Little apple pies with malted crumble and yogurt: COOK TIME: 27 MINUTES PREP TIME: 20 MINUTES SERVES: 6-8 6 Braeburn apples 1 tsp vanilla paste 3 tbsp honey 8 x 10cm puff pastry discs 1 tbsp malted barley syrup 100 gm unsalted butter 100 gm wholemeal flour 50 gm brown sugar 100 ml greek yogurt Pre-heat a oven to 180*c Mix together the apple, honey and vanilla. Toss until well coated. Peel the apples, cut into 1/4 and remove the core and cut in half again, giving you 8 wedges per apple. Arrange around 5 pieces of apple together in a tight circle in a grease-proof paper lined oven tray. Place a piece of the puff pastry over the top. Mold the puff down and around the apple tightly. Refrigerate for 15 minutes. Make up the crumble, combine the butter, wholemeal flour, sugar and malt barley in a food processor and blend until smooth. Pour out onto an oven tray and spread out. Bake for 10 minutes before stirring and continuing to cook for another 5 minutes or until golden. Remove and allow to cool. Now bake the apple pies into the oven into the oven for 12 minutes or until the pie case is golden. To serve, turn the apple pie upside down onto place so the apple is facing upwards and sprinkle with the crumble mix. Finally serve with the yogurt. The second is Elders stock agent Stuart Were, who has a small cattle operation on the island. He has begun feeding his cattle the waste malted barley from the distillery, preventing it from going to landfill. However, they came out with a bottle that I was more than happy to have in my collection and mainly because I read the label and found it misleading. Chocolate Malted Rye Body: The Woodford Distillery, as we know it today, was actually previously owned by Elijah Pepper and was called the Oscar Pepper Distillery. The distillery itself has been through 4 sales. Brown Forman bought it in 1941, sold it in the late 60's and then decided they wanted to re-purchase it in 1993. By 1996 it became the Woodford Distillery As much as I do not love Woodford, it is the better of the three others before it Old Crow (The distiller who worked at the pepper distillery) James E Pepper They have several products, but this master's collection is only released twice a year and each release is said to be different due to it being an experimental series The fall release focuses on variation, while the spring release focuses on proof. They have released 17 master collection series so far. This bottle is the fall of 2019 and the bottles no longer look this cool or unique Mashbill: 70% Corn, 15% Chocolate Malted Rye, 15% Distillers Malt The rye is what is so special and makes this bottle more unique. Malted barley is critical to the making of many whiskies around the world, and this week, we'll take you inside the malting process with a visit to New Zealand's Gladfield Malt. Gabi and Doug Mitchell founded the maltings 16 years ago as an outgrowth of the family's Gladfield Farm, and has become a key supplier of malted barley for the country's growing craft distilling industry. There's so much to learn that we'll be splitting the tour between this episode and next week's WhiskyCast. In the news, a Minneapolis distillery is in ruins after it was torched by rioters during protests against the death of George Floyd while in police custody, and the distillery's founder is vowing not only to rebuild, but will help his neighbors rebuild their businesses. Some distilleries on the Kentucky Bourbon Trail are making plans to reopen to the public for tours and tastings next week following coronavirus-related closings, while we'll also have the latest on new whiskies and much more.

He says the motto is “preserving the past and embracing the future” and the two really come together at the Nashville area farm. Murfreesboro, TN is among the top five, fastest growing counties in the country and this eight generation farm is trying to remain viable. They have seen change and honoring the past is a big part of it. They do a lot of small grain work — focusing on malt quality barley as wheat production is well-established. Still working on rye to get quality where they want it but the barley has really been coming along. He says wheat has been grown in the area for decades and so has the knowledge farmers have. In the past Batey Farms grew cotton, had a dairy, etc. and it remains diverse but has evolved. Whereas the small grains used to go to the dairy, small crowns were fed to the dairy cows (used as a forage crop). Now those small grains go to various customers. Brandon discusses how farmers like him try to stay on top of what people in their area want while also bringing a knowledge of the local environment. Being able to keep your crops moving into the market is important. What really drives Brandon is seeing customers with smiles on their faces. It is a true working farm but also has areas of agri-tourism like a retail shop for pork products, a u-pick berry patch and more. It is so picturesque it even has that grain silo made into a gazebo that rocks Pinterest feeds (here’s one of the early articles on this idea https://www.countryliving.com/diy-crafts/a43277/diy-grain-bin-gazebo/). His father-in-law John L Batey says farmers are always repurposing things. Thinking about making the most of things and extending the lives of things, shifting the farm is different. Batey produces pork products which were being considered for the kitchen but as he toured the brewery, seeing all those bags of grain… Brandon also wanted to see if that could be supplied locally. Brandon pointed out that moving to new crops is investing and taking risks, risks that need to be taken to build into the future. Getting wheat into the Southern Wit blonde beer was the first step. Barley looks a bit like wheat or beautiful grass. The stem that produces the grain in barley can be a two-row barley or a six-row barley. We have a photo of two row barley on the website as well as this snippet in the video we shared. The difference in size of grain matters when you start talking about beer production and getting into the scientific of sugar production and details of chemistry of malting. Malting involves letting the crop grow through it’s green stage to begin drying down for harvest. Looking at freshly harvested barley seed, you have complex sugars in it. And those sugars are bonded and tied up in the seed. It would take a lot of enzymes to break that down. Instead, we let the seed rest for two months and then run it through a malting facility.The seed is soaked in water, raising the moisture back up to 45-50% after making sure it had been dry for harvest. In this steeping tank with water for 48 hours or so, the water is drained and seed is laid out so it starts to grow. The root sprout emerges and you will then dry it back down, like roasting it in the oven. What that process does is convert complex sugars to simple sugars which is useful in making beer, spirits (Tennessee whiskey), etc. Growing barley is a winter crop for Brandon — that means it is planted in late September - October. It is planted after you harvest soybeans or something. That seed germinates and gets started before winter makes it dormant (stop growing) for a few months. The crop stays 4-5 inches tall all winter. Then around Valentine’s Day fertilizer provides the nutrients to wake it up and it starts growing. In late March they check again with fertilizer to insure they get a big seed as the malting process will take it from a moist grain to a dried product — like drying grapes to raisins. So bigger seeds make a difference. Quality comes first for Brandon as he looks at harvest. He wants as many quality bushels as he can get. Last year he had to harvest around some low areas where water flooding delayed the crop, there were potential fungus issues, etc so they need to use care in choosing what to harvest. Barley is used extensively in beer production — it’s the number 1 ingredients. Tennessee has a long history of distilled products, but there it is used for energy, not flavor. Barley in distilled products doesn’t add to the flavor but acts as an enzyme to help break down corn, rye and other grains. In beer it provides the flavor profile. Traditional Tennessee style products use malted barley. Brandon says they are looking at the potential to introduce their grains to food products like the Pillsbury products made nearby. In that, malted barley is used in pastries to provide a bonding agent. He discusses the issues facing dairy farms, perhaps grains like this can help. And people like Christian like knowing they can help their neighbors. The complexities of local, loving it for a range of reasons and yet also liking some of the diversity of foods that have come to plates over the past few decades. Selling pork products locally is great, but Brandon also appreciates the role that major companies like Tyson have. As a farmer who works across direct, commodities and more. You will have trouble getting locally grown popcorn in some regions of the US. (shout out to the Ella & Ollie popcorn episode!) The Batey Farms retail store is open two days a week. In summer, there are strawberries, blackberries and blueberries to pick as well as fields of sunflowers. You really should check it out if you get to the Nashville area!

Brendan purchased a former elementary school and repurposed it as a malt house, carrying out the process of prepping various grains for use in the production of beer and whiskey. CNC has supplied numerous breweries and distilleries with one of the most important ingredients needed to produce their final product. Malted barley is the source of the sugars (principally maltose) which are fermented into beer. The malting process allows the grain to partially germinate, making the seed's resources available to the brewer. This, of course, leads to the production of beer when combined with water, hops, and yeast.Brendan shares his story of how he got into the malting business and why he decided to take this path instead of opening a brewery. He shares what he and his team do at CNC on a daily basis and gives us some inside perspectives on the malting process. Brendan also breaks down the process of malting, as well as how different grains produce different beer styles. Sprouted Grains have been sprouting in the commercial baking news for quite a while. In this podcast we discuss the challenges of food safety, and science behind Sprouting. The guests are: - Rob Wong: President at AgriNeo - Dr. Debbie Rogers: Director of Baking Services at AIB International A few things we discuss are: Food Safety in Sprouted Grains: Rob explains how challenging is fighting pathogens in this industry. AgriNeo invents technology on how to fight pathogens in all sorts of flours. Rob mentions the challenge of protecting flours, implementing food safety at the manufacturing level is tricky to maintain the nutrition while still getting the pathogen killed. AgriNeo started in 2009, with a bold and ambitious mission of trying to safely feed the world. AgriNeo have a novel way of addressing food safety, reminding bakeries that the oven is not the only place where to work on killing pathogens, but also having into account the flour, mixes, toppings, seeds, etc. Their NeoPure solution, is organic, broad-spectrum and is applied directly to Sprouted Grains via atomization to destroy the harmful bacteria and fungus, it biodegrades after use into water. After being applied and biodegraded, there’s a drying step to make the seed go back to the water activity and moisture as it started. The Science behind Sprouting: Debbie explains how the sprouting process works and what defines a sprout. The AACC international defines whole grain sprouting as: “Malted or sprouted grains containing all of the original bran, germ, and endosperm shall be considered whole grains as long as sprout growth does not exceed kernel length and nutrient values have not diminished. These grains should be labeled as malted or sprouted whole grain.” Seeds need time and temperature right to have the enzymes start making changes in the seed so it thinks that it will convert into a plant to provide its nutritional value The main purpose of malting is getting alpha-amylase (a starch degrading enzyme), however there’s also a lot of protease (aiding degrading of proteins), other types of amylases (that also work on the starch system), cellulose and xylanase (degrading cell wall materials and “freezing” the nutrition in the grain). The quality and quantity of enzymes can’t be exactly controlled, we can aid it with temperature, soaking time, different variety of grains, environmental factors, etc. Bakeries challenges are when the Sprouted Grains have to be used immediately or not, Debbie explains that you can retard this reaction by putting the Sprouted Grains into the refrigerator or freezer. Sanitation is also a key step in Sprouting. The hands, equipment and air in the environment have to be clean to assure Sprouting food safety and quality. Dr. Carson and Dr. Rogers also discuss adding gluten, controlling the process and decreasing fermentation time to control variables in Sprouting. Have you wondered what all the hype is about gluten-free foods? Is it just for people with Celiac disease, a way to sell books or just trendy? Turns out, there is science behind this food craze and people are getting amazing results from quitting their daily habit of bread, pasta, and muffins. This gluten-free guide is for you! The newly surfaced medical evidence is showing that glutenous grains can be destroying your brain! Even whole grain bread is not the healthy alternative we once thought it was. As a result, eating gluten can be tied to dementia, ADHD, anxiety, chronic headaches, depression, and much more. If you are not sure if gluten is causing you problems, try a 1-week experiment and stop eating it. The real proof is when you add gluten back in and find that you feel tired, foggy, lack of energy or digestive distress. More symptoms of gluten intolerance are rashes (especially in kids) headaches, weight loss, weight gain, intolerance to dairy, heavy PMS symptoms, malabsorption and more. Furthermore, be aware that it may take years to see the effects of gluten on your body. Some people feel fine eating bread and have no desire to give it up until fasting from it. What is not gluten-free? Gluten is everywhere! Besides the more well-known foods like pizza, pasta, bagels, bread, baked goods, cakes, etc there are many items that have hidden gluten in them. Items like licorice and soy sauce contain gluten. Even more, shampoo, toothpaste, fruit juices or a simple communion wafer can contain gluten. Here are some of the grains and additives that contain gluten: Atta (chapatti flour) Barley (flakes, flour, pearl) Beer, ale, lager Breading and bread stuffing Brewers yeast Bulgur Communion wafers Couscous Croutons Spelt Farro or Faro (also known as spelt)* Graham flour Hydrolyzed wheat protein Kamut Malt, malt extract, malt syrup and malt Flavoring Malt vinegar Malted milk Matzoh, matzoh meal Modified wheat starch Oatmeal, oat bran, oat flour and whole oats Pasta Rye bread and flour Seitan Wheat Bran Wheat starch Soy Sauce Wheat flour Wheat germ Have no fear! There are tons of gluten-free alternatives that are satisfying and taste delicious. Also be aware, many ‘gluten-free' products on the market are loaded with sugar GMO corn, potato starch, and other additives. Stay away from the boxed cookies and crackers. I encourage you to start making your own gluten-free bread and treats so you know exactly what is in them. Here are some ingredients that are gluten-free: Amaranth Arrowroot flour Baking soda Bean flour (can be hard on digestion and high in carbs) Buckwheat Cassava Chickpea flour (can be hard on digestion) Chia, black and white Coconut and Coconut flour (my favorite for cookies, etc.) Corn flour (not recommended) Cornmeal (not recommended) Cornstarch (Masa farina) Dal or Dahl (Legume from India) Flax (ground), gold and brown Irish Moss Paste (creates a gummy texture in gluten-free recipes) Lecithin (use NonGMO) Legumes (whole, cooked beans) Millet Oats* (pure uncontaminated) Psyllium Husk Powder (I use for a glutenous texture in my bread) Quinoa Teff Xanthum gum (not recommended) All of these ingredients can be used to start making your own gluten alternatives. Here are some more ways to give up gluten without feeling deprived: Try Coconut Wraps (we love these) which are made from coconut or try this tortilla recipe. You can also try Nori Sheets. They can be used anywhere you need a wrap or tortilla. Make your own gluten-free scones made with almonds, carrots, and apples or my gluten-free almond bread or cookies. You can also check out gluten-free bagels, bread, and wraps in the freezer section of your health food store. Buy organic, buckwheat granolas or learn to make your own at Pure Joy Culinary Academy. Keep experimenting with recipes but remember that most of the gluten-free flours contain GMO corn, potato starch, tapioca, garbanzo bean flour and other questionable ingredients which may leave you feeling more lethargic than ever. Garbanzo bean flour makes me feel like I swallowed a brick. Above all, ,ake your own food as much as possible and get creative with gluten-free pasta like zoodles (zucchini noodles). Remember that restaurants are famous for adding flour to soups and sauces as a thickener and even veggie burgers can contain gluten. A friend of mine was bed-ridden after having french fries. After checking back with the restaurant, she found that they were coated in white flour before frying to make them crispier. So, keep asking questions, be sure to request gluten-free alternatives and after a while, you won't even miss the wheat and gluten. Benefits of Going Gluten-Free The primary goal of a gluten-free diet is to free up the body's need to digest gluten which can clear up inflammation, GI issues, brain fog, fatigue, and weight gain. As a result, replacing glutenous grains with prebiotics foods like quinoa and millet can help build the digestive system. Other benefits include (adapted from Fitnessgoat) Reduce stress on the digestive system. Gluten puts a lot of stress on the GI tract as it takes lot's of energy to break down the gluten into usable forms for the body. Plus, most grains (especially in the US) have been contaminated with glyphosates, a harmful chemical used on crops, which lead to an even greater toxin and energy load on the body. As a result of reducing your consumption of gluten, you give your gut time to heal and restore optimal function. Decrease levels of inflammation in the body. Consuming gluten creates inflammation in the GI tract. This inflammation spreads to other parts of the body, impairing optimal function, which could lead to more significant symptoms and illnesses. Strengthen the immune system. The resilience of your immune system is linked to the healthiness of your gut. When it is constantly bombarded by toxins and harmful substances, the immune system is compromised and can leave you vulnerable to diseases. Regulate your blood sugar. By eliminating refined carbs from your diet, your insulin sensitivity will improve and your blood sugar levels will stabilize. Enhance cognitive function. Not many people realize that gluten intolerance symptoms can manifest outside of the gastrointestinal system. A constant lack of focus, grogginess, and inability to be productive could also be symptoms of consuming gluten-containing foods. What can you do today if you want to try going gluten-free? The best thing to do to find out what is going on in your body is to start a food journal. Write down everything you ate and how you feel after eating it. This is a good practice for everyone, even if you've already given up gluten. Maybe there is another trigger food that you don't know about. Also, remember that manufacturers are not looking out for your health, that's your job. You may discover that what you thought was not causing you problems might be standing in the way of more vibrant health. About the author & the story. I have always enjoyed an ice cold beer, especially on a hot summer day. Whether I choose a beer, a glass of wine or cocktail occasionally depends on my mood and the foods I am enjoying. My taste in beer leans toward the micro brews or European beers. While Coors was the old standby for my parents, I like to try different brews and steer clear of the US mass produced beers. Living on the Central Coast of California in wine country I tend to choose a local wine most often. For the next year I have vowed to try more beers, especially locally brewed and learn as much as I can. While guys may share a beer with us girls, the art of brewing and the fanaticism surrounding the beverage has been mostly the domain of men. I will pass along my adventures into the manly world of beer through this website. How it all started. It all started with the simple idea that having a kegerator in your home was “green” and one little step in decreasing the number of bottles and cans we send to the recycler. A while back, I saw a program on the Planet Green network about a couple in Brooklyn, NY that had installed a tap above their kitchen counter. I thought it was a brilliant idea to go green for any beer lover, thus the idea of putting a kegerator in our kitchen was born, which meant we might as well gut the kitchen and start over. Needless to say, my beer loving husband took the idea and ran with it. Not only were we able to find a place to hide the keg refrigerator, we designed our new concrete countertops so the tap could be above the sink and thus no mess. Many of my girlfriends have cursed me as their husbands are now ready to remodel just to have a tap in the kitchen. I found a used kegerator for a great price of $250 (saving about 400). The only problem with the kitchen remodel was that the access point for the kegs would be from the front porch so then we had to remodel the entrance to our home. More work – but in the long run it improved the look and feel of the house. Now with a tap in the kitchen and cold draught beer on hand I have a renewed fondness for beer. Good beer that is! The inaugural keg was Fat Tire Amber Ale by New Belgium Brewing Co. There is nothing better than an icy glass filled with draught beer. We had been buying Fat Tire in the bottles, but I still think it tastes better from the tap. Once we were all set up, I realized I had created a monster in my husband and not for the reasons you may be thinking. Having the kegerator has now led to home brewing. In less than a month, we have become setup with additional Cornelious kegs, large kettles for brewing, glass containers called carboys for fermenting and more. We have 2 batches brewing and eagerly await the day of tasting. While my husband is the primary consumer and brewmaster at our house, I am surprised at my interest in the process and the different types of beers and all that goes along with it. So for now I will share my adventures into the world of beer and brewing from a woman’s point of view. So far, it does appear that it is still very much a man’s world and we will see if they will let me into the club, even if it is only a temporary membership.
