Fancy dining isn't all fluff. At Wild Common in Charleston, SC, Orlando Pagán puts his culinary passion on the plate with every service. He left Puerto Rico after high school to attend Johnson & Wales in Miami, and following graduation, spent three years at the Ritz-Carlton Coconut Grove. In San Francisco, he cooked in a handful of acclaimed restaurants before leading the kitchen of Michelin-starred The Village Pub as executive chef. In 2017 Pagán relocated to the Lowcountry of South Carolina to join Sean Brock at McCrady's Tavern, and in 2019, he helped open Wild Common, where he leads the culinary program as executive chef and was recently nominated for James Beard Best Chef: South. In the midst of this illustrious career, he was diagnosed with multiple sclerosis, but his careful management of the disease and focus on team and family keep him strong in the job.

Longview, Washington resident Melinda McCrady spent 20 years working for Democrats in the state Legislature, and for that entire time, her blue-collar, timber-industry hometown elected Democratic representatives to the Legislature, to local office, even to Congress. But by 2016 Democrats were losing ground there, and certainly they lost big in 2021. Republicans now represent Longview, and not necessarily moderate Republicans, either. What happened to the generations of smaller-town working people who supported Democrats? Melinda and I talk about what issues cost Democrats seats, generational change, who makes up the elite and all the rest.

This is Episode Four of the Courage My Friends podcast: From epidemic to pandemic: rethinking health. We discuss how people are coping in the pandemic and the ways populations are impacted differently. Where is the most vulnerability? The discussion highlights the realities for those in poverty, particularly the under-housed. Together we discuss how Indigenous teachings and harm reduction practices can inform our responses to these current crises and help us to move forward in a compassionate way that does not leave people behind. Today's guest host John Caffery is joined by two guests -- Zoë Dodd, community scholar at the University Health Network and harm reduction activist, and Keith McCrady, who has worked with Indigenous children and youth for over 25 years. He is now the executive director of 2-Spirited People of the 1st Nations, an organization that focuses on prevention, education and support for 2-Spirit, including First Nations, Metis and Inuit people living with or at risk for HIV and related co-infections in the Greater Toronto Area. The organization bases its work on Indigenous philosophies of holistic health and wellness. Recent studies have shown that people are struggling to cope; rates of suicide, eating disorders, domestic violence, and substance use have all significantly increased since the pandemic began. Ontario has been in an opioid crisis for a decade and the pandemic served to exacerbate the situation with overdose deaths increasing by 76 per cent according to the report Changing Circumstances Surrounding Opioid-Related Deaths in Ontario during the COVID-19 Pandemic. In discussing the social determinants of health, Dodd expressed the need to see people as whole beings. "The pandemic has shown us we have so much grave inequality with the impacts of colonization, racism, poverty, some of the biggest social determinants of health have been around housing and income and the massive inequality in so many ways causing people to die," she said. As the conversation shifts to discussing the environmental conditions in Canada and the boil water advisories in Ontario, McCrady noted that the lack of access to drinking water on Indigenous reserves is "pure evil." "If this was any other community, I think it would be solved long ago, the people in power are failing us and adding to the problem…to even feel that you are worthy of water…we need to focus on the areas that we are failing, including Indigenous people, we need to service families as a whole." The episode is a tender, powerful, and thought provoking discussion amongst people who have worked on the frontlines for years and who share their insights of how to care for one another and create a more humane and just world for us all to live in. About today's guests: Zoë Dodd is a long-time harm reduction worker and advocate for drug user health and liberation living and working in Tkaronto/Toronto. She spent 15 years co-facilitating Hepatitis C support groups that are rooted in popular education and harm reduction. She was instrumental in developing a community-based model of Hep C care that prioritizes people who use drugs. She is a vocal critic of government responses to the overdose crisis; an expert in overdose response, she helped to establish Ontario's first overdose prevention site, Moss Park OPS which ran illegally in a park for a year before receiving government funding. Zoë is a co-founder and co-organizer with the Toronto Overdose Prevention Society. She is currently working as a community scholar with MAP centre for Urban Health Solutions focused on the harms of involuntary drug treatment. She is an abolitionist, anti-capitalist and is strongly committed to dismantling the drug war. Keith McCrady grew up in the community of Biinjitiwaabik Zaaging Anishinaabek, and relocated to the GTA over 13 years ago and now calls Scarborough home. Keith, the proud father of four has dedicated his life to supporting the goals and dreams of Indigenous communities, particularly in Toronto. Initially, he focused on children and youth programs, and eventually expanded into Indigenous education, employment, human trafficking, physical literacy and housing. Keith McCrady's advocacy and leadership also come with his identity as a two-spirited person. “It's not just a sexual orientation or a gender identity,” he says. “It's also my role in my community and a place in our circle.” As the executive director of 2-Spirited People of the 1st Nations, Keith's goal is to walk alongside the 2SLGBTQ communities and provide education and support to members of the 2-Spirit community and reclaim our place in the Circle. As the Executive Director of 2-Spirited People of of the 1st Nations, Torontonian Keith McCrady has had to be nimble and creative in keeping his Indigenous community members healthy and connected. Several times a week, he provides food, PPE and harm reduction supplies to a growing list of people in Toronto and - if possible - beyond. "What I usually do, I’ll order a lot of seasonal ingredients and I'll just order them without any dish in mind. And we just get them in, just so we can start that creative process and I know that I'm not going to waste an ingredient. Because you know we're not going to throw anything away, so it kind of forces our hand to use it and that's we try and stay creative. And I go into farmer's markets every single weekend. And as far as steaks go, it's very straightforward. The first thing I found were ramps in the spring and I just got excited about it. I like it because it gives me a lot more appreciation for the product that I'm working with. Really enjoy that part of it. Obviously you want to do everything you can to make sure you really showcase the product. Especially when you find it outside and you find it yourself. That's incredible. The more I learned about it, the more I never realized how much edible things were out there. I find something new each year and nature very fascinating to me.It's like when you're younger, everyone wants to be that kid on the block who has that new toy. I want to be that kid! I like to use things that not many other people use. But there are very few people that use pawpaws in the city. And come spring, everyone uses ramps in the city but there's other things out there like ground nettles ...

Mike and Shyretha Sheats are the husband and wife team who run an evolving dinner series called The Plate Sale in Atlanta and Athens Georgia. They previously spent time in Charleston – Mike at McCrady’s and Shyretha at The Gin Joint, and they were both part of the opening team at Staplehouse, the Atlanta gem that was named best new restaurant in 2016 by Bon Appétit. Mike and Shyretha are helping put together an event called The People’s Supper: a community dinner and conversation on violence, environmental racism and radical imagination being held on the fiftieth anniversary of Martin Luther King Jr.’s assassination (Wednesday, April 4th, 2018). Mike will be preparing the final meal that Dr. King never had the opportunity to eat. They spoke to HRN's Kat Johnson about the dinner and the organization that is hosting, Lead to Life. Lead to Life is transforming weapons into shovels for ceremonial-tree plantings at sites that have been impacted by violence or carry spiritual significance across Atlanta and Oakland. I like lime, I like salt, and so I always thought that I liked tequila. I’d order those along with my neat shot on occasion, usually when I could hear waves lapping against some shore and seagulls in the distance, but I’d never really explored the whole genre much more than that. Until I met Germán Gonzalez one afternoon at a tasting on what was then the private dining space at McCrady’s restaurant in Charleston, SC. His T1 and Tears of Llorona tequila was served neat and trust me, it didn’t need to be accompanied by anything, not even ice. When it was time to visit San Antonio, I requested a quiet afternoon chat with Germán almost immediately. And when he, one of the best tequila makers in the world agreed, I knew that I was forging ahead, even though all I remember of Spanish class was my teacher’s Southern accent when she said, “ro-ho.” Germán , always a gentleman, forgave my stumbling pronunciation since it came with great enthusiasm.
On today's episode of THE FOOD SEEN, we share the tradition of Southern storytelling with Sean Brock, chef of McCrady's, Husk,Minero, in Charleston SC and Nashville TN. The son of a coal mining family in rural Wise County, Virginia, Sean never forgot his Appalachian upbringing while finding himself in the Lowcountry. It all started over a simple bowl of Hoppin' John, and continued itself with a side of cornbread. These dishes are emblematic, not only in the South, put as far as West Africa for the Gullah people. To understand his roots better, Sean researched and traveled, in hopes of reviving ingredients, preserving said tradition, through seed saving, and working with Anson Mills and their Carolina gold rice. Sean celebrates this journey in his debut cookbook, HERITAGE, fittingly holding a handful of heirloom beans on the cover. Of course there's BBQ, the smell of smoke, and a sip of whiskey or two, but it's really about his manifesto, and finding yourself through cooking. Sean Brock is the executive chef of Husk, based in Charleston, South Carolina, with a new location also opening in Nashville, Tennessee. Born and raised in rural Virginia, the experience of growing his own food with his family sparked his interest in becoming a chef. Growing and cooking everything he ate, Brock explains that he really saw food in its true form. Beginning his career as a chef tournant under Chef Robert Carter, Brock quickly rose up the ranks to become an executive sous chef at Lemaire Restaurant in Richmond, VA, then an executive chef at the AAA Five-Diamond Hermitage Hotel in Nashville, TN, an executive chef at McCrady’s Restaurant, and finally his second restaurant with Husk, just down the street from McCrady’s. His appearances include being on the “Next Great Chef” episode of “Food Network Challenge,” (in which he was the winner), and battling it out on “Iron Chef America” in December 2010.
