This week on The Whiskey Trip Podcast, Big Chief takes listeners on a ride to Kentucky and chats with Tripp Stimson, Director of Distillery Operations & Chief Whiskey Scientist for Barrell Craft Spirits. Tripp takes the Big Man on a ride learning about the history of Barrell Craft Spirits and their unrelenting drive to break the status quo of whiskey by blending products that explore different distillation methods, barrels, and aging environments. In the first half they start the show with Barrell Foundation Bourbon which is a 5-year old, 100 proof blend of four separate whiskies. These four whiskies have a derived mash bill of 73% corn, 23% rye, and 4% malted barley. To take the listeners into the break Big Chief pours a dram of their  Barrell Bourbon Cask Strength, Batch 35. At 117.5 proof, it has a light nuttiness note to it. It's a blend from three different whiskies from Tennessee, Indiana, and Kentucky. To close out the show, Tripp and Big Chief sip on a Barrell Craft Spirits Cask Strength Rye. A blend of six different whiskies, with the oldest being a 14-year old Canadian. With a derived mash bill of 89% rye, 7% corn, and 4% malted barley that gives it a salted apple taffy note. This ride on The Whiskey Trip showcases a the art of blending and finishing whiskey to be something new and innovative. Cheers!

In this episode I share my recommendations and highlights from the whiskey world for the year 2024. Discussing the growing trend of creating top drink lists and worst drink lists, expressing my dislike for these types of rankings. Instead, I offer suggestions and brands to watch out for in the coming year. I recommend attending whiskey events and meetups to broaden one's palate and understanding of the marketplace. I also mention the Kentucky Bourbon Festival as a must-visit event in September 2024. There are also subscription services to try a variety of selected whiskeys from different brands. Individual taste preferences reign supreme and I encourage listeners to explore different brands and offerings. I caution against getting caught up in age statements, non-distilling producers, and craft labels, focusing instead on whether you personally enjoy the whiskey. I then share my own tasting experiences from 2023, categorizing the whiskeys based on their scores in different categories. I highlight brands that stood out in each category, including Frank August, Barrel, Wilderness Trail, Old Line Spirits, New Riff, and more. I also discusses the divisive nature of Amburana finishes and recommend paying attention to brands like Barrell Craft Spirits, Dark Arts, and Fortuna. I briefly mention the Elijah Craig barrel proof releases and Booker's releases as must-try whiskeys for bourbon enthusiasts. Last but certainly not least the rise of American single malts and recommending paying attention to brands like Old Line Spirits and New Riff. They also mention the success of smoked whiskeys and recommend trying offerings from Spirits of French Lick and Santa Fe Spirits.

In 2004, following his graduation from Tennessee Technological University with a degree in biochemistry and molecular biology, he was recruited as a Research and Development Scientist for the Brown Forman Corporation, headquarters to Jack Daniel's, Woodford Reserve and Old Forrester. There he gained his experience in yeasting, fermentation, and the distillery sciences and operations that make a distillery operate successfully and efficiently. Following his 9 years with Brown Forman, Tripp formed his own consulting company providing the technical expertise needed to design, build and efficiently run a new distillery. Hey folks, in this episode of The Embellish Pod, I had the pleasure of chatting with Lindsey from Barrell Craft Spirits. We covered a lot of ground, discussing the exciting developments happening at Barrell, including the opening of their blending facility and the launch of their new bottom price product, the Foundation series. Lindsey also shared insights into their New Year series and the upcoming release of a Mizunara cask finish bourbon. We started off by talking about the new facility and Lindsey mentioned the speakeasy area that they have, which sounds like a hidden gem for barrel picks and special tastings. She also mentioned that they are building out a retail store within the facility, where they will offer exclusive batches and special sales. Next, we delved into the recent recognition that Barrell has received, with their rye batch four and bourbon batch 35 making it onto Fred Minnick's top 100 list. Lindsey expressed her excitement about the recognition and highlighted the unique characteristics of these blends. We then shifted our focus to the new addition to Barrell's lineup, the Foundation series. Lindsey explained that this is a five-year, 100 proof bourbon that is designed to be more accessible and versatile for both neat sipping and cocktail mixing. She emphasized that despite its age statement, the Foundation bourbon drinks much older and offers a rich and balanced flavor profile. Moving on, we discussed the New Year series, which features a blend of bourbons from eight different states. Lindsey highlighted the complexity and fruit-forward nature of this blend, which is aged between five and 15 years. She also mentioned that Barrell plans to release two batches and two cask finish bourbons each year, with the upcoming release being a Mizunara cask finish. We wrapped up the conversation by reflecting on the success of Barrell in the past year and the direction they are heading. Lindsey expressed her satisfaction with the growth and maturity of the brand, as well as their commitment to transparency and innovation. Overall, it was a fantastic conversation with Lindsey, and I'm excited to see what the future holds for Barrell Craft Spirits.
