That’s enough time for sugar to dissolve. Pour maple syrup mixture over oats mixture and stir until well coated. Spray a cookie sheet with cooking spray and spread mixture out in even layer. Bake, stirring occasionally, about 20 minutes or so, until golden. Remove and let cool. It will get crispier as it cools.Stir in fruit. Store in covered container at room temperature up to 2 weeks. Night and day until the last day of all, may our praises give You thanks, our thanksgiving praise You: You who alone are both Father and Son, Son and Father, the Son who is our Tutor and our Teacher, together with the Holy Spirit.” ***** RECIPES FROM RITA: FASTING BREADS Ingredients: 3 1/2 cups Whole Wheat Flour2 1/2 cups All Purpose Flour1 1/2 tsp. Salt1 Tbs. Sugar4 1/2 tsp Active Dry Yeast2 cups Luke Warm Water1/2 cup 100% Pure Maple Syrup or honey1/2 cup Virgin Olive Oil1 tsp. Holy Water1 cup Oats – soaked in 1/2 cup hot water for 2 minutes1 cup Pecan or Walnut pieces – broken and skillet toasted 2 min1 cup Dried Cherries or Raisins – soaked 5 min in 1/4 cup hot water Directions: 1. Combine the first three dry ingredients in a large mixing bowl. Mix well with a whisk. 2. Clear a small area in the center of the dry blend. 3. Add sugar, dry yeast, and the 2 cups of warm water. Let stand for 3 minutes until yeast proofs and forms bubbles. Combine with flour mixture and liquid. This will be thick but more liquid comes later. 4. Add maple syrup, olive oil and holy water. Stir mixture until well blended. 5. Add walnuts and/or pecans and raisins and/or cherries with their liquid. 6. Add soaked oats to the flour mixture. 7. Blend everything together in one bowl. 8. Turn out onto a floured board and knead by hand for 10-12 minutes adding more flour as needed to make a moderately stiff dough that is smooth and elastic. Knead the dough by flattening somewhat and fold-in from the outside towards the center. Press down hard on the center. Rotate the bowl and repeat the process until smooth and elastic and forma “ball” 9. Return the “ball” to the mixing bowl, drizzle with olive oil, cover and let rise 1 hour. 10. Remove to a floured board and kneed several more times as above. Cut into three equal pieces. 11. Place each piece into a loaf pan coated on all sides with olive oil. Drizzle loaf again with olive oil, cover and let rise for another hour. Olive oil produces a tasty crust. 12. Slash loaf tops and bake in the middle of a preheated 375 degree oven for 40 minutes or until brown on top and bottom. Loaf should sound hollow when tapped. 13. Amen. ***** RECIPES FROM RITA: VEGETARIAN STUFFED SHELLS Ingredients 20 jumbo pasta shells, cooked until 75% doneFilling:3-4 cups marinara sauce – I used 415 oz ricotta cheese – I used full fat1/2 cup Parmesan cheese3-4 cups shredded mozzarella cheese – 2 cups in mixture and 1 or 2 for top1 teaspoon garlic powder or 1 nice clove garlic, minced real fine1/4 cup parsley, plus more to garnish or chopped frozen, thawed spinach, a cup, microwaved, then drained real well (remove all moisture) – both are optional, but. niceSalt and pepper to taste1 large egg, lightly beaten Instructions Preheat oven to 375.After shells are cooked, drain and then pour cold water over them in the pot. This keeps them from sticking.Spray a 9×13 pan. Pour sauce in bottom.Mix together ricotta, Parmesan, 2 cups mozzarella, garlic, parsley or spinach.Add salt and pepper to taste, then mix in the egg.Remove shells from cold water, drain and then fill each shell with cheese mixture. I use an ice cream scoop.Sprinkle with rest of mozzarella.Cover with foil (spray underside to keep cheese from sticking).Bake 25-30 minutes until done. Amen. ***** RECIPES FROM RITA: MUFFULETTA WITH OLIVE DRESSING Instructions One large loaf Italian bread, sliced into two horizontally.Vary meats and cheese to suit you. Filling: 1/2 pound each: thin sliced baked ham and provolone cheese1/4 pound thin sliced hard salamiThinly sliced tomatoesThinly sliced red or other onionsLeaf lettuce (opt) Dressing Go to taste on this. If you don’t like black olives, use Greek or green. You may wind up with dressing left over. It makes a nice spread for wraps. Ingredients Go to taste on this, tasting after it’s made.1/2 cup minced black olives2/3 cup olive oil1/3 cup red wine vinegar1-2 tablespoons minced onion1/2 cup fresh basil, finely chopped or 2 teaspoons dried1 teaspoon minced garlic1 teaspoon dried oreganoPepper to taste Instructions Whisk together dressing ingredients. (Can be made a day ahead). Set aside.Hollow out bottom loaf, leaving ½” thick sides.Hollow out top loaf, but leave sides a bit thicker.Spread dressing on inside of top and bottom loaves. Set top aside.Start layering meats, cheese, vegetables and lettuce, brushing each layer with dressing, until you run out of filling.Press each layer down really firm as you go.Press top onto sandwich, pressing down really firm, wrap and chill for 1 – 8 hours.Cut into big wedges to serve. Skewer with long toothpicks. Take the bite out of onions!Put slices in ice water for 20 minutes to several hours, then drain. ***** BONUS RECIPE: VALENTINE’S DAY SHORTBREAD COOKIE HEARTS Easily doubled. Makes up to 1-1/2 dozen, depending on size. Ingredients: 1 cup unsalted butter, room temperature3/4 cup powdered sugar1 tablespoon vanilla2 cups flour1 teaspoon baking powder1/8 teaspoon salt Instructions Preheat oven to 350.Line baking sheets with parchment paper or spray with cooking spray.Beat butter and sugar until fluffy.Add vanilla and beat until combined.Whisk together flour, baking powder and salt and add slowly to butter mixture. As soon as it’s mixed well, stop beating. Too much beating results in a tough cookie.Form dough into ball, put in plastic wrap and smoosh down to flatten. Makes rolling out easier.Refrigerate 1 hour or up to a few days to firm up.Roll out on lightly floured surface to 1/4” thick.Cut into desired shapes, re-rolling as necessary. (If you’re going to sprinkle with sugar, do it now and press down real gently to make it stick).Bake 14-17 minutes or just until edges start to turn light brown. Cookies will be a bit soft but will firm up nicely after cooling. Powdered sugar frosting with milk or water 2 cups powdered sugar3-4 tablespoons milk or water1/2 or so teaspoon vanillaFood coloring (optional) Instructions Whisk everything until you get right consistency.Add food coloring drop by drop.Extra can be stored in refrigerator and whisked at room temperature.Powdered sugar frosting with light corn syrup (more glossy and dries harder). Ingredients 3 cups powdered sugar, sifted, then measured2 tablespoons light corn syrup3-4 tablespoons milk3/4 teaspoon vanilla extractFood coloring (optional) Instructions Whisk everything until you get right consistency.Add food coloring drop by drop.Extra can be stored in refrigerator and whisked at room temperature. To frost cookies: After they cool, I like to dip the cookies face down in the icing. Carefully wiggle it around a bit so the whole top gets coated. Extra can be scraped off edges if necessary. Place on rack to dry. Or you can drizzle the icing on with a fork or whisk. Amen. ***** RECIPES FROM RITA: GRAIN-FREE POTATO CRUST QUICHE Ingredients 1-1/2 lbs baby “creamer” or Yukon gold potatoes (if using larger potatoes, peel and cut up)1-1/2 tablespoons salt for boiling potatoes, plus ¼ tsp for sprinkling8 slices bacon, chopped1/2 cup onion, diced1-1/2 cups cheese, shredded1-1/2 cups half and half, or equal parts whole milk and heavy cream5 eggs3/4 tsp salt1/2 tsp pepper1/4 tsp smoked or regular paprika (optional but good)Handful fresh greens, shredded (optional)Chives, to garnish, optional Instructions Preheat the oven to 400.Add potatoes and enough water to cover. Add 1-1/2 tablespoons salt. Bring to boil over high heat. Reduce heat and cook until tender, about 20-30 minutes, depending on size. Drain and set aside.While potatoes cook, set a 10-inch cast iron pan (or a heavy-bottomed, oven-safe pan) over medium heat and add bacon. Cook until bacon is crisp and leave fat in pan.Remove bacon and set aside.Add onions to fat and cook, stirring often, until golden. Remove onions to plate with bacon.Add potatoes to skillet in a single layer. Sprinkle with ¼ tsp salt.Use the bottom of a glass or measuring cup to press firmly into bottom and about 1 inch up the sides, closing gaps to form a complete crust.Whisk eggs. Add half and half, ½ tsp salt, pepper and paprika. Whisk to incorporate air into mixture.Stir in cheese, onion, greens, and most of the chopped bacon (set some aside for garnish). Pour into crust.Bake 25-30 minutes, or until filling is set and cooked.Let cool on rack 15 minutes. Amen. ***** RECIPES FROM RITA: BUFFALO WINGS Ingredients: Chicken8-10 or so chicken wings, drumettes and wingettes1/2 cup flour1/2 teaspoon sweet paprika1/4 teaspoon cayenne pepper powder3/4 teaspoon saltOil for frying – 2 cups or so, enough to cover wings Homemade hot sauceThe hot sauce is a “taste as you go” recipe, so do just that, adding more of any ingredient.2/3 cup hot pepper sauce8 tablespoons butterUp to 2 tablespoons clear vinegar – start with 11/4 teaspoon cayenne pepper powder1/8 teaspoon garlic powderSalt BONUS RECIPE: Homemade Blue cheese dip 1 cup real mayonnaise1/4 cup sour cream1/4 cup buttermilk3/4 cup blue cheese crumbles (6 oz)1 generous tablespoon minced garlic2 teaspoons minced green onionPepper to tastePalmful fresh minced parsley (opt)Few drops hot sauce (opt)GarnishCelery and carrot sticks Instructions: Chicken:Whisk together flour, paprika, cayenne and salt.Sprinkle over chicken wings in big bowl and toss to coat evenly. Coating won’t be real thick. Place on tray in single layer.Cover and refrigerate from 1 hour to several.Now fry the wings. Add a good inch of oil in a deep, heavy skillet. Heat to 375 degrees. (A cube of bread will fry in about 30 seconds, but a thermometer is more accurate).Fry wings in single layer 10 minutes or so, until they turn golden brown and crisp. Let drain on rack or paper towels. Hot sauce:Put hot sauce, butter, vinegar, Worcestershire, cayenne, and garlic powder in saucepan. Bring to a simmer, remove from heat and whisk until smooth. Taste for salt. Can be done ahead and reheated. Blue cheese dip:Just whisk everything together, then refrigerate an hour or up to a couple of days to let flavors meld. Extra blue cheese dip can be used on salads. Assembly:Put wings in big bowl and pour about half the sauce over. Toss to coat and add more hot sauce if you like. Pour extra sauce into small bowl for dipping. Toss potatoes with oil, thyme, garlic, pepper and salt. Place standing each coin up on sprayed cookie sheet. Add extra thyme sprigs around potatoes. Roast 40-45 minutes. Serves 4. ***** Sweet Potato Soufflé (from listener Karen Lance) Casserole:3-4 medium sweet potatoes, peeled, cooked, and mashed1 cup sugar3/4 cup melted butter2 beaten eggs1 tsp cinnamon1 tsp vanilla1/4 tsp allspice1/3 cup milk Topping1/4 cup flour1/3 cup melted butter1 cup light brown sugar1 cup chopped pecans Mix together casserole ingredients and pour into oblong baking dish.Bake 15 minutes at 350, then reduce temperature to 300 and bake for 10 more minutes.Mix together ingredients for topping, add to the top of sweet potato mixture, and bake for another 15 minutes at 350. ***** Rita’s Clone of Cheesecake Factory’s Cheesecake This cake is so rich that I use a 9” pan. If you use an 8” pan, plan on baking a bit longer. An 8” pan makes thicker slices, and they look almost as high as Cheesecake Factory’s. The taste is so similar you wouldn’t be able to tell the difference!Crust:1-1/2 cups graham cracker crumbs1 tablespoon or so of sugar1/2 to 1 teaspoon cinnamon5 tablespoons melted butterMix until crumbly, not pasty. Pat into 9” springform pan going up the sides a bit. Set aside while making filling: Filling:1 pound cream cheese, room temperature1 cup sour cream1-1/4 cups sugar1 teaspoon vanilla3 tablespoons brown sugar15 oz canned pumpkin2 teaspoons pumpkin pie spice1/2 teaspoon cinnamon4 eggs, lightly beatenPreheat oven to 350. Beat cream cheese, sour cream, sugar and vanilla until smooth. Add pumpkin and spices and blend. Add eggs and blend until mixed. Pour into pan. Bake 40-45 minutes until center is almost set but still wobbly. Turn oven off but leave cheesecake in with oven door shut for 30 minutes more. This will finish the baking process and prevent a lot of “cracking” on top. Refrigerate several hours or up to 2 days to complete firming up of cheesecake. Garnish with whipped cream and nuts if you like. Serves 10-12. ***** Annie’s Family Bread Stuffing 3 Tablespoons chopped onion1/4 Cup butter4 Cups dry bread cubes (about 7 slices cut or torn)1/4 teaspoon salt1/4 teaspoon pepper1/2 teaspoon poultry seasoning1/2 teaspoon ground sage2-4 tablespoons water or chicken broth Cook onion in butter, combine with bread and seasoning. Toss with enough liquid to moisten Makes 3 cups stuffing or enough stuffing for a 4-5 pound chicken. For a 10 pound turkey, double the recipe. ***** Matt’s Crispy Oven Roasted Brussels Sprouts with Shallots and Bacon 1 pound Brussels sprouts1/4 pound bacon, cut into 1/2 inch wide strips3 shallotsOlive OilBlack Pepper to taste Preheat oven to 400. Slice shallots, and cut of stems of Brussels sprouts and halve them. Add sprouts, shallots, and bacon to a large mixing bowl, and toss with olive oil and black pepper. Mix cheeses and bacon together. Stuff into jalapeno halves. Sprinkle with bread crumbs. Bake 20-35 minutes. ***** Sausage Stuffed Jalapeño Poppers Ingredients 1 pound ground pork sausage 1 (8 ounce) package cream cheese, softened 1 cup shredded Parmesan cheese 1 pound large fresh jalapeño peppers, halved lengthwise and seeded Instructions Preheat the oven to 425 degrees. Cook sausage.Mix sausage, cream cheese, and Parmesan cheese together in a large bowl.Spoon about 1 tablespoon of sausage mixture into each jalapeño half; arrange stuffed halves in baking dishes.Bake until bubbly and lightly browned, about 20 minutes. IngredientsOlive oil1 pound or so boneless, skinless chicken, cut into 1” piecesSalt and pepper1 bell pepper, diced1 medium onion (not sweet), diced (about 1-1/2 cups)2 nice ribs celery, dicedMinced garlic to taste — start with a big clove, minced (generous teaspoon)1-1/2 teaspoons dried basil4 cups or so chicken broth1/2 cup rice1 can, 14.5 oz., diced tomatoesAs much okra as you like, slicedFresh parsley, minced (optional) Instructions: Pour a little oil in bottom of large pot over medium heat.Season chicken with salt and pepper.Cook chicken in oil until it turns opaque. It won’t be done.Add bell pepper, onion, celery, garlic and basil. Cook until onion starts to soften, about 3 minutes or so.Pour in broth, rice and tomatoes. Give it a couple of stirs.Bring to boil, then lower to gentle boil, cover, and cook until chicken and rice are done, about 20 minutes. Cook it longer if you want.Instructions okraFilm a pan with olive oil or add bit of butter over medium heat.Stir in okra and cook to your liking. Okra gets a little sticky as it cooks — some folks call it slimy, but that’s a good thing. Stir the flour mixture into the creamed mixture alternately with buttermilk. Spread into baking pan. Streusel Mix brown sugar, walnuts, and cinnamon. Sprinkle over batter. Cover, and refrigerate overnight. Preheat oven to 350. Bake 35 to 45 minutes or until a toothpick inserted in the center comes out clean. Don’t overbake. Start checking at 35 minutes. Ingredients and Instructions meatloavesMix together very gently:1-1/2 pounds ground chuck1/2 cup of toasted bread crumbs1/4 cup lemon juice1/4 to 1/3 cup onion, minced1 large egg, beaten2 teaspoons salt Ingredients and instructions Barbecue SauceWhisk together:2 cups catsup1 cup brown sugar, packed2 teaspoons dry mustard1/2 teaspoon allspice1/2 teaspoon ground cloves 6 thin slices lemon to put on top of loaves (optional but nice) Instructions for RoastingPreheat oven to 350.Shape meatloaf mixture into 6 loaves, like mini footballs. Place on sprayed baking sheet.Bake 15 minutes, then remove from oven.Lay lemon slices on top of each loaf if using, then cover each generously.You’ll use about half the sauce.Put back in oven and continue to bake until done – thermometer will register 155-160. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed. For the vinaigrette, whisk all the ingredients together. In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Make layers of Swiss cheese, shredded pork, thinly sliced ham, thinly sliced red onion and dill pickle slices. Eat it as is or make a panini type sandwich on a stovetop grill or skillet. Ingredients 2 tablespoons or so olive oil2 teaspoons salt2-1/4 teaspoons ground cumin2 teaspoons dried oregano1/4 teaspoon dried thyme1 teaspoon freshly ground black pepper1/4 teaspoon crushed red pepper flakes1 generous tablespoon garlic, minced (4 nice cloves)1/4 cup lime juice or to taste1/4 cup orange juice or to taste2-1/2 pounds or so fresh boneless pork shoulder – don’t trim away all the fat Instructions Stir together the oil, salt, cumin, oregano, thyme, black pepper, red pepper, garlic, lime and orange juice. Make slits in the pork and rub the spice mixture all over and into the slits as best you can. Place pork in sprayed slow cooker and add any remaining spice mixture. Cover and cook on low until tender, turning pork once halfway through if you can, about 4 hours or so. Apricots, flax, cinnamon and honey all make an appearance in this recipe, and all have ancient Biblical roots. Ingredients 3 cups old-fashioned rolled oats 1-1/2 cups nuts: we use a combo of raw almonds roughly chopped and pistachios, chopped ½ cup dried fruit (diced apricots are a favorite) 1 generous cup seeds – sunflower, pumpkin, flax – a combo or your favorite ½ cup unsweetened coconut (optional) 1½ teaspoons cinnamon Coating ½ cup almond or peanut butter ½ cup honey or maple syrup ½ cup olive oil OR coconut, grape seed, avocado oil 1-1/2 teaspoons vanilla Instructions Preheat oven to 300. Stir together oats, nuts, seeds, dried fruit, coconut if using and cinnamon. In a small saucepan over low heat, whisk together the nut butter, honey, oil and vanilla until it simmers. Pour nut butter mixture over dry ingredients and stir. Spread evenly onto parchment lined or sprayed baking sheets and bake for 30 minutes, rotating baking sheets halfway through, until golden brown.Remove from oven and let cool completely (the granola will harden as it cools) before breaking up. SMALL BATCH NUT FREE GRANOLA Ingredients 1-½ cups old fashioned oats 1 generous tablespoon olive oil Or your favorite oil 2 tablespoons maple syrup or bit more if you like 1 tablespoon vanilla 1/2 cup favorite dried fruit or mini chocolate chips – optional – add after cooling Instructions Preheat oven to 375. Mix everything together well. It may be a bit clumpy and that’s OK. Pour onto parchment lined or sprayed baking sheet. Bake for 12-15 minutes. Let cool completely, then stir it up a bit to mix well. Dressing: Whisk togetherJuice of 2 lemons or more to taste1/2 cup olive oilGood amount of garlic: start with a nice clove, minced andsalt & pepper to taste Garnish: Feta for sprinkling on top (optional) Assembly: Put salad ingredients together. Sumac comes from a shrub common in the Middle East which can grow up to 33 feet (the age which Jesus died). Night and day until the last day of all, may our praises give You thanks, our thanksgiving praise You: You who alone are both Father and Son, Son and Father, the Son who is our Tutor and our Teacher, together with the Holy Spirit.” ***** RECIPES FROM RITA: SLOW COOKER CARNITAS Ingredients: 4 pounds fresh pork shoulderOlive oil1-1/4 tablespoon chili powder blend2-1/4 teaspoons ground cumin2-1/4 teaspoons dried oregano2 teaspoons salt1-1/2 teaspoons freshly ground black pepper4-5 cloves garlic, peeled and smashed2 onions, cut into eighths (use regular yellow or white onions, not sweet onions)1 cup orange juice1/4 cup lime juice Instructions: Rinse pork shoulder and pat dry.Remove excess fat, but don’t trim all the fat off.Rub very lightly with olive oil. This helps the spice blend stick.Whisk together chili powder, cumin, oregano, salt and pepper.Rub the spice mixture thoroughly all over the shoulder.Put garlic, onions, orange and lime juice into slow cooker.Place shoulder on top, fat side up.Cook on low 8-9 hours, medium 5—6, or high 4-5, or until meat registers 170 or a little higher.At this temperature, meat will be cooked through and tender enough to shred.Remove shoulder and shred meat with 2 forks.Skim off as much fat as you can from juices.Return meat to slow cooker and adjust seasonings to taste. Preheat oven to broil.
