Eileen Napier and Stan Hayes of Ramstead Ranch teamed up around their common interests in organic gardening, permaculture, and healthy living. They started on two acres and sold eggs on the honor system, and then the project grew––they bought ranch land in the Pend Oreille Valley, in the northeastern corner of Washington State and soon expanded to 240 acres. Brining in business skills from their own experiences outside of agriculture, they've built a enterprise that employs twelve people and has a thriving online component, while still serving a predominantly local community.

I'm still stuck on turkey for Christmas! I never think we'll include it in the menu but in the end it just screams ‘festive season', and I can't resist. How to keep the darn thing from drying out? Stuff stuff under the skin of the breast – herb butter, chopped spinach, sausage, bacon. Consider using a large oven bag to cook it in. Rest the cooked bird on its breast so that the juices all run into the white meat. Brining can work too, but who has the time or fridge space to do it! Stuffing: Breadcrumbs as a base with herbs, onions etc – make sure you soak the crumbs in milk. Sausage or ground meat Rice & mushrooms Chorizo and corn bread Consider a punch of sweetness like currants, apples or cranberries. Gravy: The roasting dish scrapings are your best friend, so always add in some halved onions and oil at the start of the cooking. Once cooked, remove the turkey and set aside to rest. Sprinkle ¼ cup plain flour into the roasting dish, mix to a paste with the fat and pan scrapings. Add a splash of wine or bubbles and simmer for 1 minute then add in stock, vege water or plain water and seasoning and whisk or stir for 5-6 minutes until you have a dark, lump free gravy. Leftovers: Make a pie. Fry turkey meat and leftover veges in a pan, drizzle in some pomegranate molasses and once a little crispy scatter over some lettuce or baby spinach leaves for a fab salad. Serve lettuce, warmed turkey and gravy in soft white rolls. LISTEN ABOVE See omnystudio.com/listener for privacy information.

He emphasizes the importance of connecting with the food source and understanding the seasonality of ingredients. Griffiths shares his unique approach to food, which includes hunting, fishing, and foraging. He also talks about the New School of Traditional Cookery, his restaurant's butcher shop, and the Texas wine industry. Griffiths highlights the need for stewardship of resources and the importance of private landowners in facilitating hunting opportunities. The conversation explores the topic of hunting and the importance of introducing new hunters to the experience. It delves into the issue of feral hogs in Texas and the need for their eradication. The conversation also addresses the misconception that pigs are not good to eat and highlights the deliciousness of wild hog meat. The care and butchering of pigs are discussed, emphasizing the importance of keeping the meat cold and dry. In this part of the conversation, Jesse Griffiths and Katie discuss the misconceptions and best practices for handling and cooling wild game, specifically deer and hogs. They talk about the importance of not directly putting the meat on ice and instead using a cooler to allow for proper cooling and moisture removal. Jesse emphasizes the difference between bleeding an animal and removing moisture from the muscles. They also touch on the topic of brining and how it can improve flavor and texture. The conversation then shifts to potential diseases in wild game and the importance of wearing gloves during the skinning and gutting process. Jesse explains that freezing the meat for an extended period of time and cooking it to a high temperature can help eliminate any potential risks. They conclude the conversation by discussing some of Jesse's favorite recipes from his hog and turkey books.   Links: Afield The Hog Book The Turkey Book Dai Due & NSTC   Takeaways   Sourcing food locally and sustainably allows for a deeper connection with the food source and a better understanding of seasonality. The Texas wine industry is growing and offers a unique opportunity to pair local wines with local food. Private landowners play a crucial role in facilitating hunting opportunities and promoting stewardship of resources. Introducing new hunters to the experience of hunting is important for dispelling misconceptions and fostering appreciation for resources. Feral hogs are an invasive species in Texas and their population needs to be controlled through hunting and eradication efforts. Pigs are delicious and can be prepared in various ways depending on their size and characteristics. What do music and DesignOps have in common? So much that Rachel Posman and John Calhoun use music as a framework for their new book, The Design Conductors: Your Essential Guide to Design Operations—the first book written about the subject. Both of the authors come from creative backgrounds (John as a musician, Rachel as a ballet dancer), and they describe how their personal experiences influenced their approach to the book and their work. The music analogies are plenty. One example is the importance of orchestration in design operations, equating it to coordinating a team to work harmoniously, much like a conductor leading an orchestra. Rachel and John explain that design operations is a creative process, blending design and management, and that those creative aspects are often underestimated. They highlight the maturing nature of design operations as a discipline, noting that the book fills a gap in resources for both newcomers and experienced professionals. The book is structured in two acts (another musical metaphor): the fundamentals of DesignOps, and the practical, tactical methods for building and scaling teams. Rachel and John also discuss some common challenges in DesignOps, like making the invisible work visible and advocating for the value of the discipline. They stress the importance of "working loudly" to ensure that the contributions of design ops teams are recognized so that teams are properly resourced. What You'll Learn from this Episode: - Why Rachel and John chose a musical metaphor to use in their book - Why Rachel and John decided to write the first book on Design Ops - How the book is formatted and why there is something for everyone - Why Rachel encourages her team to “work louder” Quick Reference Guide: 0:24 - Introduction of Rachel and John 2:45 - Brining a music metaphor to design ops and highlighting the creativity within operations 6:53 - The design materials of operations 7:42 - Communication 9:40 - Building the plane while flying 11:06 - What the book covers and who it's for 14:22 - 5 reasons you need the Rosenverse 17:14 - The journey readers can expect to take 21:07 - The big errors and challenges in design ops 23:34 - Ideas for working loud and being visible 27:06 - Gifts for listeners
