Live from Brooklyn's Sunken Harbor Club, we proudly present: The Fog Cutter… and so much more! That's right, it's an episode of firsts and threes: the first Cocktail College recorded in front of a (sell-out) crowd; our first time featuring three guests (and audience questions); not one, not two, but three cocktails (at least one of which contains three base spirits, and a sherry float for good measure). Get ready for Garret Richard on the Fog Cutter, Scarlet Fog, and advanced cocktail techniques; Carlos Perez on his very own Brain Fog riff; and St. John Frizell on that drink's newly launched, eponymous mug — a Sunken Harbor Club first! Garret Richard's Fog Cutter Recipe Ingredients - 1 orange wheel - 1 ounce Denizen White rum - ¾ ounce brandy (Capurro Pisco) - ¼ ounce Ford's Gin - ½ ounce fresh lemon juice - 1 teaspoon Orgeat (Beachbum Berry's Latitude 29) - Lemon punch syrup (mix of oleo saccharum, fresh lemon juice, sugar, and citric acid) - Almond extract - Saline solution - Float: ½ ounce Harvey's Bristol Cream sherry Directions 1. Muddle orange wheel in a Collins glass and set aside. 2. Add rum, pisco, gin, lemon juice, orgeat, lemon punch, almond extract, and saline solution to a mixing tin. 3. Flash blend with ice. 4. Add to Collins glass with muddled orange. 5. Fill with crushed ice and top with sherry float. 6. Garnish with generous mint sprig, orchid, and serve with a straw. (Note: We plan to update this recipe with more exact quantities for some of the ingredients — stay tuned!) **Trader Vic's Fog Cutter Recipe** Ingredients - 2 ounces Puerto Rican rum - 1 ounce brandy - ½ ounce gin - 1 ounce orange juice - 2 ounces lemon juice - Float: sherry Directions 1. Add all ingredients to a mixing glass with cracked ice. 2. Shake until well chilled. 3. Pour into a tall glass with ice. 4. Top with sherry float and serve with a straw. We're in Hawaii this week — at least Nancy is — and we talk about everything from native fruits to Spam, one of the few foods in the world that Ruth has never eaten. Ruth talks about the Zen of pie making, Nancy gives a shout out to two of her favorite kitchen utensils and Laurie waxes poetic about why Jonathan Gold fell in love with the island. Leaving Hawaii we discuss why failure in the kitchen is a good thing. Then it's on to the politics of pesto — along with a handy little trick to make it better — even if you're not doing it by hand. First and foremost is her beloved mortar and pestle, which is so heavy she's asked her assistant Juliet to pack it in her suitcase. It's one originally made for pharmacists and Nancy is so fond of hers that she sometimes buys extras to give to her friends. In fact, she gave one to Ruth years ago and Laurie has had one for decades too.What makes it so special that all three of us have it in our kitchens? Nancy says that while a rougher molcajete is right for guacamole, she loves the smooth surface of her unglazed ceramic mortar and pestle for making mayonnaise, aioli and especially pesto, which she never makes in a food processor. Laurie found this description on the British Museum website that describes why the original Wedgwood & Bentley mortars were considered superior to marble “for the purpose of chemical experiments, the uses of apothecaries, and the kitchen”: “These mortars resist the action of fire and the strongest acids. ... They receive no injury from friction. They do not imbibe oil or any other moisture. They are of a flint-like hardness, and strike fire with steel.”Nancy also loves her trusty Microplane. But then, who doesn't? It pretty much changed life in the kitchen, as John T. This post is public so feel free to share it.A proper luauNearly every year Nancy participates in the Hawaii Food & Wine Festival, founded by chefs Roy Yamaguchi and Alan Wong. It's an event that grew out of Cuisines of the Sun, which Associated Press writer Barbara Albright once described as “the ultimate food camp.” Nancy happened to be cooking at Cuisines of the Sun the year that Laurie took Jonathan to Hawaii for the first time. Until that trip in the late 1990s, Laurie had only experienced the food of tourist Hawaii and thought that the island destination would be a place where Jonathan could take a vacation from thinking about food in a serious way. Boy was she wrong. When they arrived on the Big Island they were invited to a luau that was unlike any Laurie had ever experienced. Held at Hirabara Farms run by Kurt and Pam Hirabara, who were pioneers in the Hawaii regional cuisine movement, the music, dancing and especially the food — all rooted in Hawaiian culture — were enchanting. There wasn't a grass skirt in sight. After that trip, Jonathan was smitten. Here's an excerpt from a story he wrote for Ruth at Gourmet in 2000 describing that party:There may be a prettier acre than Kurt and Pam Hirabara's up-country farm on the island of Hawaii, where the damp, mounded earth and skeins of perfect lettuces glow like backlighted jade on a wet afternoon. But when the sun comes out and the mist melts away, and through a break in the clouds suddenly looms the enormous, brooding mass of Mauna Kea, the loftiest volcano in the world, it's hard to imagine where that prettier acre might be.Three hours before chef Alan Wong's luau at Hirabara Farms, a party celebrating the relationship between the chef and the army of Big Island growers who supply the Honolulu restaurant that has been called the best in Hawaii, the tin roof of the Hirabaras' long packing shed thrums with rain, and the thin, sweet voice of the late singer Israel Kamakawiwo'ole slices through the moist mountain air. Wong's kitchen manager, Jeff Nakasone, trims purply ropes of venison into medallions for the barbecue, and pastry chef Mark Okumura slaps frosting on a stack of coconut cakes as high as a small man. Lance Kosaka, who is the leader at Wong's Honolulu kitchen, arranges marinated raw crabs in a big carved wooden bowl. A cheerful neighbor, Donna Higuchi, squeezes poi from plastic bags into a huge bowl, kneading water into the purple goo with vigorous, squishing strokes until the mass becomes fluid enough to spoon into little paper cups. She giggles as she works.“Some people like poi sour,” she says. “I like it frrrr-rresh. Although most people would say I'm not really a poi eater. Poi is a food that most visitors to Hawaii rarely experience in the way it was intended to be eaten. “The mush you might have been served at a hotel luau,” she wrote, “was almost certainly not aged, and probably served plain, which is the rough equivalent of eating potatoes mashed without butter or cream.” Or, as Victor Bergeron, aka Trader Vic, once wrote, “Americans do not appreciate food which is too far out.”Devil in a white can Ruth, Nancy and Laurie all remember Underwood Deviled Ham with great fondness from their childhoods. Surprisingly, this is the entire ingredient list: Ham (Cured With Water, Salt, Brown Sugar, Sodium Nitrite) and Seasoning (Mustard Flour, Spices, Turmeric).It turns out that it's a very old product. The William Underwood Company began making it in 1868 (soldiers ate a lot of deviled ham during the Civil War), and the company's logo was trademarked two years later making it the oldest extant American food trademark. And what about that other ham in a can, Spam? As described on the Hormel website, it's made from six ingredients: “pork with ham meat added (that counts as one), salt, water, potato starch, sugar, and sodium nitrite.” We talk about Spam musubi (Spam and sushi rice wrapped with nori), which has been popular in Hawaii for decades — Jonathan called it “the real soul food of Hawaii” in this review of the now-closed Monterey Park restaurant Shakas.Ruth may not be a Spam fan, but our musubi talk prompted her to bring up one of her favorite nori seaweed-wrapped snacks, onigiri. Hi guys,Sorry for the delay we had a recording session that was a bad recording and so we had to re-schedule this show to get a good recording. So this past year we lost a famous and pioneer in the tiki world, Harry Yee at the age of 104 years old. Wow, that in itself is an amazing accomplishment. Do you want to grow that old? I'm aiming for 100!!Anyways, on this show we will cover two of Harry's cocktails: Tapa Punch (1959) and Chimp in Orbit (1961), Tapa Punch was the first cocktail to have a parasol incorporated in a drink. The Chimp in Orbit was named after a chimpanzee also known as Ham the Chimp and Ham the Astrochimp, was the first Great Ape launched into space. Both of these drinks will include some Puerto Rician rum and Jamaican.We also get into Harry's life story and where and how he started his journey to the tiki world and some of the accomplishments he made along the way that we know and cherish today.  Here is a sample of some of these facts such as he flew in World War II for the Chinese air force. He also worked for Don the beachcomber and Trader Vic which we know are the pioneers of tiki. He then moved onto the Hilton Hawaiian Village Waikiki Beach Resort is a resort hotel on Waikiki Beach in Honolulu, Hawaii.  There several show including Hawaiian Eye and the movie Blue Hawaii were shot and Harry created drinks for them. He also was approached by Bols to create a nice tropical blue cocktail to go with their new Blue Curacao liqueur. On "Did you know?" segment: we will give you some cools facts about Hawaii like did you know there are no snakes on the plane (ops, I meant island...sorry Samuel)!! Hi folks and Happy New Year,This is our 5th year doing the show and wow we have gone through a lot in that time!! I was hoping we would have cracked 100th last year but it's coming!! Ok, enough about that, this show is part two of Mark's adventures to Hawaii....We will do two cocktails on this show for you from there. We need to do some Mai Tai cocktails of course and so we are giving you two versions of Trader Vic's Mai Tai. Now wait a minute Craig, I thought there is one original and all the other are spin offs of that but how can the same man make different versions of his drink? Well, I will tell you, the reason is the rums that he purchased to make the original Mai Tai cocktail were specific rums from specific parts of the Caribbean and through time those rums depleted. So, he had to start all over with new rums and maybe change some of the mixes to compliment those new rums. Also, tourism is a factor in creation of tropical drinks as they want something more main stream and ingredients that they would know and already have a craving for.  Remember, NO grenadine though ok!!!So we will do 1956 version of the drink with specific regional rums and the next one will be 1961 and the rums will be more general and the mixes will change as well.  We find out just what does Mark put in his version of the Mai Tai and his thoughts on many Mai Tais that he did try out while he was in Hawaii.  We explain what is Rocky Candy syrup which was a common ingredient back in those days in some of the recipes you will find. It's very simple (lol) to make!!!We discuss the secrecy that was back then to keep competitors or clients wondering just what is in this drink. I ask Mark on his thoughts as to why is the Mai Tai the Hawaiian tiki drink ???On "Mark's Adventures" segment: we discuss great small place Mark found called "Tahiti Nui". We discover another strong willed woman ran this place and had things like Pot lucks and live music to keep the clients coming back for more. It's one of the great drinks debates, but no matter who came up with this recipe, we can all agree that it's delicious. Mai Tai Created by Trader Vic INGREDIENTS 2 oz Jamaican rum (the older the better) 1 oz Lime juice .5 oz Orange curaçao .5 oz Orgeat syrup .25 oz Simple syrup (1 part water, 1 part sugar), optional Garnish: Lime shell and a mint sprig Glass: Double Old-Fashioned DIRECTIONS Add all of the ingredients to a shaker and fill with ice. He tries his best to throw the FBI off his trail, but he's not very cunning and he isn't successful. This story is a total wild-goose chase that involves other people and uncovers more murders or possible murders. Tracy relied on the book The Murder of Thor's Chamberlain by Rod Kackley. The cocktail for this episode is a classic; Mai Tai! It's tropical and delicious- we used the original Trader Vic's recipe. Hi guys,So this episode is different than our usual format as we discover all the information and research we do to make the show and get the details you crave to hear. Paola is away on family matters but Mark and I will take you on adventure of our tiki library we both have some of the books that we dig deep into on a weekly basis for our show. We talk about pioneers of tiki in North America to today's version of the tiki bible. We do start of with two recipes for you (what would the show be without drinks). The recipes we are covering are in the very books we are talking about today. I will cover the Jeff Beachbum Berry's The Caribbean cocktail and Mark will cover the Riptide cocktail from the "Minimalist Tiki" book written by Matt Pietrek and Carrie Smith. Both are very tiki as they need crushed ice and one of my favorite ingredients: ginger syrup (Yummy)!!!So here are the books that Mark will cover today:1) Jeff Beachbum Berry's "Sippin' Safari" book: this book is a great book for those who are starting into tiki or not a bartender by trade but just a curious individual as we once was. It goes quickly into tiki recipes that Jeff has dug up throughout his ten year research and some of the syrups you may need as well. This book is very small as it is only 184 pages with index. 2) Jeff Beachbum Berry's "Remixed" book: this book continues on with recipes and some brief tiki history on the creators of tiki in North America. It is a combination of his "Grog Log" book and "Intoxica" book. He has expanded drink history and lore, incorporating newly discovered information about the origins of the Mai Tai, Zombie, Suffering bastard, and other legendary Tiki mysteries.3) Jeff Beachbum Berry's "Taboo Table" book: Beachbum Berry uncovers the forgotten secret food recipes from Polynesian restaurants of days gone by. Beachbum Berry's Taboo Table is a cookbook. Taboo Table features famous "lost" and exotic recipes (most ironically created in the USA) for appetizers, entrees and desserts. There is also a fascinating and informative history of tiki cuisine from the first Polynesian settlers to the last remaining Polynesian restaurants.4) "Smuggler's Cove" by Martin and Rebecca Cate: This more modern version of tiki and recipes is brought to us by Martin who as jeff did his homework on tiki culture, history and cocktails. He especially well known rum expert as his own private collection of rums around the world comes in over 300 bottles. This book is more for the professional bartender who wants to get into tiki or the step from Jeff's books with more elaborate cocktails, syrups, ingredients and  recipes. It is a heavier read coming in with 352 pages including index. Every tiki expert or bartender should have a copy of this new tiki bible on their shelf. 5) "Minimalist Tiki" book written by Matt Pietrek and Carrie Smith is also a newer version of tiki bringing the mixology part of the cocktail and new techniques into it. It also features a library of tiki bar's bartenders recipes such as Shameful Tiki Room in Toronto. These secret recipes that we love so much in these oasis bars is now available for you to make at home too. Craig's List of Books: 1) "Potion of the Caribbean" by Jeff Beachbum Berry; This more elaborate book covers the history of drinks/cocktails and spirits too back to the Aztec days to modern time. It will give you a history of rum, pirates, royal navy, Polynesian, and Caribbean history to get you up to speed on the tiki history and its culture. He goes into more recipes that he has found through so many resources in the past years of Don the Beachcimber to Trader Vic's and so many more...2) "Trader Vic's Tiki Party!: Cocktails and Food to Share with Friends" written by Stephen Siegelman NOT Trader Vic. This book is a great book for beginners to expert of tiki who want to know how to throw a tiki party or create their own oasis tiki bar at home. It covers some history of Trader Vic and his recipes. This book also goes into decor, food, drinks and everything you would need to know to throw a party. 3) "And a Bottle of Rum" by Wayne Curtis. This is not a bartender book and there recipes in this book but very few. This book is a history lesson into rum from its origin to modern day cocktails. It has exciting adventurous facts about some of our culture's drinks we didn't know had a history like the Daquiri from the Royal Navy to Grog to Mojitos in Cuba created by tribesmen to Cuba Libre (Rum and Coke) to guide to rum. It is a must have for those rum experts out there so you can get your facts straight. 4) "The New Craft of the Cocktail: Everything You Need to Know to Think Like a Master Mixologist" by Dale Degroff: THis is not a tiki book but an book written by another man who gave cocktails a resurgence in the late 80s to modern day. Dale worked in New York city and as most of us was tired if artificial drinks and ingredients. Cocktails in the 70's and early 80's took a back seat to clubs/ dance bars and live entertainment. Dale brought classics cocktails back into popularity and start what we know as mixologist as a profession. He explains every spirit in where it came from, its feature elements and even some drinks to be in use for. He goes into techniques and garnishes. He even goes into types of ice and which one to use when. Hi Folks,We are doing a special show on the South Pacific Punch and the movie as well. Why South Pacific? This movie back in the 50s and "Blue Hawaii" with Elvis Presley made a major influence on North America culture and international to tiki culture and Polynesian crazy!!!We talk about two cocktails for this show: South Pacific Punch and the Castaway!! Both the drinks are from the Jeff Beachbum Berry "Remixed" book. Jeff is also another influence that brought back tiki to us. These cocktails use a wide range of Caribbean islands and also classic ingredient Falernum. I still have to make mine but if you can get it in the liquor store, I recommend it as it's shelf life last longer. On "Mark's Adventures" segment: we talk about no bar!!???? Yes, we don't talk about a bar but a company that gave all those tiki bars décor we know. Oceania Arts has been around for over 50 years and by the same owners who finally hanging it up for retirement. Robert Van Oosting and LeRoy Schmaltz started carving  Palm Frond masks out of their garage to sell. It grew and have supplied décor to tiki bars we know such as Trader Vic's, The Mai Kai, Don the Beachcomber, the Coco Palms in Hawaii, and The Tonga Room in San Francisco, but also Foundation Bar in Milwaukee, the Bali Hai remodel in San Diego, Hale Pele in Portland. Disneyland's  Trader Sam's Bar and the Tangaroa Terrace as well as Walt Disney World. Mark has visited this location and even came back with a blow fish light (jealous!!).In "Did You Know?" segment: we go in depth the movie South Pacific. It was released in 1958…and grossed over $36 million as a musical production. The filmed featured a lot of big names at the time but one in particular: Ray Walston (Mr. hand and My Favorite Martian). It also featured Russ Brown, Tom Laughlin, Rossano Brazzi, and Ken Clark. Warren Zevon, Neil Young, Linda Ronstadt, Bruce Springsteen, REM, Fleetwood Mac, Welcome to Episode #12 coming to you live from the former site of Riverwood Garbage Tip in Sydney Australia.  Conveniently located down Wiggs Road behind the Housing Commission Estate is the beautiful restoration that has taken place here on Salt Pan Creek Reserve.  We have sat right next to the methane gas pipe outlet and we're enjoying that sweet sweet aroma with a view over the Salt Pan Creek.  Mick has been scavenging around down on the creek and has dragged up an old Woollies shopping trolley in remarkably good condition.  And it's great to see all the kiddies out here playing on the beautiful grassed area here.Mick has been listening to Kina Grannis, who does a lovely, moody version of Elvis' "(I Can't Help) Falling in Love with You" .  The Phatman has been listening to Neil Young's "Lotta Love", by Nicolette Larson.  Nicolette did a lot of work with Neil Young but unfortunately died from an overdose of paracetamol.  Feature Item:  Warren Zevon – More About this Very Excitable Boy There's so much to his story that we needed to split him over 2 episodes.The story of Zevon, hailed by Bruce Springsteen as “one of the great, great American songwriters”, is like a Greek tragedy, where everything that could happen to him, happened - and it was all his own fault!  Zevon, an American based in LA, was a musician's songwriter.  His songs seemed simple but were masterpieces of technique.   He worked with key artists, like Neil Young, Bruce Springsteen, REM, Linda Ronstadt, Jackson Browne, Mick Fleetwood and John McVie. He was a drunk, by his own admission, who damned his own career when he went up to the publisher of Rolling Stone and told him a few alcohol-fuelled home truths, and got banned from the magazine as a result.Live, he wasn't afraid of baring his soul to his audience, once saying, “I'd prefer you didn't dance; these songs are kind of personal”; or wryly introducing a song, “Here's a song that brings back a lot of memories.  For me, anyway.”His songwriting is full of characters such as Roland, a mercenary who ends up as a vengeful ghost searching for the “man who done him in”.  Or Ray "Boom Boom" Mancini, a boxer who killed his opponent in a match. Or outlaws Frank & Jesse James."Werewolves of London" shows Zevon's humour with a werewolf "with a Chinese menu in his hand / Gonna get a big dish of beef chow mein”, and "drinking a Pina Colada at Trader Vic's / His hair was perfect”, all set to an oft-sampled jaunty piano rhythm. On top of this, his love songs were often achingly beautiful.  Songs such as "Reconsider Me”, for Crystal, his ex-wife and the love of his life; “Hasten down the wind” - “She's so many women, he can't find the one who was his friend.” You can always count on finding great lyrics.  In “Desperadoes Under the Eaves”, he states that “if California slides into the ocean / Like the mystics and statistics say it will/I predict this motel will be standing/Until I pay my bill”; in “Bed of Coals”, he's "too old to die young / and too young to die now” and in "Poisonous Lookalike", he's “so confused /(he) can't tell the salt from the wound” and refers to “Little Miss Gun-to-a-Knife-Fight". We make no apology for being Zevon fan-boys.  You don't need to lock Zevon to a date or particular album.  In this streaming age, you can just pick a random point and listen to a great bunch of songs.   Book “I'll sleep when I'm dead” - Crystal ZevonListening:Kina Grannis

For this episode, we curated a lineup of cocktails that most of you should be able to make at home.   Beachcomber Era Traditional #1 - Navy Grog (1941) 3/4 oz. fresh lime juice 1/2 oz. white grapefruit juice 1 oz. Gold Demerara Rum 1 oz. Dark Jamaican Rum 1 oz. White Cuban or Puerto Rican Rum 1 ounce honey syrup (2:1 honey and water) Tools: shaker, strainer Ice: crushed Glass: Old Fashioned Garnish: mint sprig, lime wedge Method: Shake, Add 3/4oz club soda, then strain into a glass with crushed ice (Trader Vic's version added 3/4 oz simple syrup & 1/4 oz. allspice dram in place of the honey syrup) SIPS-3   Traditional with a twist - Original Painkiller (1971) Pusser's trademarked their version of the recipe in 1981, and have been known to sue bars that attempt to sell versions that use different rum. The original recipe from a decade earlier called for a blend of Caribbean rums. If you're afraid of violating trademark law, make the Pusser's version. Otherwise, try the KicksPlayer version below. Coconut Cream Tools: premium blender Ice: crushed Glass: balloon snifter Garnish: grated nutmeg, umbrella SIPS - 5   Mai Tai 1 oz (2 tablespoons) dark rum 1 oz (2 tablespoons) amber rum 2 tablespoons fresh orange juice 1/2 oz (1 tablespoon) Cointreau or triple sec 1 tablespoon fresh lime juice 1 teaspoon orgeat syrup* or 1 drop pure almond extract 1 teaspoon superfine granulated sugar Float of LemonHart 151 Garnish: an orange slice SIPS - 5   Plantation Punch 3 or 4 ice cubes, plus crushed ice 2 ounces dark rum, preferably Jamaican 1 ounce amber rum 1/2 ounce aged rum, preferably Barbados 1/2 ounce Velvet Falernum (clove-spiced liqueur) 2 ounces unsweetened pineapple juice 1 ounce fresh lime juice Dash of Angostura bitters 1/8 teaspoon absinthe, preferably Pernod 2 ounces chilled ginger beer 2 pineapple wedges and 2 pineapple leaves (optional) skewered on a pick, for garnish SIPS - 4   Bespoke Tiki Cocktail - Tiki Tamón Dedicated to Pimpdaddysupreme's island flower, Amarantha.   1 1/2 oz. It's another delicious Quick Bite as we make our way to the 21st Annual Key West Half Marathon! On our drive down to the race we always like to stop off at place that look like it might have some interesting food and beverage offerings we can share with you.  In Little Torch Key, we found Kiki's Sandbar. A laid-back bar right on the beach, Kiki's will cook anything you catch or provide you with some tasty treats from their menu.  This place has a vacation vibe.  You can put a drink in your hand and your feet in the sand. We tried the Sneaky Kiki because it had Trader Vic's Rum in it and that made us reminisce about our trip to Trader Vic's in Atlanta last month for the Jeff Galloway Half Marathon Weekend (Trader Vic's was featured on the Barb's 5K episode).  It was such a great time there, although we have to admit the climate here was much warmer and very tropical. And... if you have not tried their Ahi Tuna Nachos... you must.  The tuna can be cooked to your desired temperature and the “nachos” are perfectly crisp wantons.  Hoisin sauce, seaweed, sesame seeds, wasabi peas... my mouth waters even as I write this because I could have them again and again. We had to get going to get down to Key West for packet pickup, so we could not linger any longer, although, you'd think time would stop here for everyone.  At Kiki's Sandbar, you can truly be in an island state of mind. If you get a chance, stop off at Kiki's Sandbar in Little Torch Key on your way down to Key West.  You won't regret it.  Yum!  THAT'S A WRAP Thank you for watching! Welcome to Atlanta, Georgia and the 5th Anniversary of the Jeff Galloway Half Marathon Weekend! RUN This episode features Barb's 5K, the first race in our weekend celebrating the 5th Anniversary of one of our favorite races.  We also got the chance to run with some great people from the Extra Mile Podcast Group. If you have not listened to the Extra Mile Podcast or Extra Mile Podcast: Galloway Edition, you are missing out. Kevin Gwin is the host of these two awesome podcasts about running and this group is so motivational.  We ran through Piedmont Park.  Although it was wet, raining, and very cold compared to Florida weather normally, we had a blast with these people and in the beautiful setting of the park. Barb Galloway even met us at the finish and congratulated us on finishing the race.  We loved every minute! We hope you'll join us next year! EAT Whenever we come to Atlanta, we make it a tradition to eat at Trader Vic's.  Home of the original Mai Tai, their food is also an amazing taste of the South Pacific.  We had the Pupu Platter called Cosmo Tidbits on their menu.  Ribs, perfectly battered and fried shrimp and delicious ribs from their unique wood-fired ovens that you can see as you sit and sip on your Mai Tai.  We also had their delicious Morel Mushroom appetizer.  It is a must-have from their menu.  These appetizers are why we almost never get to the main entree.  We also had a Hot-Buttered Rum as part of our dessert.  Buttery, cinnamon, and sweet flavors warm you from head to toe.  (I know this is the eating portion, but it was so good, I couldn't help but mention it.)  If you come to Atlanta, come to Trader Vic's.  Their entrees are also dynamite, but their appetizers are shareable and very filling.   DRINK Right after Barb's 5K, we went to Orpheus Brewing.  They hosted a special event celebrating Barb's 5K and letting us try their tasty beer.  We had a Stout and a couple of sours they had on draft in a beautiful snifter commemorating the race weekend.  We hope they continue this tradition for years to come because the after party had tasty beer and great runners to hang out with and celebrate. Learn the origins of tiki bars and get the recipe for a delicious mai tai.Tiki cocktails are hand-crafted beverages that can be found in kitschy bars across the United States.The vets who were coming back from the Pacific Theater after World War II would stop in Hawaii on their way to the mainland. Don the Beachcomber decided to open a bar that would appeal to these vets. He used lots of rum, because it was the cheapest alcohol available after Prohibition.Rum is the most versatile spirit in the world, because there are no rules for creating it. It's distilled sugar. It can be made from sugar cane or molasses.There are different kinds of rums to consider when crafting your own tiki cocktail. A light rum is unaged, right out of the still and watered down. (All liquor is watered down to reach the proof listed on the bottle.) Aged rum or dark rum gets color and flavor from the barrels it's aged in, similar to wine and whiskey. Spiced rum came about by adding flavor to dull rum. Now, distillers are creating spiced rum on purpose.Any craft cocktail requires the jigger. You need to measure all the ingredients like a chef. Tiki drinks are layered drinks.The mai tai was invented in 1941 by Vic Bergeron of Trader Vic's in Oakland, California. “Mai tai” is Tahitian for "the very best.” It's not an overly sweet drink, much like a mojito. RECIPE: juice of one lime, about an ounce one ounce of Martinique rum (floral flavor) one ounce of Jamaican rum 1/2 ounce of orange curaçao 1/2 ounce of orgeat syrup 1/4 ounce simple syrup Mix in shaker. Pour over crushed ice. Smack a mint sprig and use as garnish.If you're visiting a tiki bar for the first time, start with the mai tai. That tells you what rums they're using and how they make their drinks.
