Initially working in an auditing company, she left her job to follow her passion in baking and flew to Le cordon Blue, Paris to hone her skills as a pastry chef. Nancie Simonet opened the Waterwheel Café & Bakery in 1989 in Milford, Pa. She previously attended the School of Visual Arts in New York and lived and studied in Paris during the early 1980s. She has held several jobs in the food industry.
