About a quarter of global greenhouse gas emissions come from the food system, but the public conversation about food and climate keeps getting stuck at the two ends of the chain — what farmers grow on one side, what consumers buy on the other. The middle of that chain — processing, packaging, distribution, storage — is where most of the practical climate levers actually live, and it is the part you almost never see. Brendan Niemira, Chief Science and Technology Officer at the Institute of Food Technologists (IFT), wants us to look there. Brendan spent more than 25 years at the USDA Agricultural Research Service leading a team of 30-plus scientists developing non-thermal treatments — cold plasma, high-intensity light, irradiation — that kill foodborne pathogens on produce, meat, poultry, and shellfish without cooking the food. He stepped into the IFT role on December 1, 2025, and joins Sustainability In Your Ear to walk through IFT's new white paper, Food Science & Technology Solutions for Mitigating and Adapting to Climate Change, which lays out a roadmap covering circular bioeconomy practices, AI-enabled supply chain resilience, reusing food waste, precision fermentation, and cellular agriculture.Brendan describes food safety as a three-legged stool — exclusion, containment, and eradication — and notes that in a warming world the first leg is getting harder. Pathogens travel further, persist longer, and show up in places they didn't used to, with warming oceans already expanding Vibrio bacteria in shellfish that previously didn't carry them. That reframes food safety as climate adaptation work — and it lands at the moment when federal research capacity is being thinned out. The conversation then opens into the ultra-processed food debate, where IFT is pressing the case that nutritional quality, not processing intensity, should define dietary guidance, because pasteurized milk, shelf-stable beans, and a deep-fried snack cake are all "processed," and collapsing them into a single category hobbles the very technologies that extend shelf life and cut food waste. Brendan closes on the structural shift coming next: humans domesticated about 50 animal species over 25,000 years of agriculture, but precision fermentation — built on whole genome sequencing and metabolomics — opens up trillions of possible microbial community combinations, each able to turn side streams and waste streams into dairy proteins, vitamins, flocculants for water treatment, and food ingredients. The ASX 200 started slowly with early losses, but after a benign and better-than-expected CPI read, the bulls were back. The ASX 200 closed up 60 points at 8718 (0.7%). Banks fought back from bigger early losses, with CBA up modestly and WBC down 0.6X%. The Big Bank Basket unchanged at $275.52, whilst other financials improved, with MQG up 1.0%. IFT was having a good day on some broker upgrades, up 5.8%, and HUB was doing well too, up 2.0%. A horror run continued for ASX as it fell another 9.7% on the news yesterday of a further capex blowout and broker commentary today. The industrial space was mainly better, with WES gaining 1.4%, ALL up 3.2%, and GMG also having a good day after the results yesterday. Healthcare perked up slightly, with a good run from CSL up 2.4% and FPH also having another good day, up 4.1%. The tech space was mixed, with TLS down 1.0%, WTC up 1.4%, and TNE up as well. The All -Tech Index rose 2% today.In resources, it was a mixed session, with lithium stocks a little under pressure. PLS fell 1.9%, and MIN also down slightly, but BHP up 1.5% and FMG also doing well. Gold miners were mixed, with a bias to the upside, as NEM rose 1.3%, and coal stocks again were firm, with YAL up 2.1% and WHC up 2.2%. Uranium stocks were also slightly firmer, with PDN up 2.4%.In corporate news today, WEB rose slightly following results, with guidance maintained. EDV fell 4.9% after it flagged a major restructure of its wine operations. SXL was up strongly after Gina Rinehart emerged as a major shareholder. KMD was also doing well on a strategic review, up 17.3%. NUF also had a good day, up 13.7%, as profits jumped on higher margins.In economic news, the monthly consumer price index showed inflation slowed slightly to 4.2%, below the 4.4% forecast. The dollar slid slightly on this news and hopes that the RBA is on hold firmed.Asian markets were once again gripped by chip fever in South Korea and Taiwan. Records and new trillion-dollar valuations.  Japan up 0.4%, HK down 1.1% and China off 0.6%. Kopsi up 3.6%. Taiwan up 2.4%.US futures slightly better. Brent crude down 1.6%No news on peace deal. The ASX 200 bounced back 125 points to 8,622 (1.5%) as the roller coaster continued this week. News from the White House on peace progress was the kicker, together with unemployment numbers coming in worse than expected at 4.5%. Pressure off the RBA. Both banks and resources fired today, with CBA up 0.9% and WBC rising 2.2%, with the Big Bank Basket rising to $273.39 (+1.4%). MQG jumped 1.7% and other financials also did well, with IFT up 4.6% and CGF rallying 1.9%. REITs were also back in demand as yields fell, with GMG up 2.8% and GPT rising 1.5%. Industrials firmed, with WES up 1.4% and CSL rising 1.6%, while RMD was also back in demand, up 1.2%. QAN jumped 3.1% on lower crude prices and VGN took off 9.3%, although volumes were small.Retailers were better as yields cooled and unemployment may mean the RBA is on hold again. JBH up 3.4% and HVN up 2.1%. GYG had a strong day on a broker upgrade, up 13.0%. Tech stocks were mixed. CAT jumped 10.9% after numbers yesterday, with broker upgrades helping. TNE dipped 2.3%, WTC fell 0.5%, and the All-Tech Index was up 0.3%In resources, BHP jumped 3.1% on copper exposure, RIO up 3.2%, and gold miners were back in favour. NST fell 2.1% as the CEO stepped down. EVN up 3.8% and GMD rising 0.7%. Lithium stocks were better, with LTR up 4.2% and MIN jumping 2.9%. Oil and gas stocks eased back, as did coal, but uranium stocks rose.In corporate news, SGH fell 0.8% after a very in-depth investor day. IPX rose 5.2% after commissioning a 300-tonne axis SACMI in US. On the economic front, unemployment came in worse than economists expected at 4.5%. Morgan Stanley is predicting the largest house price correction in 40 years! The bank is talking a 10% fall. Asian markets better, Japan up 3.2%, Hong Kong down 0.7%, China down 0.6%. Kospi up 8.2%US futures ease with Dow down 74, Nasdaq down 6. European futures opening around 1% lower. By Doug Green “Many companies don't even realize they're out of compliance until someone takes a close look at how customer interactions are actually being handled,” said Todd Chisholm, president of IFT Solutions. In a recent Technology Reseller News podcast, I spoke with Todd Chisholm, president of IFT Solutions, about the company's new IFT Fortitude program and why MSPs have an opportunity to bring compliance-focused customer service assessments to business clients in regulated industries. IFT Solutions operates as a business process outsourcing company, providing services that range from customer service and collections to front-end sales support. The company also brings a consulting practice to the table, helping organizations assess whether their customer-facing operations, whether handled internally or outsourced, are meeting compliance expectations in an increasingly complex regulatory environment. That consulting expertise is now being packaged into IFT Fortitude, a program designed to let MSPs offer a white-labeled compliance assessment to their end-user customers. The goal is to help businesses determine whether their in-house or outsourced customer service teams are adhering to data privacy and other regulatory requirements. The timing makes sense. MSPs are increasingly serving customers in verticals where compliance is not optional, yet many of those customers may not realize how exposed they are. A company might have solid intentions and good people in place, but still fall short because processes have evolved unevenly, vendors have changed, or customer interactions are not being reviewed through a compliance lens. In many cases, risk builds quietly in day-to-day operations until an audit, complaint, or incident reveals the gap. Chisholm explained that this is where the MSP can provide more than technology support. By working with IFT, partners can bring a practical assessment service into customer accounts and help identify weaknesses before they become business problems. That creates a new advisory conversation for the MSP while addressing a real operational need for the customer. The Fortitude program is especially relevant in markets where customer communications are tightly tied to privacy, documentation, and process controls. Financial services is an obvious fit, but the broader opportunity extends to any organization handling sensitive customer information or operating in a regulated environment. Healthcare, insurance, and other service-intensive verticals are also likely candidates. For partners, the program offers a way to add value without having to build a compliance practice from scratch. IFT provides the assessment framework and expertise, while the MSP can position the service under its own brand and bring it to existing customers as part of a broader trusted advisor relationship. The larger message from the conversation is that compliance is becoming a business operations issue as much as a legal or technical one. Customer service processes, scripts, escalation paths, and outsourced workflows all matter. MSPs that help customers see that more clearly may find a strong opening for new services and deeper client engagement. Larry Keener, CFS, PA is President and CEO of International Product Safety Consultants Inc. and an internationally regarded microbiologist and process authority in the food industry. His areas of expertise range from applied food microbiology to the development and application of novel preservation technologies. Mr. Keener is a 2013 Fellow of the Institute of Food Technologists (IFT), a Board Certified Food Scientist by the International Food Science Certification Commission, and a 2018 recipient of an International Union of Food Science and Technology's (IUFoST's) lifetime achievement award for his work in microbiology and food safety. He is also the recipient of Food Safety Magazine's 2026 Distinguished Service Award. He is a past president of IFT's Nonthermal Processing Division and a two-term past president of Tuskegee University's Food and Nutrition Sciences Advisory Board. He is also a past co-chair and founding member of the Global Harmonization Initiative (GHI). The ASX 200 dropped 43 points to 8702 (0.5%) as CSL shocked investors again, with a huge write-off and a downgrade to guidance. CSL accounted for most of the loss today.  Elsewhere, banks recovered some from earlier large losses, CBA down 1.1% and ANZ, XD down 2.4%. The Big Bank Basket fell to $285.25 (-1.1%) ANZ XD.  MQG flat, well off session lows. Other financials found their feet, NWL up 1.1%, and IFT pushing another 3.7% ahead. REITS eased back except GMG, which was up 2.1%. Industrials mixed, BXB fell 1.4%, QAN dropped 1.8% as oil rose in Asian trade, ALL down 1.0%, and retailers still struggling somewhat. WOW and COL ease, but healthcare was shaken by CSL dropping 16.0% with SIG also slipping slightly. Tech was flat as we await the Xi/Trump meeting and the economic data this week.Resources were mostly better, BHP up 0.7% and RIO doing well, up another % with gold miners easing on bullion, NST down 1.9% and GGP off 2.6%. Lithium and rare earths rose higher ahead of the summit, WDS rose 1.5%, and uranium stocks recovered from early losses. PDN up 5.8% and DYL rising 4.6%.In corporate news, ING upgraded enough to not fall foul of investors, CSL was a bloodbath, and OML got another NBIO from PE.Nothing today locally on the economic front. Chinese CPI came in higher than expected.Asian markets saw losses today; Japan slipped 0.4% on the Nikkei, HK down 0.2%, and China up 1.4%. Kospi up 4% again.US futures are mixed. Dow down 88, Nasdaq down 5. 10-year yields drifted to 4.99%. Welcome to your weekly UAS News Update. We have four stories for you this week: some GOP senators are pushing back against a potential DJI ban, UAS Nexus is launching a marketplace to solve the Blue UAS component shortage, Inspired Flight and Ascend Engineering are expanding their partnership to boost software for American-made drones, and an M30T Shoot down in Ohio. Let's get to it.First up, the push to ban DJI in the U.S. is facing some unexpected resistance from within the Republican party. According to a report from Politico, a provision to restrict DJI, which was included in the House version of the National Defense Authorization Act, was left out of the Senate's version. Senators from agricultural and energy states are raising major concerns. Senator John Boozman of Arkansas pointed out, “They are the primary drone maker in the United States at a reasonable price. This technology is being used more and more… That's the crux of the problem.”This all comes as a critical deadline approaches on December 23rd. Under last year's NDAA, a federal security agency is supposed to determine if DJI poses a national security risk. If no agency conducts that audit by the deadline, DJI automatically gets added to the FCC's Covered List, which would ban new products from entering the U.S. market. The problem is, no agency has stepped up to actually do the audit. Next up, a Salt Lake City engineering firm called UAS Nexus is launching a new venture to tackle a huge problem: the Blue UAS supply chain. The company just launched the Drone Syndicate Store, which is a curated marketplace for NDAA and Blue UAS-compliant components. This is a big deal because while everyone talks about building American drones, finding all the individual, compliant parts, from motors to radios, is a massive headache for manufacturers. Next, Inspired Flight Technologies, or IFT, is expanding its partnership with a software firm called Ascend Engineering. IFT is a U.S. manufacturer of NDAA-compliant and Blue UAS-listed drones, and this partnership is all about beefing up their software capabilities. Ascend Engineering specializes in UAV software, and they've been working with IFT for two years on their Inspired Ground Control, or IGC, platform. IGC is the central hub for mission planning, in-flight management, and payload integration.Together, they've already pushed out several updates to the IGC software, improved the NTRIP framework for better connectivity, and added advanced payload features. According to IFT, this partnership accelerates their "software-enabled hardware strategy." This is so important because a drone is more than just its hardware. The software that runs it has to be secure, intuitive, and powerful. By focusing on building out their own software suite with a dedicated partner, IFT is working to create a complete, mission-ready system that is fully made in America. Last up, an M30T was shot down this week in Ohio. While flying, he experienced what he thought was a fly away, and called the police to notify them that the drone was flying away. Shortly after, the police returned his call to say someone reported finding a drone. The pilot met up with the reporting party, who said “I shot it down”. A SpaceX Super Heavy rocket will launch a Starship prototype on its tenth test flight, designated IFT-10 (Integrated Flight Test). Starship will perform a payload deployment test with 8 Starlink v3 simulators and a relight of a single Raptor engine while in space. Super Heavy will perform a water landing in the Gulf of Mexico. The booster/ship combination is designated as B15/S37, both of the Block 2 variant.

Christopher R. Daubert, Ph.D., serves as the President of the Institute of Food Technologists (IFT) and as the Vice Chancellor and Dean of the College of Agriculture, Food, and Natural Resources at the University of Missouri (Mizzou), as well as a Professor in the Division of Food Systems and Bioengineering. He joined Mizzou from North Carolina State University, where he served as a Professor and Head of the Department of Food, Bioprocessing, and Nutrition Services; Director of the Food Rheology Laboratory; and system Co-Chair of Food, Biochemical, and Engineered Systems. His research explained the physical chemistry, molecular-level interactions, and functionality of food systems through an understanding of rheological behavior, while solving problems facing the food and pharmaceutical industries.  Dr. Daubert has received distinguished alumnus awards from Pennsylvania State University and Michigan State University. He is also a Fellow of IFT and previously served IFT as chair of the Food Engineering Division and a member-at-large of the Dogwood section.
