Wrestling Omakase is back for our most absolute jam packed and indeed longest episode ever! John is joined by returning guest Arametha as they start with 2 hours and 40 minutes just on the hottest promotion in Japan at the moment, the World Wonder Ring STARDOM! It starts with full reviews of their 7/21 & 7/24 shows from Sapporo & Korakuen respectively, as they go over yet more outstanding matches from STARDOM's increasingly large catalogue- SLK/Anou, Saya/Poi, AZM/Bozilla and more! Then they dig into a full, lengthy preview of the upcoming 5 STAR GP, which kicks off by the time many of you will be listening to this (but not to worry, we cover the entire tournament in detail including every participant and all the other stops on the tour, and spend very little time on the opening night on purpose). They break down the final night of each block and how it might help us figure out who has the best chance of advancing, go over various picks to win outright, list most anticipated matches and even rank the four blocks from anticipation/excitement levels.Next it's back to New Japan to talk nights 3-6 of the already underway G1 Climax. They discuss what are becoming the two big stories of the tournament: largely great matches and largely flagging attendance. Hear their thoughts on Finlay/Taichi, Tsuji/Yuya, ZSJ/Umino, Tanahashi/Finlay, ZSJ/ELP, Umino/Narita, Takeshita/Shingo and much more! Then they give a look ahead at what's coming up in the following week of G1 shows, including a look at how attendance is shaping up for each night. Then it's back to joshi for two more topics, starting with a full review of Tokyo Joshi's 7/21 Summer Sun Princess show from Ota Ward Gym (which slightly outdrew one of the G1 nights!). John & Arametha discuss an awesome tag title match, some comedy that may not land with John's significant other at least, music vs. wrestling idol body requirements and much more. They also give a brief preview of the upcoming Tokyo Princess Cup.Finally, this marathon episode wraps up with a quick preview of the somehow also upcoming Marigold Dream Star GP. They give their thoughts on who is a contender to win each block and the tournament in general as well as some of their most anticipated matches. It's really tournament season in Japan, and Omakase has you covered!Follow Wrestling Omakase on Twitter: @WrestleOmakaseFollow John on Bluesky: @justoneenbyAdvertising Inquiries: https://redcircle.com/brandsPrivacy & Opt-Out: https://redcircle.com/privacy

John is joined by returning guest Devin (@MoreThanMeatJoy on Twitter) for yet another show packed full of a busy week's worth of Japanese wrestling action! They open things up with a quick preview of STARDOM's major 7/21 Sapporo event as well as their 7/24 Korakuen later in the week, before staying in the Bushiroad Extended Universe as they break down the opening two nights of the NJPW G1 Climax in detail (also from Sapporo!). There's plenty to talk about of course: major injuries, Taichi being amazing, Ren Narita looking good again and a whole lot more. This is followed by a look ahead at all of the upcoming G1 shows in the next week. Then they turn their attention to a packed week for Korakuen Hall shows, which they cover in chronological order: first, a Marigold show with a much-debated and very long double title match main event. Then they head over to All Japan to discuss the start of their junior tournament (lots of tournaments going on right now!), plus a tag title match (and also briefly look ahead to their own 7/21 show in Osaka as well as the Oudou Tournament in August). Next up, it's Sendai Girls to discuss a great Korakuen show of their own featuring yet more suffering for us Mika Iwata fans. And finally, they wrap things up with two very eventual shows from Pro Wrestling NOAH, featuring not one but two title changes, a surprise appearance from an outside guest, an announced excursion and more! If it happened on a major show in Japan in the last week, we probably covered it!Follow Wrestling Omakase on Twitter: @WrestleOmakaseFollow John on Bluesky: @justoneenbyAdvertising Inquiries: https://redcircle.com/brandsPrivacy & Opt-Out: https://redcircle.com/privacy

This week Wrestling Omakase is back for another packed show! John is joined by returning guest Chris Samsa (@TheChrisSamsa on Twitter) from the Sport of Pro Wrestling website for a long, thorough preview of this year's G1 Climax! John and Chris go wrestler-by-wrestler through all twenty competitors across both blocks breaking down everyone's most notable matches, who they think are favorites and dark horses to move on to the elimination round, some discussions of venues that NJPW is running this year (and early ticket sales), and a whole lot more! As you'd expect Chris comes armed with plenty of stats too, but a lot of it is just the buzz and anticipation level heading into another G1 after a very (ahem) uneven year of NJPW up to this point- a fascinating discussion that should help get you ready for another G1 Climax!Afterward, John goes solo to review three shows- about 20 minutes of brief thoughts on AEW All In Texas (and frankly, nothing they say should surprise longtime listeners at all) before giving longer form thoughts on two shows from Japan this past weekend- first, a full review of Dragongate's biggest show of the year, Kobe World! It's been a while since John has talked any DG so they go in depth with their thoughts on the major angle developments, review all the matches, and discuss a bit on where things might be going in the near future. Finally, they wrap things up with a review of DDT's 7/13 Korakuen featuring a KO-D Openweight Title match, two celebrity wrestlers, and a lot of matches being set up for the two-night Peter Pan event at the end of August.Check out Sport of Pro Wrestling's 2025 G1 Pick Em: http://g1.sportofprowrestling.com/Follow Wrestling Omakase on Twitter: @WrestleOmakaseFollow John on Bluesky: @JustOneEnbyAdvertising Inquiries: https://redcircle.com/brandsPrivacy & Opt-Out: https://redcircle.com/privacy
Wrestling Omakase returns for a special episode! John is joined by returning guest and longtime friend Bryan Quinlan (@Not_Quinlan on Bsky) for our podcast all about traveling to Japan to watch pro wrestling! After taking some quick little sideswipes at NJPW for their latest attendance bomb, we give a comprehensive look at all the elements involved in planning for a trip to Japan! John & Quinlan (who have 8 trips between them going back 9 years!) start by going over all of their own past trips and some of the major differences in all of the different seasons they've gone in, which then transitions into a longer discussion on the different times of year you can choose to go and what some of the pluses & minuses of each are. Once that's done, they cover everything else you could ever want to know for planning your first wrestling trip to Japan (or just planning a better one if you've gone before!), including:-Overall trip budgeting and what the minimum amount you can get away with is-Different accommodation options for different group sizes: solo travelers, couples, big groups, etc.-Some of the various neighborhoods you could choose to stay in-Various options for buying tickets (including John finding out that one has gotten a little more complicated than when they just used it a few months ago, live on the air!) and how they work, including how to pick up your tickets when you get there- and which is the only option that actually lets you pick your exact seat! Plus a little bit about the various sections in Korakuen Hall specifically.-Specific Wrestle Kingdom ticket options by section and where each actually locates you-Venue locations and other quirks about them-Other major wrestling-related landmarks in multiple cities: restaurants, bars, and stores!-Leaving Tokyo to see other cities: how to buy Shinkansen (bullet train) tickets, some cities besides Osaka/Kyoto that you might want to check out, and more-Some brief thoughts on language barrier and what you could pick up relatively quickly for a better experience-Food recommendations, especially budget onesBut honestly, this is just everything I can remember off the top of my head that we talked about in a sprawling three and a half hour podcast, so check it out for yourself!Follow Wrestling Omakase on Twitter: @WrestleOmakaseFollow John on Bluesky: @justoneenbyAdvertising Inquiries: https://redcircle.com/brandsPrivacy & Opt-Out: https://redcircle.com/privacy

We're back for another episode of Wrestling Omakase, and this time around John is joined by three recent guests for the return of an old favorite: the Mid-Year Awards! We present our picks for the best & worst of Japanese wrestling so far in 2025 in a ton of Wrestling Observer-style year end awards, along with some analysis on how likely these winners are to stand as full year award contenders by the time 2025 comes to an end. John's guests include: Paul Volsch from the Emerald FlowShow (@EmeraldFlowShow on Twitter & Bsky), Velkej Bracha from the ActWres Stage podcast (here's their most recent episode on Youtube: https://www.youtube.com/watch?v=hqIHVjqO6_8), and Arametha! Together the four seasoned Japanese wrestling watchers break down the best and worst of the year of Japanese wrestling. But before they get into the actual awards, as a bonus we provide some breaking news audio on the major title change that happened earlier today (being purposefully vague in case anyone is trying to avoid spoilers on that very weirdly aired show!) as well as the news that Syuri is taking a hiatus from STARDOM and what that might mean for the upcoming 5STAR GP, among other things. Then it's awards time, and here's a full list of all the categories we covered in the order they appeared on the episode:-Best Rookie-Best Tag Team-Best Feud-Most Improved-Most Overrated/Overpushed-Most Underrated/Underpushed-Best Unit-Worst Unit-Best Major Show-Worst Major Show-Most Outstanding Wrestler (in ring only)-Best Promotion-Worst Promotion-Match of the (Half) Year-Worst Match of the (Half Year)-Flair/Thesz Award (in ring + drawing, basically MVP)For most of the best categories we each give a top 3, while we only give one pick each for the worst....mostly so we don't have to stew in negativity for very long, haha. So come hear all of our picks for the best & worst of Japanese wrestling halfway through 2025, as we discuss all the major promotions- NJPW, STARDOM, NOAH, AJPW, DDT, Dragongate, Marigold, Sendai Girls, and of course since Velkej is here we discuss Actwres Girlz as well! A packed show!Follow Wrestling Omakase on Twitter: @WrestleOmakaseFollow John on Bluesky: @justoneenbyAdvertising Inquiries: https://redcircle.com/brandsPrivacy & Opt-Out: https://redcircle.com/privacy

John is back yet again for another long dive through the world of Japanese professional wrestling, and boy do they have a mixed bag to discuss this week! Returning guest Velkej Bracha (@Velkej_Bracha on X), host of the ActWres Stage podcast (here's their most recent episode on Youtube: https://www.youtube.com/watch?v=hqIHVjqO6_8) joins them and starts by breaking down their recent trip to Japan, as he gives the live perspective on All Star Grand Queendom, Tetsuya Naito's final night in NJPW at Dontaku and more! Plus the two of them generally bullshit about Japan travel for a good long while because, to be honest, nobody wanted to talk about Dominion. But talk about Dominion they must, so they give a full review of a very, very bad show full of absolutely horrible and baffling booking decisions, and fair warning: John gets more than a little fired up about a few of them in particular. May wanna turn your headphones down for that part. They also discuss the quite bad looking G1 lineup and bury New Japan again for being completely unwilling to do anything fun or interesting these days. But once the badness is over, we head back to the wonderful world of the World Wonder Ring, STARDOM, for a full preview of their upcoming 6/21 show from Yoyogi, The Conversion! John & Velkej talk all about recent storylines and developments as they break down the entire card in full, so if you've heard some of the recent hype for the promotion and want a good jumping in point you might want to listen to our preview here and check out the show! Finally, they wrap up the episode by heading back to another joshi promotion, Marigold, as John gives abbreviated thoughts on some of the matches from the 6/15 & 6/16 weekend shows in Osaka & Shizuoka (including the debut of another impressive looking rookie!), before they then give a full review of the 6/17 Korakuen show, including the big Marigold vs. Marvelous interpromotional main event. Lots of thoughts on how certain Marigold wrestlers are and aren't developing, Velkej breaks some news about one right on the air, and then some discussion of their upcoming schedule and their own big tournament that's coming up, the Dream Star GP. Another packed show!Advertising Inquiries: https://redcircle.com/brandsPrivacy & Opt-Out: https://redcircle.com/privacy
John is back for another new episode of Wrestling Omakase (I know, already??) as we do a deep dive into VOW's annual 30 Under 30 list, which just came out a few days ago! They're joined by two voters for the 2025 list: host of VOW podcast The Good, The Bad & The Hungee Fred Morlan (can also check out Fred's Patreon here: https://www.patreon.com/flagrantwrestling) and Paul Wedding (@PaulEWedding on Twitter), who also happen to be two first time Omakase guests. John, Fred and Paul proceed to break down the 30 Under 30 results, starting with a bit of a deep dive on the promotion breakdown of the list- and John comes armed with some hard attendance figures to discuss that one promotion in particular may have been shortchanged by the results!Once that's out of the way they proceed to break down all their selections for this year, started with wrestlers they all voted for and going in the order of their finishes on the final list (followed by wrestlers only two of three voted for and then of course wrestlers only one of them voted for). A ton of names across Japan, Mexico & the US are discussed as well as a ton of different topics, including but not limited to: surprise at Gabe Kidd going number one and the backlash to the pick on social media, how much the booking of Kaito Kiyomiya has hurt him, whether Yuma Anzai may eventually have to go elsewhere, MAO being a highlight of BOSJ, Saya Kamitani and Sareee both getting ranked way too low, other major STARDOM snubs, Kosei Fujita's eventual ceiling, a hasty MJF defense from Fred before he has to go early (and a burial from John), and a lot of shoutouts from Paul of some Osaka talent that you may not have heard from. You waited a month for another new Omakase (if you cared at all) but don't worry, because here's one that's over four hours long!! Wow! John is joined by first time guest and longtime listener Arametha as they spend the first half hour of this show embarrassingly weebing out together. Anime! Tokusatsu! Anime cons! Iowa city names, for some reason! Once that is mercifully out of the way, the two of them head to the World Wonder Ring for 90 minutes of STARDOM talk, starting with a full review of the Natsu & Saory 10th Anniversary Show from Ota Ward Gym. They talk about the impact of the original Actwres Girlz class, Saori & Poi apparently getting free reign over Bushiroad, some theories on why the young women wrestlers of Japan seem so far ahead of the men right now and much more! Then the two of them talk about recent shows in Osaka & Kyoto plus the two May Korakuens, before finally wrapping up the STARDOM talk with a brief look ahead to the next Korakuen show coming up in the first week of June. Then they move over to New Japan for a full recap of the Best of the Super Juniors 32 tournament, including a review of the finals match between YOH and Kosei Fujita, block rankings by average star rating with thoughts on each wrestler's tournaments, and some big picture thoughts on where the booking may have struggled. Afterward they give a brief audio preview of the upcoming Dominion card as John shares some thoughts on why they're not quite as hyped for this show as some others.Next the two of them talk about DREAM STAR FIGHTING MARIGOLD, a first for Omakase, with a full review of the Marigold Shine Forever show! They discuss the diverging paths of Marigold's young wrestlers, an absolutely *incredible* debut match, Mayu Iwatani's somewhat confusing "grand slam" goal, and the retirement of Nanae Takahashi (including some brief thoughts on her overall career and some past match recommendations if you're so inclined!).Finally, because this episode just wasn't long enough already, they wrap things up with some brief King of DDT thoughts on the semifinals and an outstanding final match, plus Minoru Suzuki vs. Danshoku Dieno, because why not at this point?! If you want to hear an absolute metric ton of Japanese wrestling audio, well, you've definitely come to the right place this week!Follow Wrestling Omakase on Twitter @WrestleOmakase, or follow John on Bluesky instead @justoneenby.Advertising Inquiries: https://redcircle.com/brandsPrivacy & Opt-Out: https://redcircle.com/privacy

Mainstream Jewish communal leaders have, for ages, been talking about "skewing younger" with programming. But none of them would dare come near Sinners' Shabbat, a sexy, raunchy burlesque show, ripe with bondage ropes, leather skirts, cleavage and kippot and queer couples. Helmed by Tova Sterling, a chef and influencer in New York City, the events were born out of her feeling not at home in conventional Jewish spaces—and finding a community on the fringes. Meanwhile, not far away, in Manhattan, Chabad debuted Fins and Scales, a pay-what-you-can kosher omakase dining experience at a Chabad house in Greenwich Village. Diners enjoyed lightly charred madai, sea bream and fresh sashimi, happy to take part in a luxurious fine-dining experience if all it cost was a donation and signing up to Chabad's mailing list. So what's going on here? Are these sorts of ultra-modern shticks the future of Judaism, or just passing gimmicks? And are they even "Jewish" events if they're totally divorced from religion and tradition? The hosts of Not in Heaven share their thoughts and disagreements. Plus, the hosts recap the tumultuous trauma felt by hundreds of Canadian teenagers on a recent March of the Living trip: they silently recreated the death march from Aushewitz to Birkenau in a walk led by former hostages and survivors of Oct. 7; they felt the heat from forest fires that decimated swaths of the hills surrounding Jerusalem; and on their way out, in Ben Gurion airport, they witnessed a Houthi missile explode on a runway right outside the building. Have the emotional intensity of these trips gone too far? Are we traumatizing future generations in the hopes of having an impact? Our rabbinic hosts weigh in. John is joined by returning guest Paul Volsch from the Emerald FlowShow (@EmeraldFlowShow on Twitter & Bsky) and first time guest Will Young from VOW and his Creative Control PW blog (@CreativeControlPW on Bsky) to break down three big shows from Japan! But first, John gives an update on the current podcast schedule (as you may have noticed, we're doing these things more often again now!) and some brief thoughts on two major recent joshi shows: STARDOM's All Star Grand Queendom and Sendai Girls' Meiko Satomura Retirement Show. Then all three of them get into the main topics, starting with NOAH's big Sumo Hall show from May 3rd. They discuss NOAH's best attendance number at Ryogoku in six years, OZAWA's title reign and whether or not it should have ended here, whether the booking has been affected by Tetsuya Naito possibly coming in (and actually get breaking Naito news during the middle of recording!), and break down every match on the card as well.Afterward they review NJPW's two Wrestling Dontaku shows from 5/3 & 5/4 in Fukuoka (after a brief overview of big matches from two previous stops on the tour in Hiroshima & Saga), including: full breakdowns of every match on both show, the Dog Pound Steel Cage match and how it compares to last year, directions heading into Dominion, Tetsuya Naito & BUSHI's goodbye to New Japan (for now?), LIJ's official breakup, Hirooki Goto's already record breaking title reign and how it compares to other recent title reigns, a bit of a mea culpa from John on Callum Newman, ZSJ & Shingo being the next title challengers and whether Shingo might win the title (and turn heel??), Kyushu Pro involvement, and much more! See omnystudio.com/listener for privacy information.

A combination of factors will likely lead to higher costs for restaurants this year. Denny's hit the reset button and is preparing for growth. And a traditionally Japanese menu style is finding its way into all sorts of concepts.

Just a few days before Christmas, Chef Ray and his business partner Cherry Phetleung gave our city a gift by welcoming their first guests to 1033 Omakase as part of its soft opening. The non-numerical part of the restaurant's name means “I leave it up to you,” reflecting the control that diners turn over to the chef as part of their experience. For this initial phase, 1033 Omakase will offer just three seatings per night Wednesday through Saturday, with a maximum of six guests per seating. The experience is $119 per person, and you can book your spot via Resy.Moving from a new spot to an old favorite, Azhar Shah and his family reached out to the community this week with a plea to help Pakistani restaurant Shah Jee stay on its feet. Their goal is to raise $180,000 for operating costs and maintenance needs, so if you have the means to help a longstanding member of Milwaukee's restaurant community, please head over to the fundraising page and give what you can. We'll wrap up this final installment before the holiday with a trio of dispatches from Ann's desk at Milwaukee Magazine. First up is her glowing review of The Commodore, the newest jewel in The Bartolotta Restaurants' culinary crown. The adjectives describing her experience should give you a sense of the place — “elegant,” “delectable” and “revelational” among them.We also have quick chats about two items you'll only find in the pages of Milwaukee Magazine's desserts issue: her interview with the pastry chefs from Ester Ev, and an instructional on how to poach a pear and make Creme an Glaise.
Our guest is Phillip Frankland Lee who is the chef/owner of Sushi by Scratch. Sushi by Scratch Restaurants began in Los Angeles and New York marks its tenth location, which opened in September 2024. Phillip is known for innovative omakase-style sushi preparations, while still respecting the values set by sushi masters. For example, he uses premium seafood mostly from the Toyosu Market in Japan and he imports rice from Toyoama Prefecture and mills it in-house. On the other hand, he pays homage to his American upbringing by flavoring hamachi yellowtail with sweet corn pudding and topped with a sprinkle of sourdough breadcrumbs. Sushi has come a long way in the U.S. since the 1960s when it was introduced to the general public for the first time. Sushi is now one of the most popular foods in the U.S. and great talents like Phillip seem to be making it uniquely American.
Milwaukee gets its first taste of Japanese omakase in a new brick and mortar run by Chef Ray. Wanna make pho the right way? Ann and Tarik have details on some pho-making classes. Also, the Pfister hosts the Vince Lombardi Cancer Foundation's Food & Wine event with celebrity chefs on the second day of this long-running two day event. Plus the Dubbel Dutch Hotel is opening a Victorian-style teahouse to be run by the folks at Discoure Coffee.Produced and edited by Marcus Doucette
After a string of formative restaurant experiences in Detroit and Chicago, Norman Fenton, preoccupied by wanderlust, got in his car and drove to Tulum, Mexico. In this week's episode, he tells us all about a journey that shifted the trajectory of his career and life — what he learned about food, leadership, and hospitality, all lessons he's showcased by opening Cariño, an immersive, innovative taco Omakase joint in Uptown. Hear about his adventure in an episode that covers: the merits of experience over formal training, the challenges and opportunities inherent to opening a new restaurant, how to cook stoned, and so much more.
Niki Nakayama's cooking is driven by intuition. At her two-Michelin-starred restaurant, n/naka in West Los Angeles, she masters modern kaiseki, a Japanese dining discipline focused on taste, texture, and presentation. Born and raised in Los Angeles, Nakayama began her culinary career at Takao restaurant in Brentwood and refined her skills in Japan. She later opened Azami Sushi Café, gaining fame for her omakase menu.At n/naka, Nakayama creates exquisite, seasonally-inspired dishes, making it one of L.A.'s toughest reservations. The restaurant has been on the Los Angeles Times' “101 Best Restaurants” list annually since 2013 and has garnered widespread media attention. Nakayama was a James Beard Foundation Award finalist for Outstanding Chef in 2023.Sustainability is key at n/naka, with 70% of ingredients sourced locally. Nakayama's kaiseki philosophy highlights natural flavors and seasonal purity. During the pandemic, Nakayama and her wife, Carole Iida-Nakayama, launched n/soto in West Adams, starting as a takeout restaurant and later becoming an izakaya-inspired eatery.***CHA-CHING! Our guest is Morgan Adamson, the chef at Hoseki, a six-seat omakase sushi bar located at Saks Fifth Avenue in Manhattan. In previous episodes, we had several non-Japanese sushi chefs who proved that America has a distinctive pool of talent, and that the American sushi culture is on healthy ground. Morgan is definitely one of these talents, and being female, she is particularly unique as the traditional sushi industry has been notorious for not welcoming females to lead the sushi counter. In this episode, we will discuss how a young woman from Michigan got into sushi, how she studied sushi-making and built a successful career, a unique concept of Hoseki where she expresses her own sushi-making philosophy, her advice to future sushi chefs in America, and much, much more!!!-----THE NOTO PENINSULA EARTHQUAKE DISASTER RELIEF As you may know, a major earthquake struck Japan's Noto Peninsula in Ishikawa Prefecture on January 1st. Sometimes, it's the most fun to chop it up with friends. And when your friends include legendary sushi chefs and top DJs, all the better. This week we brought to Happy Half Hour Chris Cantore, a former voice across San Diego's radio airwaves, and his long-time buddy, North County sushi chef Tyler Mars. Troy goes way back with the duo, having been both a music and food journalist during his career. The pair just launched Needlefish, an omakase and record-spinning pop-up that they plan to take around San Diego, and hope to one day make a brick-and-mortar location. In fact, they held their first event for SDM staff just a few weeks ago to rave reviews. The idea is simple: fresh fish and good tunes, vinyl-only. Cantore says he likes to bring back the classics, like 90's hip-hop, punk, and stoner rock like Queens of the Stone Age. Tyler pairs that with his own sliced fish creations, served on warm vinegared rice and usually in combination with other condiments and ingredients you haven't experienced eating sushi before (think thin-sliced prime rib eye and chimichurri, for a non-fish example). Though Needlefish is new, the duo's idea is not. They both wanted to open up a spot together 25 years ago. But they were scared, and life happened. So did kids, and marriages, and careers, and the transitions of said careers, and Mars' eventual cancer diagnosis. The latter came in 2021 but Mars is now in remission. “It's really because of what happened to Tyler that we finally had the courage to pull the trigger on this,” Cantore says. “We realized that life is short, and you don't know how much time you have left. You have to do what you love to do, and this is what we love to do.” Stay tuned to our pages to find out more about where these guys will be popping up and when. Follow them on @needlefishco on Instagram for the latest updates. We also chat other food news around town including our Best Restaurants issue! Mission Hills' jewel Wolf in the Woods took home the top prize of Best Restaurant, while North County brunch temple Atelier Manna won Best New Restaurant. Check out all the other critics' and readers' picks here. Basic Pizza is also closing its doors, which opened in 2006, when Petco Park was just two years old. It's moving to the other side of the park, though, so fret not (and, also, it's the same owner as all the URBN restaurants with similar menus). And, finally, beloved LA Japanese chain Katsuya is coming to UTC with Katsuya Ko, which offers more of an izakaya-style menu geared towards younger consumers.
