According to Where Y'at NOLA Magazine, J'Nai is “[NOLA's] favorite virtual bartender.” J'Nai was born and raised in New Orleans, LA and she is a graduate of LSU. J'Nai has been bartending for 10 years, and has worked in almost every type of bar environment: a college bar, a dive bar, a sports bar, a classic cocktail bar, a fine dining bar, and even a dessert bar. J'Nai has also competed in numerous bartending & cocktail competitions, such as NOLA Bourbon Fest, Bourbon Brawl, Espolon Cocktail Fights, and Speed Rack. This weeks guest is Raven Alexis Dales who currently lives in Shawnigan Lake on Vancouver Island, British Columbia. Raven has been working in the Food & Beverage industry since 2011, beginning her career studying culinary arts at Vancouver Community College and working in restaurants in Vancouver & Victoria. While doing so, Raven studied through the WSET program to better understand the relationship between food pairings and beverages. Raven's shift into front-of-house roles was a slow smoulder in the last couple years of her culinary-focused career. Raven wanted a better understanding of all parts of a restaurant—striving towards a better hospitality experience for all, so she began bartending in late 2018. Raven participated in the Nimble Bar Co. school curriculum and learned the ropes at Pagliacci's; an institution in Victoria BC run by Solomon Siegel, along with the mentorship of Shawn Soole. Raven quickly became Head Bartender and helped lead the bar program until early 2020, when she moved on to Veneto Bar and Ristorante. That venture stopped abruptly when Veneto closed permanently amidst COVID-19 restrictions, and in the time since then Raven has found herself tending bar at several establishments throughout Victoria. Raven spent a good deal of that time helping develop the bar program at Wind Cries Mary in Bastion Square, and is currently the bar manager at The Lakehouse in Shawnigan. Raven has also participated in a few bartending competitions: Diageo World Class, Speed Rack, Made with Love and Negroni Week to name a few. Raven's favourite parts about the competition world have been the camaraderie, meeting new people, and how amazing it is to hype and bring your peers up around you! A quick up-and-down motion while pouring, creates an air bubble that causes a short gap in the stream, allowing one to reposition over another glass and not spill on the counter or interrupt your pour. This helped Arianna pour more seamlessly when moving fast in the Speed Rack competition. This is a public episode. Lynnette (Twitter, Instagram) got her start at the Flatiron Lounge. She has worked in many capacities across the industry and most recently ran the bar program at the Llama Inn and Llama San. Alongside bartender Ivy Mix, she co-founded Speed Rack, an all-female high-speed bartending competition designed to highlight up-and-coming women and raises money for breast cancer. Ivy Mix's Piña Colada Recipe Ingredients - 1 ounce Novo Fogo Cachaça - ¾ ounce Don Q rum - ¼ ounce El Dorado 3 Year Old - ¾ ounce fresh pineapple juice - 1 ounce “Coco Biz” (equal parts Coco Lopez and full fat coconut milk) - ½ ounce fresh lemon juice- 1 tsp simple syrup Garnish: - Freshly grated nutmeg - Pineapple frond - Jamaican dark rum float Directions 1. Add all ingredients to a cocktail shaker with one ice cube. 2. Shake vigorously until well-chilled and aerated. 3. Strain into a crushed-ice-filled collins glass. 4. Alex Jump originally hails from Chattanooga, TN, where she grew up breathing Southern hospitality. A BAR-5 Day graduate, Alex honed her skills by working behind and running bar programs at multiple James Beard nominated restaurants. She has competed in multiple national competitions including Speed Rack, Lustau Solera Standout, Heaven Hill Bartender of the Year, & Bombay Sapphire Most Imaginative Bartender.  In 2018, a year after moving to Denver, Alex joined the opening team of Death & Co Denver as the Head Bartender. Over the last 3+ years for the company she has worn many hats and is currently the Bar Manager at Death & Co Denver as well as the company's Cocktail Class Coordinator. This weeks guest is Olivia Lindstrom who currently resides in Philadelphia, Pennsylvania. Born and raised in rural Eastern Pennsylvania, Olivia moved to Pittsburgh, PA after highschool to pursue a Biology degree at the University of Pittsburgh. Olivia had always gravitated towards science as a way to understand the world around her. After her laboratory job's project concluded in her junior year, Olivia decided to try her hand at serving to get through her final year of college. She spent 6 months working as a server at a restaurant attached to the DoubleTree hotel called the Bigelow Grille in downtown Pittsburgh.  In 2016 Olivia started working at Spork which would be the job that foraged her current career path. Spork is a chef owned restaurant dedicated to fresh and local ingredients. Olivia worked her way up from a backwaiter to bartender, but had a pretty unconventional path of getting there. She has only really defined herself as a bartender for the last 2 years. This was due to the fact the she had pursued wine pretty intensely before stepping behind the bar. Olivia successfully passed the Certified Sommelier Examination in 2018 through the Court of Master Sommeliers. At that time Olivia had fallen in love with the hospitality industry and also how a lot of it overlapped with her love of science.   While still working as the Sommelier, Wine Director, and bartending at Spork, Olivia decided she also wanted to try her hand at high volume craft cocktail bartending. She was able to get a job at one of her personal favorite bars in Pittsburgh, Acacia. Being a part of a smaller staff allowed for creative contributions and influence on general operations of the bar. 2018-2020 was a whirlwind of time for Olivia as she dedicated her time outside of work to the industry and gathering as much knowledge as possible. After passing both her introduction and certified levels in the Court of Master Sommeliers, Olivia was also elected President of Pittsburgh's USBG chapter in 2019, nominated for Women in Whiskey through the local Brown Forman team, attended the 2019 Tales Of The Cocktail as a CAP, and was finally apart of the 2020 Team Taco at SACC.  Before the pandemic cancelled the majority of events Olivia was going to compete in Speed Rack for the first time and attend Camp Runamok. This week on WhiskyCast, we're sharing a special story of strength. Not the kind of strength one can build in the gym, but the inner strength that comes from within. Una Green is the West Coast brand ambassador for the Dewar's single malts, and a year ago last week, she received the kind of news no one ever wants to hear from a doctor - a diagnosis of breast cancer. That inner strength - and the support from her friends and co-workers - helped her manage the pain of surgery, chemotherapy, radiation, and all of the side effects. Now cancer-free, she's preparing to return to work after spending this week in Denver for the latest round of Speed Rack's ninth season. Una took part in the national bartending competition for women a couple of years ago, and has made it her goal to help support Speed Rack and its mission of raising money for breast cancer programs. We'll talk with her on this week's WhiskyCast In-Depth. In the news, the Trump Administration is holding firm on single malt Scotch Whisky tariffs for now while trade talks continue with the European Union. There's new data showing just how much the U.S. and EU tariffs have cost whisky makers on both sides of the Atlantic, while Kentucky saw a record-breaking number of Bourbon tourists in 2019. We'll also take a look at just how the bottling strength of a whisky can affect its flavor on Behind the Label.

It can be an amazing way to learn new skills and move forward in your career, but it’s not without its challenges, everything from balancing training time with your daily schedule to finding support for your cause, and some you may not even expect. Competitive bartending is definitely one of the more exciting directions you can go in this industry. My guest today is Jessi Lorraine. She has been in the industry for more than seven years at bars like Absinthe and Bon Voyage, and she’s the winner of the most recent Speed Rack competition in California. Speed Rack is an intense, all-female, high-speed bartending competition which has raised more than one million dollars to date for breast cancer research. Jessi has competed in other competitions as well, such as Bacardi Legacy, and she also manages Elda, where we recorded this interview. Jessi had a ton of amazing insights about competitive bartending and some excellent advice for anyone interested in getting into competitions. Kathleen Davies is the founder of Nip of Courage, Australia's leading wholesaler and exporter of Aussie craft spirits. Prior to starting Nip of Courage in 2013, Kathleen worked in sales for some of the most recognisable drinks brands in the country, and she has since been a Presenter at Tales of the Cocktail and a National Judge for female bartending competition Speed Rack.Kathleen saw the craft spirits boom coming before most - she had seen the industry take off in the United States and started Nip of Courage on the assumption that Australia would follow suit. As she explains, the first few months were slow and business became a bit touch-and-go, before she took the company to an event in Melbourne and was overwhelmed with the ensuing response.Now, Kathleen has a fantastic relationship with many a boutique distillery, many of which are located in remote and rural Australia, and she has even started her own range of bottle cocktails. The Aussie Tipple Company utilises (of course) handcrafted Australian spirits to batch classic cocktails such as a Negroni and Martini.We were eager to ask Kathleen about the level of opportunity that remains for small distillers in a market that we're continually being told is reaching saturation, the challenges faced by those operations, her experience at Tales of the Cocktail and more.

There are plenty of cocktail competitions for bartenders, but Speed Rack was one of the first to highlight women working behind the bar. Lynette Marrero and Ivy Mix founded Speed Rack in 2012 to not only empower women in the cocktail culture, but also to raise money for breast cancer research and charities. They've succeeded at both over the last six years, and will be staging the first Speed Rack competition in Australia next month. We'll talk with Lynette Marrero on WhiskyCast In-Depth, and while we're talking about cocktail competitions, we'll check in with Lynn House as the eight regional winners in Heaven Hill's 2018 Bartender of the Year competition gather in Sea Island, Georgia for this week's finals. In the news, China has joined the growing list of US trading partners targeting American-made whiskies for punitive tariffs as the trade war expands. Kentucky's Castle & Key Distillery has successfully defended a trademark infringement suit over its use of the original Old Taylor name for its distillery, and on Behind the Label, we'll look at the tricky question of when whiskies made in one country can be labeled as coming from another country.

The Speedrack Northeast semi-finals took place at the Melrose Ballroom in Queens NY on January 7, 2018. This is the 7th season of this great event. Speed Rack, was founded in 2011 by Ivy Mix and Lynnette Marrero. This from speed-rack.com: “The service industry can sometime be thought of as a man’s world. "Mix and Marrero have been able to shine a spotlight on female mixologists thriving behind bars around the country; and while they are at it, raise money for breast cancer research, education, and prevention. “The idea was to create a cocktail competition for the ladies -one that celebrated women, was created by women and supported women; in and out of the spirits industry. In their first year, Speed Rack met over 200 bartenders across the country and raised over $69,000.” That was the first year. This is now the 7th season of Speedrack! The competition is held in cities all over the country with the final held this year on May 8, 2018 in Chicago. We really encourage you to attend, volunteer or even enter the competition. It is such a fun time. Its like a rock concert for Bartenders! The brand sponsors have tables set up all around the venue offering cocktails and samples of their products. For Dry January, our friend Mimi Bernham made a delicious N/A punch with Perfect Puree ingredients. Perfect Puree makes great pureed products, mostly fruit, which are awesome in cocktails. The Carmelized Pineapple is one of my favorites! Perfect Puree is really good about shipping samples btw. This is for foodservice professionals only, but they will ship some frozen samples to your bar or restaurant if you go to their website. Cocktail of the Week: January Punch  Courtesy of Mimi Bernham 40 oz water  7 Rosehip Tea bags (Onno Behrends Brand)  24 oz The Perfect Puree Prickly Pear  18 oz Ginger Beer 1 6 oz seltzer  12 oz pure Acai Juice  5 oz lemon juice  3 oz grapefruit juice  3 tablespoons Sorghum Syrup Method: Allow tea bags to steep for 40 minutes.  Squeeze tea bags, and discard.  Combine lemon juice and sorghum syrup and shake well to thoroughly blend.  Add all ingredients, except for the Ginger beer & seltzer, to a punch bowl and stir to blend.  Add seltzer and ginger beer, and gently stir as to keep some bubbles.  Add ice to chill the punch;  Make an ice ring with rosemary, lemon wheels and fresh cranberries. The aromatics from the ice ring further enhance the punch.  Makes approximately 3.5 liters of punch Mimi was our guest on Bartender Journey #161 To attend speedrack its only $25 (or $30 at the door), 100% of which goes to 9 different Breast Cancer charities. According to the speedrack website, approximately $100k is now donated each year. You can also go as a volunteer. The format of the competition is this: In each city 8 ladies are chosen to compete in the semi-final. It’s a round robin format, so in the first round the ladies are on stage 2 at a time in 4 heats. There are 4 that move on, and again they compete 2 at a time until there are 2 left for the final. There are 4 judges who call out what drink they would like. Both competitors are making all 4 drinks per round. Like it says in the title Speedrack, its all about speed. The ladies are timed. In one round Becca Pesce was up against Samantha Casuga. Both ladies Bartend at Dead Rabbit. Becca is our good friend from USBG NY. Becca also works for Angel’s Envy as a Whiskey Guardian, as they call their Brand Ambassadors. The 2 bars are on the big stage and the contestants build their round of drinks as quickly as possible. And these are not simple drinks! There are drinks like the Lion’s Tail, the Cooper Union and the El Diablo. At least it’s a finite list – the competitors are given a list ahead of time of possible cocktails they may be asked to make. And taste counts too! The judges can add penalty time based on taste, presentation, technique etc. Becca won her first round, but unfortunately Becca her next round to Haley Traub. Haley moved on to the final round. As I record this in mid January 2018 there are 4 dates still to come, plus the final in Chicago. The 4 remaining semi-finals are in New Orleans, Phoenix, Washington D.C. and Boston. Book of the Week: Julie Reiner was one of the judges. She wrote: The Craft Cocktail Party: Delicious Drinks for Every Occasion I spoke to Julie way back in 2015 at Tales of the Cocktail. In the final round Celeste “Lucky” Dittanmo of Whistle & Tins in Maplewood NJ was up against Haley Traub of Dutch Kills in Queens. Haley was victorious and moves on to the finals in Chicago.
