Diana Novak joined Palm Bay International in 2010, one of the leading wine and spirits importers in the country, to spearhead education for the spirits portfolio and serve as a connection between distributors and key accounts in Chicago and the Midwest markets. Diana was promoted as the National Director of Craft Spirits Education in fall 2013 – a role she continues to hold today. In her capacity as National Director, she can be found creating the cocktails for the national market and educating each segment of business about a wide array of spirits categories, competitive sets, and how to use spirits in new and exciting ways. Following her passion for food and drink led her to pursue a degree from the esteemed Johnson and Wales University. Diana began formally bartending during college and after graduation and returned to her home in North Carolina to continue her growth in the bar industry. There she opened a team with the Carolina Hospitality Group. Using flavor and texture skills combined with pure experimentation, Diana developed a fast consumer following by creating unique and thoughtful cocktails. She studied in Jerez, Spain with the Consejo Regulador of the Sherry Triangle, ultimately receiving her certificate as a sherry expert and educator in September 2019.  She has also achieved certifications in BarSmarts, WSET II Spirits and is studying for the WSET III Spirits. Diana has been featured in Tasting Panel Magazine for her cocktails featuring Los Amantes Mezcal, Boulard Calvados, and more. Her recipe, “Smoke, Spice, and Everything Nice,” recently won the About.com “Savory Cocktail” competition and was most recently awarded “Best Gin Cocktail” at San Antonio Cocktail Conference 2019.  She was also featured as a guest editor for Chilled Magazine in 2018. Texas Whiskey is a growing category looking to make its mark in the world of American Whiskey and Kentucky Bourbon. We're joined by Nico Martini, who just published his book Texas Whiskey, an ever-evolving chronicle and guidebook of the “history” and people of Texas Whiskey. Nico is also co-founder of Grayson Whiskey, author of Texas Cocktails, and a lover of all things Texas. Grayson Whiskey is a blend of Texas bourbon and wheat whiskies and just hit the shelves only a few months ago after a successful launch. In this episode, we taste Grayson Texas Blended Bourbon Batch 1, which is coming in at 3 years old and 119.4 proof. Batch 1 contains whiskey from Ironroot Republic Distilling, Balcones Distilling, and Five Points Distilling, the makers of Lone Elm Whiskey.  As you'll hear in the episode, after selling out Batch 1, Grayson will release Batch 1B in October 2020.  Batch 1B will contain the same distilleries and same percentage blend as the original batch, but some variation is expected.  On March 2, 2022, Grayson will release Batch 2, featuring 4 distilleries; with the addition of Still Austin. The first step was to reach out to The Likirish Brothers, Robert and Jonathan, at Ironroot Republic Distilling, because we knew they were blending some of the best whiskey in Texas. After long discussions about what was important to us about whiskey, which flavors profiles we were most interested in, and a discussion of the myriad of ways to achieve the flavor we were looking for, Jonathan then took our ideas and he started developing different paths to our version of Texas in a bottle. About the Whiskey: Grayson is a blend of straight Texas whiskeys. When we began to search for the distilleries we, both, wanted to work with and believed could add the layers of complexity we were hoping for. Batch one of Grayson contains some of our favorite Texas distilleries, including Ironroot Republic Distilling, Balcones Distilling, and Five Points Distilling, the makers of Lone Elm Whiskey. Grayson is a blend of 100% straight whiskies that are 100% Texan. Jonathan began creating a series of sample blends of carefully selected single barrels that accentuated specific flavors in each distillery's whiskey. We worked with our distillery partners to hand select every barrel that has gone into this batch. There were barrels selected that were up to 7 years old but everything in Grayson is at least 3 years. We then sought to integrate and balance the overall blend while maintaining the flavors we curated initially. Then, the whiskey was vatted and allowed to marry for a few months prior to bottling.  With the help of some incredible friends, we hand labeled and hand bottled Grayson in late March. It's a labor of love, for sure, but it's also worth every bit of effort.  Tasting Notes from Grayson: Nose: Raisins, barrel aged maple syrup, Beignet flavored coffee grounds, jalapeño jelly, and a hint of the inside of new cowboy boots. Palate: Super sweet initially with syrupy waffle notes, moves into a spiced cider with allspice, cloves, cinnamon and nutmeg, brown butter into an almost burnt pecan, sweet wheat and fennel finish.  Proof: 119.4 About Nico Martini Co-founder of Grayson Whiskey Born and raised in Texas, Nico Martini is a Best-Selling Author of the 2018 release, Texas Cocktails, Author of Texas Whiskey, releasing in July, Co-founder of Bar Draught, a mobile draught cocktail solutions and most recently, Co-Founder of Grayson Blended Bourbon. Over the years, Martini has become a thought leader and innovator within the Texas spirits industry. He has presented at numerous trade events, including San Antonio Cocktail Conference, the Bar Institute, several United States Bartender's Guild conferences and Portland Cocktail Week. Martini holds a master's degree in Emerging Media & Communications from the University of Texas at Dallas. He has been a Guest Lecturer at the university from 2009 through 2014, where he taught Digital Marketing Design and Self-Branding Through Social Media. This weeks guest is Richard Beltzer. Richard currently resides in Chicago, Illinois. Richard grew up in Anchorage, Alaska. One of his earliest passions was must. He has playing guitar for over 20 years, learned piano and taught himself drums and guitar. After high school, he earned his degree in Psychology and planned to focus on music therapy. It was while he was in school, that Richard entered the Industry. To pay his way through school, Richard got a job at TGI Fridays. He started off as lunch server and eventually moved up to evening bartender. This move triggered Richard's interest in cocktails. While there wasn't a huge cocktail scene in Anchorage, Richard moved on to an establishment named Ginger specializing in Pacific Rim cuisine. While working at Ginger, Richard and a cohort built the cocktail program to be one of the premier cocktails programs in Alaska. During this time, Richard had done work at various apprentice programs like Tales of the Cocktail, San Antonio Cocktail Conference and Pop in Kansas City. With a desire to work in a larger market, Richard moved to Chicago, Illinois. Prior to the covid pandemic, Richard was employed as the head bartender at Bad Hunter. Working at Bad Hunter helped turned Richard into the bartender he is today. While at Bad Hunter, they had a true mentorship program - but just like many others - a bar family. ‘Good Drinkers' is how Richard like to call them! Despite the closure of the bar due to Covid, Richard is still close friends with this group and they continue to be creative as possible. In fact - Richard and a few of this friends are currently working on a cocktail delivery platform to be launching soon. In this episode of 1337 Wine TV, Mark reviews the 2014 Ca’ del Baio Barbaresco Autinbej. Mark will be taking a much deserved 2-ish month break after this episode. He is in the final stretch towards the Court of Master Sommeliers Advanced Sommelier Exam. He takes the exam March 9, 2020 in Portland, Oregon. So over the next two weeks he'll be concentrating on studying. Post-exam he plans on taking a break from wine study (except for the weekly tasting group that he's in). Maybe read a book or two not related to wine, play some video games, fly his drone (remember that?), and if he passes, compose some music. Look for the return of 1337 Wine TV with a review of a whisky he received at the San Antonio Cocktail Conference back in January. He may create a video about the Exam also. Tonight, cocktail historian, author and all-around spirits aficionado, Phil Greene, joins us on Industry Night with Foodie and the Beast to talk his favorite subject and one of ours: Cocktails. Phil is an attorney, writer and cocktail historian and a founder of the Museum of the American Cocktail in New Orleans who manages the Museum’s D.C. cocktail seminar program. He has presented at events such as Tales of the Cocktail (since 2004), the Manhattan Cocktail Classic, San Antonio Cocktail Conference, Arizona Cocktail Week, Miami Rum Renaissance, the International Rum Festival, and many others. He has also presented multiple times for Smithsonian Associates in Washington, D.C., and has done events for the Washington Shakespeare Theatre, the Hemingway Society, the International F. Scott Fitzgerald Society, the University of Louisville Cocktail Conference, the Kennedy Center for the Performing Arts in Washington, DC, and many other notable institutions. In particular, Phil is an authority on the life and favorite drinks of Ernest Hemingway, and has presented on this topic before the Smithsonian and Kennedy Center in Washington, D.C., at the Hemingway Home in Key West, in New Orleans, and elsewhere around the world. His book, To Have and Have Another – A Hemingway Cocktail Companion, (Penguin Press, 2012, 2d Ed. 2015), has received critical acclaim from The New York Times, Wall Street Journal, Washington Post (twice, in 2012 and again in 2015), Chicago Tribune, Food & Wine, Wine Enthusiast, Garden & Gun, Kirkus Reviews, HuffingtonPost.com, and many others, and remains a best seller in several categories. Phil’s second book, The Manhattan: The Story of the First Modern Cocktail (with recipes) was published in 2016, by Sterling Epicure. This week on the Bartender Journey Podcast we talk with Jack Daniel’s Master Distiller Jeff Arnett. I spoke with Jeff at San Antonio Cocktail Conference. Its the Bartender Journey Podcast # 204!  Listen with the audio player on this page, or subscribe on iTunes, Android or Stitcher Radio. Jack Daniel’s is such an iconic brand with so much history. Jeff shared some great information with us, including facts about why Jack Daniel’s is not called “Bourbon”. He said, in fact it legally could be classified as Bourbon. But when the man who started the brand, Mr. Jack Daniel in the mid 1800’s he decided that he wanted to differentiate his whiskey and embraced the classification of Tennessee Whiskey.   Jack Daniel’s Old No. 7 whiskey follows all the requirements of Bourbon, with the addition of a charcoal filtering process. This filtering is legally called the "Lincoln County Process,” by the state of Tennessee. It is also known as “charcoal mellowing,” and occurs before Barreling.   Cocktail of the Week: I was trying to come up with interesing & sophisticated cocktails for St Patrick’s Day and came up with this one. I first called it the Emerald Sour, but after hanging out with my friend Hazel and describing the drink to an Bartender Carl at Swift Hyberian Lounge, it was decided that the name would be changed to “Man in the High Castle” which the name of a book that Carl had just finished. There is also a TV show on Amazon Prime Video by the same name. The two appear not to be related. “Man in the High Castle” Cockail: 2 oz Knappogue Castle 12 year old Irish Whiskey 1 oz Myers Lemon Juice, (freshly squeezed – peel lemons before juicing to make Oleo Sacrum and Twists). ¾ oz of Myers Lemon Oleo Sacrum syrup* Dash of Salt Shake with ice. Strain into an Old Fashioned glass containing fresh ice. Garnish with Myers Lemon Twist and a Sprig of Fresh Thyme, (slapped to release aromatics). (If you don’t have Myers Lemons you can use regular ones).   *Myers Lemon Oleo Sacrum Syrup Peel 2 lemons before juicing them: Use a Y-peeler and try to get only the yellow zest – as little of the white pith as possible. Put them in a sealable container, or better yet use a if you have a vacuum sealer, place in a vacuum sealer bag. Cover with ½ cup sugar. If using the vacuum sealer…seal it. Otherwise cover tightly. Let sit for at least 4 hours at room temperature, or overnight. Add ½ cup warm water and stir to dissolve. Use a fine strainer and discard all the solids.   Book of the Week is A Spot at the Bar: Welcome to the Everleigh: The Art of Good Drinking in Three Hundred Recipes By Michael Madrusan & Zara Young Michael’s Bar The Everleigh is in Melbourne Australia. He studied under Sasha Patraski and worked at the original Milk and Honey. His goal with Everleigh was to bring the Milk and Honey concept to Australia, and in fact Sasha was his business partner on this venture. As you may know Sasha left this world way too early in August 2015. But Sasha inspired a generation of Bartenders, not only those who were trained by him, but many, like myself that never had the opportunity to work with him. This Book, A Spot at the Bar is another wonderful offshoot of Sasha’s Legacy. There are many great recipes and photos in here, but a lot of other useful stuff as well. There is an entire section on Bartender’s Choice. This can be challenging for a Bartender. In the book Michael talks about how to do it best. There is a series of questions to ask - in a certain sequence - to figure out what this guest would enjoy.   Michael said in the book that Sasha taught his students that “working hard behind the scenes allows you to look effortless in front of your guests”. Wise words from a wise man.           Cocktails in the Country is a great experience, which I was honored to attend in the Summer of 2016. It is run by the man I call the Yoda of Bartending Gary (gaz) Regan. It normally costs $250, but I’m going to tell you how to get it for only $100. Its 2 days of education, learning the gaz approach to “Mindful Bartending”. Plus, practical skills making original cocktails behind the bar.
