Possibly one of our most favorite cocktails, and it will be yours too. The Brandy Crusta hails from New Orleans, the Fig Crusta hails from Jules' kitchen. Sip through history with us as we get into the story behind the Brandy Crusta. Stick around for tips on what to do with that bottle of Amaro Nonino that's collecting dust on your shelf – GASP!!! Brandy Crusta Glass: small stemmed wine glass, goblet, flute, something cool Directions & Ingredients First sugar the rim of your glass by wetting the top with lemon juice (rub a small piece of lemon around the top) and dab the top of the glass into a small pile of sugar on a plate Next, make your garnish by peeling a lemon by going around the lemon. Pick a hemishpere, north or south (because you can make 2 garnishes this way). Next take your peeler and go around the world. YOu should end with a wide strip of lemon. Now, curl the lemon peel and you'll notice that there seems one side (top or bottom) that is wider than the other – this is good. Curl the lemon so the wide opening is facing up and tuck it into the glass so just a little bit of the crow is showing and you've lined the inside of the glass with the peel. Now build your drink! In shaker add: 1.5 oz Cognac or Brandy 0.25 oz Cointreau or Orange Curacao 0.25 oz Maraschnio liqueur 0.5 oz Fresh lemon juice 0.25 oz Rich simple syrup (2:1) 1 dash Angostura bitters 1 dash Cardamon bitters (you can use 2 dash of Ango if you don't have this) Shake for 20 seconds Double strain through the center of your garnish When you or your guest goes to take their first sip, take a sniff first, then just push the peel down inside the glass, so you don't slob the drink all over your chin and shirt. Jessica Christensen, Mixologist and Beverage Manager, and Robb Stites, head of Communications and Community at Graton Resort and Casino join Steve Jaxon and Herlinda Heras on Brew Ha Ha today. Jessica is a Sonoma County native. She is responsible for all of the drinks at nine different bars at the Graton Resort and Casino. She started as a bartender at Negri's in Occidental when she was 21. After a few years she worked at Calistoga Inn and Brewery. After that, she was recruited to the Graton casino and soon got into management there. The first drink served today, after the soothing and inspiring sound of the cocktail shaker, is an Apricot Pisco cocktail. Pisco is a distilled spirit from Peru with a flavor that is close to rum. Robb Stites had a background in public relations before coming to the casino about two years ago. He describes the philanthropy and in-kind donations that they do as an expression of their commitment to the community. Jessica describes the Apricot Pisco cocktail that is in Steve's glass. It is made with Pisco, Luxardo apricot liqueur, fresh lemon, some acqua fava for the foam and some simple syrup. Acqua fava is technically garbano bean juice, which can produce a foamy texture. (Sometimes bartenders use egg whites for foam, but many people prefer this vegan alternative.) Visit Homerun Pizza, home of the Knuckleball! There are several bars in the resort; G-Bar is a sports bar and Sky Bar in the lobby has won several polls from Casino Player magazine. The swimming pool is open not only to hotel guests now. You can buy day passes now for a cabaña, a lounger or a day bed, those are available seven days a week. They also have a cocktail competition called Full Tilt. The first year the competitors were mostly from north bay but this year they will open it to bartenders from all over the Bay Area. One portion of the competition will be Iron Chef style, where the competitors get a set of ingredients they have to work with. This year it will focus on agave-based drinks. Smith Street Taps 10th Anniversary commemorative glass. Meng and Kim Chow, owners of Smith Street Taps in Singapore, join Brew Ha Ha with Steve Jaxon and Herlinda Heras today.
