Texas Farmer Ditches Cotton for Sheep, Finds Success Grazing on Solar Farms In a dusty field in Texas, Chad Raines is living a new reality — as a shepherd. After four generations of cotton farming, Raines faced years of bad harvests and rising debt, forcing him to rethink his future and to think outside the box. That led him to a growing trend called solar grazing, where farmers rent out sheep to keep vegetation in check at solar farms. Raines now works with Enel North America, helping manage one of the largest solar farms in the U.S., near Waco. The sheep are the perfect lawn mowers, working in all conditions, day or night, even when it's muddy or rainy. While small farms across the country struggle—40% operated at a loss last year—Raines has found success. By grazing 6,000 sheep across 20,000 acres, he turned a profit of nearly $300,000, compared to a loss of $200,000 had he stuck with cotton. It's a profitable venture that also supports his family's future, as his sons are set to join the business. From struggling farmer to thriving shepherd, Raines is a prime example of adapting to change in the world of agriculture. Researchers looked at data from nearly 5,000 adults in the American Gut Project and found that people who ate lean red meat within a healthy eating plan had better levels of nutrients that support brain health — things like choline, selenium, vitamin B12, and zinc. They also had greater gut microbial diversity, which is linked to overall well-being. Samitinjaya Dhakal, the lead researcher, says the takeaway isn't to cut out red meat entirely, but to focus on balanced, high-quality diets where lean meat can play a positive role. The study was supported by the National Cattlemen's Beef Association and could help reshape how we think about red meat in healthy eating. In this episode, we'll explore several witchy rituals that will clear your home of old, stagnant energy and have it magically humming in no time! What am I reading?The House of the Witch by Claire MarchantCottage Witchery: Natural Magick for Hearth and Home by Ellen DuganWhat am I listening to on repeat?Like a Prayer by Madonna What's for dinner?Autumn Wild Rice Soup6 cups vegetable stock (or chicken stock)1 cup uncooked wild rice*8 ounces baby bella mushrooms, sliced4 cloves garlic, minced2 medium carrots, diced2 ribs celery, diced1 large (about 1 pound) sweet potato, peeled and diced1 small white onion, peeled and diced1 bay leaf1 1/2 tablespoon Old Bay seasoning1 (14-ounce) can unsweetened coconut milk (or see cream sauce option below*)2 large handfuls of kale, roughly chopped with thick stems removedSalt & pepperinstructions:Combine base ingredients. Combine vegetable stock, wild rice, mushrooms, garlic, carrots, celery, sweet potato, onion, bay leaf and Old Bay seasoning in the bowl of an Instant Pot pressure cooker.  Stir briefly to combine.Pressure cook. Cover and cook on manual (high pressure) for 25 minutes.  Let the Instant Pot rest and naturally release the pressure for 10 minutes.  Then carefully open the vent and quick release the remaining pressure.  Remove lid and discard the bay leaf.Add final ingredients. Add the coconut milk and kale to the soup, and stir gently until combined.  Taste and season with salt and pepper (plus any extra Old Bay seasoning, if you would like) as needed.Serve. Serve warm and enjoy!

Midday's What Ya Got Cookin'? segment returns. What dishes or recipes have you been obsessed with this summer? We are joined by a pair of heralded local chefs who have recipes that take advantage of Maryland's summer seafood and vegetable offerings. Gwyn Novak is a professional chef and cooking instructor who owns and operates "No Thyme to Cook," a cooking school on Solomons Island in southern Maryland. John Shields is the owner of Gertrude's at the Baltimore Museum of Art and author of several cookbooks. Both chefs shared a few of their favorite recipes with us: Grilled Peach Crostini with Whipped Ricotta - Serves 8 Ingredients: · 1 C. whole milk ricotta· Kosher salt· Freshly cracked black pepper· 4 peaches, pitted and quartered· Extra virgin olive oil· 1 loaf sourdough, thickly sliced· ¼ C. toasted pecans, chopped· 1 Tbsp. fresh lemon thyme (or fresh thyme leaves with ½ tsp. lemon zest)· 2 Tbsp. hot honey· Edible flowers for garnish Directions:To whip the ricotta: Place the ricotta in a blender or food processor with a pinch of salt and pepper. Blend until smooth and light. Season to taste. Brush the peaches with olive oil. Grill until they begin to give off juice and have grill marks. Remove from the grill and set aside. You can now slice these in half. Lightly brush the sourdough with olive oil. Grill lightly until you see grill marks. Remove from the grill. To assemble: Spread whipped ricotta onto the sourdough slices.Top with sliced peaches, toasted pecans, lemon thyme.Drizzle with hot honey.   Corn, Crab and Red Pepper Salad Ingredients:3 tbsp extra-virgin olive oil1 tbsp sherry vinegar1 large garlic clove, peeled, and mashedJuice of 1 lime½ pound fresh or pasteurized backfin crabmeat, picked over for shells1 small red onion, peeled and finely minced1 medium red bell pepper, cored, seeded, cut in fine dice4 cups fresh Silver Queen (or other sweetcorn) corn kernels3 tbsp fresh cilantro leaves¼ tsp Old Bay or seafood seasoningSalt and freshly ground black pepper Directions:Combine oil, vinegar, garlic, lime juice, and whisk thoroughly. Place crab, red onion, red pepper, corn, and cilantro together in a bowl and toss gently, taking care not to break up the lumps of crab. Pour the lime dressing over top and gently toss again. Season with Old Bay, salt, and pepper to taste. Cover and chill for at least one hour before serving.   Chesapeake Chargrilled Oysters - Serves 8 Ingredients:· 36 oysters, freshly shucked (on the half shell)· 1 stick salted butter· 7 cloves fresh garlic, minced· 1 tsp. crushed red pepper· 1 Tbsp. thyme· 1 Tbsp. oregano· 2 oz white wine· 8 oz. Romano or Parmesan cheese, grated· 1 Tbsp. fresh lemon juice· Fresh parsley for garnish Directions:In a saucepan, melt the butter and bring to a simmer. Add the garlic, red pepper, thyme, oregano & wine. Simmer for 2 minutes. Roasting/Grilling Oysters Pre-heat oven or grill to 350°. Once at 350°, place freshly shucked oyster on the half shell on the center of the oven/grill. Once the water around the oyster begins to bubble and the oyster begins to rise, ladle 1 tablespoon of the butter garlic sauce on top of each oyster. Top with a dusting of cheese and allow the cheese to melt. Finish with a squirt of fresh lemon juice & a garnish of fresh parsley.   Single-Fried Oysters with Horseradish and Tartar Sauce Ingredients:1 pint shucked oysters1 cup fine yellow cornmeal1 cup all-purpose flour1 tbsp salt 1 tbsp Old Bay seasoning1 tsp black pepper Vegetable oil, for fryingSalt and freshly ground black pepper, to taste Directions:Drain the oysters, reserving the liquor, if desired (see Note). Combine the cornmeal and flour, salt, Old Bay, and pepper. Dust the oysters in the flour/cornmeal mixture, one at a time. Set aside the oysters for several minutes to dry. Pour oil into a frying pan to a depth of 1/2 inch. Heat the oil and sauté the oysters for about 5 minutes, or until golden brown. Do not overcrowd the skillet. Add more oil as needed. Remove the oysters with a slotted utensil to paper towels and drain well. Season with salt and pepper. THE WORLD OF CICADAS Insects have long been a part of traditional diets worldwide, with cicadas being one such edible insect. In this guide, we'll explore the fascinating world of cicadas, including their nutritional value, life cycle, and how to safely harvest, store, and prepare them for consumption.   Cicadas belong to the superfamily Cicadidae and are known for their robust bodies, broad heads, transparent wings, and distinct compound eyes. With over 3,000 known species, cicadas are divided into annual and periodical cicadas. Periodical cicadas, like Brood XIX, spend most of their lives underground and emerge every 13 or 17 years in synchronized broods. Nutritional Value of Cicadas Cicadas are a valuable source of nutrition, containing high levels of protein and essential amino acids. Studies have shown that cicadas contain more protein than pork and eggs, with low levels of fat and elevated levels of healthy fats like polyunsaturated fatty acids (PUFA), according to the University of Georgia Cooperative Extension. How To Find, Prepare and Store Cicadas Finding cicadas requires patience and observation. They are typically found in areas with abundant vegetation, and their emergence can be observed around and after sunset. Nymphs, teneral cicadas, and mature adults can all be found during different stages of their life cycle Before harvesting cicadas, it's crucial to consider safety measures to avoid contamination and ensure freshness. Cicadas can be stored in the freezer for up to a year, and they should be de-winged and blanched before cooking to remove any dirt or pathogens. Cicada & Seafood Boil Recipe: A Unique Twist on a Classic Favorite Are you ready to take your seafood boil to the next level? Dive into this unconventional yet delicious recipe that incorporates the unexpected addition of cicadas, giving your meal a truly memorable touch. Adapted from a trusted source, this recipe promises a feast for the senses that will have everyone coming back for more... or at least talking about it! Ingredients: 2 lemons, halved 1 medium sweet onion, quartered 2 serrano chiles, split in half lengthwise and seeds and membranes removed 1 head garlic, peeled and halved 1 bunch fresh thyme, tied with string 1 cup seafood seasoning (such as Old Bay®) 3 teaspoons kosher salt, or more to taste 3 bay leaves 1.5 pounds medium red potatoes, cut in half 3 (13 ounce) packages smoked kielbasa sausage, cut into 2-inch pieces 3 ears sweet corn, halved 30 littleneck clams, scrubbed 2 pounds jumbo shrimp, deveined, tail on 1 pound cicadas (roughly 200) newly hatched or adults Directions: Fill a very large stockpot fitted with a basket insert with about 4 quarts of water, or about a third full. Squeeze lemons into the water, tossing the halves in too. Add the onion, chiles, garlic, thyme, seafood seasoning, kosher salt, and bay leaves; bring to a boil over medium-high heat. Reduce heat and simmer for 10 minutes. Stir potatoes into the pot and simmer for 15 to 20 minutes. Add the sausage and corn; cook another 5 minutes, making sure everything stays covered with the liquid. Add the clams and boil until they open, about 8 minutes. Toss in shrimp and shut off the heat. Cover the pot and let shrimp steep in the flavor for 10 minutes, adding the cicadas in the last 5 minutes (press them into the liquid). Serve as-is in a bowl, or drain and spread the cicadas, shrimp, sausage, clams, corn, potatoes, and onion out on a newspaper-covered table or on three large serving trays.
