Claus Meyer is a true gastronomic entrepreneur. He co-founded Noma with Rene Redzepi, which has been voted the best restaurant in the world multiple times. In 2004, he spearheaded the writing of the New Nordic Manifesto, an influential philosophy that spread like wildfire on how chefs can approach cooking using traditional ingredients and local produce. Claus is also behind the Melting Pot Foundation, which trains individuals in underserved communities from Morocco to Bolivia and even in Danish prisons to become chefs. He's also been the host of multiple cooking shows with global reach, authored several cookbooks, started a catering company, deli, bakery chain, country hotel, orchard, and is behind several high-end restaurants globally. The red thread through all of Claus's work is to create healthy, delicious meals that inspire us to see eating as an agricultural act. While other scientists were busy re-engineering life in a laboratory, a lone geneticist traced innovation back to its origin: the earth. Jerry Lorenzen's breakthrough non-GMO seeds were specially bred to grow high-yield, disease-resistant crops that left the land better than it started. With its patented milling technology, World Food Processing used yellow peas and other protein-rich pulses as raw material for its wet milling ingredient operations. Behind every plant-based burger, oat milk latte, and protein shake is one essential ingredient: pea protein. Without it, there’s no Beyond Meat. Minneapolis-based PURIS, fueled by a $100 million investment from Cargill, is the largest U.S. manufacturer of pea protein, and PURIS CEO Tyler Lorenzen says the company is just getting started. “Anything currently consumed as animal protein, PURIS is going to solve with plants to build a more efficient, sustainable, resilient food system,” Lorenzen says. “If we can do it in the U.S., we can do abroad.” Lorenzen didn’t expect to be leading a division of PURIS Holdings, the company started by his visionary father Jerry Lorenzen in 1985 in Iowa to develop high protein crops. Tyler Lorenzen played professional football for the New Orleans Saints, which won Super Bowl XLIV his rookie year. But when his football career ended sooner than expected—“I got cut,” Lorenzen deadpans—he quickly shifted to the other field that had figured prominently in his life thanks to his father’s work as a plant breeder: the farm field. “My dad saw in the mid-‘80s that eating animals to get protein was not sustainable. We needed to grow plants to feed people. And if we can make plants higher in protein, we can build a more efficient food system. That was the business my dad started, and the business we operate at scale today.” With the support of Cargill, PURIS will open a new pea protein processing plant this year in Dawson, Minn. Lorenzen expects the business to double in 2021 as PURIS continues to make strides in regenerative agriculture—from seed to shelf. “How do you create something game changing? It’s this concept of not being afraid to fail,” Lorenzen says. “You’ve got to be willing to take risks to do things that can change the world.” His goal is lofty: improve the health of people and planet. But he relates that mission back to football. “Having the drive to do things bigger than myself—that’s what sports has helped to create. Winning is so much better than losing. So we try to win as much as possible.” Fun fact: Tom Brady’s TB12 plant-based protein mixes are made with PURIS pea protein. After our conversation with Lorenzen about innovation and the future of food, we go Back to the Classroom with the University of St. Thomas Opus College of Business. Executive Fellow and adjunct marketing professor Craig Herkert encourages entrepreneurs to “do something you believe in.” “I don’t know that we can point to any successful business person who says the goal was to get rich. I first interviewed Weber Stibolt in episode 92, when he was a Quality Assurance Specialist at Eight O Clock Coffee. A couple of years later, he’s now at one of the most talked-about food startups at the moment: Beyond Meat. The last interview we’ve had from Beyond Meat was episode 24 with one of their food engineers so it’s good to get an update on what’s happening there. So I ask Weber about his transition over there. From applying to the job, moving to the new town, and progressing through the ranks. We talk a lot about one of our favorite programs in IFT, the Emerging Leader’s Network as we were both participants in it. Weber went a little bit farther and became a peer mentor. Probably the best part of this interview was that Weber made his role by presenting a need and making a case. This is a great example that if you’re in the right company, and if you can identify a potential opportunity, you can actually carve out your own unique path. Coffee is a bit boring because it lacks a challenge. I wanted a better problem solving canvas. There wasn’t enough growth in my abilities. Beyond Meat IPO Was there a change when Beyond Meat went IPO?: Not really. The mission was the same. What is the difference between measuring the quality of Beyond Meat versus the quality of coffee?: Surprisingly, sensory is still a huge part of my day What notes do you look for?: On a flavor perspective, it’s fairly neutral. Nothing on the realm on pungent. Moisture and texture are important too. Oil is also important Small changes can have a fairly big impact. Adding an extra lb of flavoring for example, will affect a lot. What about raw material?: We actually are very happy with our pea protein lots.
