Ever since my friend Jess Murnane told me about Phoebe I wanted to be her friend. It wasn't until I met her in person for the is podcast that I truly realized how smart, funny, wise, and interesting she is. I’m excited to hear about your story. And I love this, one lifestyle change one month at a time. It’s something that I tackle in a portion of my business. And I think it’s very, very wise. But I told you before the show I was going to hand the baton off to you, because I would like for you to tell a little bit more about your story. Nobody knows you like you do. So if you don’t mind, I would love to hear a little bit about your health journey, a little bit about your book, your blog, and I guess some of your biggest takeaways. Phoebe Lapine: Absolutely. So, my health journey and my food career journey actually started around the exact same time. But it took a few years for them to kind of intersect and combine into one. So I started blogging a year after graduating college, just kind of on a whim. At the time, my food outlook didn’t really have anything to do with the nourishment from each part of a meal, and more had to do with the comfort of cooking and the social nourishment it gave me. But around the same time when I was leaving my corporate job to pursue cooking professionally and a whole variety of odd food jobs, I was diagnosed with Hashimoto’s thyroiditis.
