When Jim Koch created Samuel Adams Boston Lager in 1984, American craft beer was still in its infancy. But forty years and thousands of new craft breweries later, both the competition and Jim's drive to innovate are fiercer than ever...This week on How I Built This Lab, Jim reveals how thinking beyond paradigms and exploring aberrations has kept Boston Beer Company a leader in the alcoholic beverage industry. From hard teas to nitrogenated ales to non-alcoholic IPAs, Jim also shares the stories behind his company's biggest hits — and biggest flops. Also, check out Boston Beer Company's founding story told by Jim in October 2016.This episode was produced by Sam Paulson with music by Ramtin Arablouei. It was edited by John Isabella with research help from Chris Maccini.
Get your Boston on, grab lager, and pull up a chair this week as we talk about Sam Adams tried and true flagships Boston Lager and Utopias. Coming in mild with a traditional lager and beer flavored beer and ending with a limited release 2017 Utopias, well we might as well be going from zero to 60 in 2 seconds flat. All craft been aficionados should take a chance to try the Utopias “extreme barrel-aged beer” if you ever have the chance. You won't regret it.
2023 is looking to be an interesting year for legacy brewers in the U.S. We're seeing closures and contractions, and changes to beloved brands. Of course, the most noted right now is that New Belgium announced that it completely reformulated Fat Tire, turning it something that bears no resemblance to the amber ale that raised and delighted a generation. The changes, or “remastered” version of Boston Lager that Samuel Adams announced earlier this year are not as drastic, but are important and do have an impact on what is poured into the glass. It's impossible to imagine the modern American beer landscape without Boston Lager. When the Boston Beer company launched in 1984 Jim Koch and co-founder Rhonda Kallman were hand selling samples to accounts all over the city. The beer, based in part on a historic Koch family recipe and further developed by Joseph Owades, a brewing scientist who is credited as the inventor of light beer, was seen as an alternative to the macro offerings of the early 1980s. The beer won early accolades at the Great American Beer Festival in both the consumer preference polls and the formal judging. Top honors gave it bragging rights as “best beer in America,” something the brewery still uses in the beer's marketing nearly 40 years later. Boston Beer has grown. Brands like Angry Orchard Hard Cider, Twisted Tea, Truly Hard Seltzer, and Dogfish Head are now all part of the company. Samuel Adams has released hundreds of beers, some that landed well with consumers, and others that faded quickly. Boston Lager endured. On draft, in bottles and cans, and in every variety pack the brewery releases, the familiar lager is ever present. But as consumer preferences change, and technologies advance, and as brewers strive for a better version of their vision, the beer has evolved. Koch shares insight on how hop harvest helped evolve the beer, and how historic brewing processes are being used to help the lager taste smoother. If it's been a while since you last had a Boston Lager, now is a good time to give it a fresh try. For more Drink Beer, Think Beer check out All About Beer. Kathleen opens the show drinking a Singing Frog Golden Lager from The Wynn in Las Vegas, sipping the beer from her Seamus McDaniel's pub pint glass. Kathleen then shares with the Termites all off her favorite highlights from her show at The Ryman in downtown Nashville, thrilled that she got to finally meet her Twitter friend Stella Parton, whom she can't wait to drink red wine with. Kathleen then gives an update on her birthday plans taking place on September 30th: she's going to the Ozarks to golf with her parents and see some friends, and then is excited to be heading to Johnny Morris's Big Cedar Lodge to golf with her siblings and cousins and drink in a cave bar. TERMITE SHOUTOUTS: Kathleen gives thanks to the Termites who leave notes at shows and send mail to her PO Box. She begins by thanking Termites from the Savannah Bananas for her new baseball-style t-shirt, and from Termite Baba Valentino for the cool golf balls. She then thanks Termite Donna from Abilene, TX for her homemade Pubcast sign and funky gravy boat. “GOOD BAD FOOD”: In her quest for new and delicious not-so-nutritious junk food AND in continuing her search for the best Ranch, Kathleen samples Drew's Creamy Ranch dressing from Vermont, which she loves. She moves on to taste Cap'N Crunch Chocolate Caramel Crunch, which she thinks is too sweet, and prefers Crunch Berries. Kathleen rounds out her tasting menu sampling the limited edition Cool Ranch Doritos, which she likes but still prefers the original or taco flavored Doritos. UPDATE ON KATHLEEN'S QUEEN'S COURT: Kathleen has limited updates on the Queens this week, but hopes that recent music releases and tour activity will provide more activity for next week's report. MOBSTER TIED TO ISABELLA STEWART GARDNER MUSEUM DIES: Kathleen provides an update that alleged mobster Robert Gentile, thought to have been the last person alive with knowledge of who committed the Isabella Stewart Gardner Museum art heist, has died at the age of 85 of a stroke. THERANOS TRIAL UPDATE: Kathleen continues her obsession with seeing the downfall of Elizabeth Holmes, providing an update on Theranos trial currently taking place in California. She reads an article specifically reviewing Holmes' crazy emails sent in the middle of the night to employees while she was at the company's helm, as well as her defense strategy of trying to block testimony on her extravagant personal expenses while SAM ADAMS' ILLEGAL BEER: Kathleen is thrilled to read an article announcing that brewer Sam Adams is releasing the latest beer in their Utopias collection, which is available in limited capacity every 2 years. This release is so strong, it's illegal in 15 states because this year, the brews carry a staggering 28 percent alcohol by volume or ABV. By comparison, the classic Samuel Adams Boston Lager is just 5 percent ABV.CHINA BANS KIDS FROM MIDWEEK GAMING: Kathleen reads an article from China where new rules recently published by China's National Press and Publication Administration are allowing kids and teens under 18 years old be limited to three hours per week to play online video games. Kathleen laughs at the outcry that would happen in the US if such a move was made. THE WORLD'S LARGEST CRUISE SHIP DEBUTS: Never being a lover of cruise ship travel, Kathleen reads an announcement from Royal Caribbean advising that their newest ship, the Wonder of the Seas, has been authenticated as the largest cruise ship in the world. Originally meant to set sail from China, the ship will now begin sailing from Florida to the Caribbean in March 2022. The Wonder of the Seas will feature 8 “neighborhoods” and revised amenities such as a full waterslide. All of Kathleen's thoughts on cruise ship travel can be heard on her bits “Cruise Ship Day 1” and “Cruise Ship Day 2.”THE OLDEST LOBSTER TRAPPER IN MAINE: Kathleen is thrilled to read an article from Maine profiling Virginia Oliver, who has been fishing for lobsters for over a century. Despite having surpassed the typical retirement age decades ago, the Rockland, Maine-based fisherwoman works with her son, Max, catching lobsters three days a week from May through November. Kathleen applauds Virginia's efforts and work ethic, stating that the only other person that she could envision working into a second century would be her father, Jack. THE ‘SUEZ CANAL ON RAILS' UNVEILED: As listeners know, Kathleen loves a train ride and has a mad appreciation for any improvement to infrastructure. She's envious to read of plans in Cairo, Egypt where the Egyptian government has signed a $4.45 billion deal for a high-speed electric rail line to link its Red Sea and Mediterranean coasts. The 410-mile rail link will include a mainline designed to carry more than 30 million passengers annually as well as a freight line and will run between the Red Sea port of Ain Sokhna and 2 Mediterranean ports. Kathleen laughs that she's waited her entire life for a train to connect St. Louis and the Lake of the Ozarks, and wouldn't care how fast it traveled as long as there was a bar car made available. RUSSIAN CHESS STAR SUES NETFLIX: Like many Termites, Kathleen loved the premises of the Netflix series “The Queen's Gambit.” She reads an update where a former Soviet chess champion, Nona Gaprindashvili, is suing Netflix for defamation over the incorrect chronological sequence of the final episode where Gaprindashvili is referenced by name as not having ever faced male opponents, when in fact she HAD by 1968, the year that the last episode was situated in. No further details have been released from Netflix, but you can bet that Mama T will be on the lookout for an update!HOW TO BE LIKE WARREN BUFFETT: (or at least eat like him ☺) Kathleen loves reading about billionaire Warren Buffett, not only because he's a true Midwest delight but also because he's chosen to remain in Omaha his entire life and doesn't mind sharing some of the simple financial practices that he uses in his everyday life. Kathleen reads an article that outlines 9 frugal habits of Buffett's that we can incorporate to save money, and she laughs at her own approach to “wealth management” and her arguments with her brother Patrick over the cost of a cup of Starbucks coffee. She DOES agree with Buffett's love of McDonald's Egg McMuffin for breakfast and recommends not skipping out on an accompanying Diet Coke just because you can save more money buying the soda by the 12-pack. RALEIGH'S LOST COLONY: Kathleen loves history, and is excited to read an article announcing that archaeologists are embarking on a search for the lost colony of Roanoke in an attempt to determine what happened to the 117 people who completely vanished after its settlement. It's one of the nation's great mysteries: The first permanent colony of English settlers in what would become the United States, specifically North Carolina in 1587 by Sir Walter Raleigh, disappeared three years after it was erected with virtually no trace.THE MOB CHILDREN VS THE FBI: Kathleen laughs out loud reading an article announcing that a fugitive consigliere in Colombo crime family was recently arrested after his son taunted the FBI with a Florida poolside post of his father a day after his suspected mob family was arrested in a New York City raid. The taunting post was hurriedly deleted, but not in enough time for Federal Agents to screengrab the information and enact an arrest plan. Ralph DiMatteo, 66, was the only person mentioned in the federal indictment to evade arrest, and that's because it was able to be proven that he was soaking up the Florida rays. Kathleen muses that even “the children” can be caught at their own games.WHAT TO WATCH THIS WEEK: Kathleen recommends finishing “Nine Perfect Strangers” on Hulu, continuing through Season 2 of “Wu-Tang: An American Saga” on Hulu, and also listening to upcoming weekly episodes of the ABC News podcast “The Dropout” that is closely following the Elizabeth Holmes trial. We've all responded to Spring 2020 differently than our New Years' resolution planned for — but one thing that has been undeniable is the increase in our consumption of 'core beers'. The 15 packs, and 24-packs of beers. The purchases normally reserved for a weekend camp trip, or tailgate. This episode we dive into some of the earliest of American Craft and re-visit the beers that paved the way for over 8000 Craft Breweries in the US. As you may expect, they're both amazing examples, and worth picking up the next time you're shopping to stock your fridge. Correction: In this episode Jon talks about a baseball game between the Cleveland Indians and The Texas Texans. ⚾️ This was a swing and a miss -- the Texas Rangers actually played the Cleveland Indians during the game we reference. (Thanks Chad!) What We’re Drinking:Samuel Adams Boston Lager by Boston Beerhttps://untappd.com/b/boston-beer-company-samuel-adams-boston-lager/3914ABV: 5%IBU: 30Notes: Samuel Adams Boston Lager® is the best example of the fundamental characteristics of a great beer, offering a full, rich flavor that is both balanced and complex. It is brewed using a decoration mash, a time consuming, traditional four vessel brewing process discarded by many contemporary brewers. This process brings forth a rich sweetness from the malt that makes it well worth the effort. Samuel Adams Boston Lager® also uses only the finest of ingredients including two-row barley, as well as German Noble aroma hops.Pale Ale by Sierra Nevada Brewing Cohttps://untappd.com/b/sierra-nevada-brewing-co-pale-ale/6284ABV: 5.6%IBU: 38Notes: Our most popular beer, Sierra Nevada Pale Ale is a delightful interpretation of a classic style. It has a deep amber color and an exceptionally full-bodied, complex character. Generous quantities of premium Cascade hops give the Pale Ale its fragrant bouquet and spicy flavor.SponsorShow off your love of Untappd. In this week's episode of Conversation on Tap, Joel and Jose explore the topic of boycotts. Before we do, however, Joel and Jose pour themselves some delicious Samuel Adams Boston Lager. For their FRED Talks, Joel talked about the Keto diet, which emphasizes fatty foods over carbs and sugars; Jose talked about the release of a letter by the former Vatican nuncio to the US, which called on Pope Francis to resign. As we moved into the main topic of the show, Jose's wife joined them for their conversation. Joel, Jose, and Christina explored the etymology of the word "boycott," as well as some historical examples of boycotts, such as the Boston Tea Party and Montgomery Bus Boycott of the 1950s-- and we even give a shout out to the woman who first refused to give up her seat: Claudette Colvin. Our discussion also turned to current boycotts of Chik-fil-a and In-N-Out. But we really got into the weeds of how the recent controversy over Colin Kaepernick and Nike's decision to highlight him as a spokesperson for their 30th anniversary ad campaign. We pondered over why this has suddenly turned into a test of people's patriotism by the right. As the show wrapped up, Joel, Jose, and Christina talked about the new Jack Ryan show, and Jose talked about Bishop Barron's Pivotal Players series, specifically the episode on St. Francis. That is our show for this week! We hope that we will join us for our next episode! Cheers!

Undoubtedly, being a subsidiary of Boston Beer Company means connections to Jim Koch’s brewery empire a.k.a. Samuel Adams Boston Lager. But to think that Angry Orchard is merely tapping into the US cider mania would be short sighted. Boston Beer Co. has been researching cider since the early 2000s with the help of Alan Tringham, a retired cidermaker from the European brand known as Bulmers. I had the opportunity to meet Grant Wood from Boston Beer Co. who was working with Tringham at the time to “create the perfect cider for the American public”. They both stopped by my cidermaking workshop at CiderDays back in 2004. Hoo wee! Imagine presenting cidermaking to the likes of the now late Alan Tringham. Anyhoo…the first cider brand for Boston Beer Co. was known as Hard Core. That brand was shelved, and a few moments later we were seeing Angry Orchard commercials during the Super Bowl! Bingo! The new brand was taking hold with its flagship cider Crisp Apple. Take note cidermaker wannabees….to think that a brand such as Angry Orchard would sit on it laurels with what many would consider an introductory cider made to entice a public that is still wrangling with cider is not time well spent. Angry Orchard led by newly minted Head Cidermaker Ryan Burk and Assistant Cidermaker Anna Hasan is and will continue to move mountains in Ciderville! Listen to this episode and hear Ryan’s story and what we can all expect from Angry Orchard. He and Anna have already started pushing the envelope with the likes of Stone Dry (5.5%) a new cider now available in six packs. You have to visit the Walden location to taste select drafts that may or may not make it into the mass market. What to expect at the Tasting Room? A very large, yet inviting room with windows that overlook the orchard. If the weather is right, there is outdoor seating and a gas lit fire pit. Each visitor of drinking age, receives one token that can be used for (3) complimentary samples in the tasting room. Cider styles available include the flagship cider, Crisp Apple (5%) and several other core offerings, as well as ciders exclusive to the tasting room. Such as the house cider – Farm Cider – an unfiltered cider made with apples from the orchard’s 2014 harvest. Listen to what Angry Orchard is looking for the future. Cidermaking trends Cider Act How are they playing with the Cider House Series? What will they do with their Ice Cider this coming winter? How does terroir factor into the Angry Orchard cider house and what is their soil profile? Classic misconceptions about Angry Orchard.
