In this fascinating conversation with Max Well and Alex Lamb, directors of The Donn of Tiki, some of the topics we discuss include: How a COVID-era YouTube short on the history of Tiki in LA snowballed into a full-length feature film on one of the most iconic bar entrepreneurs of the 20th century: Ernest Gantt, AKA Donn Beach, AKA "Don the Beachcomber." The way that stop-motion puppetry and clever era-appropriate animations were used to give Donn an embodied presence in his own story, with audio unearthed from a single set of tapes uncovered at the University of Hawaii. The interesting ironies that run through Donn's life, including his propensity to build big and lose everything and the very different love interests who came and went, changing his trajectory and altering the arc of tropical drinks history in the process. We also explore the two seemingly opposed natures operating at the same time in Donn Beach: his unwavering pursuit of authenticity and quality, on the one hand, which was often masked by his flair for showmanship and his trickster-like talent for tall tales and misdirection. Few tiki and tropical drinks are as light, herbal, and dangerously sessionable as the Missionary's Downfall. Created by Don the Beachcomber in the 1930s, it's one of the genre's earlier recipes and one of the first cocktails to embrace the power of the blender. And it is the blender itself — and proper blending technique — that will primarily be in our crosshairs on today's episode. Here to lead us on that exploration is returning guest, VinePair Next Wave Awards Bartender of the Year (2024), and Chief Cocktail Officer at Brooklyn's Sunken Harbor Club, Garret Richard. Garret Richard's Missionary's Downfall Recipe Ingredients - ½ ounce acid-adjusted pineapple juice* or lime juice - ½ ounce rich honey syrup (about 3:1 by weight, Florida Orange Blossom or Acacia) - ½ ounce peach liqueur, such as Giffard Crème de Pêche de Vigne (from freezer) - ½ ounce RinQuinQuin Peach Aperitif (from freezer) - 1 ounce white rum, such as Probitas or Havana 3-Year (from freezer) - 60 grams chopped pineapple chunks (frozen for a day, then taken out of freezer to defrost, and strained) - 12-13 fresh mint leaves - 1 ½ cups (170 grams) crushed ice - ¼ teaspoon Xantham gum - Garnish: pineapple wedge and mint sprigs Directions 1. Add all ingredients sans ice to a blender and flash blend until fully incorporated (blend for as short a time as possible to achieve this). 2. Add ice and blend until chilled and fully incorporated (again, the shorter the better here). 3. More about Alan Oppenheimer: Alan Oppenheimer is recognized as the voice of many characters, often for Filmation in the 1970s and 1980s, such as Mighty Mouse, Ming the Merciless on Flash Gordon, the Overlord on BlackStar, and Skeletor, Man-At-Arms and Mer-Man from Filmation's 1980s cartoon He-Man and the Masters of the Universe. Other notable voice roles include Thundarr the Barbarian, Vanity on The Smurfs, Rhinokey and Crock from The Wuzzles and Falkor, Gmork, Rockbiter, and the Narrator from 1984's The NeverEnding Story. In the early 1990s, Oppenheimer was the voice of Merlin in The Legend of Prince Valiant. He also performed various supporting roles in various incarnations of Scooby Doo. He took over the voice of Roger Smith's butler Norman Burg in the second season of The Big O. Oppenheimer also worked on The Transformers, most notably as two contrasting characters, the pacifist Beachcomber and the bellicose Warpath.. He was the voice of Alistair Crane on the soap opera Passions. Oppenheimer recently provided the voice of the Scientist for the film “9.” Oppenheimer's repertoire also includes video games, voicing Dr. Piotr Ivanovich in Soldier of Fortune II: Double Helix, Prometheus in God of War II and Jandor the Airship Captain in Nox. In Fallout: Brotherhood of Steel, he spoke the part of Harold, an ancient mutated survivor of nuclear holocaust who has appeared in four of the Fallout series games. Oppenheimer was Dr. Rudy Wells in the Six Million Dollar Man. He was nominated for an Emmy for ‘MURPHY BROWN' and starred in many TV shows and films, including LITTLE BIG MAN, THE HINDENBURG, FREAKY FRIDAY. He also co-starred on Broadway as Cecil B. Live from Brooklyn's Sunken Harbor Club, we proudly present: The Fog Cutter… and so much more! That's right, it's an episode of firsts and threes: the first Cocktail College recorded in front of a (sell-out) crowd; our first time featuring three guests (and audience questions); not one, not two, but three cocktails (at least one of which contains three base spirits, and a sherry float for good measure). Get ready for Garret Richard on the Fog Cutter, Scarlet Fog, and advanced cocktail techniques; Carlos Perez on his very own Brain Fog riff; and St. John Frizell on that drink's newly launched, eponymous mug — a Sunken Harbor Club first! Garret Richard's Fog Cutter Recipe Ingredients - 1 orange wheel - 1 ounce Denizen White rum - ¾ ounce brandy (Capurro Pisco) - ¼ ounce Ford's Gin - ½ ounce fresh lemon juice - 1 teaspoon Orgeat (Beachbum Berry's Latitude 29) - Lemon punch syrup (mix of oleo saccharum, fresh lemon juice, sugar, and citric acid) - Almond extract - Saline solution - Float: ½ ounce Harvey's Bristol Cream sherry Directions 1. Muddle orange wheel in a Collins glass and set aside. 2. Add rum, pisco, gin, lemon juice, orgeat, lemon punch, almond extract, and saline solution to a mixing tin. 3. Flash blend with ice. 4. Add to Collins glass with muddled orange. 5. Fill with crushed ice and top with sherry float. 6. Garnish with generous mint sprig, orchid, and serve with a straw. (Note: We plan to update this recipe with more exact quantities for some of the ingredients — stay tuned!) **Trader Vic's Fog Cutter Recipe** Ingredients - 2 ounces Puerto Rican rum - 1 ounce brandy - ½ ounce gin - 1 ounce orange juice - 2 ounces lemon juice - Float: sherry Directions 1. Add all ingredients to a mixing glass with cracked ice. 2. Shake until well chilled. 3. Pour into a tall glass with ice. 4. Top with sherry float and serve with a straw.
